Effect of the Modified Starch on the Physical Properties of Tomato Ketchup (토마토 케찹의 물리적 성질에 변성전분이 미치는 영향)

  • Modified starches were used as additives to make tomato ketchup, and their effects on the rheological properties, serum separation and sensory characteristics of the tomato ketchup were examined. The magnitudes of the yield stress and the consistency index of the tomato ketchup with the additives, regarded as a Herschel-Bulkley fluid, were found to be in the order of ADA(acetylated distarch adipate)>SA(starch acetate) >HDP(hydroxypropyl distarch phosphate)>RCS(raw corn starch)>NS(no starch). The flow behavior indices of SA added ketchup and HDP added one were nearly constant regardless of the additive concentrations, whereas those of ADA and RCS increased with the additive concentration. In the serum separation test centrifugation, the ADA added ketchup showed the highest stability against separation, being fol-lowed by SA>HDP>RCS>NS. In the sensory evaluation, the magnitudes of the acceptance of the ketchup with the additives were as ADA(2%)>SA(2%)>RCS(2%)>NS>HDP(2%).

Effect of Tomato Ketchup on Fermentation and Quality of Kimchi (토마토케첩 첨가가 배추김치의 발효와 품질에 미치는 영향)

  • This study was conducted to investigate the potential use of tomato ketchup as an ingredient to improve color and taste in kimchi with reduced red pepper content about 40%. The quality characterisics were studied for kimchi with or without tomato ketchup during fermentation for 25 days at $10^{\circ}C$. The pH of kimchi with tomato ketchup (KWT) decreased with increasing tomato ketchup content from 5% to 20%. The pH of KWT was lower than that of kimchi without tomato ketchup (KWOT) in the early stage of fermentation and did not show any difference after 10 days of fermentation at $10^{\circ}C$. The tendency of titratable acidity changes in KWT and KWOT was the same as the pH changes. The growth of lactic acid bacteria was more inhibited in KWT than in KWOT until 5 days fermentation and the significant difference between KWT and KWOT did not show after 10 days fermentation at $10^{\circ}C$. In sensory evaluation, the hot taste of the kimchi was decreased but the flavor and overall acceptability were increased significantly by addition of 5 to 10 % tomato ketchup (p<0.05).

Development of Value-added Ketchup Products with Korean Chile Peppers(Capsicum annuum L.) and Their Sensory Evaluation (국내산 고추를 이용한 고추 케찹 개발 및 관능적 특성 평가)

  • The purposes of this study were to develop value-added sauce(ketchup) products with Korean advanced chile peppers (Capsicum annuum L.), determine their physicochemical characteristics, and conduct a sensory evaluation. American chile ketchup products were collected from American local favorites and analyzed based on their compositions. The Korean chile ketchup contained tomato paste(37.5%), Korean chile pepper(14.1%), sugar(14.8%), vinegar(14.1%), garlic(8.5%), herbs, plum extract, and oligosaccharide. Its physiochemical analysis showed: moisture $59.61{\pm}0.28%$, crude protein $2.18{\pm}0.11%$, crude lipid $1.99{\pm}0.04%$, crude ash $9.26{\pm}0.13%$, crude carbohydrate $26.97{\pm}0.48%$, reducing sugar $35.19{\pm}0.97%$, salt $3.04{\pm}0.04%$, acidity $2.22{\pm}0.01%$, pH $3.7{\pm}0.01$, and $^{\circ}brix\;36.3{\pm}0.14$. Korean chile ketchup showed higher overall acceptability compared to American local favorite chile ketchup. This result suggests the possibility for replacing chile ketchup products imported from foreign countries(USA and Europe).

Comparative Analysis of Bioactive Compounds and the Sensory Evaluation of Korean Chili (Capsicum annuum L.) Ketchup and American Chili Ketchup (미국 고추케찹 및 국내산 고추케찹의 생리활성 성분 및 관능특성 분석)

  • The purpose of this study is to analyze the Korean chili (Capsicum annuum L.) ketchup and American chili ketchup for their comparative bioactive components and then conduct a sensory evaluation. American chili ketchups are collected from Americans' local favorites, and then the American chili ketchups and Korean chili ketchups are analyzed based on their physiological compositions. Bioactive analysis of the Korean chili ketchups show : total capsaicinoids of $2.59{\pm}1.00mg/100g$, total carotenoids of $33.28{\pm}1.52mg/100g$, total phenol of $61.17{\pm}8.08mg/GAE/100g$, and vitamin C equivalent antioxidant capacity (VCEAC) of $187.04{\pm}3.22mg/100g$. The Korean chili ketchups show higher overall acceptability when being compared to Americans' local favorite chili ketchups. In the sensory evaluation, there are significant differences (p<0.05) in sour, sweet, hot, salty taste, and the overall acceptability in two groups.

A Study on Mineral Content in Processed Foods (가공식품의 무기질 함량에 관한 연구)

  • We analysed 398 kinds of processed foods sold on market - 43 kinds of ramyun, 67 kinds of bread, 104 kinds of cookies, 5 kinds of pizza, 28 kinds of sausage, 31 kinds of steamed fish cake, 4 kinds of tomato ketchup, 30 kinds of canned goods, 82 kinds of beverage and 4 kinds of danmoogi- to know mineral content such as p, Ca, Mg, Na and K. We used atomic absorption spectrophotometry for this study and the results were as follows; 1) P content was 204.24mg% in sausages, 101.80mg% in pizza, 671mg% in canned fish, 44.50mg in canned vegetable, 38.62 mg% in ramyun and 32.10mg% in steamed fish cake. Sausage had the highest P content showing almost 6 times as much as steamed fish cake. There was little difference between ramyun and steamed fish cake. 2) Ca content was 115.00 mg% in pizza, 106.94 mg% in steamed fish cake, 100.59 mg% in sausage, 91.25 mg% in canned vegetable, 79.84 mg% in bread and 78.97 mg% in ramyun, 3) Mg content was 555.16 mg% in steamed fish cake, 476.14 mg% in cookies, 436.75mg% in ketchup, 394.00mg% in canned vegetables 346.95mg% in ramyun and 341.40mg% in canned fish. Steamed fish cake was highest in Mg content and there was little difference between ramyun and canned fish. 4) Na content was 730.49mg% in ramyun, 680.25 mg% in danmoogi, 548.43 mg% sausage, 463.50mg% in canned vegetable, 449.25 mg% in ketchup, 401.29 mg% in steamed fish cake and 366.00 mg% in pizza. Ramyun had the highest Na content 5) K content was 302.30 mg% in pizza, 280.25 mg% in ketchup, 219.68 mg% in sausage, 219.2 mg% in canned fish, 183.75 mg% in canned vegetable, 166.49 mg% in ramyun and 122.77 mg% in cookies. Pizza had the highest K content.

Rheological Characteristics and Viscosity Prediction Models of Tomato Ketchup Suspensions (토마토케찹 현탁액의 리올로지 특성과 점성예측모델)

  • Rheological properties of rehydrated suspensions of freeze dried tomato ketchup were measured by Brabender Viscotron at the temperature range of $30-90^{\circ}C$, at the concentration of 15-50%, and at the shear rate of $0-250sec^{-1}$. At the shear rate of $0-210sec^{-1}$, tomato ketchup was found to be a thixotropic food product. The values of flow behavior index, consistency index and yield stress at the shear rate of $0-210sec^{-1}$, at the temperature of $30^{\circ}C$ and at the concentration of 33% , were 0.2131, 22.5047 $Pa\;sec^{-n}$, and 8.544 Pa, respectively. It was found that the apparent viscosity model for temperature was expressed by Andrade model and the model for concentration was expressed by Power model, and the model for both temperature and concentration was described by exponential and power models. The activation energies at the concentrations of 15, 20, 30, 33, 40, and 50% were 3.973, 4.985. 5.078, 5.226, 5.357, and 7.655 $kcal/g{\cdot}mole$, respectively.

Analysis of Preservatives in Flavor-Containing Foods (향기성분이 있는 식품의 보존료 분석)

  • An attempt was made to analyze preservatives in flavor-containing curry and tomato ketchup without interference due to their of flavor components. Samples were steam-distillated and extracted with ether. Sorbic acid, benzoic acid, dehydroacetic acid and salicylic acid were analyzed by GC with capillary column. Benzoic acid and dehydroacetic acid in curry were interfered by flavor components, but there was no interference in case of tomato ketchup. Samples were pretreated with Sep-Pak $C_{18}$ cartridge and analyzed with HPLC to avoid any interference due to flavor components. The recoveries by HPLC were higher than those by GC. Recoveries of sorbic acid, benzoic acid and salicylic acid from curry were 79.9%, 71.2% and 64.4%, respectively. Recoveries of sorbic acid, benzoic acid and salicylic acid from tomato ketchup were 83.4%, 87.8% and 77.7%, respectively.

Physicochemical Properties and Antioxidant Activity of Commercial Tomato Ketchup (시판 토마토케첩의 이화학적 특성 및 항산화활성)

  • The objective of this study was to investigate the physicochemical properties and antioxidant activities of seven (A, B, C, D, E, F, G) commercial ketchups marketed in Korea. The 70% ethanol extracts were prepared and evaluated for total phenolic content, DPPH and ABTS radical scavenging activities, and metal chelating effect. pH ranged from 3.64 to 3.94, and soluble solid and reducing sugar contents of samples were 2.21~3.51oBrix and 4.78~13.45%, respectively. Salinity of samples was in the range of 1.79 to 3.21%, and sample G showed the lowest salinity. The lightness, redness, and yellowness of the Hunter color system of samples were 15.42~19.94, 18.55~23.98, and 20.87~24.34, respectively. The phenolic contents ranged from 1.37 to 2.60 mg GAE (gallic acid equivalents)/g, with samples F and G exhibiting the highest contents. Antioxidant activity determined based on DPPH and ABTS radical scavenging activities, and metal chelating effects were 45.10~90.87, 55.35~92.53, and 71.10~92.20%, respectively, at a concentration of 200 mg/mL. Samples A and G showed higher antioxidant activity than other samples. There were positive correlations between phenolic contents and antioxidant activity, suggesting that phenolic compounds are the major contributors to antioxidant activity.

The Archeology of Memory: The Explorations of Animated Documentary

  • This is a practice-based research, aiming to explore the experiments of Animated Documentary, which is a unique form can explore the mysteries and complexity of memories. Animated Documentary is a medium through which one can reveal an individual's memories within the context of a narrative that is historically situated and influenced. The marriage of animation and documentary gave birth to a new form of film. How to category this new form? Is it an animated short or documentary short? In fact, this raises issue that questioning the nature of animation and documentary. From Shuibo Wang's works, more young Chinese artists began to experiment with symbols (related to the Political Pop Trend) in visual narration, which could also be seen as a reflection of structuralism and semiology in the contemporary Chinese art field. As a case study, this paper demonstrates how animated short "Ketchup" revealed the problems of youth and social turmoil through the memories of a six-year boy. On the Festivals and conferences, the publics were shocked to know "Ketchup" based on true memories, and they were more curious why the crucial things almost be forgotten. Actually forget fulness is one of the layers of memories and Animated Documentary will offer a new way to explore how our memories are shaped.
