군인의 나트륨 섭취와 나트륨 줄이기 관련 지식 및 실천에 관한 연구 (Study on the Sodium Intake Knowledge and Practices for Reducing Sodium Intake in Soldiers)

  • This study was conducted to provide guideline data for future instructional materials and practice guidelines on reforming the dietary life of military personnel in terms of lowering sodium intake. A total of 264 persons were surveyed to obtain basic data on sodium intake and understanding of sodium. The study also examined the practice that is carried forward in this endeavor. The subjects liked 'kimchi' and 'rice with topping', and these could be the reason for higher salt intake. Career soldiers scored higher in terms of nutrition knowledge than enlisted soldiers (p<0.01). Nutrition education concerning sodium intake was statistically insignificant between the two, whereas career soldiers showed a higher experience rate at these nutrition educational events. Career soldiers also had with higher sodium intake than enlisted soldiers, and this difference was statistically significant (p<0.01). In terms of practice, officers were more likely to experience difficulty in putting the theory of less sodium into practice than their enlisted soldiers counterparts (p<0.05), and the main reason behind this difficulty was that they did not feel the need to lower their sodium intake. Soldiers should be well educated about sodium and healthy diet during their service. Education should focus on lowering sodium intake and changing their attitudes and awareness of this issue in order to elicit behavioral changes.

Sustainable animal agriculture in the United States and the implication in Republic of Korea

  • Agriculture has played a significant role in the national economy, contributing to food security, driving economic growth, and safeguarding the dietary habits of the population. Korean agriculture has been compelled to focus on intensive farming due to its limited cultivation area, excessive input costs, and the limitations of agricultural mechanization. In the Republic of Korea (R.O.K), the concept of environmentally friendly animal agriculture began to be introduced in the early 2000s. This concept ultimately aims to cultivate sustainable animal agriculture (SAA) through environmentally friendly production practices, ensuring the healthy rearing of animals to supply safe animal products. Despite the government's efforts, there are still significant challenges in implementing environmentally friendly agriculture and SAA in the R.O.K. Therefore, the objective of this review is to establish the direction that the animal agriculture sector should take in the era of climate crisis, and to develop effective strategies for SAA tailored to the current situation in the R.O.K by examining the trends in SAA in the U.S. The animal agriculture sector in the U.S. has been working towards creating a SAA system where humans, animals, and the environment can coexist through government initiatives, industry research, technological support, and individual efforts. Efforts have been made to reduce emissions like carbon, and improve factors affecting the environment such as the carbon footprint, odor, and greenhouse gases associated with animal agriculture processes for animals such as cattle and pigs. The transition of the U.S. towards SAA appears to be driven by both external goals related to addressing climate change and the primary objectives of responding to the demand for safe animal products, expanding consumption, and securing competitiveness in overseas export markets. The demand for animal welfare, organic animal products, and processed goods has been increasing in the U.S. consumer market. A major factor in the transformation of the U.S. animal agriculture sector in terms of livestock specifications is attributed to environmentally friendly practices such as high-quality feed, heat stress reduction, improvements in reproductive ability and growth period reduction, and efforts in animal genetic enhancement.

간암 환자의 보완·대체 식이요법 치유과정 경험 (Healing Experience of Liver Cancer Patients by Complementary and Alternative Diet Therapy)

  • Purpose: This study was to evaluate the importance of liver cancer patient's diet and to provide guideline materials for proper nursing intervention. Method: The hermeneutic phenomenological method of van Manen was applied for the in-depth interview of liver cancer patients and the cultural background studies including linguistic, literary and art works to enhance the insight and understanding, from which the meaning of the cognition and lesson of the experiences were extracted. The participants for this study were five male patients, who had been diagnosed with liver cancer, 5-15 years ago and had been treated with Transcatheter Arterial Embolization without chemotherapy. The repeated interview and close observation were carried out for nine months starting from January 2001 in Seoul, Korea. Result: Eight essential themes were emerged ; (1) confliction(frustration) with hospital treatment (2) trial of every possible remedies (3) liking unpolluted natural foods(4) faithful tolerance (5) experiencing diet effectiveness (6) discovering personal control methods (7) deepen their faith in God (8) searching for healthy new life. Conclusion: The alternative diet therapy influenced their life beyond the physical overcoming of cancer toward psychological and spiritual healing. The study evidenced the necessity for scientific research and education on the effectiveness and application of complementary and alternative diet therapy for the treatment of cancer in hospital practices.

학령기 아동이 지각하는 어머니의 양육태도별 아동의 체중 및 식습관 비교 (Comparison of Children's Body Weights and Eating Habits by Maternal Parenting Attitudes Perceived by Children)

  • Effective parenting attitudes have been known to be associated with children's health practices including dietary intake and physical activity. The objective of this study is to compare children's body weights and eating habits by maternal parenting attitudes. Data were collected at school (N = 396; 4th and 5th grade students) using self-administered questionnaires on maternal parenting attitudes, eating habits and physical activity. Parenting attitudes were categorized as 1 of 4 parenting attitudes (overprotective, authoritarian, democratic, and neglectful) using affection and control median cut points. Children's body weights, frequency of breakfast, eating out and fastfood, and physical activity were compared by maternal parenting attitudes. Children's body weights were related with mother's employment status (p < 0.05) and parenting attitudes (p < 0.01). Children of unemployed mothers were more likely to be overweight. Children of neglectful mothers (p < 0.01) were more likely to be underweight, compared with children of mothers with other parenting attitudes. Since, unfortunately, the number of children of neglectful mothers was very limited in this study, we could hardly assess eating habits of children of neglectful mothers. Children of authoritarian mothers ate breakfast more regularly (p < 0.05), but ate snacks less regularly (p < 0.01). Children of democratic mothers ate fastfood less frequently (p < 0.01) and ate snacks more regularly (p < 0.01). Meanwhile, children of overprotective mothers ate breakfast less regularly (p < 0.05) and ate out less frequently (p < 0.01). However, maternal parenting attitudes were not related to children's physical activities. In conclusion, the maternal democratic parenting attitude was associated with healthy eating habits including regular snack time and less fastfood. On the other hand, the maternal neglectful parenting attitude was associated with high risk of children's underweight. Understanding the mechanism through which parenting attitude is related with underweight risk and healthy eating habits may lead to the development of better interventions.

Who has a high level of food literacy, and who does not?: a qualitative study of college students in South Korea

  • BACKGROUND/OBJECTIVES: Unhealthy food choices among young adults are common globally, and the incidence of chronic diseases, such as obesity, is rising. Food literacy (FL) is important for improving and maintaining individual health in a rapidly changing food environment and can form the basis for following a sustainable diet. Therefore, it is essential to improve FL among young adults, particularly college students, who are in the formative years of their lifelong food habits. This study examined the facilitators and barriers of FL and related dietary behavior among college students in South Korea. SUBJECTS/METHODS: This study recruited 25 college students with different residence types using convenience and snowball sampling. In-person, telephone, and video interviews were conducted from March to November 2021. The interview data were analyzed using framework analysis based on the socio-ecological model. RESULTS: At the individual level, prior good experiences with food were the most frequently mentioned facilitator. In contrast, the major barriers were a lack of knowledge, financial hardship, irregular schedules, and academic stress. At the interpersonal level, the influences of family and peers, such as early exposure to healthy eating habits and opportunities to have easy accessibility to farms and farming, are major facilitators, but the lack of a sense of community was the major barrier. At the environmental level, the major barriers were unfavorable food environments at home and in neighborhoods, such as the absence of kitchens in housing and large packaging of produce at markets. CONCLUSIONS: Many factors affected the students' FL and related healthy eating practices. These findings suggest that a campus-based FL program should be developed by reflecting on these facilitators and barriers.

외국인학교 한국 학생의 한식선택 시 중요도 및 만족도 조사 (Study on the Korean Food Selection Practices by Importance and Satisfaction among Korean Students Attending International Schools)

  • The purpose of this study is to understand the characteristics and improvements of Korean foods by using the ISA (Importance Satisfaction Analysis) targeting Korean students in international schools in the Seoul Metropolitan area. It also analyzes the difference in the importance and satisfaction of Korean foods, and to provide basic data for developing various healthy diets which are suitable for target students. Target groups are 7 to 12 graders which consist of 62 male students and 42 female students, and most of them had lived in the United States with duration of staying abroad from 1 year to less than 3 years and duration of attending schools from 1 year to less than 2 years. Most of their family structures are the nuclear family, and most of their fathers work in management positions and mothers are mostly full-time housewives. The most favored and consumed food is fruits and the least favored is seaweeds. Perceptions regarding Korean foods are mainly positive and more female students than male students consider Korean foods as well-being foods. The important factor for choosing Korean food is the flavor, and the highest satisfaction lies in the cleanliness of food and tableware, and food temperatures appear to be less important than other factors regarding both importance and satisfaction aspects. The flavor turns out to be the most influential when consuming Korean foods, and information on Korean foods is mostly acquired from advices of those around and through words-of-mouth, and many comments point out that the levels of sanitation should be improved. The result of ISA regarding determinant factors in choosing Korean foods by Korean students in international schools shows that efforts for aggressive improvements should be made in areas for 'the amount of food', 'the price of food', and 'the curiosity on food'.

활동제한에 따른 한국 노인의 식생활 및 영양섭취 평가: 2019년 국민건강영양조사 자료를 이용하여 (A study on the nutrient intake of the elderly in Korea based on activity limitations: data from the 2019 Korea National Health and Nutrition Examination Survey)

  • 본 연구는 제8기 1차년도 (2019년) 국민건강영양조사 자료를 이용하여 65세 이상 활동제한이 있는 노인과 정상 노인의 영양섭취 실태를 비교 분석하였으며, 주요 연구결과는 다음과 같다. 첫째, 활동제한군의 평균 연령은 73.8세로 정상군 72.6세보다 높았다 (p = 0.010). 또한, 활동제한군은 도시보다 농촌에서 생활하는 비율이 높았으며 (활동제한군 37.8%, 정상군 22.9%, p < 0.001), 1인 가구로 구성된 비율이 정상군에 비해 높았다 (활동제한군 28.1%, 정상군 17.2%, p = 0.004). 둘째, 주관적인 건강상태에서 활동제한군 (62.7%)은 건강이 나쁘다고 인지하는 비율이 정상군 (19.3%)에 비해 높았고 (p < 0.001), 평소 스트레스 역시 활동제한군이 정상군에 비해 대체로 많이 인지하고 있는 것으로 나타났다 (p = 0.001). 셋째, 식습관을 분석한 결과 활동제한군은 모든 끼니에서 대상자의 절반 가량이 혼자 식사를 하고 있어 정상군에 비해 혼자식사비율이 유의적으로 높았고 (p < 0.05 for all), 한달 평균 외식빈도가 5.0회로 정상군 7.4회에 비해 유의적으로 적었다 (p < 0.001). 넷째, 활동제한군은 정상군에 비해 탄수화물의 에너지 섭취 기여율이 높았고 (p = 0.026), 지방의 에너지 섭취 기여율은 낮았다 (p = 0.011). 활동제한군은 정상군에 비해 곡류 섭취량은 많았고 (p = 0.001) 채소류 섭취량은 적었으며 (p = 0.039), 에너지 (p = 0.021), 단백질 (p = 0.031), 리보플라빈 (p = 0.037)의 영양소적정섭취비가 낮았다. 다섯째, 영양섭취부족율은 활동제한군이 23.3%로 정상군 13.0%보다 유의적으로 높았으며 (p = 0.001), 건강식생활실천율은 활동제한군이 유의적으로 낮았다 (p < 0.001). 이와 같은 연구 결과를 종합해보면, 활동제한 노인은 영양관리가 우선시되어야 함에도 불구하고 오히려 영양관리가 취약함을 알 수 있었다. 향후, 활동제한 노인들의 식사관리를 지원하는 재가노인복지시설을 대상으로 한 체계적인 영양관리 시스템 도입이 필요하며, 활동제한이 있는 재가노인을 위한 식사지침 등 영양교육 프로그램 개발이 필요할 것이다.

한국 성인 여성에서 영양표시 사용과 식행동 요인과의 관계 (Dietary Behavioral Correlates of Nutrition Label Use in Korean Women)

  • 본 연구에서는 한국 성인 여성에서 영양표시 사용의 특성을 파악하고 식행동과의 관련성을 분석하고자 서울 및 6대광역시 (서울 45.4%, 부산 14.0%, 대구 9.8%, 인천 11.8%, 광주 7.0%, 대전 6.9%, 울산 5.0%)의 20${\sim}$60세 성인 여성 2,073명을 대상으로 조사하였으며, 그 결과를 요약하면 다음과 같다. 1) 영양표시에 대한 행동변화단계는 고려전단계 5.9%, 고려단계 35.9%, 준비단계 26.6%, 실행단계 19.0%, 유지단계 12.6%로서 영양표시 사용군은 실행 유지단계에 있는 사람들로 31.6% (654명)였고 영양표시 비사용군은 고려전 고려 준비단계에 있는 사람들로 68.4% (1,419명)였다. 2) 소득이 150만원 미만 또는 150${\sim}$300만원 미만, 고졸 이하의 경우 영양표시 비사용군이 사용군보다 유의적으로 높았고, 중반 연령 (30${\sim}$49세), 1주 1회 이상 운동자, 식이보조제 사용자의 경우 영양표시 사용군이 비사용군보다 유의적으로 높았으나 결혼, 임신 수유, 자녀, 흡연 유무에 따라서는 영양표시 사용군과 비사용군간에 유의적인 차이를 나타내지 않았다. 스스로 질병을 자각하는 비율은 영양표시 사용군이 비사용군보다 유의적으로 높았으며 저체중군은 영양표시 비사용군이 사용군보다 유의적으로 높았다. 식품구매시 중요하게 생각하는 요인은 맛 (42.5%) > 영양 (23.6%) > 가격 (21.1%) > 편이성 (9.6%) > 분위기 (3.2%) 순이었고, 영양은 영양표시 사용군이 비사용군보다 유의적으로 높았다. 3) 영양표시 사용군은 비사용군에 비해 과잉섭취우려 성분 (나트륨, 콜레스테롤, 당, 트랜스지방)과 질병 간 관계에 대한 신념이 더 높았고, 비타민 C, 칼슘 같은 권장섭취 성분과 질병 간 관계에 대한 신념은 차이가 없었다. 건강한 식습관의 중요성에 대한 전체 대상자의 인식도는 평균 4.2 ${\pm}$ 0.8로서 모든 항목에서 높은 편이었고 영양표시 사용군이 비사용군보다 약간 높았다. 4) 식사의 질에 대한 전체 대상자의 평균 점수는 3.2 ${\pm}$ 0.8로서 영양표시 사용군은 비사용군보다 과일류, 채소류, 유류, 고기 육류 콩류, 다양한 식사섭취에 대한 식사의 질 점수와 콜레스테롤, 열량에 대한 식사의 질 점수가 유의적으로 더 높았다. 5) 전체적으로 영양표시를 사용하는 사람들은 영양표시를 사용하지 않는 사람들에 비해 식사의 질이 2배 높았다 (OR: 2.01, CI: 1.66${\sim}$2.44) (P < 0.001). 고소득이면서 영양표시를 사용하는 사람은 저소득이면서 영양표시를 사용하지 않는 사람에 비해 식사의 질이 2.5배로 좋았으며 (OR: 0.39, 0.36${\sim}$0.69) (P < 0.001). 고소득인데 영양표시를 사 용하지 않는 사람의 식사의 질은 고소득이면서 영양표시를 사용하는 사람의 1/2수준으로 낮았고 (OR: 0.56, 95% CI:0.43${\sim}$0.73), 저소득의 영양표시 사용자보다도 식사의 질이 더 낮은 경향을 나타내었다. 본 연구결과 한국 성인 여성에서 영양표시 사용자는 비사용자에 비해 나트륨, 콜레스테롤, 당, 트랜스지방과 같은 과잉섭취우려 성분과 질병 간 관계에 대한 신념이 더 높고, 건강한 식습관에 대한 인식이 더 높으며 식사의 질이 더 좋음을 확인할 수 있었다. 이상의 결과를 종합해볼 때, 소비자가 영양표시를 이해하고 식사에의 활용성을 증가시킬 수 있도록 보다 체계적인 교육방안이 강구되어야 할 것으로 사료된다. 또한 향후 식사의 질에 미치는 영양표시 사용의 다양한 특성에 관한 연구를 비롯하여 어떤 영양표시정보가 식생활개선과 관련이 있는가 등에 대한 연구 및 영양표시와 식행동 간 인과관계를 설명할 수 있는 연구가 필요하다. 아울러, 본 연구에서 사용된 식생활진단표 등 조사방법의 타당성에 관한 연구가 추가적으로 이루어져야 하며, 영양표시 교육 및 정책 수립을 위해 국가단위에서의 소비자 조사.연구가 지속되어야 할 것으로 사료된다.

서울지역 일부 성인여성의 영양표시 이용실태와 이해도 및 이에 영향을 미치는 요인 연구 (Using and Understanding of Nutrition Labels and Related Factors among Female Adults in the Seoul Area)

  • The purpose of this study was to examine the prevalence of nutrition label use and its association with demographic, weight control related factors, and diet among female adults in the Seoul area. Also, the study subjects' comprehension of nutrition labels was examined using objective measures. 279 females, between ages of 20 and 49, participated in this study. 66% of the participants reported to always or often use nutrition labels when purchasing foods. Nutrition label use was significantly higher among participants who were interested in losing weight and have more knowledge on nutrition, but significantly lower among subjects who were underweight (p < 0.05). Label users had higher fruit consumption and lower intake of fatty foods and snacks (p < 0.01). Only 20% of participants answered correctly regarding questions about the total amount of calories and fats contained in the entire food package tested, and only 15% answered correctly on questions about understanding of the % daily value. Comprehension of nutrition labels were significantly lower among participants who were less educated, underweight, and married (p < 0.05). In conclusion, our study suggests that proper use of nutrition labels may improve food choices and enable healthy dietary practices. Further efforts are needed to provide public a nutrition education program on how to read nutrition labels. Modifications of nutrition labels to make it easier to understand by the public should also be considered.

여대생들의 영양성분표시 활용에 따른 식품소비와 식습관 비교 (A Comparison of Convenience Food Purchasing Behaviors and Food Habits : How Female College Students Use Nutrition Labelings)

  • The purpose of this study was to compare convenience food purchasing behaviors and food habits. The study, which asked surveyed 131 female college students in Daejeon, in 2011, on how they used nutrition labels. The subjects were divided into two groups, in terms of the way they checked examined nutrition labels: a "Check" group(n=62, 47.3%) and a "No check" group(n=69, 52.7%). Reasons given for not reading nutrition labelings were "a habit of buying" for 72.2%, and "too small or rude" for 19.1%. The "Check" group reported higher interest in nutrition(p<0.001) and hygiene(p<0.01) than the "No check" group. Those who used the labels had higher cereal(p<0.01) and vegetable(p<0.01) consumption and a lower intake of fast foods(p<0.05). But however, most of the subjects(65.6%) chose by taste, at the time they purchased the convenience foods. The subjects considered "expiry date"(n=87, 66.4%) to be more important information on food labels than "nutrient composition"(n=11, 8.4%). The number of products whose nutrition labels were checked by over 50% was five out of 12. In conclusion, our study suggests that proper use of nutrition labeling may improve food choices and enable healthy dietary practices. Further efforts are needed to provide the public with nutrition education programs on how to read nutrition labeling. Modifying nutrition labels to make them easier for the public to understand should also be considered.
