Effects of Taurine Supplementation on Growth Peformance, Backfat Thickness and Cholesterol and Taurine Concentrations in Finishing Pigs (식이내 타우린 첨가가 비육돈의 성장, 등지방두께, 체내 콜레스테롤 및 타우린 농도에 미치는 영향)

  • The purpose of the this experiment was to evaluate taurine supplementation on growth performance backfat thickness and cholesterol and taurine concentrations in finishing pigs. A total of forty eight pigs (71.11$\pm$0.14kg initial body weight) were used in a growth assay. The control diet (CON) was corn-soybean meal based diet, whereas the other dietary treatments were supplemented by additional 0.3 and 0.6% of taurine into the control diet (TAU 0.3 and TAU 0.6, respectively). As the addition of taurine in the diets increased average daily weight gain (Quadratic effect, p<0.05) and gain/feed (Quadratic effect p<0.02) were improved. Total - cholesterol concentrations of serum (Linear effect, p<0.04) and liver (Linear effect, p<0.01) decreased with increasing taurine. As the addition of taurine in the diets increased taurine concentrations of plasma (Linear effect, p<0.01), liver (Linear effect, p<0.01) and boston butt (Linear effect, p<0.01) were increased. In conclusion, finishing pigs fed the dietary taurine had improved growth ratio and decreased total-cholesterol concentrations of serum and liver. Also, finishing pigs fed the dietary taurine had increased taurine concentrations of plasma and boston butt.

  • This study was carried out to investigate the change of palatability improvement of cooked meat by the physico-chemical properties and sensory characteristics as aging at $3^{\circ}C$ after thawing of frozen Holstein tenderloin. Shear force value(SFV), myofibrillar fragmentation ratio(MFR), appearance of 30ki1o dalton (30KD) component, raw meat aroma, tenderness, palatability of cooked meat, content of free amino acid and ATP related compound were measured. Raw meat aroma (p< 0.01), tenderness(p<0.05), SFV(p<0.05), MFR(p<0.01) and 30KD(p<0.001) of unfrozen beef tenderloin aged at $3^{\circ}C$ were superior than frozen beef tenderloin. As aging at $3^{\circ}C$ after thawing of frozen beef tenderloin SFV(p<0.05) decreased, MFR(P<0.001) and 30KD(p<0.001) increased, and raw meat aroma and tenderness improved(p<0.05). Also, cooked meat aroma, texture and palatability improved(p<0.05), without changing the taste. The content of aspartic acid and leucine of tenderloin aged thawing of frozen beef abounded were more than frozen beef(p<0.05), concentration of IMP(P<0.05) decreased, the hypoxanthine(p<0.05) and inosine increased.

Effects of concentrations and types of neutral salts on the foaming properties of sodium caseinate (중성염의 종류 및 농도가 sodium caseinate의 거품성에 미치는 영향)

  • To investigate the effects of neutral salts on the foaming properties of sodium caseinate, turbidity, surface tension, absolute viscosity, foaming ability and foam stability of the caseinate solutions(5%, w/v) with added NaF, $Na_2SO_4$, NaCl, $NaNO_3$, and NaSCN at concentrations of 0.1, 0.5, 1.0, 1.5 and 2.0 M were examined. NaCl and $NaNO_3$ improved the foaming ability compared to sodium caseinate without salt, and also $Na_2SO_4$ and NaF did the foaming ability at the concentrations of 0.1M and 0.5M, while NaSCN did not improve the foaming ability. For foaming ability optimal concentrations of the salts were 0.5, 1.5, and 1.0 M in $Na_2SO_4$, NaCl, and NaSCN, respectively. Additions of $Na_2SO_4$, NaF and $NaNO_3$ at 0.5 M concentrations improved the foam stability of sodium caseinate by 825%, 615%, and 53% compared to control, while those of NaSCN reduced foam stability.

Effect of Calcium Compounds from Oyster Shell Bouind Fish Skin Gelatin Peptide in Calcium Deficient Rats (어피 젤라틴 펩티드와 결합한 굴껍질 유래 칼슘 화합물이 칼슘 결핍 흰쥐에 미치는 영향)

  • To utilize the oyster shell containing a lot of calcium, we investigated the bioavailability of calcium compounds from oyster shell. First, calcium oxide was prepared by burning of oyster shell at $1200^{\circ}C$. Its purity was approximately $98.5\%$. Calcium compounds, $CaCl_2$, and $CaHPO_4$, from the calcium oxide were prepared by chemical reaction. Effect on calcium absorption by the calcium compounds from oyster shell was improved using fish skin gelatin peptides.(FSGP), which was prepared by enzymatic hydrolysis of fish skin gelatin for 4hr with tuna pyloric caeca crude enzyme (TPCCE). in vitro experiment, calcium absorption by addition of FSGP in a mixture solution of calcium and phosphate was higher approximately $70\%$ than that by control. in vivo using calcium deficient rats, a group taken the diets with $3\%$ FSGP and $CaHPO_4$ was significantly improved amount of calcium and ash in femur and strength of femur. These results suggest that calcium compounds from oyster shell and FSGP could be used as an effective dietary calcium source.

Optimum Formulation of Starch and Non-muscle Protein for Alkali Surimi Gel from Frozen White Croaker (냉동 백조기의 알칼리 수리미 겔 제조를 위한 전분 및 비근육 단백질의 최적화)

  • The two-level full factorial and mixture design were used to screen ingredient type and to investigate effects of ingredients on properties of alkali surimi gel from frozen white croakers using measurements of a breaking force, deformation and color. The addition of starch decreased a breaking force and deformation of gel regardless of starch type. The breaking force was decreased, but a deformation was not significantly changed (p<0.05) with increasing starch level. The potato starch was more resonable than com and wheat starch for a breaking force and deformation. The bovine plasma protein (BPP) greatly improved a breaking force and deformation. The breaking force and deformation of gel were increased with concentration of BPP. The whiteness of gel was slightly improved with adding starch and non-muscle for all treatments. At 78% moisture, the optimum ratios of ingredients were 89.4∼90.0% for surimi, 5.9∼6.3% for potato starch and 5.0∼5.4% for BPP to obtain above 100g for a breaking force, 4.6 mm for a deformation, and 25.5 for a whiteness.

Effects of Dietary Onion Supplementation on Growth Performance and Cholesterol Level of Blood in Finishing Pigs (비육돈 사료에 양파의 첨가가 성장 및 혈중 콜레스테롤 함량에 미치는 영향)

  • This study was conducted to evaluate the effects of dietary onion supplementation on the growth rate and blood cholesterol level in finishing pigs. Sixty $Duroc\;{\times}\;Yorkshire\;{\times}\;Landrace$ pigs ($69.75{\pm}0.79kg$ average BW) were used in a 50 day growth assay. Dietary treatments included 1) corn-SBM (Con), 2) 1)+dietary onion rice bran 1.0% (ORB1), 3) 1)+dietary onion rice bran 2.0% (ORB2). For overall period, average daily weight gain and average daily feed intake were increased by the addition of dietary onion compared with Con (linear effect; p<0.01). Feed efficiency ratio was successfully improved by supplementation of dietary onion (linear effect; p<0.01). The total cholesterol concentrations in serum decreased as the concentration of onion in the diets was increased (linear effect, p<0.06). Also, LDL-cholesterol concentrations in serum tended to decrease in pigs fed onion than in those fed Con diet group (linear effect, p<0.04; quadratic effect, p<0.09). The HDL-cholesterol and triacylglyceride concentrations in serum were not influenced by the onion supplementation. The results obtained from this feeding trial suggest that the dietary onion supplementation for finishing pigs weighed 70 to 108 kg had improved growth performance and reduced total cholesterol level of serum.

Clinical Manifestations and Treatment Outcomes of Eosinophilic Gastroenteritis in Children

  • Purpose: The aim of the present study was to investigate the clinical features and outcome of eosinophilic gastroenteritis (EGE) in children. Methods: Our study enrolled 24 children who were diagnosed with EGE from 1993 to 2014 at the Department of Pediatrics, Seoul National University Children's Hospital. The patients' clinical manifestations, treatments, and outcomes were reviewed from the medical records. Results: The mean age at diagnosis was 5.3 years. Most patients had gastrointestinal symptoms including diarrhea (54.2%) and abdominal pain (45.8%). Peripheral eosinophilia was present in 91.7% of the patients. Thirteen patients (54.2%) showed anemia, and 15 patients (62.5%) had hypoalbuminemia. EGE was classified as mucosal, subserosal, or muscular in 75.0%, 20.8%, and 4.2% of cases, respectively. Three patients showed gastroduodenal ulcers upon endoscopic analysis. A history of allergy was reported in 13 patients, including atopic dermatitis, allergic rhinitis, and asthma. Five patients (20.8%) improved with food restrictions. Among the 19 patients treated with steroids, 11 (57.9%) discontinued steroid treatment without subsequent relapse, 4 (21.1%) relapsed after ceasing steroid treatment, and 4 (21.1%) showed no response to steroids. Two patients who were resistant to steroids underwent therapeutic surgery. The presence of gastroduodenal ulcers was significantly associated with relapse and steroid resistance. Conclusion: A high suspicion of EGE is warranted when children have nonspecific gastrointestinal symptoms and peripheral eosinophilia. Most patients improved with food restrictions or steroid treatment, although one-third of patients showed a relapse or steroid resistance.

Effects of Whole Crop Barley Silage (WBS) Supplementation on Growth Performance and Meat Quality of Hanwoo Steers (총체보리사일리지 급여가 한우 거세우의 생산성 및 육질특성에 미치는 영향)

  • This study was conducted to investigate the effect of feeding whole crop barley silage (WBS) on the growth performance, carcass grade, and beef quality of Hanwoo steers. Twelve Hanwoo steers (12-mon-old) were allocated into either a control (rice straw fed) or WBS (whole crop barley silage fed) group (six animals per group) and fed for 540 d until the animals reached 30-mon-old. Concentrates and roughage were fed according to the feeding stage phases; finisher I (12.16-monold), II (17.21-mon-old), and III (22.30-mon-old). A significant increase in growth was observed during the finisher I stage for the steer fed WBS, whereas a significant increase in growth occurred during the finisher II stage in the control group. The yield grade of the WBS group increased significantly with a 15.6% increase in the longissimus dorsi area and a 25.7% reduction in back fat thickness. Marbling scores improved 52.4% in the WBS group compared with the control group. A significant difference in treatments was observed for the proximate chemical composition of the crude fat content. The results regarding palatability traits in the WBS group showed a significant improvement in appearance. The results indicate that the WBS group had improved longissimus muscle and marbling scores on carcass grading compared to the control.

Effects of Dietary Fermented Persimmon Diet on the Meat Quality of Fattening Pigs

  • The purpose of this study was to explore the effect of fermented persimmon diet on the meat quality of fattening pigs. Pigs (75 kg) were grouped and housed as 15 animals per pen and 3 replications per treatment. The basal diet (C) was substituted with 3% (T1), 5% (T2) and 10% (T3) of fermented diet. The 180 pigs were fed experimental diet for 42 d and 10 longissimus dorsi (LD) per treatment were collected when each swine reached 105.6 kg of body weight. The crude fat concentration of LD was lower (p<0.05) in treatments, but the pH value of T3 and the shear force values of T2 and T3 were higher (p<0.05) than those of C. The CIE $L^*$ value (lightness) was significantly (p<0.05) higher in T2 and T3 than C, but the CIE $b^*$ (yellowness) of T2 and T3 was significantly (p<0.05) lower than C. The composition of myristic acid and oleic acid was significantly (p<0.05) higher in treatments than in C, while the composition of palmitic acid and stearic acid of treatments were significantly (p<0.05) lower than C in LD. Sensory evaluation of cooked meat as scores of aroma, taste, juiciness and overall acceptability showed higher (p<0.05) in treatments than in C. In conclusion, the dietary of fermented persimmon diet decreased the crude fat concentration, improved the fatty acids composition (increased composition of unsaturated fatty acid and decreased composition of saturated fatty acid) and improved the sensory evaluation of pork meat from fattening pigs.

Study on the Code System for the Off-Site Consequences Assessment of Severe Nuclear Accident (원전 중대사고 연계 소외결말해석 전산체계에 대한 고찰)

  • The importance of severe nuclear accidents and probabilistic safety assessment (PSA) were brought to international attention with the occurrence of severe nuclear accidents caused by the extreme natural disaster at Fukushima Daiichi nuclear power plant in Japan. In Korea, studies on level 3 PSA had made little progress until recently. The code systems of level 3 PSA, MACCS2 (MELCORE Accident Consequence Code System 2, US), COSYMA (COde SYstem from MAria, EU) and OSCAAR (Off-Site Consequence Analysis code for Atmospheric Releases in reactor accidents, JAPAN), were reviewed in this study, and the disadvantages and limitations of MACCS2 were also analyzed. Experts from Korea and abroad pointed out that the limitations of MACCS2 include the following: MACCS2 cannot simulate multi-unit accidents/release from spent fuel pools, and its atmospheric dispersion is based on a simple Gaussian plume model. Some of these limitations have been improved in the updated versions of MACCS2. The absence of a marine and aquatic dispersion model and the limited simulating range of food-chain and economic models are also important aspects that need to be improved. This paper is expected to be utilized as basic research material for developing a Korean code system for assessing off-site consequences of severe nuclear accidents.
