The purpose of this study was to analyze harmful heavy metals and residual pepsticides in 30 kinds of oriental medical materials. This study was carried out on 32 samples with 30 kinds of Oriental medical materials. The GC-ECD(Varian, CP-3800) was used to analyze residual pepsticides. ICP-OES(Varian, Vista-MPX) was used to analyze lead, arsenic, cadmium. Mercury was analyzed by amalgamation method. Arsenic was detected less than 3(mg/kg) in 21 samples and was not detected 11 samples. Lead was detected less than 5(mg/kg) in 25 samples and was not detected 7 samples. Mercury was detected less than 0.2(mg/kg) in 12 samples and was not detected 20 samples. Cadmium was detected more than 0.3(mg/kg) in 3 samples was detected less than 0.3(mg/kg) in 17 samples and was not detected 12 samples. A few residual pepsticides was detected, but all residual pepsticides was safe.

To investigate the effects of plant extracts on the protection against liver damage by $CCl_4$ in rat, two kinds of experiment were performed, firstly by the primary hepatocyte culture and secondly by the animal feeding. The primary hepatocyte culture with the extracts of pine leaf, soybean sprout and mugwort showed significantly low activities (p<0.01∼0.05) of aspartate aminotransferase (AST) and alanine aminotransferase (ALT), indicating an excellent protective effect against liver damage by $CCl_4$. In the second experiment, the microsomal malondialdehyde (MDA) contents of the above same groups were also significantly lower (p<0.01) than the $CCl_4$-treated group without plant extracts, but shiitake showed less effect. Among four kinds of plant extracts, extracts of pine leaf and mugwort showed also much higher activities of the microsomal cytochrome P-450 in comparison to soybean sprout and shiitake. In the test of xanthine oxidase (XOD) activity, all of three groups except shiitake showed significantly low activities (p<0.01). These consistent results in vitro and in vivo suggest that the extracts of pine leaf, soybean sprout and mugwort may have strong protective effects against liver damage induced by the potential toxicants such as $CCl_4$.
The sensitivity analysis of input parameters was Performed fer an ingestion dose assessment model (U. S. NRC's Regulatory Guide 1.109 model) from routine releases of radionuclides. In this study, three kinds of typical Korean foodstuffs (rice, leaff vegetables, milk) and two kinds of radionuclides $(^{l37}Cs,\;^{131}I)$ were considered. The values of input parameters were sampled using a Latin hypercube sampling technique based on Monte Carlo approach. Sensitivity indices, which represent the influence or the importance of input parameters for predictive results, were quantitatively expressed by the partial rank correlation coefficients. As the results, the ratio of the interception fraction to the yield of agricultural plants and the human consumption rate were sensitive input parameters for the considered foodstuffs and radionuclides. Additionally, in case of milk, the transfer factor of radionuclides from animal intake to milk and the daily intake rate of feedstuffs were sensitive input parameters. The weathering removal half-life and the delay time from food production to human consumption were relatively sensitive for $^{137}Cs$ and $^{131}I$ depositions, respectively.

Mitochondrial biogenesis-a process that leads to an increment in the number and density of mitochondria, improves physical performance and body health by enhancing exercise capacity. In the present study, we investigated the stimulatory effect of Ashitaba and red ginseng complex (ARC) on exercise capacity in L6 skeletal muscle cells and mice. In L6 skeletal muscle cells, ARC increased the mitochondrial contents and ATP production by activating AMP-activated protein kinase (AMPK), sirtuin 1 (SIRT1), and peroxisome proliferator-activated receptor gamma coactivator-1 alpha (PGC-$1{\alpha}$) and up-regulating the mRNA expression of nuclear respiratory factor-1 (NRF-1) and mitochondrial transcription factor A (TFAM). In the animal experiments, mice treated with ARC showed an increment in exercise capacity as compared with mice treated with Ashitaba extract or red ginseng extract alone. These studies indicate that ARC might serve as a potential natural candidate for enhancing exercise capacity by stimulation of mitochondrial biogenesis.
The diet food used in this test was composed of the total 16 kinds, such as refined water, herb extract, pomegranate extract, polydextrose and isomalto-oligosaccharide etc. Edible fiber as a major component in dietary food was contained to 2.60%(w/w) level. But the calorie was 104.57kca1/100g, contrast of control domestic saengshick product was 368.06kca1. As a result, calorie of dietary food sample was very low level. Vitamin and mineral as a minor component were determined 5, 6 kinds, respectively. On the other hand, dietary effect of body weight loss was determined about 14%(w/w) at animal test result used for rats during 4 weeks. The reason of dietary effect could confirmed from change of plasma neutral lipids, total cholesterol and HDL-cholesterol concentration. Increasing ratio of these in the general diet and dietary diet feeding groups during 4 weeks were 10.55, 6.90, 9.82% and 6.11, 3.85, 6.11%, respectively. from these results, decrease reason of body weight could confirmed the relative relationship with plasma lipids and cholesterol concentration. But plasma plasma glucose and insulin concentration have not positive relativity.

In mountainous regions, wild herbs which can also be edible in nature for humans and animals possess a wide array of biologically diversified properties. It is because of the fact that due to the cold weather of mountains; they are enriched in certain kinds of phytochemicals such as anti-oxidants, anti-inflammatory and many more. One such kind of an herb is Aster scaber (AS) in Korean. It is a widely cultivated culinary herb in Korean peninsula and used as a side dish in Korean culinary cuisine. In view of its extensive use in cuisine, we geared to unravel the anti-oxidant and anti-inflammatory effects of AS in murine alveolar macrophage cell line (MH-S). 2,2'-Azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) and 2,2-diphenyl-1-picryl-hydrazyl-hydrate (DPPH) assays revealed a dose dependent (7.8~1,000 ㎍/mL) inhibition of oxidation by AS 70% ethanol (ASE) extract as compared to Trolox and Ascorbic acid respectively. Nitric oxide assay (NO) showed a dose dependent decrease (5~40 ㎍/mL) in MH-S cells with ASE when stimulated with Coal Fly Ash (CFA). Moreover, this dose for NO reduction was also found to be least cytotoxic for cells as determined by cellular viability (MTT) assay. The gene expression of pro-inflammatory mediators (iNOS and COX-2) and cytokines (IL-6 and IL-1β) and were also dose dependently inhibited by ASE in MH-S cells through RT-PCR. Therefore, in light of these findings, AS exhibited a strong anti-oxidant and anti-inflammatory agent. These results also justify the extensive use of this mountainous herb in culinary practices for beneficial effects on human health.
This study was conducted to clarify the effects of the different concentration of the nutrient solution on the early growth and the nutritional contents of hydroponically grown Aster koraiensis, Hemerocallis fulva and Plantago asiatica at 70 days after transplanting in perlite culture. Balanced nutrient solution formulated by Japanese Horticultural Experiment Station was used as the standard concentration of the nutrient solution. Overall plant growth of Aster koraiensis and Hemerocallis fulva such as plant height, stem diameter, number of loaves, fresh and dry shoot and root weight were significantly increased in 1.5 times concentration of nutrient solution. Shoot and root fresh and dry weight of hydroponically grown Plantago asiatica were significantly increased in the higher concentration of the nutrient solution, however, number of loaves and root length were significantly increased in the standard and the lower concentration of the nutrient solution. The highest contents of calcium, magnesium and sodium in plants were shown in Aster koraienxis which were grown in the 1.5 times concentration of nutrient solution, and Hemerocallis fulva and Plantago asiatica in 0.25 times of that. The contents of potassium in Aster koraiensis and Hemerocallis fulva were significantly increased when the plants were grown in the 0.5 times concentration of the nutrient solution, and that in Plantago asiatica in the 1.5 times concentration of the nutrient solution. The contents of phosphoric acid in plants as affected by the different species of Namul and the different concentration of the nutrient solution were not significant.

This study was conducted to evaluate the effect of lotus leaf and lotus root powder on the quality characteristics of sponge cake. Percentages of 4, 8 and 12% of two kinds of lotus powder were added to the batter based on flour content. Baking and cooling loss rate, volume and specific loaf volume, crumb color, texture, scanning electron microscopy (SEM) and sensory evaluation of the products were analyzed. The baking and cooling loss rate of the control was lower than cakes with added lotus leaf and lotus root powder. The volume of the control was the largest, and as the amount of lotus leaf and lotus root powder increased, volume and specific loaf volume became smaller. The lightness and yellowness values of the control were higher than those of the experimental cakes, and the loaves with 12% added lotus root powder showed the lowest value. Redness of the experimental cakes increased. In the textual property evaluation, hardness of the control and sponge cakes containing 4% lotus leaf, and lotus root powder appeared to have the lowest value. As the amount of lotus leaf and lotus root powder increased, hardness increased. Springiness showed the same tendency, but cohesiveness of the control revealed the lowest value. The structure of the cake crumb by SEM, revealed that the crumb cells and grains of the experimental cakes were opened and coarse, as the amount of lotus leaf and lotus root powders increased. In a sensory evaluation, sponge cakes containing lotus root powder were preferred rather than those with lotus leaf powder. As a result, good sponge cakes were prepared by adding 4% lotus leaf powder or 8% lotus root powder.

Colostrum contains various kinds of cytokines including TGF-${\beta}$ which is known to be multifunctional in immune response and act as an anti-inflammatory agent. First, we measured the amount of TGF-${\beta}$ in bovine and human colostrum. Expression pattern of TGF-${\beta}$ isotypes was dramatically different between human and bovine colostrial samples. Bovine colostrum collected on day 1 post-delivery retained $41.79{\pm}16.96ng/ml$ of TGF-${\beta}$ 1 and $108.4{\pm}78.65ng/ml$ of TGF-${\beta}$ 2 while in human, $284{\pm}124.75ng/ml$ of TGF-${\beta}$ 1 and $29.75{\pm}6.73ng/ml$ of TGF-${\beta}$ 2. Thus, TGF-${\beta}$ is the predominant TGF-${\beta}$ isotype in bovine colostrum and vice versa in human colostrum. Both TGF-${\beta}$ isotypes diminished significantly in human and bovine colostrum with time. Next, biological activity of colostrial samples was examined in vitro. Both human and bovine colostrum increased IgA synthesis by LPS-activated mouse spleen B cells, which is a typical effect of TGF-${\beta}$ on the mouse B cell differentiation. Futhermore, we found that anti-proliferative activity in MV1LU cells by colostrum samples disappeared by addition of anti-TGF-${\beta}$ 1 and anti-TGF-${\beta}$ 2 antibody. In conclusion, there are substantial amounts of biologically active TGF-${\beta}$ 1 and TGF-${\beta}$ 2 in bovine and human colostrum. The results that the colostrum can increase IgA expression has important implications since IgA is the major Ig class produced in the gastrointestinal tract. We have previously shown that the stimulatory effect of Bifidobacteria bifidum on spllen B cells was quite similar to that of LPS which is a well-known polyclonal activator for murine B cells. In the present study, we further asked whether B. bifidum regulate the synthesis of IgA by mucosal lymphoid cells present in Peyers patches (PP) and mesenteric lymph nodes (MLN). B. bifidum alone, but not C. perfringens, significantly induced overall IgA and IgM synthesis by both MLN and PP cells. This observation indicates that B. bifidum possesses a modulatory effect on the mucosal antibody production in vivo. We, therefore, investigated the mucosal antibody prodduction following peroral administration of B. bifidum to mice. Ingested B. bifidum significantly increased the numbers of Ig (IgM, IgG, and IgA) secreting cells in the culture of both MLN and spleen cells, indicating that peroally introduced B. bifidum enhances mucosal and systemic antibody response. Importantly, however, B. bifidum itself does not induce the own specific antibody responses, implying that B. bifidum do not incite any unwanted immune reaction. Subsequently, it was found that excapsulation of B. bifidum further augments the total IgA production by increasing the number of IgA-secreting cells in the culture of both MLN and spleen cells. Finally, we found that the immuno-stimulating activity of B. bifidum is due to its cell wall components but not due to any actively secreting component(s) from bacteria. Thus our data reveal that peroral administration of B. bifidum can enhance intestinal IgA production and that encapsulation of B. bifidum further reinforces the IgA production.

The current survey form of grassland has not played its role in managing the grassland effectively because of the ambiguous questionnaire items and the absence of method and time of the investigation. Therefore, this study was conducted to clarify and add the items for effective of grassland management. The survey form of grassland was regulated in Article 16 of the Enforcement Rules of the Grassland Act (Survey on Grasslands Management Status, etc.). The five contents that needed improvement were the grassland owner, the survey timing and method of established grassland, grassland used livestock, grassland usage condition, and grassland grade. In the improved survey form of grassland, the grassland owner was changed to the grassland manager. In addition, 'Survey by each land' was added to the improved survey form in which the managers can survey each land. The dimension of each grassland establishment method was deleted in the grassland establishment time and method. In the livestock using grassland, the number of livestock and the area where livestock are used were added, and the number of other livestock was added, too. The grassland grade was decided as the combined score by three evaluation categories; grassland usage, the ratio of forage production in grassland and kinds of forage. The high, middle, and low grades were over 8, 6~7, and under 5 points in the combined score, respectively. The results show that the changed survey form of grassland can make grassland management more efficient by materializing the subject of grassland management and the survey terminology and methods.
