  • Foodservice industry serves enormous volumes of food each day, yet they rely on what might be the most poorly educated, most transient, and youngest work force in the whole food industry. These individuals handle every meal or item which is served. It is a situation ripe for problems, problems which are all too real. HACCP system is a preventive approach stages where loss of control could present a food safety risk in a food service operation. But it is very difficult to using HACCP Plan. The objective of this study was to develop a HACCP Plan using Six Sigma Methodology. This new HACCP Model from this study will be left to the each operation to develop for themselves. This means that foodservice industry operations should modify new HACCP Model provided in this study to establish their own HACCP system for use in their own operations.

  • This study evaluates common activity and quality of life in Swedish cohousing units to examine whether Swedish cohousing functions properly or not. A questionnaire survey was fulfilled during the autumn of 2010 in G$\ddot{o}$teborg Sweden. The subjects of study were 12 of 44 cohousing units in Sweden that included 4 of the +40 cohousing and 8 of the mixed-age cohousing. A total of 242 of 353 distributed questionnaires were collected (68.6%) and analyzed by SPSS statistical program. The findings are as follow: 1) General characteristics of the respondents are that they are mostly healthy, evenly aged from age 50s to 70s and highly educated with significant proportions of academics and civil workers. There are more females than males and more singles than cohabitants. 2) The most frequent and preferred common activity is a common meal followed by a coffee meeting. A common dinner, the 'hub of living together' is held almost every day or at least a few times a week. A common meal is considered one of the most important activities because of practical and social advantages in that residents can save time and cooking costs as well as engage in social contact. Referring to evaluation of frequency and content of common activity, more than a half of the respondents prefer the current situation. 3) All of the variables (except health conditions and education level) affect participation in common activity with statistical significance. 4) Most of the respondents indicate a high level of life satisfaction and are willing to recommend others move to cohousing. They agree that there is more mutual support among residents in cohousing units than in a conventional community. In conclusion, Swedish cohousing units function successfully as they have pursued intentional community ideology and most of the residents are proud of their current living situations.

  • High sodium intake in many countries has become the leading cause of chronic diseases. This situation requires correct dietary behavior to ensure proper sodium intake in the younger population. The purpose of the present study was to assess eating behavior regarding sodium intake and identify its correlation with common dietary attitudes in children. This cross-sectional study was conducted by surveying 588 elementary school children in Korea. Sodium-related dietary behavior and common eating attitudes were examined through questionnaires, and analyses were conducted by comparing the results between boys and girls. The most undesirable sodium-related dietary behavior in subjects was they 'eat kimchi with every meal' followed by the 'tendency to eat hot and spicy food'. Girls had better dietary behavior regarding sodium intake than boys (P<0.05). However, the common eating attitude between boys and girls was not significantly different. For all subjects, sodium-related dietary behavior and eating attitude showed a significant positive correlation (P=0.0032). The present study shows that a common eating attitude is better when the sodium-related dietary behavior is more desirable in children.

  • E-Card Service for Child Nutrition Program is one of the main public policy services nowadays. In case of inconvenience during the use of the e-cards, it is recommended to cooperate with related organizations in order to promptly handle and provide guidance, and thoroughly manage child feeding service such as hygiene, nutrition and kindness etc. To do so, it is very important to provide food service that meets local actual conditions and children's needs in a cost effective manner for the underage who are worried about the poorly-fed by understanding the pattern of child feeding e-card service. Hence. this paper aims to investigate how child feeding e-card service efficiently provides meals according to the local situation and children's needs through big data analysis and to propose a method of identifying welfare conditions according to the purpose of service with actual application examples. The results suggest that, first of all, this study is able to judge appropriateness of public institution's policy in a timely and repetitive manner through non-standard data analysis such as Naver News and transaction data. Secondly, this paper proposes a multi-layered analysis framework, which performs online open data analysis to detect policy issues, visualizes retrieval and preprocessing of real data, and performs abnormal pattern recognition. These will be worthy of reference to other similar projects.

  • Korea has entered into an aged-society in 2018. If this trend continues to increase, it is expected that a super-aging society will take place by 2026. Therefore, Korea is placed in the situation of becoming the world's fastest aging nation as it becomes a super-aging society from an aged-society in twenty-six years. In order to provide an effective supply of nutrition for the socially weak, Japan developed a variety of foods with food texture improvements. Germany improved accessibility for meal service development. Senior-friendly food is a softened food or a highly concentrated drink, which is considered a texture-modified food, for the elderly with eating disorders to digest food more easily by making food particles smaller. Varying food processing techniques such as freeze-thawing enzyme impregnation, high-pressure processing, super-heated steam processing, 3D food print, and others used to produce texture-modified foods.

  • This study has been conducted from July 30, 2007 to February 24, 2008 on 677 patients who were receiving diabetic treatment at the Health Centers of Deajeon City to find out their blood sugar level adjustment and their treatment compliance. As a result, 58.5% of them showed less than 200mg/dl of blood sugar level, and 67.9% showed their HbA1C of less than 7%, meaning that many of diabetic patients did not have their blood sugar level properly adjusted. And their after-meal blood sugar level and HbA1C adjustment varied depending upon the Health Centers. 88.0% of them were taking medicines for diabetic treatment regularly, and many of them were recognizing the need of dietary and exercise therapies to treat their diabetes. In conclusion, patients were recognizing that regular intakes of medicines, dietary and exercise therapies were very helpful to treatment of diabetes, but their treatments of HbA1C and blood level adjustment were not properly done as shown by their after-meal blood sugar level. The results were greatly different between the Health Centers, so there is a great need to cope with this situation.
