다시마를 첨가한 빵의 저장중 품질 특성 (Effect of Laminaria Addition on the Shelf-life and Texture of Bread)

  • Effects of laminaria powder(0.1%, 0.5% and 1.0%) on self-life and texture of bread were investigated. Added laminaris inhibited the growth of bacteria and the decrease the moisture content and pH value, and the more laminaria was add, the higher degree of inhibition of those was observed. Results of texture analysis showed that there was no significant differ each treatment and control(no added laminaria powder).

다시마 분말 첨가 스펀지 케이크의 품질 특성 (Quality Characteristics of Sponge Cake Added with Laminaria japonia Powder)

  • 다시마 분말을 밀가루 중량에 대해서 3%, 5%, 7%와 9%의 비율로 첨가하여 제조한 스펀지 케이크의 물리적 관능적 특성을 검토해본 결과, 다시마 분말 첨가 스펀지 케이크의 수분함량은 첨가구간의 유의적 차이는 없었으며, 조단백질 함량은 대조구가 가장 낮았고, 다시마 분말 첨가량이 증가할수록 증가하였다. 조지방 함량은 대조구와 다시마 분말 첨가구 간의 유의적 차이가 없었다. 회분 함량은 대조구가 가장 낮은데 비해 다시마 분말 첨가량이 증가할수록 유의적으로 증가한 것을 볼 수 있었다. 다시마 분말 첨가 스펀지 케이크의 탄수화물 함량은 대조구와 첨가구 간의 유의적 차이는 없었다. 비중은 대조구가 가장 낮게 나타났으며, 대조구에 비해 다시마 분말 첨가군의 비중이 유의적으로 증가하는 것으로 나타났다. 굽기 손실은 대조구가 가장 낮았고, 9% 첨가구가 가장 높게 나타났으며, 반죽 수율은 대조구가 가장 높았고, 9% 첨가구가 가장 낮았다. 다시마 첨가에 의하여 케이크의 색은 다소 어둡고 푸른색을 띄는 변화를 보였다. 밝은 정도를 나타내는 L값은 대조군이 다른 첨가군들에 비해 유의적으로 높게 평가되었고, 다시마 첨가량이 증가할수록 유의적으로 감소하여 다시마 분말 9% 첨가구가 가장 어두운 색을 나타내었다(p<0.05). 적색도를 나타내는 a값도 다시마 분말 첨가량이 증가할수록 유의적으로 증가하였다. 황색도를 나타내는 b값은 다시마 분말 첨가량이 증가함에 따라 유의적으로 감소하였다(p<0.05). 다시마 분말 첨가량에 따른 스펀지 케이크의 texture 특성으로 경도(hardness), 탄력성(springiness), 응집성(cohesiveness), 점착성(gumminess), 씹힘성(chewiness), 회복탄력성(resilience)을 검토해본 결과, 3%, 5%와 7% 첨가구는 대조구와 비교하여 그 물리적 특성이 비슷하거나 큰 차이가 없었으나, 9% 첨가구의 경우 스펀지 케이크의 texture로서 바람직하지 않은 것으로 나타났다. 스펀지 케이크의 외관은 다시마 분말 첨가량이 증가할수록 부피와 높이가 감소하였으며, 가운데 부분이 약간 주저앉은 것을 확인할 수 있었다. 스펀지 케이크의 전반적 기호도, 색, 향기, 조직감, 맛에 대한 관능적 특성을 조사한 결과, 3%와 5% 첨가구에 대한 전반적 기호도와 맛에 대한 선호도가 높은 것으로 유의성(p<0.05) 있는 결과가 나타났다. 다시마 분말 첨가 스펀지 케이크의 개발 가능성 검토를 위해 다시마 분말을 다양한 수준으로 첨가한 케이크를 제조하여 물리적 관능적 특성을 검토해본 결과, 다시마 분말 3% 첨가 스펀지 케이크와 5% 첨가 스펀지 케이크가 물리적 특성과 관능적 특성을 모두 만족시킬 수 있는 첨가량임을 확인할 수 있었다.

  • 본 연구에서는 다시마의 생리 활성과 기능성을 이용한 고부가가치 식빵의 제품화 가능성을 탐색할 목적으로 다시마 가루를 2.5%,5%, 7.5%첨가한 식빵을 제조하여 식빵의 물리화학적 특성과 관능검사를 실시하였으며 가장 적절한 다시마 가루의 첨가 수준을 알아보고자 하였다. 그 결과를 요약하면 다음과 같다. 다시마 가루를 첨가한 반죽의 제빵 적성을 알아보기 위하여 온도 27$\pm$1$^{\circ}C$, 상대 습도 75%의 발효 조건에서 90분간 반죽의 발효팽창력을 측정한 결과, 다시마가루의 첨가량이 증가할수록 팽창력 이 감소하는 것을 알 수 있었다. 그러나 2.5% 다시마 첨가 수준에서는 대조군과 비슷한 발효팽창력을 나타내었다. 다시마 가루 첨가 식빵의 부피는 다시 마 첨가량이 증가할수록 감소하였으나 2.5% 다시마 첨가시까지는 부피에 거의 영향을 미치지 않았다. 다시마첨가 식빵의 무게는 크게 차이는 나타나지 않았으나 7.5% 첨가시에는 유의적으로 감소하였다. 색도 측정 결과 식 빵 내부의 명도를 나타내는 L값, 적색도를 의미하는 a값은 다시마가루의 첨가량이 증가함에 따라 유의적으로 감소하였고 황색도를 나타내는 b값은 다시마 가루 첨가량이 증가함께 따라 증가하였다. 즉, 다시마 가루를 첨가할수록 명도는 줄어들고, 적색이 감소하면서 황색이 증가하는 경향을 나타내었다. 식빵의 조직감을 보면 다시마 첨가량이 많아질수록 견고성, 부서짐성은 증가하였으나 점착성, 탄력성, 응집성은 다시마 첨가량에 따른 유의적인 차이가 없었다. 관능검사 결과는 20대 여대생과 50대 주부의 두 집단으로 나누어 분석하였는데 두 집단간에 다시마 가루 첨가 식빵에 대한 기호가 유의적으로 다른 것으로 나타났다. 20대 여대생의 경우 다시마 첨가량이 증가할수록 기호도가 감소하였으나 2.5% 다시마 첨가군에 대한 평가는 전반적으로 좋게 나타났다. 반면 50대 주부들의 경우에는 2.5% 다시마 첨가한 식빵에 대한 평가점수가 대조군보다 높았다. 5% 다시마 첨가에서도 대체적으로 대조군과 비슷한 기호도를 나타내었다. 이상의 결과를 종합해 보면 다시마 가루를 2.5% 첨가한 식빵을 제품화하면 일반적인 식빵에 비해 다시마의 생리 효능을 활용하면서 소비자들의 높은 호응을 기대해볼 수 있을 것으로 사료된다.

  • This study examined the effects of the dietary inclusion of Porphyra and sea tangle Laminaria japonica on the growth, feed utilization, body composition, and plasma chemistry of juvenile Korean rockfish Sebastes schlegeli. Eight hundred and forty juvenile fish averaging 5.0 g were allocated 40 fish per tank to 21 180-L flow-through tanks. Seven experimental diets were prepared: control (Con) without additive, 0.5 and 1% Porphyra extract (PE), 3% Porphyra powder (PP), 0.5 and 1% sea tangle extract (STE) and 3% sea tangle powder (STP), referred to as PE-0.5, PE-1, PP-3, STE-0.5, STE-1, and STP-3, respectively. Each additive was included in the experimental diet at the expense of the same amount of wheat flour. Each experimental diet was fed to triplicate groups of fish. The experimental diets had no effect on the survival, weight gain or specific growth rate of the fish, feed consumption, feed efficiency ratio, protein efficiency ratio, protein retention, hepatosomatic index, condition factor, moisture or crude protein content of the entire body excluding the liver or moisture, crude protein or crude lipid content of the liver. None of the plasma parameters were affected by the experimental diets. Based on these results, the dietary inclusion of Porphyra and sea tangle did not affect the growth, feed utilization, body composition or plasma chemistry of juvenile Korean rockfish.

만성퇴행성 질환에 미치는 다시마(Laminaria japonica)와 후코이단 성분의 영향 (Effects of Sea Tangle (Laminaria japonica) and Fucoidan Components on Chronic Degenerative Diseases)

  • This study was designed to investigate the effects of sea tangle (Laminaria japonica) extract and fucoidan components on chronic degenerative diseases. Sprague-Dawley(SD) male rats (210$\pm$5g) were fed experimental diets: Dasi-Ex group: dasima extract powder of 4.0% added to control diet; Fuco-I, II and III groups: fucoidan powder of 1, 2 and 3% added to Dasi-Ex group for 45 days. Triglyceride (TG) levels in serum were significantly lower (10~15%) in Fuco-I, II and III groups compared with control group. Total cholesterol levels were significantly decreased (7~10% and 15~ 35%) in brain mitochondria and microsomes of Fuco-II and III group compared with control group. LDL-cholesterol levels were remarkably decreased (20~30%) in Dasi-Ex and Fuco-I, II, III groups, but HDL-cholesterol levels were significantly increased (10~12%) in Fuco-II and III groups only compared with control group. The ratios of HDL/total cholesterol resulted in a marked increase (3 5~55%) in Dasi-Ex and Fuco-I, II, III groups, but atherogenic indices were remakably decreased (40~50%) in Dasi-Ex and Fuco-I, II, III groups compared with control group. Membrane fluidities were remarkably increased (45~70% and 38~42%, respectively) in brain mitochondria and microsomes of Fuco-II and III groups compared with control group. Administrations of fucoidan added to dasima effectively decreased TG, total and LDL-cholesterol, and atherogenic index, while also effectively increased HDL-cholesterol, HDL/total cholesterol ratio, and membrane fluidity, suggesting chronic degenerative diseases were very effectively prevented by the administration of fucoidan component.

참전복 사료의 해조류 및 spirulina 첨가 효과 (Effects of Supplemental Macroalgae and Spirulina in the Diets on Growth Performance in Juvenile Abalone(Haliotis discus hannai))

  • A 20-week growth trial was conducted in flow-through aquarium system to investigate the effects of supplemental macroalgae and spirulina in the diets on growth and body cmposition in juvenile abalone (Haliotis discus hannai). Four replicate groups of the abalone averaging 65mg were fed one of ten isonitrogenous (34%) and isolipidic (7.5%) diets containing 8.1% Ulva, 7.5% Undaria, 11% Laminara, 11% Sargassum, spirulina (5, 10 and 15%), or dried Undaria powder (10 and 20%). In addition, these formulated diets were compared with natural food(dried Undaria). Survival rate of abalone were not significantly affected by the different dietary macoralgae sources, spirulina or dried Undaria powder levels (P>0.05). Weight gain and soft body weight of abalone fed the diet containing Sargassum was significantly higher (P<0.05) than those of abalone fed the diets containing Laminaria, 20% dried Undaria powder and natural food. Survival rate, weight gain, soft body weight and shell length of abalone fed natural food were lowest (P<0.05) among all diet. Moisture, protein and lipid contents of soft body were not influenced by experimental diets except natural food. Lipid content of abalones fed natural food was significantly lower than those of abalone fed other diets (P<0.05). These data indicate that abalone can more efficiently utilize Sargassum than Ulva, Undaria, Laminaria or spirulina.

논두렁 물의 미생물군으로부터 해조분해능을 갖는 균주의 분리 (Isolation of Seaweed Hydrolytic Strains from Microfloras in Rice field Ditch Water)

  • Various bacterial strains were isolated from rice field ditch water, and their seaweed degrading activities were investigated. They were incubated in a liquid medium of sea tangle (Laminaria iaponica) and sea mustard (Undaria pinnatifida) powder for 3 weeks. Ratios of reduced sugar to total sugar of the liquid medium were measured once a week. Ratios of reduced sugar to total sugar of 27A311, 27C221 27A111 and 27B121 strains were highest. Accordingly, these four strains were incubated in 3 different liquid media of sodium alginate, sea tangle powder, and sea mustard powder for 3 or 4 weeks. The ratios of reduced sugar to total sugar and cell growth were measured once a week. Cell growth was higher in 27A111 and 27C221. Ratios of reduced sugar to total sugar was higher for 27C221 in the liquid mediums with sodium alginate and sea mustard powder, and for 27A111 in the liquid medium with sea tangle powder.

  • This study was designed to investigate the effects of sea tangle (Laminaria japonica) extract and fucoidan components on anti-aging action. Sprague-Dawley(SD) male rats (210$\pm$5g) were fed experimental diets Dasi-Ex group: sea tangle extract powder of 4.0% added to control diet; Fuco-I, II and III groups: funcoidan powder of 1, 2 and 3% added to Dasi-Ex group for 45 days. Hydroxyl radical (.OH) formations were significantly inhibited (10-20% and 25-30%) in serum and brain mitochondria of Dasi-Ex and Fuco-I, II and III groups compared with control group. Significant differences in .OH formations of brain mitochondria in Dasi-Ex and Fuco-I groups could not be obtained, but.OH formations of brain microsomes resulted in a significant decrease (15-20%) in Fuco-II and III groups compared with control group. Basal oxygen radical (BOR) formations were significantly decreased about 10% and 13-15% in brain mitochondria of Dasi-Ex and Fuco-I group, and Fuco-II, III groups, and also decreased about 10% and 15-20% in brain microsomes of Dasi-Ex and Fuco-I groups, and Fuco-II, III groups. LPO levels of brain mitochondria and microsomes were significantly inhibited about 10% in Dasi-Ex and Fuco-I, II groups and 15% in Fuco-III groups. Oxidized proteins (>C=O) were significantly inhibited about 10% in serum of Dasi-Ex and Fuco-I, II, III groups and brain mitochondria of Dasi-Ex group, while remarkably inhibited (30~35%) in brain mitochondria of Fuco-I, II and III groups. Nitric oxide (NO) levels were significantly inhibited (12~15%) in serum of Fuco-I, II and III groups, but there no significant difference in serum NO levels of Dasi-Ex group. Superoxide dismutase (SOD) activities were remarkably increased (30~ 60%) in serum of Fuco-I, II and III groups, but there were no significant differences in SOD activities in serum of Dasi-Ex group. Catalase (CAT) activities were significantly increased about 20% in serum of Dasi-Ex and Fuco-I, II, III groups. Mn-SOD activities in brain mitochondria were significantly increased about 17% in Dasi-Ex group, while remarkably increased 26~36% in Fuco-I, II, III groups. Cu,Zn-SOD activities in brain cytosol were dose-dependently of fucoidan increased 10%, 12% and 18%, respectively, compared with control group. These results suggest that anti-aging effects of fucoidan may play a pivotal role in attenuating a various age-related changes such as chronic degenerative disease and senile dementia.

추출 및 건조방법이 다시마 (Laminaria japonica) 알긴산의 물성에 미치는 영향 (Effects of Extracting and Drying Method on Physical Properties of Alginates from Sea Tangle, Laminaria japonica)

  • In order to choose the manufacturing method for extracting alginates from sea tangle, Laminaria japonica, three methods were applied. In Method I, alginates were extracted with NaOH solution from sea tangle powder and extracted alginates were precipitated and converted to alginic acid by $CaCl_2$ and HCI solution. Then alginic acid was converted to sodium alginates with $Na_2CO_3$ solution. Sodium alginates were precipitated with methyl alcohol and were resolved with hot water and this step was repeated three times. Method II was same to Method I except final step including that sodium alginates were precipitated and washed with methyl alcohol three times. Method III included that sodium alginates were extracted with $Na_2CO_3$ solution from sea tangle powder then sodium alginates were precipitated and washed with methyl alcohol three time. Extracting time increased with Increasing extracted alginates amounts but increasing rates were below $0.4\%/h.$ Alginates amounts recovered by Method III showed above 2 times more to those by Method I and II. Extracting time increased with increasing ash amount of sodium alginates but increasing rates were below $0.1\%/h.$ and that of sodium alginates extracted by Method III showed higher value $(5\%)$ than those by Method I and II. In the sodium alginates prepared by Method III, the amount of ash in alginates dried by air was $34.4\%,$ that by vacuum freeze drying was $47.8\%.$ Extracting time increased with decreasing average molecular weight (MW) and degree of polymerization (DP) of sodium alginates, MW and DP of alginates prepared by Method III were higher than those by Method I and II In same extracting time. Extracting time increased with decreasing rate of apparent viscosity change (SAV) of alginates solution, and SAV of alginates prepared by Method III showed higher value than those by Method I and II in same extracting time. SAV of alginates dried by air was higher than that by vacuum freeze drying. Relating equation among SAV MW and DP were MW = 60.066 (SAV) -93.950, DP =309.760 (SAV) -485.084 and MW = 0.914 (DP)+0.213.

  • This study was performed to determine effects of dietary inclusion of various concentrations and sources of sea tangle Laminaria japonica on growth, body composition and plasma chemistry of juvenile black porgy Acanthopagrus schlegeli. Juvenile fish (N=810; average mass=8.9 g) were distributed among twenty-seven 200 L flow-through tanks (30 fish per tank). Nine experimental diets were prepared: control (Con) without additives; sea tangle powder at 0.1%, 0.5%, 1%, 2%, 3% and 5%, (P-0.1, P-0.5, P-1, P-3 and P-5 diets, respectively); and fresh sea tangle (F-1); and 1% sea tangle extract (E-1). Each powdered additive was substituted for an eqaul amount of wheat flour, and the extract was substituted for an equal amount of water in the respective experiemtnal diets. Each diet was fed to triplicate groups of fish. Weight gain and feed conversion ratio were not affected by the experimental diets. Feed consumption by fish fed the P-1 diet was higher than that of fish fed the P-3 and P-5 diets. Moisture, crude protein, crude lipid, whole-body ash content (excluding the liver), liver moisture, and crude protein and lipid contents of fish were not affected by the experimental diets. None of the fish plasma criteria were affected by the experimental diets, with the exception of plasma glucose. In conclusion, dietary inclusion of various concentrations and sources of sea tangle did not significantly affect the growth, feed efficiency, body composition or plasma chemistry of juvenile black porgy.
