The Analysis of the Related Variables Affecting the Use of the Microwave oven (전자레인지 이용율에 영향을 미치는 관련변인에 대한 분석)

  • The purpose of this study was to see that how about the related variables influence on the use of the microwave oven and how about the use of the microwave oven influence on the time spent in meal preparation and meal management. Questionaires were give to randomly selected homaker's, in kwangju in August, 1986. Data from the 149 response were analyzed according to multiple regression. The results were as follows; 1. The variables affecting the use of the microwave oven were family income, homaker's employed hours, homakers' education level, a period of use a microwave oven, congnition of a special character in a microwave oven, family style of participation in meal preparation, frequency in use of instant food. 2. The variables of the use the microwave oven was significantly influence on the time spent in meal preparation. 3. The variables of the use the microwave oven was not significantly influence on meal management.

Associations between Japanese schoolchildren's involvement in at-home meal preparation, their food intakes, and cooking skills

  • BACKGROUND/OBJECTIVES: This study aimed to examine the association of Japanese schoolchildren's involvement in at-home meal preparation with food intake and cooking skill. SUBJECTS/METHODS: We included 1,207 fifth-grade children aged 10-11 years and one parent of each child. A cross-sectional survey was used to collect data on involvement in at-home meal preparation. Correspondence analysis was used to classify involvement in at-home meal preparation into three groups: food-related activities (cooking only or with other activities such as shopping, table-setting, clean up, and dishwashing), non-food-related activities (table-setting and/or clean up), and no (helping) activities. Food intake was assessed using a food frequency questionnaire. Logistic regression models were used to examine involvement in at-home meal preparation associations. RESULTS: The sample consisted of 1,207 fifth-grade children. Vegetable intake was lower in the no (helping) activities group than the food-related activities group (95% CI; boys: 1.2, 5.1, girls: 2.0, 8.9). Fewer children in the non-food-related activities group reported they were able to make a portion of their meals compared with the food-related activities group (95% CI; boys: 1.6, 3.5; girls: 1.5, 3.2). CONCLUSIONS: Children in the food-related activities group showed more favorable food intake and cooking skills than children in the no (helping) activities or non-food-related activities group.

Foodservice Management Systems of Home-Delivered Meal Service Program for Home-Bound Elderly (재가노인을 위한 가정배달 급식관리체계 및 급식서비스 현황 조사)

  • The purposes of this study were to : a) examine the current foodservice management practices of twenty-one seniors centers in charge of hoke-delivered meal programs, b) evaluate the attitudes of one hundred and ten recipients of meal service program, and c) provide feedback for the efficient and effective foodservice management for the elderly. Statistical data analysis was completed using the SAS package program for descriptive analysis, T-test, and ANOVA. The results of quantitative analysis indicated that the costs of meals, containers and special foods were mostly dependent on the support from local government(Seoul city). The centers where the volunteers were over seventy five p ercent of the workers were frtty-eight percent and sixty-seven percent of the subjects in food preparation and food delivery to the homebound clients, respectively. Meal preparation and food purchasing were mainly practiced by social welfare worker. Standardized recipes were not developed and meal preparation was controlled under the cook' and volunteers' experiences. The survey results of recipients who participated the home-delivered meals program showed that the mean of meal satisfaction score was rated over three point five in the five-point scale. There were significant differences between dependent variables(volunteer's kindness, plate waste, menu variety) and independent variables(sex, receiving periods and family type of the subjects). A Study on the Ability of the Meal Management of the Middle and High School Girls (중.고등학교 여학생의 식생활관리 능력에 관한 실태 연구)

  • The ability of the meal management of the middle and high school girls in kangweon area was surveyed by Likert scale questionnaire. The results were as follows: 1. The ability of the meal menagement of the middle school girls have good marks in table etiquette as 3.93 point, in using cooking apparatus as 3.86 points, in sanitation management as 3.76 points and in food selection as 3.70 points, but not so good in food preparation as 3.56 points, in meal planning as 3.22 points and in table setting as 3.20 points. 2. For the high school girls they have good marks in table etiquette(3.99 points), using cooking apparatus(3.96 points) food selection(3.95 points) and sanitation management(3.93 points) using cooking apparatus(3.96 points), food selection(39.5 points)and sanitation managment (3.93 points), but not so good in food preparation(3.64 points) meal planning and sanitation manabement(P<0.001) but no significant difference in food preparation, using cooking apparatus and table etiquette between middle and high school girls. In general they have a significant difference in ability of meal management between middle and high school girls.

A Study of Consciousness of and Participations in Meal Management of Married Men in Gyeonggi Area (경기지역 기혼남성의 식생활 관리의식 및 참여도에 관한 연구)

  • As a result of the sudden change of our society and the increasing employment of married women, it is necessary for men to participate in household works. The purpose of this study was to investigate consciousness of and participation in meal management of 30 to 50 years old Korean married men, living in Incheon and Ganghwa. The younger and the lower the education, consciousness about the meal management was lower. More than half of the subjects responded ‘Men can do participate in preparation of meals if necessary’ and the lowest of the subjects responded ‘Men should not participate in preparation of meals’. It showed that the consciousness of participation in meal management was changing positively. Although the consciousness of participation in meal management was positive, the real rate of meal management participation was not that high. Men were participated in grocery shopping, dish washing, cooking and menu planning in order. The average score of nutrition knowledge was high but there was no significant correlation between the nutrition knowledge and the participation in meal management. There were no correlations between the consciousness of and the participation in meal management. But there were strong correlations among each other in meal management behaviors such as grocery shopping, dish washing, cooking and menu planning. Our results suggested that nutritional education should be carried out in menu planning and cooking demanding knowledge and training.

A study on the trend analysis regarding the rice consumption of Korean adults using Korean National Health and Nutrition Examination Survey data from 1998, 2001 and 2005

  • The objective of this study was to provide information regarding trends of rice consumption of Korean adults based on different meal types. Respondent reports 24-hour recall data from the Korean National Health and Nutrition Examination Survey were used to assess daily rice consumption and intake ratios of rice for different meal types and places of preparation. Rice intake had gradually decreased from 224.6 g in 1998 to 190 g in 2001 and to 179.4 g in 2005. The rice consumption of Korean adults decreased every year in all ages for all places of meal preparation in 2001 and 2005 compare to 1998. Analysis for each meal type showed that rice intake at breakfast had not considerably changed, but rice intake had decreased at lunch and dinner. While the rice consumption ratio at lunch and dinner decreased, it also decreased or did not change at snack times except for the 19-29 age groups. All the age groups revealed comparable change in the analysis for meal types. There was some diversity between all age divisions in daily rice intake depending on place of meal preparation. The rice consumption by place of meal preparation was generally highest at home, lowest at other places, but it decreased in all places. The rice consumption at home was highest in the over 50 age group, lowest in the 20-30 age group. These changes seem to be related to food intake patterns of rice and substitutional foods in the diets and development regarding socio-economic status. So the need for further study on differences in rice intake based on socioeconomic levels and age group are indicated.

Study of the Time Use of Unmarried Single Households -With a Focus on Meal Acivities and Leisure by Gender and Employment Status- (청년 1인가구의 생활시간 사용 연구 -성별·취업여부에 따른 식사와 여가활동을 중심으로-)

  • This study analyzed time allocation in unmarried single household. It examined meal activities and leisure by gender and employment status using the 2014 time-use survey data of 1,664 cases provided by Statistics Korea. Descriptive statistics, a paired t-test, and regression were conducted using the SPSS 24 program. The results showed that the total time for meal activities in unmarried single households was 125 minutes. Most meal activities consisted of eating activities, and the meal preparation time was about 19 minutes. Females spent much longer time in meal preparation than males. Leisure time was 285 minutes, and the longest time spent of leisure activities was spent using medias. Males' total leisure time was longer than females' total leisure time. Finally, employed individuals spent much longer periods of time in leisure than unemployed individuals. All the results showed differences between genders and employment status.

A Study on the Status of the Employed and Housewives' Meal Management in Daejeon City (맞벌이가정과 일반가정의 식생활현황에 관한 비교 연구)

  • In order to obtain an information for the improvement of wives' meal management especially in dual-income families, the survey was carried out through questionaires to 159 married women teachers(employed wives: EW) and 157 housewives(HW) in Daejeon city, from the Sep. 20 to 30, 1983. Most of the two groups' wives did not plan menu(74.7 %), and considered taste firstly when meal preparation and food buying. In EW, time was more considered than the other points for meal preparation and cookbook was more used than other sources of cooking methods, while in HW, cost, and, the mass media (p<0.01). Among 6 convenience foods, sausage, ham were used more frequently in EW and instant noo-dles and fried fish cake, in EW. Both the two groups' dietary pattern of three meals was similar, but much more of the EW(56.1 %) purchased foods for between meals rather than prepared at home in comparision with the HW. Almost all the HW prepared three meals themselves but the EW did not so. In the EW, husband and mother-in-law often assisted with meal-related activities, but in the HE, daughters (p<0.01) . HE spent more time on meal-related activities than do EW (Hw: 4.1 hrs/day, Ew·: 3.2 hrs/day) . The preparation time for supper was longest among three meals. As the problems of meal management, both the two groups' wives pointed 'too much time' (43.1 %), 'lack of nutrition knowledge '(42.8 %), but EW' husbands, 'no variety of cooking method'(42.8 %), while HW' husbands, 'lack of nutrition knowledge'(34.3 %).

Disposal Consciousness of Foods Waste and Meal Management Behavior in Relation to Environmental Conservation of Housewives (주부의 환경보전을 위한 음식물 쓰레기의 처리의식 및 식생활 관리행동)

  • The purpose of this study were to examine the disposal consciousness of foods waste and meal management behavior related to environmental conservation, and to find out the ways to improve the disposal of foods waste. Data were collected from questionaire with 786 housewives who live in Chonbuk area. About 45% of foods waste consisted of vegetables and fruits. The levels of cooking(use) and idsposal behavior among meal management behavior were relatively high, but food preparation(buy) score was low. These results suggested that menu planning before food preparation, and buying some cleaned and trimmed foods in the market should be recommennded to reduce the foods waste. The levels of meal management behavior did not show any significant associaations with disposal consciousness of foods waste but were positively correlated to environmental conciousness. It could be thought that the effort of government administration to reduce and reuse of foods waste is needed to improve the desirable disposal behavior of that, and the well programmed enviornmental education should be more required and practical than increase the environmental conciousness.

  • Nowadays various organizations, such as hospitals, workers, students and families are requesting a model sample of standardized Korean meal plan to meet their nutritional requirement with daily food intake. Practical application of nutritional requirement in Korean meal is not yet established. This mainly comes form the lack of the research works on experimental cookery for the right amount of recipes of Korean meal , and no effect was ever paid for this angle by many specialist. Therefore, it is urgent to research and construct the standardized meal plan for Korean people. Contents of the present research are as follows ; 1) Standardization of recipes and the amounts : Various kinds of daily foods were selected for the purpose of recipes. The standardization of the recipes and the right amount were continuously attempted. 2) Research on the construction of nutritional meal plan : The method of constructing harmonious meal plan based upon the requirement, were studied. And the meal plans were constructed according to the different units of ages. Special meal plans were also constructed for the pregnant women and lactating women. 3) Evaluation for the nutritional adequacy were followed after the setting the various recipes.
