A Study of the Physical and Sensory Characteristics of Ginseng Soybean Curd Prepared with Various Coagulants (인삼첨가 두부의 물리적 관능적 특성에 미치는 인삼 첨가량, 첨가방법 및 응고제의 영향 연구)

  • An investigation was carried out to elucidate the effects of type of ginseng, concentration of ginseng, and type of coagulants on the physical and sensory properties of soybean curd. The textural properties of soybean curd were not influenced by the type of ginseng. Soybean curd coagulated with glucono-delta-lactone (GDL) showed a greater hardness than that coagulated with other coagulants, whereas the former produced a lesser springiness than the latter. The L-value was proportionally reduced by the increase of ginseng level and soybean curd coagulated with $CaCl_2$ showed the lowest L value. All the curd products prepared with ginseng had a pale yellow color. In the sensory properties, springiness and beany taste of soybean curd linearly decreased as the concentration of ginseng was increased. The concentration of ginseng to improve the acceptability of ginseng soybean curd as determined by the physical and sensory evaluation, was less than 0.25%. The most acceptable ginseng soybean curd was the one coagulated with $MgCl_2$. Soybean curd prepared with GDL had the lowest acceptability because of its sour taste and textural properties.

Studies on the Processing Aptitude of the Korean Soybean Cultivars for Soybean Curd (한국산 콩품종의 두부 가공적성에 관한 연구)

  • As a work on the investigation of the processing aptitude of the Korean soybean cultivars, the soybean curd was made from 19 Korean soybean cultivars on a laboratory scale. The yield, proximate composition and rheological and organoleptic property of the resultant soygean curd were analyzed. The yields of soybean curd were ranged from 262.33% to 311.63%, being positively correlated with the soluble protein contents of the recommended soybean cultivars (r=0.9621). The recovery rate of protein in Baekun and Yeunha to the soybean curd was 72.94%, 70.62%, respectively. More than 80% of lipid in soybeans of Yeunha, Dankyung, Danyeob was transferred to the soybean curd. Lightness of the soybean curd made from Baekun, Kwanggyo, Saeal, Hill was higher than that of the others. The mechanical hardness of the soybean curd was strongly correlated with the final moisture content of the soybean curd (r =-0.8312), but not with the protein content of the soybean (r=0.1848). In the organoleptic test for color, texture, flavor and overall preference of the resultant soybean curd, the quality of Dankyung, Namcheon, S-138, Baekun was evaluated highly.

Effect of Chemical Fertilizers and Organic Materials on Soil Actinomycetes Flora (화학비료(化學肥料) 및 유기물(有機物) 시용시(施用時) 방선균(放線菌) Flora의 구성변화(構成變化))

  • This investigation was undertaken to clarify the effects of application of chemical fertilizers (Compound fertilizer and commercial compost) and organic matters (straw and clover) on changes of the composition of soil actinomycetes flora. Actinomycetes were isolated from chemical fertilizer and organic materials treated soils, and then grown on HV agar plate. The isolated strains were classified by Bergey's manual based on the morphological characteristics and color of substrate mycelium of actinomycetes. The number of actinomycetes increased 4 times in control, 36 times in clover, 20 times in straw, 5 times in chemical fertilizer and 4 times in commercial compost treated soil after 14th day of incubation. This result suggests that the application of straw or clover is more effective to increase the number of actinomycetes than compound fertilizer or commercial compost. It also showed that the application of chemical fertilizer or organic materials considerably changed the composition of soil actinomycetes flora. The proportion of streptomyces strains to the isolated total actinomycetes was 62% in control, 60% in clover, 68% in straw, 67% in chemical fertilizer and 64% in commercial compost treated soils at the 14th day.

Investigation on Beef Quality Indicator of Off-Flavor Development during Storage (쇠고기 저장 중 이취발생에 대한 Indicator 탐색)

  • Beef quality indicators of off-flavor development during storage were investigated in terms of temperature dependence. The off-flavor development time (ODT) was detected using the R-index sensory test. During varying storage conditions at $25^{\circ}C$, $15^{\circ}C$, and $5^{\circ}C$, elements of beef quality were measured, such as volatile basic nitrogen (VBN), pH, color (CIE $L^*$, $a^*$, $b^*$), Warner-Bratzler shear force (WBSF), Pseudomonas spp. CFU, and lactic acid bacteria (LAB) CFU. A model with temperature dependence of ODT during storage was developed using Arrhenius-like equation, and a requirement with quality indicators was mathematically derived, resulting in similar temperature dependence. The temperature dependence of beef quality indicators was represented by the Arrhenius activation energy (Ea). Upon comparing the Ea of beef quality indicators and ODT, the temperature dependence similarity was found to be higher in the order of three groups: VBN, pH, $a^*$ value; LAB, Pseudomonas spp.; and WBSF, $L^*$ value, $b^*$ value. Therefore, VBN were determined as the most effective indicator of beef quality during off-flavor development.

Screening and Possibility of Semi-quantitative Analysis of Explosive Compounds in Soil Using EXPRAY$^{(R)}$ Explosives Field Detection Kit (화약물질 현장검출시약 EXPRAY$^{(R)}$를 이용한 토양내 화약물질 스크리닝 및 준정량화 가능성)

  • A quick and simple detection method of explosive compounds in environmental matrix (soil and water) can provide a screening step which reduces the number of unnecessary samples and the cost of expensive laboratory analysis at a site investigation. A commercially available EXPRAY$^{(R)}$Explosives Field Detection Kit (EXPRAY) was used to determine the minimum detection concentration and to test the possibility of semi-quantitative analysis of 14 explosive compounds using standard solutions. The results showed that EXPRAY could detect 5 explosive compounds, TNT, RDX, HMX, Tetryl, and TNB, out of 14 US EPA designated explosives. The minimum detection limit of the nitramine explosives was 14 ng/$^2$ for HMX and RDX. EXPRAY was more sensitive to nitroaromatics than the nitramines and the minimum detection limits per unit area (mm$^2$) for Tetryl, TNB, and TNT, were 3 ng, 3 ng, and 0.3 ng, respectively. The semi-quantification of 5 explosive compounds in an order ofmagnitude could be achieved by the intensity of developed color only when EXPRAY was applied on the standard solutions under controlled laboratory conditions. With contaminated soil samples, however, only the presence and type of explosive compounds was identified. Therefore, EXPRAY is an economic and sensitive method that can be used in a screening step for the identification of explosives in the field samples.

Application of Side Scan Sonar to Disposed Material Analysis at the Bottom of Coastal Water and River (해저 및 하저 폐기물의 분석을 위한 양방향음파탐사기의 적용)

  • Due to the growth of population and industrial development at the coastal cities, there has been much increase in necessity to effective control of the wastes into the coastal water and river. The amount of disposal at those waters has been increased rapidly and it is necessary for us to track of it in order to keep the water clean. The investigation and research related to the water quality in this region have been conducted continuously but the systematic survey of the disposed wastes at the bottom was neglected and/or minor. In this study we surveyed the status of disposed waste distribution at the bottom coastal water and river from the scanned images. The intensity of sound received by the side scan sonar tow vehicle from the sea floor provides information as to the general distribution and characteristics of the superficial wastes. The port and starboard side scanned images produced from a transducer borne on a tow fish connected by tow cable to a tug boat have the area with width of 22m∼112m, and band of 44m∼224m. All data are displayed in real-time on a high-resolution color display (1280 ${\times}$ 1024 pixels) together with position information by DGPS. From the field measurement and analysis of the recorded images, we could draw the location and distribution of bottom disposals. Furthermore, we made a database system which might be fundamental for planning the waste reception and process control system.

mtDNA Diversity and Phylogenetic Analysis of Korean Native Goats (한국재래염소의 mtDNA 다양성 및 계통유전학적 분석)

  • Korean native goats, which are characterized by black coat color, have existed on the Korean peninsula for a long time. Until now, there has been no comprehensive investigation concerning their genetic diversity, phylogenetic analysis or origin. In this study, we investigated the genetic diversity and verified phylogenetic status of the Korean native goat using the 453-bp fragment of the hypervariable fragment I (HVI) of mitochondrial DNA (mtDNA) D-loop region from 60 individuals among 5 populations. The Korean native goat showed less haplotype diversity when compared with goats from other countries. In addition, 6 haplotypes that had not been previously reported were verified in this study. In phylogenetic analyses with other country's goats, 10 haplotypes from Korean native goats were classified into mtDNA lineage A. Moreover, in a phylogenetic tree for goats which contained mtDNA lineage A, 8 of 10 haplotypes could be included in a subgroup with goats from Vietnam and an area of China. However, none of the remaining haplotypes belonged to a major group of Korean native goats and were located on different independent positions. These results suggest that almost Korean native goats aligned more closely to China and Vietnam breeds in mtDNA lineage A and there was no gene flow from other mtDNA lineages. Our results will contribute to conservation strategies and genetic breeding of Korean native goats.

Quality Characteristics of Brown Rice Dasik added with Chia Seed according to Different Types of Sweetener (감미료의 종류를 달리한 치아씨 첨가 현미다식의 품질 특성)

  • The present study was performed to develop healthier sweeteners for brown rice Dasik with chia seed powder. The quality features and sensory evaluation were tested for brown rice Dasik with chia seed powder added with five different sweeteners and the results are as follows. The Dasik (DS) with isomalto-oligosaccharide and starch syrup received the highest scores on moisture content tests. The results from hardness tests identified the DS with agave syrup as the hardest, and the results from the adhesiveness test verified that the DS with agave syrup as well as the DS with starch syrup produce the most adhesive DS. The results of the springiness test show that the DS with starch syrup has higher springiness than other sweetners. The highest score for the chewiness and cohesiveness tests was the DS with starch syrup, while the DS with isomalto-oligosaccharide received the highest score on the gumminess test. The results of the chromaticity measurement test found that the DS with starch syrup showed the highest score of 'L' and the lowest score with fructo-oligosaccharide. In addition, the highest score of 'a' was DS with isomalto-oligosaccharide and the lowest score of 'b' was the DS with starch syrup. The results of sugar content displayed that the DS with starch syrup was the highest and the DS with fructo-oligosaccharide was the lowest score. The results of sensory evaluation verified that color did not influence evaluators' preference investigation. The results of sweet flavor test found that the DS with honey and the DS with agave syrup had the most preferred by participants, but there was no statistically significant difference among all five different sweeteners from the sweet taste test. Furthermore, the DS with agave syrup received the highest score while the DS with agave syrup scored the lowest from the hardness preference test. General preference evaluation identified the highest score with the addition of fructo-oligosaccharide and the lowest score with the addition of isomalto-oligosaccharide. Thus, the findings of the present study provide the meaningful results to demonstrate the DS with fructo-oligosaccharide is the most suitable sweetener to manufacture brown rice DS added by chia seed powder, and this result will help marketers with creating meaningful strategies and with developing similar products using chia seed powder.

A Study of Skin Biophysical Parameters and Biomarkers related to the Anatomical Site and Age in Korean Women (한국 여성의 피부 부위 및 연령에 따른 피부 측정 인자와 생물 인자 연구)

  • The skin is one of the largest organs in our body and participates in many of the human organism's physiological and pathological events. Skin function were known for self-maintenance and self-repair, mechanical and chemical stress protection, protection against UV and environmental pathogenic micro-organisms, production of vitamin D, and social and psychological function through the physical aspect. The aim of this study was to evaluate the variation of biophysical parameters and to find relation with skin biomarkers in different anatomical site and age in Korean women. About 70 healthy volunteers in age range 20 to 49 were participated in this test. Test areas were the forearms and the cheek. Investigation to determine biophysical parameters on human skin, was carried out using various non-invasive methods. For analysis to skin biomarkers, we studied to examine various biomarkers for the quantitative determination of cortisol, fibronectin, keratin-1, 10, and 11, involucrin, and keratin-6 in human face and forearm. And we measured to skin biophysical parameters for skin anatomical site and age difference with non-invasive methods. As results of measuring site, some parameters were have following significant difference, stratum corneum hydration, trans epidermal water loss and skin color (L and a value). As results of age difference, skin colors were had only significant difference with age. For cortisol, keratin-6, fibronectin, keratin-1, 10, 11 contents, there were no significant difference in age and site. However, involucrin level in the cheeks were the highest for age group 30 ~ 39 compared to other age groups. These results suggest that in individual skin condition may explain detailed skin state variation.

Investigation of wearing behaviors and consumer's needs for summer golf wear (하절용 골프웨어의 착용실태 및 소비자 요구도)

  • The purposes of this study were to investigate consumer's needs for golf wear and to suggest a direction of product development and planning, based on the analysis of golfer's needs. The subjects used for the research were 150 male and female golfers who were in golf practice fields. The data were analyzed by frequency analysis, factor analysis, ANOVA, t-test and Duncan test. In summary, the results of this study were as followers; Dimensions of consumer's needs for golf wear were extracted from factor analysis as following properties; fashion/design property, textile property, hygiene property, body-shaped property. The most important consumer's need for golf wear was "wearing comfort" and second one was "moisture absorbency" Respondents evaluated that wearing comfort, stretchability, tactile, size of golf wear were very important but price, pilling, shrinkage or color-fading after laundry of golf wear were relatively less important. The evaluation of consumer's needs for golf wear according to demographic information had significant difference. The female golfers were found to consider that fiber characteristics, easy-to-laundry, wrinkle resistance, stretchability, sewing quality were relatively more important, when compared with the male golfers. Also, There were significant differences on the evaluation of consumer's needs for golf wear on fiber characteristics, stretchability, brand name between age groups.
