Changes in Physicochemical components and Bacterial Count during the Fermentation of Onion Kimchi (양파 김치류의 숙성중 이화학적 성분 및 세균수의 변화)

  • To develop a functional Kimchi utilizing onion, 5 different Kimchi with onion used as a major ingredient were formulated. The changes in pH. titratable acidity, reducing sugar. total bacterial count, and the number of lactic acid bacteria in the process of fermentation were studied A. onion Kimchi Control. B : onion Kimchi added with oyster, C : onion Kimchi added with salted shrimp, D : onion Kimchi added with oyster, cucumber, and a bit of radish, E : onion Kimchi added with salted shrimp, cucumber, and a bit of radish. pH of onion Kimchi decreased during storage, but titratable acidity increased. The pH values of onion Kimchi were not significantly different among groups, the changes in pH during fermentation were the lowest in A, and changes in B and D were lower than those of C and E. Salt concentration tended to decrease during the fermentation process, and the changes in salt concentration were lower in D and E than in B and C. Reducing sugar content maximized at 4 days of fermentation and decreased after 12 days. The number of lactic acid bacteria increased during first 4 days of fermentation and decreased after 12 days. Total lactic acid bacterial count were the most lowest in A.

Effects of Milk Products on Acid Production by Lactic Acid Bacteria in Soy Milk and Quality of Soy Yogurt (두유(豆乳)에 첨가된 유제품이 젖산균의 산생성(酸生成)과 대두요구르트의 품질에 미치는 영향)

  • Soy milk prepared from soy protein concentrate was added with each of four types of milk products. Acid production and growth of five species of lactic acid bacteria(LAB) in soy milk and sensory property of soy yogurt were investigated. Acid production by LAB increased in proportion to concentration of milk products added to soy milk. Among the four milk products tested, whey powder or skim milk powder stimulated acid production by LAB more than whole milk powder or modified milk powder. Stimulating effect by whey powder on acid production by LAB was greater than other milk products at low concentration. Acid production by LAB in soy milk added with glucose or milk products significantly increased during fermentation. Sensory property of soy yogurt added with whole milk powder or skim milk powder was better than that of reference (soy yogurt added with glucose) while sensory property of soy yogurt added with whey powder or modified milk powder was Inferior to that of reference.

  • The objective of this study is to investigate the effect of Codonopsis lanceolata Bentk et Hook on the growth of lactic acid bacteria and some harmful bacteria. Extract of C. lanceolata was obtained by hydrothermal extraction method and used intactly without concentration. To investigate the inhibitory effect on the growth of harmful bacteria, we used agar dilution method. On agar plate containing more than 25% extract, they showed decreased number of colonies.   • The purpose of this study was to compare the level of blood glucose and lactate and also plasma LDH production of college women in relation to exercise. College female student which majored athletics (E, exercise group, n=43) were recruited and compared with college women (Control group, n=60). Anthropometric measurements, triceps skinfold thickness were measured of two groups. And body fat mass and waist and hip circumferences were measured and the concentrations of plasma glucose, lactic acid and lactic acid dehydrogenase (LDH) were also assayed. Average height and weight of E group were slightly higher than that of control group. but there is no difference in body mass index (BMI) and waist hip ratio (WHR) between two groups. The percentage of body fat and body fat mass(kg) in E group was slightly lower than that of control group. Plasma glucose and LDH levels of E group were higher than those of control group, and plasma lactic acid concentration was significantly increased.

Nitrite depletion and Antimicrobial activity of lactic acid bacteria isolated from Kimchi. (김치에서 분리된 유산균의 Nitrite 소거능과 항균성)

  • This study was carried out to develop a new starter culture for the fermented meat products. Nine strains of lactic acid bacteria isolated from kimchi inhibited the growth of Listeria monocytogenes. Among these nine strains, three strains showing antimicrobial activities against Escherichia coil, Staphylococcus aureus and Vibrio paraphaemolyticus were selected for further study. Growth of the strains was inhibited in MRS broth containing 5% of NaCl at $21^{\circ}C$, but not at $32^{\circ}C$. Nitrite depletion ratio of the strains was above 70% after 48h incubation at $21^{\circ}C$, and above 90% after 48h at $32^{\circ}C$ in MRS broth containing $200\mu$g/ml of nitrite, Nitrite concentration of cured meats and ground meats was depleted from 87.6% to 92.3% and from 45.5 to 640.6% by addition of the selected strains for 24h at $32^{\circ}C$, respectively. Three strains were identified as Lactobacillus plantarum(N4) and Lactobacillus lactis ssp. lactis(N-7, an-8).

  • This study was undertaken to assess the effect of the Korean red ginseng extracts on the growth of lactic acid bacteria, such as Lac. acidophilus and Str. thermophilus. The results are summarized as follows: 1. The growth of all the lactic acid bacteria tested in this study was not influenced when the skim milk was added with the red ginseng extracts in concentration of less than 4.0%. But the growth was remarkably inhibited in the presence of 8.0% red ginseng extracts in skim milk. 2. Titratable acidity was more or less increased by addition of red ginseng extracts as compared with control except when the amount of 8.0% red ginseng extracts were added into skim milk. 3. No particular effect was observed in the growth of lactic acid bacteria in case of addition of saponins. But the remarkable inhibitory effect was observed in the skim milk with the amount of 1.2mg/ml the fractions extracted by ethyl ether from red ginseng extracts.

  • Production of calcium lactate very useful for medical supplies of Ca-therapy was obtained by lactic acid fermentation of lactobacillus sporogenes, a spore forming lactic acid bacterium. Corn steep liquor 1%, soybean enzyme hydrolysate 3%, yeast extract powder 2% can substitute for yeast extract and peptone as nutrient sort traces in fermentation medium using 10% glucose concentration. In the calcium lactate production medium containing yeast extract powder 2%, glucose 18%, CaCO3 12%, the lactic acid fermentation was carried out at 45$^{\circ}C$ for 4days with continuous agitation of 100 rpm. As results, fermentation yield was 97.5%. The five steps such as protein coagulation, decolorizing evaporating, crystallizing, and drying were carried out to harvest calcium lactate from 10l of supernatant of fermented medium to be removed cell and CaCO3. As results, 2065.0g of white crystal calcium lactate dihyrate was recovered and a yield of 84.9% was obtained.

  • Lactic acid bacteria are dominant microflora in fermented kimchi. In this study, lactic acid bacteria were isolated from 5 kinds of fermented kimchi and determined their physiologic property. Total 64 of LAB were isolated from kimch samples. In this study, 8 strains of them were selected by pH and bile salt tolerance test. HFI 58, HFI 40, and Yeulmu E strain had significant cholesterol lowering effect in vitro test. These were made of special feed of chicken by WooJin B&G. A Diet was tested for 5 weeks. The feed of special material supplement HFI58 groups had significant lower cholesterol concentration in egg yolk.

  • Bioconversion of aglycone-formed isoflavones from glycoside-formed isoflavones by commercial lactic acid bacteria in fermented soybean paste was evaluated. Enterococcus faecium KCTC 13410 showed the most resistant capacity and Lactobacillus acidophilus KCTC 3925 had a sensitive susceptibility at a high NaCl concentration (13.2%) in fermented soybean paste. Among the 5 strains tested, Lac. acidophilus KCTC 3925 showed the highest relative ratio of aglycone-formed isoflavones to total isoflavones in fermented soybean paste. Production of exopolysaccarides (EPS) by lactic acid bacteria was compared using de Man, Rogosa, and Sharpe medium containing 1% sucrose at $37^{\circ}C$ for 48 h. Among the 5 lactic acid bacteria, Lac. acidophilus KCTC 3925 and Lactobacillus rhamnosus KCTC 3929 were investigated to produce EPS. Based on the results concerning growing susceptibility and conversion of aglycone-formed isoflavones/EPS production, it is anticipated that Lac. acidophilus KCTC 3925 may be used for preparation of Cheonggukjang, which contains relative low NaCl content.

Study on the Rheological Properties of the Lactic acid Fermented Milk (유산균배양액의 유체역학적 성질에 관한 연구)

  • As a link in the studies on the extracellular polysaccharide by lactic acid bacteria, the experiment was conducted to investigate the viscosity variations and rheological properties of 10% reconstituted skim milk and 12% reconstituted whole milk, respectively. 1. 10% reconstituted skim milk cultured by Str. thrennophilus 510 showed strong flow property of pseudoplastic fluid depending upon the production of exopolysaccharide. And the viscosity reached the highest value within 14% concentration. 2. 12% reconstituted whole milk cultured by lactic acid bacteria indicated flow property of pseudoplastic fluid. But there was a big difference in the viscosity as compared with 10% skim milk. 3. The maximum consistency index (k) and the minimum flow behavior index (n) of the fermented milk by Str. thermophilus 510 were 43 and 0.09, respectively. They were 35 and 0.09, in case of Lb. bulgaricus.
