Effects of Kimchi Powder or Lactobacillus plantarum Added Fermented Sausages on Serum Lipid and Cholesterol Levels in Rats

  • This study was performed to investigate the serum lipid and cholesterol lowering effects of kimchi powder or Lactobacillus plantarum when added to fermented sausage in rats. Male SD (Sprague-Dawley) rats were divided in three groups and administered with the following diets for 6 wk: non-fermented sausage added diets (CON), kimchi fermented sausage added diets (KIM), and Lactobacillus plantarum fermented sausage added diets (PLA). The CON has significantly (p<0.05) higher food intake, body weight gains, and final body weight than the other two groups. The body weight of KIM was significantly (p<0.05) lower than that of the other groups. The weights of organs (heart, lung, liver, kidney, spleen, perirenal adipose tissue, and epididymal adipose tissue) were not affected by any treatments. The mean value of serum triglycerides (TG) concentration in KIM and PLA groups was not significantly different compared with CON. Total cholesterol, low density lipoprotein and high density lipoprotein levels in serum of KIM were significantly (p<0.05) lower than those of CON. The serum free cholesterol level and atherogenic index (AI) in KIM and PLA were significantly (p<0.05) lower than those of CON. In conclusion, dietary supplementations with kimchi powder fermented sausages or L. plantarum fermented sausages were effective for lowering serum lipid, cholesterol levels and atherogenic index in rats.

A Study on the Change of Growth and Serum Components in Rats by Feeding Low Protein Diet Supplemented with Processed food of Meat (저단백질식이(低蛋白質食餌)에 가공육류식품(加工肉類食品) 첨가급식시(添加給食時) 백서(白鼠) 성장(成長) 및 혈청성분(血淸成分)에 미치는 영향(影響))

  • This experiment was designed to observe some influence on the serum components of growing rats maintained with basal diet supplemented with sausage. Forty male Albino rats were used as the experimental animals and the subjects were divided into four diet groups (control group; feeding of basal diet containing 10.8% and 10.4% of protein and lipid respectively, A group; feeding of sausage containing 12.5% and 27.6% of protein and lipid respectively supplemented with basal diet every day, B group; feeding of sausage supplemented with basal diet once a three-day and C group; feeding of sausage supplemented with basal diet once a five-day) and each group was fed on the corresponding diet for forty-days. The contents of protein, lipid and cholesterol in their serum were determined. The result obtained are summarized as follows: 1) The final body weight and liver weight of the A group were increased more than other groups. 2) The protein contents in the serum of the B group was increased more than other groups. 3) The total lipid contents in the serum of the A group and B group were decreased compared with control group. 4) The total cholesterol, ester form cholesterol and free form cholesterol in the serum of the A group were decreased, but the total cholesterol and ester form cholesterol in that of the C group were increased compared with control group.

Effect of Kimchi Powder Levels and Pork Skin on the Quality Characteristics of Liver Sausages

  • The aim of this study was to evaluate the effect of kimchi powder levels (0, 1, 2, and 3%) and pork skin (5%) on the quality characteristics of liver sausages. The additions of the kimchi powder and pork skin improved the color, cooking yield, and sensory properties of the sausages. The addition of the pork skin and increasing concentrations of the kimchi powder significantly increased cooking yields. The moisture and protein contents of the sausages made with kimchi powder and pork skin were higher than those of the control (p<0.05). Due to the low pH of the kimchi powder, the pH values of the batter and sausages with added kimchi powder were lower than those of the treatment without kimchi powder (p<0.05). The control had the lowest hardness, gumminess, and chewiness values (p<0.05). For the sensory attributes of the samples, color, flavor, juiciness, and overall acceptability were higher in the treatments made with kimchi powder than in the treatments without kimchi powder, in which the treatment with 2% kimchi powder had the highest overall acceptability (p<0.05). In conclusion, the additions of kimchi powder and pork skin improved the quality characteristics of liver sausages.

The Study on Lipid Oxidation of Liver Sausage by Proportions of Liver and Processings. (간함량비율과 제조방법에 따른 간소시지의 지질 산패에 관한 연구)

  • Objectives of this study were to investigate the lipid oxidation of liver sausages, one of the most favorite meet products and to examine the applicability of pork liver to sausages. Sausages containing different proportions of pork liver were manufactured with various processes and were tested and analysed by means of lipid oxidation. Based on the basic recipe for manufacturing sausages, fifteen recipies were proposed with different combinations of ingredients, followed by evaluations on their contents of crude fat, AV, POV, and MA. Sausages manufactured with different methods(sliceable, spreadable, smoked spreadable) and different proportions of liver were also evaluated. In addition, the storage experiments were carried out. The findings from these experiments are summarized as follows : The content of crude fat was 17.12%. As the percentage of the liver increased, fat content of sausages siginificantly decreased. In the storage experiment, it was found that the acid value, peroxide value, and malonaldehyde content significantly increased in all samples regardless of the amount of liver or the storage time. The AV of experimental sausages was significantly increased by adding liver. There were significant differences in proportions of components but little differences were observed in contents among the samples.

A Study on Images and Consumption about Instant Food of Homemakers in Kyung-kido Area (한국 주부의 가공식품에 대한 인식 및 이용 실태에 관한 연구 -경기도 일부 지역을 중심으로-)

  • A survey on images and consumption for instant food for 419 housewives in Kyung-ki do were summarized as follows: 1) The thought of housewives takes 'convenient' as the best advantage in the image on instant food, generally speaking,'preference', 'hygienic concern' and 'eating frequently’ are moderate, while 'good for health' is shown with the lowest points. 2) The reasons why they take instant food are ascribed to the taste of the children by 63.6%, to 'convenient to cook' by 19.6%. 3) The reasons why they do not use instant food are attributed to 'bad for health’by 46.9% to 'too expensive' by 29.9%, and to 'doubtful in quality' by 16.3% 4) Instant noodle (Ramyun) and bread are consumed the most, and then consumption is shown from high to low in order of tomato-ketchup, ham, mayonnaise, instant liver and sausage. 5) Effects on purchasing instant food come from the date of manufacturing 43%, trade mark 24% the experience of previous use as high as 21.2%.

Quality Changes during Storage of Spreadable Liver Product (Spreadable 간 제품의 저장온도별 품질변화)

  • In order to expand the use of hog liver by the food industry, spreadable liver product was manufactured and quality changes were investigated depending on storage temperature at $-2^{\circ}C,\;5^{\circ}C\;and\;20^{\circ}C$ for 30 days. pH, thiobarbituric acid (TBA), volatile basic nitrogen (VBN), color, microbiological and sensory evaluation were carried out. Changes in pH values were not significantly different at different storage temperatures. TBA values were 0.6 mg MA/kg at $-2^{\circ}C$ after 30 days, 0.80 mg MA/kg at $5^{\circ}C$ after 21 days and showed 0.91 mg MA/kg at $20^{\circ}C$ after 14 days. The change in VBN content tended to increase during prolonged storage periods regardless of storage temperature. The product color tended to lighten over time, although there was no difference in a value of color during storage periods. Also, sensory evaluation results showed that the optimal storage temperature for the liver product was $5^{\circ}C$. The numbers of general bacteria increased to a level of 7.38 log CFU/g on storage 7 days in $20^{\circ}C$. This study showed that a viable spreadable liver product could be manufactured using hog liver and remains edible for at least 14 days when stored at temperatures below $5^{\circ}C$.

A study en the preference and food behavior of the children in primary school foodservice II (아동의 기호도와 식습관에 관한 조사연구 ( II ))

  • This study was performed to investigate the food preference trends of the children according to age increase and change of the times. The subjects were 1,450 children who are fifth grade of primary school and 2,000 juveniles who are senior high school in 1993. This survey data were compared with the Food preference study of the primary school aged children in 1987.' The results of this study can be summarized as follows 1. State of the general taste The subject had a high preferences to bulgogi(roast beef), panbroiled cuttlefish, steamed egg, fried sausage and donuts among the all sorts of 165 principal and subsidiary foods. But, fried beef liver, pancake, sweet potato with syrup, spinach soup and boiled rice with red bean didn't suit for their taste. Compared with survey data done in 1987, in present study significantly increased preferences to steamed food, pan frying and parboiled vegetables were shown. Particularly, food preference was changed with the cooking methods rather than materials. 2. Differences of the preference according to change of the times In present study, except the rice cakes preferences to all sorts of foods were improved and markedly increased preferences to steamed food, parboiled vegetables and mixed with seasonings were observed. Compared with 87's study deviation of the preference to cooking materials was decreased considerably. Preferences to salty tasted foods as like as stew and salted food were low no better than before. 3. Changes of preference according to age increase Among the principal foods, increased preferences to boiled rice and cereals were shown but to one-dish meal, bread and rice cake were decreased. Among the subsidiary foods, significantly decreased preference to frying was observed. Irrespectively of the cooking methods, preferences to fish and vegetables were improved. And in the frying and panbroiled foods, deviation of preferences to cooking materials were considerable, which means the fixation of food behavior.

A Study on the Preference on Protein Rich Foods in Kindergarten Children in Gyeong Nam Area (단백질(蛋白質) 급원식품(給源食品)을 기피(忌避)하는 일부(一部) 유치원(幼稚園) 아동(兒童)의 식이형성(食餌形成)과 그 요인(要因))

  • Preference on protein rich foods of 103 children, aged 4 to 6, of kindergarten located in Masan Jin-hea, Chang-won cities, was conducted April 25 to May 4, 1983. The results are summarized as follows ; 1) Seventy six percent of the subjects were from families having two three children, without grandmothers in the home About 43% of mother had completed high school, 37% had completed middle school. Mothers' ages ranged from 26 to 50 years, with 57.3% in the 31-40 age bracket. About 63% of the fathers were office and government employees, while 77.6% of mothers were unemployed. 2) Over 50% of the children disliked or refused pork, thick beef soup, liver, soybean, oyster, clam, anchovy, croaker, mackerel, loach, hairtail, porgy, flatfish, a walleye, pollack, a dried walleye pollack, a sciaenoid fish. Taste bad, the characteristic fragrance and lack of experience were the main reasons why the children refused these foods. Over 33% of the children were unexperienced liver, ribs of beef. the small intestine of cattle, a loach, an eel. Over 50% liked milk, egg, dried filefish, sausage, a cattlefish, beef, chicken, a crab, shrimp, bean curd. 3) Most of children hoped that their daily meals should be made in prettier, more sabory, and various ways. Mothers also hoped to have practical knowledge of nutrition and its influence on our body.

Studies on the Utilization of Korean Native Goat for Meat Production (육자원(肉資源) 개발(開發)을 위한 한국재래산양(韓國在來山羊)의 이용(利用)에 관(關)한 연구(硏究))

  • Korean native goats were used for meat production test, and summarized resalts are as follows. 1. The amounts of feed consumed for Korean Native Goat were significantly higher at day than at night. 2. The feed intake was decreased and live weight gain was lower for the summer period. 3. The concentrate consumption was increased when poor quality of pasture and native grass. 4. Compared between single bran feeding group$(T_2)$ and mixed grain feeding group$(T_3)$, the roughage consumption were similar in both groups. 5. By the use of feeding standard for feeding of Korean Native Goat, the feed convertion of T.D.N, D.C.P, and M. E were decreased. 6. It is necessary to periodically protect from contamination parasitic such like stomach worm, liver flack, nodula worm disease and coccidiosis. 7. The carcass rates of goat at 11-12 months age were higher in $T_3$ feeding group as 44.56% compared with $T_2$ feeding group as 42.17% and tethering group as 35.1% and also the dressed carcass percentage were 33.89%, 30.25% and 29.92% respectively. 8. By increasing the amouat concentrate feeds, fat content in muscle was increased but moisture and ash contents were decreased. 9. The fat caused unacceptable flavour was about 4 percent of total dressed goat meat. 10. Among the spices, clove and pepper were better to improved meat flavour for sausage and can meat processing 11. It was known that the quality of goat meat was suitable for meat processing.
