Microbiological Quality of Myungran Jeotkal and Its Ingredients and Improvement of Shelf-stability by Gamma Irradiation (명란젓갈 및 부재료의 미생물 오염도 및 감마선 조사를 이용한 유통안정성 향상)

  • Myungran Jeotkal, Korean fermented seafood, and its ingredients(hot red pepper powder, ginger, garlic, and seasoning mix) were irradiated with 0, 0.5, 1.0, 2.0, and 5.0 kGy of gamma rays and stored at 4C for 4 weeks to determine changes in microbiological and sensory characteristics. Water activities of Myungran Jeotkal, hot red pepper powder, ginger, garlic, and seasoning mix were 0.89 0.56, 0.98, 0.99, and 0.07, respectively. Myungran Jeotkal was observed to be initially contaminated. Total aerobic bacteria, yeast and mold, and coliform levels were 6.7, 4.3, and 3.6 log CFU/g, respectively. Irradiation at 2 kGy afforded approximately a 4 log reduction in total aerobic bacteria, and a 3 log drop in both yeast and mold levels and coliform bacteria(P<0.05). No viable microbial cells were detected in Myungran Jeotkal after 5 kGy of irradiation(at a detection limit of 101 CFU/g). The total aerobic bacterial level in red pepper powder was 6.3 log CFU/g and this component, of the tested ingredients, contributed most to the microbial contamination of Myungran Jeotkal. The initial count of total aerobic bacteria, 6.3 log CFU/g, was significantly reduced to 4.5 log CFU/g after irradiation(P<0.05). Sensory evaluation showed that gamma irradiation of up to 5.0 kGy did not adversely affect overall acceptability of Myungran Jeotkal or its ingredients during cold storage. Therefore, gamma irradiationwas effective to extend the shelf-life of Myungran Jeotkal.

Microbial Hazard Analysis of Manufacturing Processes for Starch Noodle (당면의 제조공정별 미생물학적 위해요소 분석)

  • The purpose of this study was to identify control points through microbiological hazard analysis in the manufacturing processes of starch noodles. Samples were collected from the ingredients, manufacturing processes, equipment and environment. Microbiological hazard assessments were performed using aerobic plate counts (APC), Enterobacteriaceae (EB), E. coli and five pathogens including B. cereus, E. coli O157:H7, L. monocytogenes, Salmonella spp., and S. aureus. The APC levels in raw materials were from 2.12 to 3.83 log CFU/g. The contamination levels after kneading were 4.31 log CFU/g for APCs and 2.88 log CFU/g for EB counts. APCs decreased to 1.63 log CFU/g and EB were not detected after gelatinization, but their levels slightly increased upon cooling, cutting, ripening, freezing, thawing, and separating. The reuse of cooling and coating water would be a critical source of microbial increase after cooling. After drying, APCs and EB counts decreased to 5.05 log CFU/g and 2.74 log CFU/g, respectively, and the levels were maintained to final products. These results suggest that the cooling process is a critical control point for microbiological safety, and the cooling water should be treated and controlled to prevent cross contamination by pre-requisite program.

Nutritive Value of Kluyveromyces fragilis and Candida utilis As Feed for Aquaculture (양식 사료로서 Kluyveromyces fragilis와 Candida utilis의 영양가)

  • This study was conducted in order to evaluate nutritive values of yeasts (Kluyveromyces fragilis and Candida utilis) according to growth stages (early log phase, log phase, stationary phase and death phase) and chemical treatment of their cell wall, Proximate, amino acids, fatty acids and nucleotides composition of the yeast samples was determined. Crude protein content was high in K. fragilis ($48\~59\%$) compared to C. utilis ($26\~43\%$). Crude lipid and fiber contents of the yeasts were below than $1.6\%$ and $3.3\%$, respectively. Conposition of aspartic acid, glycine, proline, leucine, Iysine and valine of K. fragilis were higher than those of C. utilis, and glutamic acid and arginine of C. utilis were higher than those of K. fragilis. Proximate and amino acids composition was not siginificantly influenced by growth stage of the yeasts. Major fatty acids of the yeasts in all growth stages were $C_{10-18}$. $C_{16-18}$ contents were relatively high in the early log or log phase and $C_{10-12}$ contents were relatively high in the stationary or death phase. However, n-3 highly unasturated fatty acids (C$\ge$20) in the all growth stages were not observed. This result indicated that these yeast strains could not be adequate as a dietary lipid source for marine fish. Composition of nucleotides and their related compounds (ATP ADP AMP, IMP and inosine) in the early log phase yeasts were lower than those in the log, stationary and death phase yeasts.

Comparison of Chlorine, Chlorine Dioxide and Ozone as Disinfectants in Drinking Water (정수소독공정에 이용되는 염소, 이산화염소, 오존 소독제의 비교, 고찰에 관한 연구)

  • The experiments for the characterization of inactivation were performed in a series of batch processes with the total coliform as a general indicator organism based on chlorine, chlorine dioxide and ozone as disinfectants. The water sam-ples were taken from the outlet of settling basin in a conventional surface water treatment system that is provided with the raw water drawn from the mid-stream of the Han River. The inactivation of total coliform was experimentally ana-lyzed for the dose of disinfectant contact time, pH, Temperature and DOC. The nearly 2.4,3.0,3.9 log inactivation of total coliform killed by injecting 1 mか1 at 5 minutes for chlorine, chlorine dioxide and ozone. For the inactivation of 99.9%(3 log), Disinfectants required were 1.70, 1.00 and 0.60 mか1 for chlorine, chlorine dioxide and ozone, respec-tively. The higher the pH is, the poorer the disinfections effects are in the range of pH 6-9 by using chlorine and ozone. But the irfluence of pH value on killing effects of chlorine dioxide is weak. The parameters estimated by the models of Chick-Watson, Hom, and Selleck from our experimental data obtained for chlorine are: log(N/ $N_{0}$ )=-0.16 CT with n= 1, log(N/ $N_{0}$ )=-0.71 $C^{0.87}$T with n$\neq$1, for Chicks-Watson model, log (N/ $N_{0}$ )= -1.87 $C^{0.47}$ $T^{0.36}$ for Hom model. For chlorine dioxide are: log(N/ $N_{0}$ )= -1.53 CT with n = 1, log(N/ $N_{0}$ )= -2.29 $C^{0.94}$T with n$\neq$1,, for Chicks-Watson model, log(N/ $N_{0}$ )= -3.64 $C^{0.43}$ $T^{0.24}$ for Hom model and for ozone are: log(N/ $N_{0}$ )= -2.59 CT with n = 1, log(N/ $N_{0}$ )= -2.28 $C^{0.36}$T with n$\neq$1, for Chicks-Watson model, log(N/ $N_{0}$ )= -4.53 $C^{0.26}$ $T^{0.19}$ for Hom model.19/ for Hom model.

O(logN) Depth Routing Structure Based on truncated Concentrators (잘림구조 집중기에 기초한 O(logN) 깊이의 라우팅 구조)

  • One major limitation of the efficiency of parallel computer designs has been the prohibitively high cost of parallel communication between processors and memories. Linear order concentrators can be used to build theoretically optimal interconnection schemes. Current designs call for building superconcentrators from concentrators, then using these to recursively partition the connection streams O(log2N) times to achieve point-to-point routing. Since the superconcentrators each have O(N) hardware complexity but O(log2N) depth, the resulting networks are optimal in hardware, but they are of O(log2N) depth. This pepth is not better than the O(log2N) depth Bitonic sorting networks, which can be implemented on the O(N) shuffle-exchange network with message passing. This paper introduces a new method of constructing networks using linear order concentrators and expanders, which can be used to build interconnection networks with O(log2N) depth as well as O(Nlog2N) hardware cost.   • This paper presents a data structure that implements a mergable double-ended priority queue : namely an improved relaxed min-max-pair heap. By means of this new data structure, we suggest a parallel algorithm to merge priority queues organized in two relaxed heaps of different sizes, n and k, respectively. This new data-structure eliminates the blossomed tree and the lazying method used to merge the relaxed min-max heaps in [9]. As a result, employing max($2^{i-1}$,[(m+1/4)]) processors, this algorithm requires O(log(log(n/k))${\times}$log(n)) time. Also, on the MarPar machine, this method achieves a 35.205-fold speedup with 64 processors to merge 8 million data items which consist of two relaxed min-max heaps of different sizes.

QSAR Modeling of Toxicant Concentrations(EC50) on the Use of Bioluminescence Intensity of CMC Immobilized Photobacterium Phosphoreum (CMC 고정화 Photobacterium phosphoreum 의 생체발광량을 이용한 독성농도(EC50)의 QSAR 모델)

  • Concern for the effects of toxic chemicals on the environment leads the search for better bioassay test organisms and test procedures. Photobacterium phosphoreum was used successfully as a test organism and the luminometer detection technique was an effective and simple method for determining the concentration of toxic chemicals. With EC50 a total of 14 chlorine substituted phenols benzenes and ethanes were used for the experiments. The test results showed that the toxicity to P. phosphoreum increased in the order of phenol > benzene > ethane and the toxicity also increased with the number of chlorine substitution. Quantitative structure activity relationship (QSARO) model can be used to predict EC50 to save time and endeavor. Correlation was well established with the QSAR parameters such as log P, log S and solvatochromic parameter(Vi/100 $\pi$, ${\beta}$m and am). The QSAR modeling was used with multi-regression analysis and mono-regression analysis. These analyses resulted in the following QSAR : $log EC_{50} =2.48 + 0.914 log S(n=9 R2=85.5% RE=0.378) log EC_{50}=0.35 - 4.48 Vi/100 + 2.84 \pi^* +9.46{\beta}m-4.48am (n =14 R2=98.2% RE=0.012) log EC_{50} =2.64 -1.66 log P(n=5, R2=98.8% RE=0.16) log EC_{50}=3.44 -1.09 log P(n=9 R2= 80.8% Re=0.207)$
