A Bibliographical Study of Korean Fan Fried Side dishes(Jeon) in Korean Literatures before the 1900s (1900년대 이전 문헌에 기록된 전 조리법의 문헌적 고찰)

  • Jeon refers to a type of Korean cuisine used as a side dish, made with various ingredients such as meat, vegetables, or fish, mixed with flour batter and coated with egg batter and then pan-fried on both sides with oil so that heat spreads through them well. The aim of this study was to provide a cornerstone of further research on Korean dietary life, by reviewing types, recipes and names of Jeon recorded in ancient cookbooks (Korean literatures) and by analyzing changes in recipes to make Jeon, which our ancestors used wisely as one type of side dish. Considering developments and changes recorded in old documents, the Jeon recipe appeared relatively later than the recipes for grilling, steaming et al, which had been developed much earlier, and it had not been recorded until the 1600s. Changes of Jeon recipes by time period are as follows. In the 1600s, there were three recipes: frying only with grain batter after preparation of ingredients, frying right after preparation of ingredients, and putting ingredients on already fried watery batter. These three recipes were still used in the 1700s, in addition to a new recipe, in which ingredients were oil-fried to be skewered. Today's recipe in which prepared ingredients are fried after getting coated with flour and egg only appeared in 1800s. This has been the main recipe for Jeon ever since. In that time period, there was more variety of recipes and ingredients than before. For instance, Jeon was used for soup or steamed dishes instead of being served as a dish itself. Buchimgae with mixed ingredients was also considered Jeon. In the 1900s, there appeared more names for Jeon as more sorts of ingredients got used, even though there were no new recipes for Jeon. The above-mentioned historical records show that traditional recipes for Jeon have been applied to various dishes, using diverse ingredients, and it might be a smart solution to today's problematic dietary habits involving excessive intake of nutrients, in that it provides a healthy way to add fat. In the same sense, the recipe for Jeon can play an active role in internationalization of Korean foods, in which healthiness is a main feature. According to ancient documents, the recipes for Jeon were used even for meals that were not side dishes, such as Jun-Gwa (Jung-Gwa), Jun-Yak and fried rice-cake. Also, there were dishes using the same recipes even without carrying the name of Jeon, like Buchim or Jijim. This might be worthy of further examination in culinary science.

Stain improvement in the white button mushroom 'Seolgang' and its varietal characteristics in Agaricus bisporus

  • The button mushroom (Agaricus bisporus) is one of the most widely cultivated important edible mushroom species. In the breeding of new button mushroom, 'Seolgang' was developed by crossing two monokaryons 'CM020913-27' and 'SSU423-31'. Because of the secondarily homothallism, only a small percentage of the basidia produce 3 or 4 spores, which are mostly haploid (n) and do not fruit. Single spore cultures derived from these types of spores produce a vegetative mycelium that also contain a variable number of genetically identical nuclei per cell called monokaryon. The lack of clamp connections between monokaryon and dikaryon required a series of mycelial culture and fruiting test. After crossing, hybrids were cultivated on a small scale and on a commercial scale at a farm. For this, the spawn was made by a commercial spawn producer and the spawned compost by a commercial compost producer. Mycelial growth of 'Seolgang' on CDA was better at $20^{\circ}C$ and $25^{\circ}C$ when it was compared with that of '505 Ho'. The mature cap shape of new strain 'Seolgang' is oblate spheroid and the immature cap shape is round to oblate spheroid. The cap diameter was 41.2 mm on average. In comparison with white strain '505 Ho', the strain had a yield that was 9% higher. It produced fruiting bodies which had a higher weight on average per fruiting body and were 19% firmer with a good shelf life. Days of fruiting body were 3-4 days later than those of '505 Ho'. The physical characteristics such as elasticity, chewiness, adhesiveness were better than that of '505 Ho'. Genetic analysis of the new strain 'Seolgang' showed different profiles compared to '505 Ho', CM02913-27, SSU413-31, when RAPD primers A02 and O04 were used.

  • Background: Prenatal exposure to infectious and/or inflammatory insults can increase the risk of developing neuropsychiatric disorder such as bipolar disorder, autism, and schizophrenia later in life. We investigated whether Valeriana fauriei (VF) treatment alleviates prepulse inhibition (PPI) deficits and social interaction impairment induced by maternal immune activation (MIA). Methods and Results: Pregnant mice were exposed to polyriboinosinic-polyribocytidilic acid (5 mg/kg, viral infection mimic) on gestational day 9. The adolescent offspring received daily oral treatment with VF (100 mg/kg) and injections of clozapine (5 mg/kg) for 30 days starting on the postnatal day 35. The effects of VF extract treatment on behavioral activity impairment and protein expression were investigated using the PPI analysis, forced swim test (FST), open field test (OFT), social interaction test (SIT), and immunohistochemistry. The MIA-induced offspring showed deficits in the PPI, FST, OFT, and SIT compared to their non MIA-induced counterparts. Treatment with the VF extract significantly recovered the sensorimotor gating deficits and partially recovered the aggressive behavior observed in the SIT. The VF extract also reversed the downregulation of protein expression induced by MIA in the medial prefrontal cortex. Conclusions: Our results provide initial evidence of the fact that the VF extract could reverse MIA-induced behavioral impairment and prevent neurodevelopmental disorders such as schizophrenia.

Growth and Maturity in Response to Planting Times in Supernodulating Soybean Mutants

  • This experiment was conducted to investigate the changes of growth and maturity and to clarify the function of supernodulating characters, excessive nodules and high biological nitrogen fixation rate (BNF), on maturity in response to different planting time in supernodulating soybean mutants. Two supernodulating soybean mutants, Sakukei4 and SS2-2, and their parent cultivars, Enrei and Shinpaldalkong2, were planted on May 24 and June 15, 2004. The degrees of the shortening of growth days by the planting time delay were 18 to 22 days in four cultivar, and there were no significant differences among the cultivars. However, four cultivars showed the different maturity properties. Sakukei4, mutated from Enrei, showed later maturity than that of Enrei, and 882-2, mutated from Shinpaldalkong2, showed earlier maturity than that of Shinpaldalkong2. The plant and nodule dry weights at R6 stage of Sakukei4 showed the smallest decrement and those of SS2-2 was showed the largest decrement by the delay of planting time. The photosynthetic rates of Sakukei4 during the late reproductive growth period were slowly decreased, however those of SS2-2 were steeply decreased in two planting time treatments. Overall, the growth of Sakukei4 was decreased slowly, however the growth of SS2-2 was decreased sharply according to the delay of planting time. The percentage of seed yield of Sakukei4 in June planting plot compared with May planting plot at R8 stage was $92\%$, which was the lowest decreasing rate of yield among the cultivars, and in the case of SS2-2, it was in $76\%$, the highest one. These results indicated that the responses of supernodulating mutants by the delay of planting time were very similar to the wild types. This means supernodulating characters in supernodulating soybean mutants might not affect to the maturity property. Additionally, the maturity property could be considered as an important characteristics to decide or to select on the developments of supernodulating soybean mutants, which have a low productivity by an excessive nodules, especially.

Classification of Flowering Group and the Evaluation of Flowering Characteristics for Soybean (Glycine max Merrill) Varieties from North Korea (북한 콩 품종의 개화기 군 분류와 개화특성 평가)

  • This study was conducted to evaluate the flowering characteristics of 22 soybean (Glycine max Merrill) varieties of North Korea and classify the flowering group by the flowering date. The flowering date and the days required for flowering with the different planting times on May 31, June 19, June 30, July 3, and July 4 were investigated at the agricultural experimental field of Korea University for three years from 2017 to 2019. The flowering date and the days for flowering of "Yeonpungkong", an early maturing soybean cultivar of Korea, were July 18 and 48 days, respectively, at the planting time of May 31, those of "Daewonkong", a mid-late maturing cultivar, were July 30 and 60 days, respectively. Based on the flowering dates of "Yeonpungkong" and "Daewonkong", North Korean soybean varieties were classified into six flowering groups. Eight North Korean soybean varieties had the flowering dates earlier than "Yeonpungkong", including "Brekkhat" classified into the early flowering group. The range of flowering date was July 2 to 15 at planting time of May 31. Twelve North Korean soybean varieties had flowering dates similar to or later than "Daewonkong", including "Chang Dan Bac Mok" classified into the mid-late flowering group. The range of flowering date was July 24 to 30 at the planting time of May 31. For flowering response to environmental stimulus, all of the mid-late flowering varieties of North Korea responded to "photosensitive or day-length" for flowering reaction. The early flowering varieties were divided by "photosensitive" response and "temperature" response variety.

Analystic study on Image Unification of National Symbols. (국가 상징물 이미지 통합연구)

  • Modern times is called the age of image. It means that our society's importance is transferring from the commodity-centered industrial society to intangible culture-oriented society Therefore, it is becoming very important that what kind of image, concept and psychological factor act upon the space, things, incident and time (event) which is constituted around our environment. As regards this standpoint, from the early period, that advanced countries have been taking advantage of the national symbol image very positive way and function for domestic things and place and event and so on which make a standout for the nation's positive image and taken an effort for promoting a pride of their fellow countrymen through this. This study approaches the basic images of national symbol which includes the country's name, national anthem, national flag through the design principle which could express some certain above level of pattern and composition. I suggested various applicative motif based on basic expressions of each individual image and the applied sample goods of this idea, and through the introduction of the process of image development, and I tried to offer a moment of more prosperity and development at a later time. This is for encouraging fellow citizens to use national symbol in the free and positive way which make them to increase a national pride, and give a familiar image in the citizens'daily life. I intended to offer basic materials for promoting ourselves whenever we need it. And also by the offering information on our nation for foreigners which make them to have a favorable impression of our nation. I tried to promote a positive national image.

Effects of Seeding Time on Growth Characteristics and Seed Production of Tall Fescue (파종시기가 톨 페스큐 생육특성 및 종자 생산성에 미치는 영향)

  • Tall fescue (Festuca arundinacea Schreb.) is one of cool-season adapted perennial grass species and has been cultivated worldwide as a important forage and lawn grass. In this study, we evaluated the seed production of new tall fescue cultivar, 'Purum', which was cultivated in Korea. Agronomic aspects of tall fescue were determined using seed production and forage nutritive value of straw at the National Institute of Animal Science, RDA from 2012 to 2013. The heading date according to the seeding time displayed 2~3 days differences. The harvested seed yields were the largest (1,711 kg/ha) when seeding date at September $17^{th}$, whereas it decreased when planted ten days earlier or later than at that time. The thousand-grain weight of gathering seeds was 2 g, and the germination rate was 80 to 83% showing no significant differences among the different seeding times. The yield of fresh weight and dry matter were the largest (63,556 kg/ha and 16,926 kg/ha, respectively) when planted at September $17^{th}$. The dry matter yield was gradually decreased with delaying seeding time as 10 days period. However, nutritive values of straw did not showed significant differences.

  • Recently Wireless sensor networks have been used for many purposes and is active for this study. The various methods to reduce energy consumption, which are actively being studied Wireless sensor network to reduce energy consumption, leading to improve transport efficiency, Cluster can be viewed using the research methods. Cluster method researches consists of a sensor node to the cluster and in among those they take out the Cluster head node and Cluster head node is having collects sensing information of circumferential nodes sensing to sink node transmits. Selected as cluster head sensor nodes so a lot of the energy consumption is used as a cluster head sensor nodes is lose a shorter life span have to be replaced by another sensor node. In this paper, to complement the disadvantages of a cluster-mesh method, proposes to manage memory efficiently about filtering method for sensing data. Filtering method to store the same data sensing unlike traditional methods of data filtering system sensing first sent directly by the hashing algorithm to calculate the hash table to store addresses and Sensing to store data on the calculated address in a manner to avoid duplication occurred later, and sensing data is not duplicated by filtering data to be stored in the hash table is a way.

Estimation of Genetic Parameters of Body Weights in Hanwoo Steers(Korean Cattle), Bos Taurus Coreanae Using Random Regression Model (임의회귀모형을 이용한 한우 거세우 체중의 유전모수 추정)

  • The study aimed to estimate genetic parameters of body weights in Hanwoo steers using random regression model and compare it with single trait animal model. A total of 1,372 Hanwoo steers that belonged to progeny testing program of the Hanwoo Genetic Improvement conducted at the Livestock Improvement Main Center of the National Agricultural Cooperative Federation (LIMC-NACF) in Rep. of Korea were used. Results of the random regression model fitting quadratic function revealed heritability values from 0.17 to 0.30 for the whole testing days up to 800 days. The results of the animal model showed estimated heritability values ranged from 0.24 to 0.36. Estimates of permanent environmental correlations tended to increase with increasing test in days. Unlike in the direct genetic correlation that at early stage the estimate was slightly negative it was 0.30 then increased to approach unity at later stage of test. Comparing the results between random regression model and the animal model showed not much differences and both followed similar pattern and therefore the use of random regression model for the national genetic evaluation of Hanwoo could be implemented.

Stem Cells and Cell-Cell Communication in the Understanding of the Role of Diet and Nutrients in Human Diseases

  • The term, "food safety", has traditionally been viewed as a practical science aimed at assuring the prevention acute illnesses caused by biological microorganisms, and only to a minor extent, chronic diseases cause by chronic low level exposures to natural and synthetic chemicals or pollutants. "food safety" meant to prevent microbiological agents/toxins in/on foods, due to contamination any where from "farm to Fork", from causing acute health effects, especially to the young, immune-compromised, genetically-predisposed and elderly. However, today a broader view must also include the fact that diet, perse (nutrients, vitamins/minerals, calories), as well as low level toxins and pollutant or supplemented synthetic chemicals, can alter gene expressions of stem/progenitor/terminally-differentiated cells, leading to chronic inflammation and other mal-functions that could lead to diseases such as cancer, diabetes, atherogenesis and possibly reproductive and neurological disorders. Understanding of the mechanisms by which natural or synthetic chemical toxins/toxicants, in/on food, interact with the pathogenesis of acute and chronic diseases, should lead to a "systems" approach to "food safety". Clearly, the interactions of diet/food with the genetic background, gender, and developmental state of the individual, together with (a) interactions of other endogenous/exogenous chemicals/drugs; (b) the specific biology of the cells being affected; (c) the mechanisms by which the presence or absence of toxins/toxicants and nutrients work to cause toxicities; and (d) how those mechanisms affect the pathogenesis of acute and/or chronic diseases, must be integrated into a "system" approach. Mechanisms of how toxins/toxicants cause cellular toxicities, such as mutagenesis; cytotoxicity and altered gene expression, must take into account (a) irreversible or reversal changes caused by these toxins or toxicants; (b)concepts of thresholds or no-thresholds of action; and (c) concepts of differential effects on stem cells, progenitor cells and terminally differentiated cells in different organs. This brief Commentary tries to illustrate this complex interaction between what is on/in foods with one disease, namely cancer. Since the understanding of cancer, while still incomplete, can shed light on the multiple ways that toxins/toxicants, as well as dietary modulation of nutrients/vitamins/metals/ calories, can either enhance or reduce the risk to cancer. In particular, diets that alter the embryo-fetal micro-environment might dramatically alter disease formation later in life. In effect "food safety" can not be assessed without understanding how food could be 'toxic', or how that mechanism of toxicity interacts with the pathogenesis of any disease.
