This purpose of this study was to contribute to the establishment of nutriton labeling and consumer education about food label by offereing basic information. Survey was carried out by questionnaire method. Subject groups were middle and high school female teachers and they were asked questions about their utilization and satisfaction of the current food labeling system, their awareness of the nutrition labeling and its necessity, and their acceptance of the future enforcement of nutrition labeling system. Questionnaires were distributed to 500 middle school female teachers in Chungbuk and Kyoggi area. Out of 340 reports(68%) collected, 311 reports(91.5%) were analyzed using SAS computer program. Most of the respondents payed much attention to the labels of the food at the time of purchase, the degree of their satisfaction in the current food labeling system was low. Concerning the awareness on nutrition labeling, Home Economics teachers knew better than non-Home Economics whether there were the regulations of nutrition labeling in Korea or not. Ninety-six percent of respondents answered that nutrition labeling is necessary. Home Economics teachers recognized the necessity of nutrition labeling more strongly than non-Home Economics teachers. Sixty eight percent of the respondents showed positive attitude to the actuation of nutrition labeling.
The purpose of this study was to examine the effects of an educational program regarding food safety for children. The data were collected from the results of a self-administered questionnaire that was given to 510 6th grade elementary school students in the Youngnam region who had undergone a food safety education program. The results of this study were as follows. First, the educational need for food safety was high in each food safety category, with the educational need for prevention against foodborne illness being the highest of the 10 categories. On the basis of the study results, educational materials were developed which targeted personal hygiene, food labeling, food purchase, food washing, food storage, cooking, foodborne illness prevention, food additives, endocrine disruptors, and illegal foods. Additionally, about 37% of the respondents aswered that they preferred the food safety education to be conducted at home. Second, the food safety education significantly improved the levels of knowledge and behavior of children toward food safety. These results imply that food safety education that addresses the concerns of children and their parents' is needed to improve the level of knowledge and behavior toward food safety.
An ecological survey of food and nutrition was conducted in April and May, among 278 children, 6 to 12 years old, of the Youido elementary school, which offers no school lunch program, and is situated in Youido delta of Han River side of Seoul, known as the location of one of the socioeconomically high groups; Eighteen percent and 18.3% of subjects were proven to be overweight and obese, respectively. With regard to frequency of skipping breakfast, 28.4% of the subjects skipped breakfast often and 2.5% of subjects skipped breakfast every morning. Obese children showed good appetite and the time consumed for eating was shorter than those of normal or overweight children. Most serious anxiety among the mothers for those children was food habit of `eating rapidly' and `overeating'. Another striking observation was that 14.4% of the subjects ate only one side-dish with boiled rice, and such a pattern was more often found in the normal or slim group. Most of the subjects had their snacks after being back in home from school. Thirty-one percent of the children had snacks when they felt hungry, 69% had snacks for various reasons such as `habitually', `for unwinding', and `mother gives me snacks'. Thirty-eight percent of the boys and 19% of the girls had physical exercise everyday and overweight and obese children got exercise more frequently. But the time consumed for exercise was much more shorter than that of normal subjects. Most of the children liked fruits, meats, and biscuit, in contrast, lowest preferency was for vegetables, fermented fish products, and boiled rice mixed with other grains. Obese children experienced more kinds of food than normal or slim group. The study found that habits of overeating due to good appetite and eating rapidly were recognized as one of dominant reasons causing obesity among children. On the other hand, serious dietary problem of children of normal or slim group was eating less variety of food. Active nutrition education for both children and mothers will be recommended with joint participation of teachers.
This study was conducted with the budgetary support of the Gyeonggi Provincial Government Department of Education as curriculum preparation (frequently revised since 2007) for the enhancement of teacher professionalism in Clothing, Food, and Housing Life education. This study promotes changes in student learning through the enrichment of Home Economics content and the classroom-learning environment through the reinforcement of teacher professionalism and attitudes towards Clothing, Food, and Housing Life education. This study enhances the comprehension of Home Economics and understanding by educators on the importance of Home Economics. The training program was evaluated through an analysis of the motive of application, level of satisfaction with the program, change in the view of Clothing Life education, and level of expectation and contributions of the program towards the curriculum development of teaching. The trainees were motivated by the opportunity to practice, uniqueness of the curriculum of the training program, and expectations for professional enhancement. The level of satisfaction is very high. Regardless of subjects, trainees recognized the necessity of practical exercise, cultural & artistic approach, and integrated teacher training in Clothing Life education. The teachers of other subjects recognized the importance of Home Economics and the historical background of Clothing, Food, and Housing Life.
This study was to suggest the roles of social enterprises in maintaining healthy life of the socially vulnerable by creating a customized care environment through chronic disease diet management targeting the elderly at home in need of care in the community. As for the subjects of this study, 102 in-home elderly people aged 65 or older (14 males & 88 females) who needed care in the community were provided with a diet management lunch box delivery service customized for chronic diseases. Theoretical education and cooking class on chronic diseases were provided to 15 volunteers with 10 sessions, and customized lunch boxes were provided to the elderly with chronic diseases at home on that day. In conclusion, it is believed that only by increasing the level of knowledge about chronic diseases and nutritional knowledge of the elderly will it be possible to establish a proper meal plan. Since the role of volunteers is important, it is necessary to systematically seek nutritional education methods for volunteers.
Home economics is a very important part of high school curriculum. The goal of home economics is to enable the students to get necessary knowledge and skills of household affaires, so they can manage their household tasks easily. This study was investigated to know the present condition of high school food preparation classes and evaluation method and to find out the problems related to the evaluation. Ninety four teachers from Kyoung-Ki province answered the questionnaire. The results are as follows: They though that the most appropriate food preparation classes should be at least 4-6 in a year. But in practice they only had 1-2 classes because of the time and budget. Because most of the teachers wanted the students to apply their knowledge to real life, they mainly chose Korean foods instead of western foods. It may help the students understand the Korean traditional food. Most of the schools needed additional gas oven ranges, microwave ovens and water purifiers. Most teachers(87.50%) evaluated the students in groups. This was due to limited time and lack of objective evaluation methods. So it is suggested that the Ministry of Education must make the measure of objective evaluation and allot more home economics hours at high school curriculum.
Sustainable meal management at home will be affected by the lifestyle of the housewife. This study examined the lifestyle of middle aged women and identified their practice levels of sustainable meal management at home. A total of 438 women, aged 35 to 59, managing the family's dietary life at home and living in Seoul, Gyeonggi Province, Daejeon, and Chonnan area participated in the survey. The middle aged women showed a higher performance level of hygiene-oriented (4.15) and health-oriented dietary life (3.59), but a less convenience-oriented dietary life (2.57). Based on their lifestyle, 3 clusters were extracted: Low-interest dietary life meal manager, health and quality pursuit meal manager, and convenience and eating-out pursuit active meal manager. Among them, the cluster of health and quality pursuit meal manager showed the highest sustainable practices in 7 dimensions of sustainable practices in the home except for the saving practices (p<0.001). The criteria suggested from the study can be applicable to the guidelines of sustainable meal management at home. The study can also be helpful for educators to identify the education themes for improving housewife's sustainable meal practices, having different lifestyle and sustainable meal practices.
The purpose of this study was to describe the levels of market goods substitution of housework and find out the determinants on it in the domain of food among married female home-based workers. The data were collected from 169 married female home-based workers in Pusan and Kyungnam province, by self-administered questionnaires. Frequencies, percentiles, Cronbach's alpha, Pearson's correlations, and multiple regression were used to analyze the data. In the convenience foods, frozen foods had the highest substitution level, whereas prepared stew had the lowest. The substitution level of Korean traditional storage foods was the middle. And in dining-out service, the substitution level was mostly high: the level of delivery service was higher than that of dining-out. Compared to the previous research, these results showed that market goods substitution tended to increase, and its level in the domain of food will promote continually over time. The variables affecting the substitution level of convenience food were the number of family members, occupation, the existence of elderly/disabled person in the family, sex-role attitude, and weekly hours at home-based work. The substitution level of Korean traditional storage foods was influenced by sex-role attitude, occupation, education, monthly household income, and the existence of elderly/disabled person in the family. The significant variables affecting the substitution level of dining-out service were weekly hours at home-based work, the number of family members, occupation, monthly household income, education, and sex-role attitude.
This study was carried out to investigate the differences of the dietary behavior of the college students by the type of the residence, that is, home-living, dormitory-living, and self-cooking. The responses of 307 students to the questionaire were analyzed. The average meal frequency of the students was 2.4 times a day. Breakfast was skipped most frequently, especially in dormitory-living and self-cooking students compared to home-living ones. Forty-three percent of the students were found to eat breakfast less than twice a week. Such a poor eating habit was mainly due to insufficient time or idleness. When the quality of the meal was evaluated, dormitory-living and self-cooking students had worse scores than home-living ones. The formers had poor dietary habit in terms of balanced breakfast and food diversity of each meal compared to the latter. Fast foods and coffee were consumed more frequently by dormitory-living and self-cooking students than home-living ones. The main food they eat was rice. However, female dormitory-living students had a higher tendency to enjoy bread for breakfast and noodle for dinner compared to the other groups. Home-living and self-cooking students had snack more frequently than dormitory-living ones, and female than male. In terms of snack time, most of the respondents had snack between lunch and dinner or after dinner. The percentage of those who had snack after dinner was greater in dormitory-living and self-cooking students than home-living students. Results of the food preference test showed that their favorite dishes were fruit salad, Bulgogi, uncurdled Tofu stew, Kimbab, and boiled rice. We observed that dormitory-living and self-cooking students had more problems in their dietary behavior. Therefore, they need to learn how to manage their own meals. This study might be helpful to develop nutrition education materials for the dietary improvement of the college students.
