Changes of Ginsenosides and Color from Black Ginsengs Prepared by Steaming-Drying Cycles (흑삼 제조과정 중 증포 횟수에 따른 색상 및 진세노사이드 함량 변화)

  • This study was conducted to investigate changes in composition of ginsenosides and color of processed ginsengs prepared by different steaming-drying times. Processed ginsengs were prepared from white ginseng with skin by 9-time repeated steaming at $96^{\circ}C$ for 3 hours and followed by hot air-drying at $50^{\circ}C$ for 24 hours. As the times of steaming processes increased, lightness (L value) decreased and redness (a value) increased in color of ginseng powders. Crude saponin contents and ginsenosides compositions in processed ginsengs prepared by different steaming-drying times were investigated using the HPLC method, respecively. Crude saponin contents according to increasing steaming-drying times decreased in some degree. In the case of major ginsenosides, the contents of $Rb_1$, $Rb_2$, Rc, Rd, Rf, Re, $RG_1$, Re were decreased with increase in steamimg times, but those of $Rh_1$, $Rg_3$, $Rk_1$ were increased after especially 3 times of steaming processes. Interestingly, in black ginseng were prepared by 9 times steaming processes, the content of ginsenoside $Rg_3$ was 8.20 mg/g, approximately 18 times higher than that (0.46 mg/g) in red ginseng. In addition, the ratio of the protopanaxadiol group and protopanaxatiol group (PD/PT) were increased from 1.9 to 8.4 due to increasing times of steamming process.

Physicochemical Characteristics of Powder from Hot Air and Freeze Dried Leaves and Roots of Acorous calamus L. (열풍건조와 동결건조에 따른 수창포(Acorous calamus L.) 분말의 부위별 이화학적 특성)

  • The physical and chemical characteristics of powders from hot air and freeze dried leaves and roots of Acorous calamus L. were investigated. Two parts, upper and lower, of leaves, and two kinds of roots, 4 and 6 years old, were dried at 30 and $40^{\circ}C$, freeze-dried, and ground to make powder. Contents of moisture, ash, crude fat, and crude protein in freeze dried powder of upper leaf were 4.87%, 6.73%, 2.22%, and 3.57%, respectively. Water absorption index (WAI) and water solubility index (WSI) in freeze dried powder of lower and upper leaves were 8.476 and 0.077 g/mL. Contents of chlorophyll a, chlorophyll b and total chlorophyll in freeze dried powder of upper leaves were 12.18, 16.86, and 29.11 mg/100 g, respectively. Contents of total and reducing sugar in freeze dried powder of 4 and 6 years roots were $111.89{\sim}119.21$ ppm and $5.02{\sim}5.22$ ppm, $109.92{\sim}114.65$ ppm and $5.21{\sim}5.32ppm$. Contents of total polyphenols and flavonoids in freeze dried powder of upper leaf were 125.02 and $21.02{\mu}g/mg$, respectively.

Determination of Antioxidant Activity of Edible Calendula Flowers by Hot-air Drying Time (열풍건조 처리시간에 따른 식용꽃 금잔화의 항산화능 검정)

  • This experiment was conducted to determine optimal hot-air drying time for producing antioxidative calendula tea. The edible calendula was dried in hot air at $60^{\circ}C$ for 5, 10, 15 hours and Hunter's color value was measured and extracted with 95% ethanol as a solvent. The contents of total polyphenol, total flavonoid, total carotenoid and DPPH (2,2 Dipheny-1-picrylhydrazyl) radical scavenging activity were investigated. The correlation between the amount of antioxidant and antioxidant activity was analyzed. As the treatment time increased, the Hunter values of L, a, and b tended to decrease, and the L value and b value decreased significantly at 15 hours. The color change was occurred in all treatments compared with the control, and the total color difference (${\Delta}E$) was the largest at 15 hours treatment. The contents of total flavonoids, total carotenoids and DPPH scavenging activity increased in the 5 hours, but decreased in the 15 hours compared to the 10 hours. The content of total polyphenol was not changed with different treatment time. A positive correlation ($p{\leq}0.01$, r = 0.610) between carotenoids and DPPH radical scavenging activity was demonstrated. The DPPH radical scavenging activity was increased at 5 and 10 hours compared to the control and decreased at 15 hours. Therefore, 5 hours or 10 hours of treatment is appropriate and further studies are needed to determine the specific treatment time.

Analysis of a inner flow of ANDRICH type dryer (앤드리츠형 건조기의 내부 유동에 관한 해석)

  • In order to prevent the environmental pollution, the dryers are commonly used to treat sludge that one of sewages is polluting the quality of water. Generally, the drying method is various as to the property of material and use. Rotary dryer is a good apparatus to treat them. The rotary dryer is the way that is to make substance transmission and heating using hot air between sludge particles and heated gas. In this paper, we performed a numerical analysis of the inner air flow of the ANDRICH type dryer through the changing rotational speed from 3rpm to 10rpm. A PIV can be applied to research a inner flow of ANDRICH type dryer.

The Effect of Blast Drying System on Garlic just after Harvest (마늘의 수확직후(收穫直後)의 열풍건조(熱風乾燥) 효과(效果))

  • This study was performed to obtain a basic materials for improvement of garlic storage ability. The "Namhae jaerae" of southern strain and the "Dalsung jaerae" of northern strain were harvested by period, their stems were cut at 7cm and 25cm from disk and then placed them in blast drying system 12 hours per day at $40^{\circ}C$ for 4 days, or in natural state. The decrease rate of bulb weight was compared and rooting, sprouting, the rate of decay was investigated between natural dry(conventional method) and hot-air dry (blast drying system). The results obtained were as follows. In the case of the decrease rate of bulb weight after hot-air dry; 7cm plot" "Namhae jaerae" was similiar to one of 13th day of natural dry and 25cm plot 14th day. In "Dalsung jaerae" 7cm plot of early, common and late harvest was respectively similiar to one of 22nd, 18th and 16th day of natural dry, 25cm plot of early, common and late harvest showed the same decrease rate of bulb weight as that of 18th, 16th and 14th day of natural dry respectively. In the case of rooting and sprouting in sand culture at the early period of storage, hot-air dry showed more prolonged tendency than conventional drying method. In the case of clove state in the latter period of storage, number of eatable cloves was more numerous and number of decayed cloves were less in blast drying system than in conventional method.

Effect of Drying Process on Cow Manure Solidified Fuel Applications (건조방법 형태에 따른 우분 고체연료 수분 감소효과)

  • The drying test was carried on the globular type cow manure pellet for use in solid fuel applications. The globular type cow manure pellet fuel was sorted according to size by rotatory sieves. The three kind of drying methods such as convection hot-air drying method, infrared ray drying method and superheated steam method were used to dry the globular type cow manure pellet. Among the three kind of drying methods, superheated steam method of dry time was the shortest. The apparent specific gravity and low calorific value of dried cow manure pelltes was about $250{\sim}350kg/m^3$ and above 3,000 kcal/kg respectively. The smaller the particle size of cow manure pellets, the less drying time was required. The time was required very less for drying smaller particle size cow manure pellet when compared to larger size. In the case of the same drying condition, it has been found that reducing the particle size of cow manure fuel pellet is an important factor for shortening the drying time of the livestock manure pellet.

Quality Characteristics of Semi-Dried Red Pepper (Capsicum Annuum L.) Using Hot-Air drying (반건조 고추(Capsicum Annuum L.)의 건조조건에 따른 품질 특성)

  • The quality characteristics of semi-dry red pepper (SDRP) (Capsicum annuum L.) were compared with raw and dry red pepper (DRP). Raw red pepper was divided into pieces and the semi-drying treatment involved air-drying at $65^{\circ}C$. The study focused on describing the characteristics of semi-dry red pepper in comparison with dry red pepper. Factors considered were reduced drying period, ASTA color, capsanthin, capsaicinoids, free sugars and vitamin C content. ASTA color, capsanthin, capsaicinoids, free sugars and vitamin C content of SDRP were higher in SDRP than in DRP for 15 g or less water per 100 g. Red pepper powders made using the semi-drying method showed the highest amount of glucose and vitamin C. Capsanthin content in SDRP (151.6155.9 mg/100 g) was significantly higher than for DRP (133.4 mg/100 g). The capsaicinoid content of SDRP was about 13-25% higher than in DRP. The ASTA values (148.7159.3) for SDRP were much higher than for DRP (139.5). The vitamin C and free sugar content of SDRP was 40-76% and 20-40% higher, respectively, than for DRP. and $20{\sim}40%$, respectively, by SDRP compared to DRP.

Moisture Sorption Characteristics of Powdered Soybean Curd (분말(粉末) 두부의 수분흡착(水分吸着) 특성(特性))

  • In order to improve the storage stability of powdered soybean curd, moisture sorption characteristics of the curd stored at specific relative humidity and temperature were investigated. The results obtained are summarized as follows; 1. When the fresh soybean curd (2cm thickness) was dried in a hot air drier at $55^{\circ}C$, it took 18 hrs to reduce its moisture content from 85% to 8.8%, and drying rate was very high during the first 5 hrs. 2. Equilibrum moisture content (E.M.C.) of powdered soybean curd by freeze drying was higher than that of sample by got air drying, but the particle size did not influence E. M. C. 3. The monolayer value of freeze dried powder of high E. M. C was higher than that of the hot air dried(8.30 vs 7.35). 4. The free energy for moisture absorption of freeze dried powder at 11% RH were 1285.1 cal/mole, 1323.5 cal/mole at $15^{\circ}C$ and $30^{\circ}C$, respectively, and the free energy of freeze dried product was lower that of hot air dried product. 5. The moisture sorption rate constant was not affected by particle size, and it showed that the moisture sorption rate decreased as temperature was increased. The rate constant of powder produced by freeze drying were 0.00804 at $15^{\circ}C$ and 0.00696 at $30^{\circ}C$.

Air Pollutant Emission Factors from Composite Wood Products Manufacturing in Korea

  • In Korea, there is a general lack of information available on air emissions from industry. The reasons for this include the lack of regulatory requirements for emission monitoring, limited information on specific industries, and difficulties in monitoring certain sources. This paper presents the first detailed air pollutant emission factors from composite wood product manufacturing in Korea. This study introduced emission factors for wood-based panels such as plywood, particle board (PB), and medium density fiberboard (MDF). The emission factors of particulate matters (PM) and hazardous air pollutants (HAPs) from MDF were higher than that from other wood products. The concentration of total volatile organic compounds (TVOCs) for hot press from wood-based panels was higher than drying or gluing processes. Emissions data from NPIP were compared to the data from the suggested emission factors in this study and the US EPA's. The data from our emission factors were closer to the observed results than the data using the US EPA's emission factor.

Studies on the Lipids of Shiitake Mushroom, Lentinus edodes (표고버섯의 지질(脂質)에 관(關)한 연구(硏究))

  • The properties of lipids in cap and stalk of 'Koshin' (Shiitake, Lentinus edodes, withxpanded cap) were studied. It was also carried out that the characteristics of lipids in fresh 'Donko'(unexpanded cap) and the changes of lipids in those samples by various drying process. The total lipid (TL) content in the cap and stalk of 'Koshin' were 4.58% and 2.65% respectively. It was found that the contents of neutral lipids (NL, $46.7{\sim}48.8%$) and phospholipids (PL, $42.0{\sim}43.8%$) were high, while that of glycolipids(GL, $9.2{\sim}9.5%$) was low. The main lipid in NL was triacylglycerol (TG, $58.0{\sim}58.5%$) followed by sterolester (SE, $16.9{\sim}17.4%$), sterol (ST, $15.6{\sim}16.4%$), diacylglycerol (DG, $5.8{\sim}6.0%$) and monoacylglcerol (MG, $1.1{\sim}1.3%$). The main lipids in PL was phosphatidyl ethanolamine (PE, $58.3{\sim}6.02%$) followed by phosphatidyl choline (PC, $17.3{\sim}19.5%$), cardiolipin (CA, $12.8{\sim}14.0%$) and lyso-phophatidyl choline (LPD, $4.8{\sim}6.6%$). Fatty acid composition was significantly different among TL, NL, GL and PL contained in cap and stalk. The main fatty acids was $C_{18:2}$ followed by $C_{16:0}$ and $C_{18:1}$ acids. The TL contents in cap and stalk of fresh 'Donko' were 3.7% and 2.5%. The changes of TL contents, PoV by drying were not almost observed. AV(acid value) of TL in the sun dried samples was a little lower than those of the fresh and hot air dried samples, on the contrary NL content in TL of the former was a little higher than those of the latters. The main lipid in NL of the three samples was TG followed by SE, ST, DG, MG and free fatty acid (FFA). In the above lipids, FFA contents in NL of the sun dried sample was a little higher than those of the fresh and hot air dried samples, but TG content in NL of former was a little lower than those of the latters. The main lipid in GL of the three samples was digalactosydiglycerol (DGDG) followed by acylsterylglucoside(ASG), sterylglucoside (SG), monogalactosyldiglycerol (MGD) and cerebroside (CER). Influence of drying on these lipid content were nol almost recognized. The main lipid in PL of the three samples was PE followed by PC, CA, LPC and phosphat idyl serine (PS). In the above lipids, PE and PC contents in PL of the sun dried one were a little lower than those of the fresh and hot air dried ones. The main fatty acid in TL, NL, GL and PL of the three samples was $C_{18:2}$ followed by $C_{16:0},\;C_{18:1}$. The $C_{18:2}$ acid contents of the sun dried sample was a little lower than those of the fresh and hot air dried ones, while $C_{16:0}$ content of the former was a little higher than those of the former was a little lower than those of the latters.
