Development of Drink from Composition with Medicinal Plants and Evaluation of Its Physiological Function (생약재를 이용한 음료의 개발 및 기능성 평가)

  • The purpose of this study was to investigate the possibility of medicinal plants application as an edible functional food resource. We carried out to develop a traditional functional beverage by using hot-water extraction of 4 medicinal plants (Polygonatun sibiricum, Ophiopogonis radix, Lycii fructus, Schizandriae frutcus) and we examined the effects of drink on physiological response during exercise and recovery phase. The subjects were male baseball players, and exercise protocol was performed with 45 minutes treadmill running and 85% VO$_2$ max intensity. Brix, pH and titratable acidity of developed drink were 9.5%, 3.3 and 0.22%. The approximate nutritional composition of beverage was carbohydrate, 5.98%, total dietary fiber, 0.42%, crude protein, 0.70%, crude fat, 0.20% and crude ash, 0.20%. Developed. traditional functional beverage contained K (4.00 mg%), Na (3.68mg%), Ca (2.54mg%), Mg (1.60mg%) and Fe (0.29mg%). Developed beverage drinking group showed a lowest heart rate during exercise and recovery phase than the other two group (water group and ion beverage group). In the change of blood lactate concentration, developed beverage intake group showed a significant lowest values during exercise and recovery phase. And blood hematocrit values and osmolarity were lowest in the developed beverage intake group. In these results, exercise performance capacity was expected to improve most highly with the developed drink from composition with medicinal plants. Also developed beverage was effective in recovery of exercise-induced fatigue. Thus developed drink with medicinal plants can be used as a functional material improving decrease fatigue effects in beverage industry.

  • This paper is for studying interrelation between Stress perception, Todai Index(THI) test and coffee. this study was done on 163 college women whose ages were 18 to 33 and who were in University in Wonju. The Stress perception test and THI test shows the following results. 1. The Stress test on the group that drunk coffee and beverage shows high degree of oppression sense about school and daily life. 2.The total THI test on the group that drunk coffee shows high degree of complaint on mouth, evacuation and lie scale, but shows the lowest piont on nervousrness. 3. The D-group womrn who drink a cup of coffee, two or three show the highest complaint on mouth and evacuation. E-group shows the lowest lie scale. 4 The Stress test and health examination on the group that drunk coffee show high degee of stress. And it also shows stimulative relation between the condition of body health and drinking coffee. The above shows that coffee and some beverage can affect on mental and physical health. Especially they are considered as a factor of stimulus on stress response. Through the THI test, the effect on mouth and evacuation, lie scale and nervousness could be obseved. So the drinking coffee and beverage requires circumspection.

High Temperature of Food and Beverage Intake Increases the Risk of Oesophageal Cancer in Xinjiang, China

  • Background: The north-western region of China has a high incidence of oesophageal cancer. This study aimed to investigate whether the intake of food and beverage at high temperature is associated with the risk of oesophageal cancer among adults residing in this remote part of China. Materials and Methods: A case-control study was undertaken in Urumqi and Shihezi, Xinjiang Uyghur Autonomous Region of China, between 2008 and 2009. Participants were 359 incident oesophageal cancer patients and 380 hospital-based controls. Information on temperature of food and beverage intake was obtained by face-to-face interview. Logistic regression analyses were performed to ascertain the association between intake temperature and the risk of oesophageal cancer. Results: The oesophageal cancer patients consumed foods and beverages at higher temperatures than controls, p<0.001. High temperature of tea, water and food intake appeared to increase the risk of oesophageal cancer by more than two-fold, with adjusted odds ratio (95% confidence intervals) of 2.86 (1.73-4.72), 2.82 (1.78-4.47) and 2.26 (1.49-3.45), respectively. Conclusions: Intake of food and beverage at high temperature was positively associated with the incidence of oesophageal cancer in north-western China.

  • [Purpose] Functional beverages are a protective or enhancing factor influencing not only public health but also athletic performance. The purpose of this study was to highlight the new conditioning beverage of the Lactobacillus pentosus strain b240 (B240) with electrolytes or proteins, which strengthens immune functions to improve the quality of life. [Methods] ISeveral related studies systematically reviews three main issues associated with conditioning beverages: (a) utilization and availability of the functional beverage; (b) significance of B240 in immune strengthening; and (c) availability and application of conditioning drinks in the daily life and sports field. [Results] Intake of B240 led to greater enhancements, including blood T-helper, NK cell, IgA and IgG level in conjunction with strengthen immune functions. These results speculated that the practical application of B240 contained beverages on physiological health and performance. [Conclusion] BODYMAINTÉ, this novel conditioning beverage is expected biological utility responsible for improved sports performance as a functional drink and has potential health-related implications.

Type of Alcoholic Beverage and High Risk Drinking for Acute Harm (음주 주종과 급성 위해 유발 음주 위험도)

  • Objective : Studies have suggested that beer is associated with a high risk of mortality and morbidity. The purpose of this study was to investigate how types of alcoholic beverage are related to high risk acute harm. Methods : Data from the 1997 Korea's Behavioral Risk Factor Surveillance System Survey, collected through telephone questionings, were analyzed based on multi-stage stratified random sampling(N=1,045). Among those who had drunk at least one type of alcoholic beverage in the last month, one episode where the drinker had consumed the highest level of ethanol was selected, and the alcohol consumption per drinking day categorized into four risk levels of short-term, 'acute' harm, according to the WHO guidelines. Employing ordered logistic regression analyses, as the explanatory variables, types of alcoholic beverage, with and without socioeconomic characteristics, were considered. Results : Spirits and soju were more than ten and three times, respectively, more likely than beer, while makkolli and wine were almost as likely as beer, to involve high risk drinking, irrespective of controlling for the socioeconomic characteristics. Conclusions : Unlike most Western countries, in Korea, beer, rather than spirits or soju, is generally less likely to be associated with high risk drinking for acute harm, The influence of beverage types on high risk drinking for acute harm appears to vary between countries.

Association of Drinking Patterns and Health Characteristics with Beverage Preference (즐겨 마시는 술의 종류와 음주 및 건강특성의 관련성)

  • Purpose : To investigate the association between the type of preferred alcoholic beverage and drinking pattern and health characteristics. Methods : A Cross-sectional study was conducted from 22 April to 3 May in 2002. 301 females and 699 males aged 13 to 59 were personally interviewed. Data on sociodemographic characteristics, drinking pattern and health characteristics were collected. 735 drinkers who were 19 year-old or over were included in analysis. Beverage preference was classified 3 categories: Beer drinker, wine drinker(including wine, makguly, chungju and yakju) and soju drinker (including soju and spirits). Results : Beer drinkers were likely to be females. Compared to wine or soju drinkers, beer drinkers were less frequently drank, and consumed less total alcohol per week and less alcohol per 1 drinking among both male and female. Controlling for various confounders, beer drinker had significantly less total alcohol consumption per week, and alcohol consumption per 1 drinking than wine and soju drinker. Conclusion : Beer drinking were associated with less smoking in males and healthy drinking pattern in both gender than soju drinking.

Beverage Consumption Patterns of Inhabitants in Seoul (서울 주거민의 음료섭취에 관한 조사 연구)

  • In this study we have evaluated daily beverage intake of the inhabitants in Seoul by a 24 hrs. recall procedure from 1145 respondents between pre-school children to adults in the period of June-July 1985. Estimates of consumption were made for each of seven beverage groups and comparisons were made within age, sex and body weight. Significant differences existed for certain beverage in each category analyzed. Total Fluid intake was greater for male than female at all ages and tended to be lower in the older age group with adjustment for differences in body weight. Milk was the major beverage among children while soft drinks were the predominant beverage for teen-ages. Alcoholic drinks represented the smallest component of daily fluid intake among women but were the second largest component of daily fluid levels for men over the age of 24 years.

Contextual Appropriateness of Commercial Beverages According to Product Information Exposure (정보 노출에 따른 시판 음료의 상황별 적합성)

  • Beverages can vary in their appropriateness depending on the context of their different uses; therefore, an intention to consume a beverage is likely dependent on the context of its use. This study associated the consumer acceptability of commercial beverage products examined in a previous study (Kim and others, 2013) with its appropriateness under different use contexts. Consumers (n=360) were divided into two conditions: blind and brand. Consumers rated appropriateness for 13 use contexts for each beverage product. The results indicated that the contextual appropriateness were significantly different among the beverage samples and seemed to be positively influenced by the acceptability of beverages. The beverages with higher liking scores were more appropriate in a greater number of contexts, including "when tired", "refreshing", and "rest". However, there were inappropriate contexts (e.g., "while weight watching", "after exercise", "with a meal", and "health care") regardless of degree of acceptability. In the brand condition, some differences in contextual appropriateness were observed when comparing results from the blind condition (e.g., "with a meal", "health care").

  • As an attempt to develop new functional health beverage by using medicinal herb, Artemisia capillaris, we investigated the effect of scopoletin in Artemisia capillaris on vessel and regional cerebral blood flow (rCBF) of rats ingesting health drink prepared with Artemisia capillaris extracts and various ingredients. Artemisia capillaris extract decreased the vessel contraction and increased rCBF significantly. The extracts were grouped by heat temperature and mixed ratio and tested their respective characteristics. Then each condition was combined and produced the most effective one. The drink produced consisted of Artemisia capillaris extract 42%, honey 9.8%, citric acid 0.035%, cyclodextrin 1.47% and water. Brix, pH and acidity of the product were 9.2, 4.4 and 0.04%, respectively, This drink scored to have highest level on overall acceptance by the sensory evaluation. The above results showed that development of such functional beverage using Artemisia capillaris can be used as a functional material improving blood circulation in beverage industry.

Environmental Impact Assessment of Beverage Containers (음료 포장용기의 환경성 평가)

  • Energy required, air emission, and solid waste generation are calculated with available foreign data ad domestic status using Life Cycle Analysis in order to compare the environmental impact of beverage containers such as PET bottle, aluminum can, glass bottle, and paper pack. Glass bottles are found to be the worst acceptability when considering only recycling rate of glass cullet, however it becomme the best when the refill(reuse) rate of glass bottles is accounted into. To assess tile current and future environmental impact of beverage containers, energy required, air emission, solid waste generation of current data and recycling goals are compared. As a result of the study, recycling of each containers and the reuse of glass bottles must be increased by governmental enforcement to reduce the environmental impacts by beverage containers. Further study on this subject using detailed LCA(life cycle assessment) data should be implemented for the exact environmental and economic assessment.
