  • The market size of functional health foods has experienced substantial growth driven by increasing consumer interest. In particular, the application of functional probiotics in various food products has resulted in consistent and progressive growth. One promising category is the application of probiotics in the manufacturing of cheese, which aligns with the rising demand for functional foods among consumers. The inherent advantages of cheese and probiotics provide consumers with a broad selection of functional foods. Therefore, it is crucial to identify functional probiotics that can withstand the cheese manufacturing process and exert significant effects on the flavor and taste of cheese. In this review, we discuss several strategies aimed at developing probiotic-supplemented cheeses for future dairy food markets.

Study on Stiffened-Plate Structure Response in Marine Nuclear Reactor Operation Environment

  • As the regulations on greenhouse gas emissions at sea become strict, efforts are being made to minimize environmental pollutants emitted from fossil fuels used by ships. Considering the large sizes of ships in conjunction with securing stable supplies of environment-friendly energy, interest in nuclear energy to power ships has been increasing. In this study, the neutron irradiation that occurs during the nuclear reactor operation and its effect on the structural responses of the stiffened-plate structures are investigated. This is done by changing the material properties of DH36 steel according to the research findings on the neutron-irradiated steels and then performing the structural response analyses of the structures using analytical and finite-element numerical solutions. Results reveal the influence of neutron irradiation on the structural responses of the structures. It is shown that both the strength and stiffness of the structures are affected by the neutron-irradiation phenomenon as their maximum flexural stress and deflection are increased with the increase in the amount of neutron irradiation. This implies that strength and stiffness need to be considered in the design of ships equipped with marine nuclear reactors.

  • Recently there has been an increase in interest and competition in sharing economy platforms. The success stories of many companies have spread in this field, such as Uber, but on the other hand, there are many other companies that have failed. We studied and analyzed the factors that affect the user's participation in the sharing economy platforms as an essential part of this system, and how to maintain the consumer's intention of use without compromising consumer satisfaction, as it has become an issue of great importance on the path to the success of the sharing platforms. Relying on the expanded valence framework and expectation confirmation theory as a basis, we constructed hypotheses that influence intention to participate in participatory platforms. Results show that system quality, trust, perceived benefits, and satisfaction are important factors that positively influence intention to continue to participate. This research is expected to help researchers move forward with research related to the future and help business managers understand user insights and integrate them with their business model to help the success, development and expansion of their business in the Kingdom of Saudi Arabia.

Towards a UTAUT Model for Acceptance of MOOCs

  • In many training institutions, the major advancement of Information Technology is having a profound impact on the way in which instructors teach and students learn, as well as how the two interact. The training process is continuing with the goal of enhancing the calibre of instruction and engagement. Top colleges and institutions have more recently developed a variety of Massive Open Online Courses (MOOC) systems centred on the development of new educational offering ways. These have not only captured the interest of students and scholars in the field of higher education, but also that of staff members in the private and public sectors. This study uses a Unified Theory of Acceptance and Use of Technology (UTAUT) model to assess the top MOOC providers and pinpoint the key elements influencing learner acceptance of MOOCs in Saudi Arabian training. A total of 382 government trainees in Saudi Arabia participated in an online survey, the results of which underwent analysis using structural equation modelling. This study identifies the key elements influencing Saudi government employee trainees' intentions to use MOOCs, with the findings indicating that the suggested model can account for 86.2% of user behaviour and 88.5% of user intentions.

Impact Education on Korean Diet and Diet Sustainability as Determined by the Food Preference Types of Elementary School Students (초등학생의 한식 선호유형에 따른 한식 식생활 교육효과가 식생활 지속가능성에 미치는 영향)

  • This study was to identify the effects of education on Korean foods preferred by elementary students and their sustainability. A survey was conducted on 5th-grade elementary school students. Korean food preferences were classified by exploratory factor analysis as creative, healthy, or considerate, and the effects of education on Korean dietary life were classified as cognitive or emotional. Dietary life sustainability was evaluated separately. Results showed that creative and considerate preferences had significant impacts on cognitive and emotional education effects and that a healthy preference type significantly impacted the emotional effect of education. Analysis showed that creative and considerate food preference types significantly influenced dietary life sustainability and that cognitive and emotional education effects mediated these relationships. Sex was not found to have a significant moderating effect. The study shows that Korean dietary life sustainability is influenced by education on topics that promote the value and excellence of Korean food and suggests that experiential education combining practice and theory should be used to increase interest in Korean food among elementary students. Additional studies are required to determine Korean food preferences to facilitate the development of a dietary life education program that enables students to understand and maintain healthy dietary practices.

  • Exploring artificial intelligence and machine learning for nuclear safety has witnessed increased interest in recent years. To contribute to this area of research, a machine learning model capable of accurately predicting nuclear power plant response with minimal computational cost is proposed. To develop a robust machine learning model, the Best Estimate Plus Uncertainty (BEPU) approach was used to generate a database to train three models and select the best of the three. The BEPU analysis was performed by coupling Dakota platform with the best estimate thermal hydraulics code RELAP/SCDAPSIM/MOD 3.4. The Code Scaling Applicability and Uncertainty approach was adopted, along with Wilks' theorem to obtain a statistically representative sample that satisfies the USNRC 95/95 rule with 95% probability and 95% confidence level. The generated database was used to train three models based on Recurrent Neural Networks; specifically, Long Short-Term Memory, Gated Recurrent Unit, and a hybrid model with Long Short-Term Memory coupled to Convolutional Neural Network. In this paper, the System Engineering approach was utilized to identify requirements, stakeholders, and functional and physical architecture to develop this project and ensure success in verification and validation activities necessary to ensure the efficient development of ML meta-models capable of predicting of the nuclear power plant response.

News-Finds-Me Perception in Digital Era: A Systematic Review from Retail Marketing Perspective

  • Purpose: The concept of News-finds-me Perception (NFMP) is gaining increasing scholarly interest due to its wide-ranging findings and implications in digital communications and marketing. From the retail marketing and communication approaches, social media is an effective tool to effectively communicate and persuade customers and stakeholders. Nevertheless, a scarcity of systematic review studies that systematically assemble prior research in the field is recognized. Consequently, this research investigated the Scopus database for articles pertaining to NFMP. Research design, data and methodology: The search was conducted on August 24, 2023, retrieving 46 documents. Following a data-cleaning process, 31 documents remained, providing evidence of the subject area's five-year development. The data was refined with OpenRefine and analyzed with VosViewer. Results: An overview of the subject's expansion is presented, which comprises the most cited documents, authors, organizations, journals, and countries. Furthermore, the investigation examines the influential studies that furnished scientists with essential knowledge and identify the current research trend of the research subject. Conclusions: Based on the results, the study proposes theoretical and practical implications, encouraging academics to further integrate the concept with various communication and marketing theories, as well as the retail marketing context, to gain a better understanding of its complex impacts.

Design and Implementation of a Career Guidance Program at Gachon University College of Medicine (가천대학교 의과대학 졸업 후 진로지도 프로그램 설계와 운영)

  • The ultimate goal of career guidance is to help medical students develop a career plan that matches their personal characteristics, allows them to train in their desired subspecialty, and helps them to adapt well to medical practice after graduation. Gachon Medical School has designed a longitudinal career guidance program called GLORI (Gachon Longitudinal Orientation and Career Development), which is based on the outcome of each phase. The program consists of regular courses and portfolio-based career guidance from a mentor professor. In phase 2 (basic medical science), the "Career Seminar" course was developed. This course focuses on self-understanding through a psychological inventory, exploration of postgraduate career paths, and interviews with professors in specialties of interest. In phase 3 (the integration of basic and clinical science), the "Exploring Nonclinical Career Options" course was introduced. This course presents perspectives from doctors who have followed various pioneering career trajectories, including biomedical engineering, medical journalism, writing, public health, health care administration, the pharmaceutical and medical device industries, and other areas. All teaching methods were designed to encourage student participation. The assessment methods are assignment-based, including self-reflective reports and presentations. In addition, a portfolio-based career guidance program is implemented in phases 3 and 4 (clinical clerkship). It is expected that this case study will serve as a practical example for developing comprehensive career guidance programs for medical schools.

Development of a Thickness Mode Piezoelectric Oscillator Sensor to Detect Damages in a Structure (구조물 손상 탐지를 위한 두께 방향 모드 압전 오실레이터 센서 개발)

  • This paper presents the feasibilityof a thickness mode piezoelectric oscillator to detect damages in structures. The thickness mode oscillator sensor is composed of an electronic feedback oscillator circuit and a piezoelectric thickness mode vibrator to be attached to a structure of interest. Damage to the structure causes a change in the impedance spectrum of the structure, which results in a corresponding change of a resonant frequency of the structure. The oscillator sensor can instantly detect the frequency change in a very simple manner. Feasibility of the piezoelectric oscillator sensor was verified with a sample aluminum plate where artificial cracks of different lengths and number were imposed in sequence. Validity of the measurement was confirmed through comparison of the experimental data with the results of finite element analyses of a plate with cracks.

  • In livestock industry, there is growing interest in methods to increase the production efficiency of livestock to address food shortages, given the increasing global population. With the advancements in gene engineering technology, it is a valuable tool and has been intensively utilized in research specifically focused on human disease. In historically, this technology has been used with livestock to create human disease models or to produce recombinant proteins from their byproducts. However, in recent years, utilizing gene editing technology, cattle with identified genes related to productivity can be edited, thereby enhancing productivity in response to climate change or specific disease instead of producing recombinant proteins. Furthermore, with the advancement in the efficiency of gene editing, it has become possible to edit multiple genes simultaneously. This cattle breed improvement has been achieved by discovering the genes through the comprehensive analysis of the entire genome of cattle. The cattle industry has been able to address gene bottlenecks that were previously impossible through conventional breeding systems. This review concludes that gene editing is necessary to expand the cattle industry, improving productivity in the future. Additionally, the enhancement of cattle through gene editing is expected to contribute to addressing environmental challenges associated with the cattle industry. Further research and development in gene editing, coupled with genomic analysis technologies, will significantly contribute to solving issues that conventional breeding systems have not been able to address.
