A Study on the Effects of Hotel Restaurant Chefs' Job Attributes on Food Material Management (호텔조리사의 직무 속성이 레스토랑 식자재 관리 수행도에 미치는 영향에 관한 연구)

  • The purpose of this study was to examine the structural relationship where the job satisfaction of chefs who directly handle the food materials in the hotel restaurants influences their purchase and management of the food materials. For this, 350 chefs of 11 five-star hotels were surveyed with a questionnaire about the process and consciousness in managing food materials. 293 copies of the questionnaire were used in the empirical study by excluding unanswered and insincere ones. Before verifying the hypothesis, the reliability and propriety of the concepts suggested by the study model were analyzed through structural equation model using AMOS 5.0 to analyze concepts and verify the hypothesis. As the result of, the job satisfaction of five-star hotel restaurant chefs appeared to have positive influence on the chefs' purchase attitude, food material satisfaction, food material management performance. Also, the supplier satisfaction increased when the cooking and purchase departments communicate well with each other. Therefore, for the efficient purchase of food materials, the purchase and cooking departments shall survey the market periodically, increase communication between departments to obtain food material satisfaction, organization satisfaction and job satisfaction.

A Study on the Effects of Demographic Characteristics of Culinary Employees on Their Job Fatigue (조리 종사원의 인구통계학적 특성이 신체 통증 유발에 미치는 영향)

  • Rapid change of surroundings has been influencing the work environment for cooks, making it more convenient; however, there are still many difficulties to improve. Especially, cooks are exposed to lots of occupational diseases due to tension and pressure as well as noise, high temperature and humidity in their work place. This study examines cooks' operational exhaustion caused by cooking operation and cooking circumstances. The analyzed result shows the job fatigue related to the general features of the cooks(such as charged cooking part, types of engaged business, class of position, cooking career, and working hours). For example, pains on the neck, back, arms and wrist are mostly affected by the charged cooking parts. Effects related to the types of engaged business, backaches usually occurred in Catering, pains in shoulder from serving at hotels and eye-tiredness from meal serving. As for working hours, most of backaches occurred from over 13-hour-work, and pains in shoulder and eye-tiredness under 8-hour-work. Pains in legs, tiredness, and the change of weight do not have any relations withthe general features of the cooks statistically(p>0.05).

  • The purpose of this study was to analyze the job satisfaction, turnover intention and organization commitment level of hotel employees using Herzberg's motivation hygiene theory. This study used SPSS 20.0 and AMOS 20.0 to conduct frequency analysis, reliability analysis, confirmatory factor analysis, path analysis and chi-square difference test. The results of study, first of all, Herzberg's, theory of hygiene are influenced by satisfaction of employees, organization commitment and turnover intention. It will be strongly needed to management of compensation, well-organized policy of human resources system. Lastly, in Hotel business, It showed differences having a strong influence on local employee and chain hotel employee according to method of Hotel management. In conclusion, in the hospitality industry, it is desirable to carry out on their own ways of vision and purpose each corporations rather than following regimental rules.

A Study of Current Accident Situation for Hotel Service Workers (호텔서비스업 종사원들의 안전사고 실태연구)

  • Whenever a disaster occurs, people emphasizes that "Safety management is most important thing in the company". However, a situation of safety management is not changed dramatically after accidents in the past. Many small-and-medium sized industries neglect the importance of safety management. Current situation can be easily figured out when looks up an occurrence rate of accident, accident frequency rate and intensity rate. This paper investigated what workers of hotel-related industries think of a safety and types of accidents, effect of a safety education. On-site-survey was conducted for actual workers in four deluxe hotels and one condominium. 207 persons out of 400 people were replied. Statistical analysis was performed with SAS package about their reply. In injured type, cut from knife was most frequent. Main cause of accident was a unsafe posture and a unsafe behavior, so more safety education for these workers are necessary. In a physical pain which related with job, chronical pain was most dominant. As a result, a safety education has a high correlation with an experience of injured and treatment of safety, Cooking department has highest occurrence of accident than any other departments. Workers with an experience of five to ten years have most lowest treatment of safety, aid of safety education, safety feeling of their working environment, so peer attention must be put on these people to reduce accidents.accidents.

  • The purpose of this study is to analyze the energy consumption status for various building types in Taejon. 35 sample buildings were classified into 8 building types, i.e., sports center & swimming pools, hotels, telecommunication exchange service facility, hospitals, research laboratories, department stores, exhibition galleries, universities. According to analyses, energy consumption patterns varies significantly for each building type. Sports centers consumes highest rate(689 $Mcal/sqm{\cdot}yr$) and universities lowest rate(86 $Mcal/sqm{\cdot}yr$) among selected building types.

  • The alternative energy has lately attracted considerable attention due to the high oil price and environment problem. Deep sea water that is one of the natural energy sources should be getting popular continually to reduce the environment problem. In this study, cooling system of deep sea water using heat exchangers of two hotels where is located in near Hae-undae Bay has been analyzed on the quantity of electricity comparison between existing cooling system and deep seawater cooling system. As shortly, the results of study showed that the first building approximately saves 370 millions won per year, also the second building saves 248 millions won per year. It means that the cooling system by using deep sea water has great worth to reduce the ratio of fossil fuel.

  • In this paper, the Digital DoorLock by Internet of Things (DDiT) is introduced. In order to implement DDiT, an integrated micro-controller platform, Arduino is used to control an existing digital doorlock and an android type smart phone is adopted as a mobile platform. One of the advantages of DDiT is that it can be added to an existing digital doorlock and a smart phone application is used as a digital key. Owing to the smart phone application, several other types of applications could also be made. Therefore, DDiT could be used effectively and conveniently in ordinary homes as well as in high security applications such as in hotels, institutes, and companies.

Do Firm Characteristics and Industry Matter in Determining Corporate Cash Holdings? Evidence from Hospitality Firms

  • The study investigates a recent surge of cash literature by using a sample of hospitality firms to gain a new understanding of corporate cash holdings. Past literature states that there is a substantial variation of liquidity across industry groups. Existing literature predominantly refers to US-listed firms and focus on either hotels or restaurants and not the hospitality industry as a whole. Therefore, we provide a comparative study of cash holdings behaviour between hospitality and non-hospitality firms from an emerging market context. Using a sample of public listed hospitality firms from 2002 to 2013, dynamic panel regression techniques are used to study the relationships between firm characteristics and cash levels. Also, the non-parametric Wilcoxon-Mann-Whitney test was carried out to examine the time and sectoral differences in cash holdings. In addition, the panel regression techniques are used to investigate the relationships between firm characteristics and level of corporate cash holdings. The results reveal that firm characteristics do matter in hospitality firms. We find that firm size, capital expenditures, and liquid assets substitutes are negatively related to cash level. The results support trade-off theory and the pecking order theory. This study incrementally explains the cash holdings behaviour of hospitality firms in emerging market.

Factors Affecting Job Pursuit Intention in Hotel Industry in Ho Chi Minh, Viet Nam

  • Given the rise in international tourism and the rapid growth of the Vietnamese economy, the hospitality industry in Ho Chi Minh City, Vietnam's commercial hub, has been facing severe labor shortages due to competition with other fast-growing parts of the economy. These struggles to acquire high-quality employees is strangling future growth and placing new importance on the role of recruitment. To better understand the effectiveness of an organization's recruitment strategy, recruiters need to ascertain the Job Pursuit Intention (JPI) of job seekers to efficiently align an applicant's work notions with the organization's goals. This study aims to investigate the factors impacting on JPI among employees working in the hotel sector in Ho Chi Minh City. Secondary data are from previous studies and primary data are from consultation with 10 experts, group discussions and five in-depths structured interviews with 15 random employees and 302 survey questionnaires with employees working in three five-star hotels. Cronbach's Alpha, EFA, T-Test, ANOVA are used for statistical analysis. The findings show that compensation, career advancement, and work-life balance affect JPI of job seekers, in which compensation is the most influential factor. Furthermore, recommendations for recruiters, further research and limitations of this study have been laid out.

  • The vocabulary of modern grand hotels' interior designs reflects western design patterns, showing its nostalgia for modern architecture. And it also contains the trace of past designs implanted by others then, expressing the hardships of Korean history. Like this, the past architectural style distorted under the Japanese imperialistic rule has continued to exist until now without any significant changes, because there has been little effort to figure out the history of modern interior designs. And also there has been the lack of data and aesthetic descriptions about the modern interior designs that contain the historical nature of society. Therefore, this study will review the interior design of modern buildings, which trace back to the fawning of the Korean Interior Design. And it aims to understand the hotel interior's expressive characteristics and historical meanings by paying a particular attention to its lost parts. And it also alms to have a significant meaning in taking the first step toward a clue of the history of Korean modern interiors by systematically putting in order the ever-disappearing materials of modern hotel interiors.
