Effects of Grapefruit Seed Extract on Oxidative Stability and Quality Properties of Cured Chicken Breast

  • This study investigated the antioxidative and functional effects of a curing agent containing grapefruit seed extract (GSE) on the quality and storage characteristics of chicken breast. The total polyphenol and total flavonoid contents of GSE were 45.06 mg/g and 36.06 mg/g, respectively. The $IC_{50}$ value of 2,2-diphenyl-1-picrylhydrazyl hydroxyl scavenging of GSE was $333.33{\mu}g/mL$. The chicken breast comprised six groups: no-treatment (N), 0.2% ascorbic acid + 70 ppm sodium nitrite (C), 0.05% GSE (G0.05), 0.1% GSE (G0.1), 0.3% GSE (G0.3), and 0.5% GSE (G0.5). The pH and cooking loss of cured chicken breast decreased with increasing GSE levels, and the water holding capacity increased with increasing GSE levels. The hardness and chewiness of GSE-treated chicken breast were higher than those of N and C. Hunter's L and a color values increased significantly after GSE addition. Moreover, 0.1% GSE (G0.1) increased the flavor and total acceptability scores. The 2-thiobarbituric acid and volatile basic nitrogen values of the 0.5% GSE group decreased significantly compared with those of C group. Total microbial counts of GSE-treated chicken breast were higher than those of C, but that lower than those of N. Adding GSE to chicken breast delayed lipid peroxidation and had antimicrobial effects during cold storage. GSE improved shelf life and palatability; therefore, it could be used as a natural antioxidant and functional curing agent ingredient in meat products.

In Vitro Radical Scavenging Effect and Neuroprotective Activity from Oxidative Stress of Petasites japonicus (머위 분획물의 In Vitro 라디칼 소거능 및 신경세포의 산화적 스트레스 보호 효과)

  • This study was focused on the evaluation of radical scavenging effect and the protective activity against oxidative stress of the extract and fractions from Petasites japonicus. P. japonicus was extracted with methanol and then fractionated into 4 fractions [n-butanol, ethyl acetate (EtOAc), methylene chloride, and n-hexane]. The extract and fractions showed strong 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity. Among all the fractions, particularly, the EtOAc fraction showed the strongest effect with the $IC_{50}$ value of $0.02{\mu}g/ml$. In addition, the fractions also showed strong hydroxyl radical scavenging activity and nitric oxide scavenging activity as well. Furthermore, cell viability generated by the P. japonicus extract and 4 fractions were examined under C6 glial cellular model. The C6 glial cells showed high generation of reactive oxygen species (ROS) and decrease in cell viability by the treatment generator of hydrogen peroxide. However, the production of ROS formation was decreased by the treatment of the fractions of P. japonicus and also founded that the EtOAc fraction led to significant increase in the cell viability at concentration $100{\mu}g/ml$. Results from this work indicated that P. japonicus showed protective effects against oxidative stress and its EtOAc fraction may be served as a useful natural antioxidant.

Quality Characteristics and Antioxidant Activities of Yanggeng with Added Rehmanniae radix Preparata Concentrate (숙지황 농축액 첨가 양갱의 품질특성 및 항산화성)

  • This study was performed to evaluate the quality characteristics of yanggeng prepared with different amounts of Rehmanniae radix Preparata (RRP) concentrate. Moisture, acidity, soluble solids, and reducing sugar contents of the control were the lowest, followed in order by the 3%, 6%, and 9% RRP addition. The pH of 9% RRP added yanggeng was the lowest, followed in order by the 6% and 3% additions. The lightness value of the Hunter color system decreased based on the amount of RRP concentrate added to yanggeng. In the texture analysis, the hardness and cohesiveness of the 9% RRP added yanggeng were the highest among the treatments. Total phenol content was the highest in 9% RRP added yanggeng. Antioxidant activities such as DPPH radical scavenging activity and hydroxyl radical scavenging activity, were the highest in the 9% RRP added yanggeng. In the sensory evaluation for yanggeng, the sensory scores for overall preference and texture were the highest in the 6% RRP added yanggeng The result was suggested that the optimum amount of RRP concentrate to add to yanggeng was 6%.

Transfer of Oxygen Vacancy and Proton in Y-doped BaZrO3 (Y-doped BaZrO3에서의 산소 공공과 프로톤의 이동)

  • We studied the transfer of oxygen vacancy and proton in Y-doped BaZr$O_3$ (BYZ) using density functional theory (DFT). An oxygen vacancy was generated in the $2{\times}2{\times}2$ BYZ superstructure by replacing two Zr atoms with two Y atoms to satisfy the charge neutrality condition. The O vacancy transfer between the first and second nearest O atom sites from a Y atom showed the lowest activation energy barrier of 0.42 eV, compared to the other transfers between first and first, and second and second in the superstructure. Two protons were inserted in the structure by adding a proton and hydroxyl that were supplied by the dissociation of a water molecule. The two protons bonded to the first and second nearest O atoms were energetically the most favorable. The activation energy barrier for a proton transfer in the structure was 0.51 eV, when either proton transferred to its neighbor O atom. This value was well matched with the experimentally determined one.

EFFECT OF SUPPLEMENTING RUMEN-PROTECTED LYSINE AND METHIONINE ON RUMINAL CHARACTERISTICS AND NUTRIENT DIGESTIBILITY IN SHEEP

  • This experiment was conducted to investigate the protein sparing effect of rumen protected lysine(RPLys) and methionine hydroxyl analogue(MHA) in sheep. The treatments were $T_1$ (CP 15% + RPLys 0%), $T_2$ (CP 12% + RPLys 0%), $T_3$ (CP 12% + RPLys 0.4%) and $T_4$ (CP 12% + RPLys 0.4% + MHA 0.3%). Ruminal characteristics, in situ and in vitro digestibility and nitrogen retention rate were measured in sheep receiving different combinations of dietary supplement. The results are summarized as follows: 1. Ruminal pH and VFA concentrations were not affected by the treatments. Ruminal ammonia-N concentration was high in sheep fed diets $T_2$, $T_3$ and $T_4$ with the highest value in the $T_4$ treatment(p<0.05). 2. The digestibilities of dry matter and organic matter were not affected by the treatments. 3. Nitrogen losses through feces and urine were the highest with $T_1$ (p<0.05) and nitrogen retention rates of groups $T_1$, $T_2$, $T_3$ and $T_4$ were 18.6, 32.4, 35.5 and 27.5% of nitrogen intake, respectively, indicating that RPLys supplementation improved nitrogen retention in sheep.

A Study on Ozonation of 4-nonylphenol (4-nonylphenol의 오존산화 처리반응에 관한 연구)

  • In this study, 4-nonylphenol (4-NP), an endocrine disrupting chemical, was removed by ozone treatment processes under the various experimental conditions including UV irradiation, $TiO_2$ addition. The ozone flow rate and concentration were maintained at $1.0L{\cdot}min^{-1}$ and $70{\pm}5mg{\cdot}L^{-1}$. The pH, COD and TOC of the samples were obtained every 10 minutes for 60 minutes in laboratory scale batch reactor. We found that the combination of UV irradiation and $TiO_2$ addition for ozonation improves the removal efficiency of COD and TOC in 4-NP aqueous solution. In case of the $O_3/UV/TiO_2$ system, COD and TOC were greatly reduced to 85.3 ~ 94.0% and 89.2 ~ 97.2%, respectively. 4-NP degradation rate constants, $k_{COD}$ and $k_{TOC}$, were calculated based on the COD and TOC values. Significantly, $k_{COD}$ and $k_{TOC}$ were improved in the $O_3/UV/TiO_2$ treatment process compared with single $O_3$ process, because the oxidation and the mineralization of 4-NP were increased by generating of the hydroxyl radical. The $k_{COD}$ and $k_{TOC}$ were obtained to be $5.81{\times}10^{-4}{\sim}10.8{\times}10^{-4}sec^{-1}$ and $11.9{\times}10^{-4}{\sim}19.4{\times}10^{-4}sec^{-1}$ in the $O_3/UV/TiO_2$ process. Activation energy ($E_a$) of ozone oxidation reaction based on $k_{COD}$ and $k_{TOC}$ were increased in order of $O_3/UV/TiO_2$ < $O3/UV$ < $O_3/TiO_2$ < $O_3$ process. It was confirmed that the addition of $TiO_2$ and UV irradiation to the ozone oxidation reaction significantly reduced the $E_a$ value and the degradation of 4-NP.

Quality Characteristics and Antioxidant Activities of Sulgidduk Added with Almond Powder (아몬드 첨가 설기떡의 품질 특성 및 항산화성)

  • The purposes of this study were to evaluate the quality characteristics and antioxidant activities of Sulgidduk added with almond powder (0, 6, 12, or 15%). As the amount of almond powder increased, soluble solid content ($^{\circ}Brix$) and reducing sugar content (%) decreased, whereas pH and acidity were unchanged. The L (lightness) value in the Hunter color system of Sulgidduk added with almond powder decreased, whereas a (redness) and b (yellowness) values increased. Total phenolic content of Sulgidduk increased according to the amount of almond powder. The antioxidant activities, including 1,1-diphenyl-2-picrylhydrazyl and hydroxy radical scavenging activities, increased in Sulgidduk with almond powder compared with that of the control. It is concluded that Sulgidduk with almond powder may be of high quality with antioxidant activity. In the sensory test, Sulgidduk added with 12% almond powder showed the highest score in terms of overall preference.

Antioxidant Activities and Quality Characteristics of Fermented and Aged Garlic Yanggeng (발효숙성마늘 페이스트의 양을 달리하여 제조한 발효숙성마늘 양갱의 품질특성 및 항산화성)

  • The quality characteristics and antioxidant activities of Yanggeng prepared with different amounts of fermented and aged garlic paste(0, 10, 20 or 30%) were determined. The pH of fermented and aged garlic Yanggeng decreased according to the amount of added fermented and aged garlic paste, whereas the acidity increased. In addition, the lightness of fermented and aged garlic Yanggeng decreased according to the amount of added fermented and aged garlic paste. In the texture analysis, hardness, cohesiveness and springiness of fermented and aged garlic Yanggeng were lower than those of the control. Total phenol content was highest in 30 % fermented and aged garlic Yanggeng. The antioxidant activities of fermented and aged garlic Yanggeng increased according to the amount of added fermented and aged garlic paste. The IC50 value of 30% fermented and aged garlic Yanggeng was 45.1 mg/g for DPPH and 29.6 mg/g for hydroxyl radical. The results of the sensory test showed that Yanggeng with 20% fermented and aged garlic paste had the highest score in appearance, overall preference and texture. Based on these results, it was suggested that the addition of 20% fermented and aged garlic to Yanggeng was appropriate for good food qualities both in terms of the physicochemical and antioxidative activities.

  • In this work, the surface properties and mechanical interfacial properties of the carbon blacks treated by oxygen plasma were investigated. The surface properties of carbon black by oxidation process of oxygen plasma were studied in acid-base surface value, zeta potential, and X-ray photoelectron spectroscopy (XPS). And their mechanical interfacial properties of the carbon black/rubber composites were evaluated by the composite tearing energy ($G_{III}c$). As a result, it was found that the introduction rate of oxygen-containing polar functional groups, such as carboxyl, hydroxyl, lactone, and carbonyl groups, onto the carbon black surfaces was increased by increasing the plasma treatment time. It revealed that the polar rubber, such as acrylonitrile butadiene rubber (NBR), showed relatively a high degree of interaction with oxygen-containing functional groups of the carbon black surfaces, resulting in improving the tearing energy ($G_{III}c$) of the carbon black/acrlyonitrile butadiene rubber composites.

1,4-Dioxane Decomposition by Catalytic Wet Peroxide Oxidation using Cu Wire Catalysts (Cu wire 촉매를 이용한 촉매습식과산화공정에 의한 1,4-다이옥산의 분해)

  • Cu wire catalyst was highly reactive toward catalytic wet peroxide oxidation of the highly refractory 1,4-dioxane. While complete removal of 1,4-dioxane could be achieved with the catalyst, the removed 1,4-dioxane could not totally mineralized into $CO_2$ and $H_2O$. In accordance with the disappearance of 1,4-dioxane, formaldehyde and oxalic acid were formed gradually with reaction time and they went through maxima. At around the time of maximum concentrations of these two intermediates acetaldehyde concentration was increased drastically and showed maximum value. With the disappearance of these three intermediates, formic acid together with ethylene glycol diformate began to increase gradually. The Cu wire catalyst was proved also to be highly stable against deactivation during the reaction.
