A Study on the Distribution Channel of Fishery Products Exported to the United States (대미 수출 수산물의 유통경로 분석 연구)

  • The United States is Korea's important trading partner, ranking third (13.7%) in exports of fishery products in Korea. The impact on exports to the United States is expected to be significant if the seafood import provisions under the MMPA are implemented in 2024 accordingly. It is expected that documents proving production information will be required for all items when exporting to the U.S. Therefore, this study attempted to examine the current status of exports and exporters in order to understand the actual conditions of major fishery products exported to the United States. Besides, there are currently no official system and procedures in Korea to prove production information for all fishery items, so we tried to suggest implications by examining distribution channels for major export items to the U.S. In this study, five items including seaweed and halibut as domestic aquaculture items, tuna and squid as deep-sea fishing items, and fish cake using imported raw materials were selected as the target items for distribution channel investigation. In addition, this study is meaningful in that it investigated the routes from production to processing, distribution, and export of each item and identified detailed distribution channel for major items exported to the U.S.

Mercury Contamination and Risk Evaluation in Commonly Consumed Fishes as Affected by Habitat (서식지에 따른 다소비 어류의 총수은 오염 및 위해 평가)

  • This study investigated the concentration of total mercury in 17 species of commonly consumed fishes and assessed the risk to human health from provisional tolerable weekly intakes PTWI% as affected by migratory characterization, such as migration and vagility. The measured mean concentrations of total mercury in these 17 species of commonly consumed fishes suggest that mean concentrations of total mercury in 10 species of migratory fishes (largehead hairtail, chub mackerel, Pacific saury, skipjack tuna, Pacific cod, anchovy, Alaska pollack, brown croaker, Japanese Spanish mackerel, yellow croaker and Pacific herring) were low compared to those in 7 species of demersal fishes (red stingray, brown sole, bastard halibut, conger eel, blackmouth angler, rockfish and filefish). Based on the mean concentrations, the PTWI% of total mercury among commonly consumed migratory fishes was 3.393%, which was higher than that of commonly consumed demersal fishes (2.710%).

Contamination and Risk Assessment of Lead and Cadmium in Commonly Consumed Fishes as Affected by Habitat (서식지에 따른 다소비 어류의 납과 카드뮴의 오염 및 위해 평가)

  • This study determined the concentrations of lead and cadmium in 18 species of commonly consumed fish and assessed the risk based on provisional tolerable weekly (monthly) intakes [PTW(M)I] % as affected by behavioral characteristics, such as migration and settlement. In the 18 species, the mean concentrations of lead and cadmium were higher in the 11 species of migratory fish (llargehead hairtail Trichiurus lepturus, chub mackerel Scomber japonicus, Pacific saury Cololabis saira, skipjack tuna Katsuwonus pelamis, Pacific cod Gadus macrocephalus, anchovy Engraulis japonicus, Alaska pollack Theragra chalcogramm, brown croaker Miichthys miiuy, Japanese Spanish mackerel Scomberomorus niphonius, yellow croaker Larimichthys polyactis, and Pacific herring Clupea pallasii) than in the seven demersal species (red stingray Dasyatis akajei, brown sole Pleuronectes herzensteini, bastard halibut Paralichthys olivaceus, conger eel Conger myriaster, blackmouth angler Lophiomus setigerus, rockfish Sebastes schlegelii, and filefish Stephanolepis cirrhifer). Based on the mean concentrations, the PTWI % of lead and cadmium in commonly consumed migratory fish were 1.900 and 2.986%, respectively, which were higher than the values for lead and cadmium in the commonly consumed demersal fishes (0.257 and 0.318%, respectively). The estimation of weekly (monthly) intakes and target hazard quotients for the toxic elements lead and cadmium revealed that the commonly consumed migratory and demersal fish do not pose any health risks for consumers.

Recovery of serine protease inhibitor from fish roes by polyethylene glycol precipitation

  • The fractionation of serine protease inhibitor (SPI) from fish roe extracts was carried out using polyethylene glycol-4000 (PEG4000) precipitation. The protease inhibitory activity of extracts and PEG fractions from Alaska pollock (AP), bastard halibut (BH), skipjack tuna (ST), and yellowfin tuna (YT) roes were determined against target proteases. All of the roe extracts showed inhibitory activity toward bromelain (BR), chymotrypsin (CH), trypsin (TR), papain-EDTA (PED), and alcalase (AL) as target proteases. PEG fractions, which have positive inhibitory activity and high recovery (%), were the PEG1 fraction (0-5 %, w/v) against cysteine proteases (BR and PA) and the PEG4 fraction (20-40 %, w/v) against serine proteases (CH and TR). The strongest specific inhibitory activity toward CH and TR of PEG4 fractions was AP (9278 and 1170 U/mg) followed by ST (6687 and 2064 U/mg), YT (3951 and 1536 U/mg), and BH (538 and 98 U/mg). The inhibitory activity of serine protease in extracts and PEG fractions from fish roe was stronger than that of cysteine protease toward common casein substrate. Therefore, SPI is mainly distributed in fish roe and PEG fractionation effectively isolated the SPI from fish roes.

Food Functionality of Collagenous Protein Fractions Recovered from Fish Roe by Alkaline Solubilization (어류 알로부터 알칼리 가용화공정을 통해 회수한 Collagenous Protein 획분의 식품 기능특성)

  • This study investigated the potential of collagenous protein fractions (CPFs) as functional foods. The specific CPFs studied were recovered from the roe of bastard halibut (BH), Paralichthys olivaceus; skipjack tuna (ST), Katsuwonus pelamis; and yellowfin tuna (YT), Thunnus albacares through the alkaline solubilization process at pH 11 and 12. The buffer capacity, water-holding capacity and solubility of CPFs with pH-shift treatment were significantly better at alkaline pH (10-12) than at acidic pH (2.0). At pH-shift treatment (pH 2 and 12), the foaming capacities of CPFs from ST and YT were improved compared to those of controls, but they were unstable compared to BH CPFs. The emulsifying activity index (EAI, $m^2/g$ protein) of CPFs (controls) was 16.0-21.1 for BH, 20.1-23.9 for ST and 9.3-13.7 for YT (P<0.05). CPFs adjusted to pH 12 showed improved EAI and YT CPFs showed significantly greater emulsifying ability than those from BH and ST. CPFs recovered from fish roe are not only protein sources but also have a wide range of food functionalities, confirming the high availability of fish sausage and surimi-based products as protein or reinforcing materials for functional foods and alternative raw materials.

Image Augmentation of Paralichthys Olivaceus Disease Using SinGAN Deep Learning Model (SinGAN 딥러닝 모델을 이용한 넙치 질병 이미지 증강)

  • In modern aquaculture, mass mortality is a very important issue that determines the success of aquaculture business. If a fish disease is not detected at an early stage in the farm, the disease spreads quickly because the farm is a closed environment. Therefore, early detection of diseases is crucial to prevent mass mortality of fish raised in farms. Recently deep learning-based automatic identification of fish diseases has been widely used, but there are many difficulties in identifying objects due to insufficient images of fish diseases. Therefore, this paper suggests a method to generate a large number of fish disease images by synthesizing normal images and disease images using SinGAN deep learning model in order to to solve the lack of fish disease images. We generate images from the three most frequently occurring Paralichthys Olivaceus diseases such as Scuticociliatida, Vibriosis, and Lymphocytosis and compare them with the original image. In this study, a total of 330 sheets of scutica disease, 110 sheets of vibrioemia, and 110 sheets of limphosis were made by synthesizing 10 disease patterns with 11 normal halibut images, and 1,320 images were produced by quadrupling the images.

Current Status and Consideration of Breeding Research on Olive Flounder in Korea (우리나라 넙치 육종연구에 관한 현황 및 고찰)

  • It was in the 1982 that artificial seed production research for olive flounder (Paralichthys olivaceus) farming was first conducted in Korea (Currently, National Institute of Fisheries Science, Fish Breeding Research Center). In 1985, fertilized eggs were obtained from natural olive flounder adapted to land tanks, and artificial seed production technology was established and fertilized eggs were distributed. In the late 1980s, halibut aquaculture began to prosper in land-based tank farming in Jeju Island and Busan's Gijang region, where water temperatures are relatively high in winter. Currently, aquaculture is being carried out all over the country, centering on Jeju Island and Wando, Jeollanam-do. However, olive flounder farming, which started with a small group in the 1980s, reduced genetic diversity through inbreeding over generations, resulting in side effects such as slow growth, reduced resistance to disease and environmental conditions. In order to solve these genetic problems of farmed olive flounder in Korea, the Fish Breeding Research Center of the National Institute of Fisheries Science introduced a wild-caught parent fish group to the existing aquaculture group from 2003 to 2004. Genetic diversity was secured and KingNupchi with fast growth and improved body shape was developed. In this study, the current status of breeding technology development of olive flounder, a major aquaculture breed in Korea, is reviewed and future research directions are suggested.

  • In text-based fish disease classification using machine learning, there is a problem that the input parameters of the machine learning model are too many, but due to performance problems, the input parameters cannot be arbitrarily reduced. This paper proposes a method of optimizing input parameters specialized for Paralichthys olivaceus disease classification using SHAP analysis techniques to solve this problem,. The proposed method includes data preprocessing of disease information extracted from the halibut disease questionnaire by applying the SHAP analysis technique and evaluating a machine learning model using AutoML. Through this, the performance of the input parameters of AutoML is evaluated and the optimal input parameter combination is derived. In this study, the proposed method is expected to be able to maintain the existing performance while reducing the number of input parameters required, which will contribute to enhancing the efficiency and practicality of text-based Paralichthys olivaceus disease classification.

Hematological Characterietic of Bastard halibut according to Cultured experiment of Mari-floating netcage- I On the Hematological conditions (넙치의 해상(海上)가두리 사육시험(飼育試驗)에 따른 혈액학적(血液學的) 연구(硏究)-I 혈액성상(血液性狀)에 대(對)하여)

  • Hematological conditions were measured to the cultured bastard halibut classified by control group and establishments of mari-floating netcages from April 7, 1990 to May 24, 1990. The RBC, Hb, HT, MCHC, MCH and MCV values were $289{\pm}61{\times}10/^4/mm^3$, $4.8{\pm}0.9g/dl$, $22{\pm}6%$, $22.7{\pm}4.0%$, $16.9{\pm}3.3pg$ and $77{\pm}19{\mu}m^3$ respectively in the hematological conditions of control group. Relation between Hb and Ht was represented highly positive(r=0.805, p<0.01>, and relation between MCV and MCH was represented positive (r=0.696, p<.0.05) in the control group. In the variation of hematological conditions classified by experimental group, RBC of PVC group was returned $293{\pm}57{\times}10/mm^3$ on the 21th after locomotion to mari-floating netcages. RBC of netron group was also returned as control level on the 21th after locomotion, showed stabilization. Hb of PVC and netron group was low in the range of variation, was represented $3.9{\pm}9.6g/dl$ on the 45th after locomotion. The group that was also satabilizied variation of Ht were PVC, netron group. According to the results of hematological conditions classified by establishment of mari-floating netcages, the experiment group that were stabilized variation were in order of PVC, netron and pole-PVC group. But the other groups were extended the range of variation.

Distribution and Changes of Amino Acids and Related Compounds in the Muscle Extract of the Right-eye Flounder during Heat Treatment (가자미류 육엑스분중의 아미노산 및 그 관련화합물의 분포와 가열조건에 따른 변화)

  • Distribution of amino acids and related compounds in the muscle extract of seven species of right-eye flounder (spotted halibut, slime flounder, marbled sole, sand flounder, stone flounder, frog fleunder and bastard halibut) were studied. The effect of heat treatment on quantitative change in the composition of amino acids and related compounds in the extract of sand fleunder muscle was also investigated since the sand flounder has much Ex-nitrogen in the extract of the muscle. The content of crude protein and that of pure protein were in the range of $17.54{\sim}19.99%$ and $15.63{\sim}17.95%$, respectively. Among the extracts of the seven fish muscle, stone flounder showed the highest content of Ex-nitrogen(2.12%). In the muscle extracts of the seven fish taurine was abundantly contained $(29.4{\sim}56.9%)$, and followed alanine $(6.6{\sim}10.4%)$ and glycine $(1.6{\sim}16.7%)$. The compositions of amino acids and related compounds were characterized by the existence of phosphoethanolamine, ${\alpha}-aminoadipic\;acid$, DL-allocystathionine, ethanolamine and ornithine. The experiments on amino acids and related compounds of the muscle extract of sand flounder with reference to heating time and temperature were resulted in that the amount of taurine, tyrosine, leucine and alanine were increased with the heating time at $100^{\circ}C$, whereas that of lysine, histidine, ${\alpha}-aminoadipic\;acid$ and proline were decreased with prolonged heating time. When heating temperature was changed from $90^{\circ}C$ to $130^{\circ}C$ for 60 min, the contents of taurine, alanine and leucine were increased, while that of histidine, lysine and aspartic acid were decreased.
