  • This study was performed to investigate the related dietary factors associated with hypercholesterolemia in postmenopausal Korean women. The study sample comprised 455 postmenopausal women aged40 $\leq$ < 65. The hypercholesterolemic (serum cholesterol $\geq$240mg/dl group (N = 82) showed significantly higher BMI and waist circumference compared to the normal group (N = 373). However, both group did not show any significant difference in energy intake but hypercholesterolemic group demonstrated significantly lower intakes of fat and vitamin A with higher intake of vitamin C. Significant dietary factors associated with the higher risk of hypercholesterolemia included consumption frequencies of light color vegetable more than 3.79times/day (OR = 4.62 ; $95\%$ CI : 2.96 - 7.22), dried squid more than 0.08time/day (OR = 1.63 ; $95\%$ CI : 1.13 - 2.35), and beer more than 0.03time/day (OR = 1.57 ; $95\%$ CI : 1.01-2.43). Whereas consumption frequency of yellow and green leafy vegetables more than 1 time per day was associated with the significantly lower risk of hypercholesterolemia (OR = 0.06 ; 95 CI : 0.038 - 0.101). • The purpose of this study was to find out the common characteristics of eating behaviors of the long-lived elderly in order to offer the basic data for establishing dietary guidelines for a long and healthy life for the general population. The subjects were three-hundred elderly people over age 85 living in Kyungpook Sung-ju who have no problems in daily living. The general characteristics, nutrition knowledge and attitudes, meal patterns, and food preferences of the subjects were surveyed by individual intervies. The levels of the nutrition knowledge of the subjects were very low(average score ; 4.3) and the correlation coefficient between their nutrition knowledge and attitude score was also low(r=0.323, p=0.000). Most of the subjects(93%) had a regular meal pattern consuming three meals a day. The major staple food was rice mixed with other grains(75%) and the number of side dishes was mostly under four(99%). A majority(73%) had no habit of overeating and 51% of the subjects were taking snacks besides regular meals. Thirty one percent of the subjects had drinking habits and 80% of the drinking subjects had over 40 years of drinking history. The most common frequencies for intakes of various food groups were ; more than once a day(95%) for vegetables ; 2∼3 times a week(74%) for green and orange color vegetables ; 2∼3 times a week(72%) for fruits ; once a day(70%) for fish, eggs and legumes ; 2∼3 times a week(49%) for milk ; 2∼3 times a week(72%) for fruits ; once a day(70%) for fish, eggs and legumes ; 2-3 times a week(49%) for milk ; 2-3 times a week(85%) for seaweeds and 2-3 times a week(81%) for foods cooked with oil. The most preferred foods by the subjects were white rice(staple foods), soybean paste soup(soups), beef and eggs(meats and eggs), yellow croaker and hair tail(fish and shellfish), yoghurt(milk and milk products), all vegetables except carrot(vegetables), and watermelon(fruits). The popular food preparation methods included mixing with seasonings and the most preferred taste was sweet. The results showed that the eating pattern of long-lived elderly was characterized by regularity, simplicity, and no overeating.

  • This study researched the effects of cooking methods on phytochemical-enriched thin rice porridge (RP) of three colors (red, yellow, and green). Each of the RPs was prepared by three cooking methods and retorted through two-steps (step 1, at $80^{\circ}C$ for 15 min; step 2, at $82^{\circ}C$ for 25 min) for pasteurization. Cooking method (CM) 1 involved heating a mixture of all ingredients while CM 2 involved addition of apple/beet (AB, red), sweet-pumpkin/cabbage (PC, yellow) or vitamin/pear (green) while heating rice flour and glutinous rice flour. CM 3 involved mixing pre-cooked fruits and vegetables with cooked thin RP. The viscosity of RP prepared by CM 1 was lower than those of other RPs (P<0.05). The result of colorimetric a value show that red and green color of AB and VP prepared by CM 2 and CM 3 were most vivid. Contents of phytochemicals and antioxidants were higher when RP was prepared by CM 2 and CM 3 compared to CM 1. ${\Delta}E$ values of PC showed no significant difference before and after pasteurization, whereas AB and VP were significantly different (P<0.05). Antioxidant activity after retorting was not significantly different from those of un-retorted RPs. The results of color, phytochemical content, and antioxidant activity show that CM 2 or CM 3 were considerably better than CM 1, whereas cooking method had no effect after two-step retorting. Therefore, uncomplicated cooking method such as CM 1 or CM 2 are suited for commercial production of RPs.

  • This study was conducted to investigate the effects of smoking on nutrient intake and blood mineral status. The subjects were composed of two groups.55 smokers and 52 non-smokers. A 24-hour recall method was used along with questionnaires and serum mineral levels were analyzed by ICP spectrometer. The average ages of the smokers and non-smokers were 55.5 and 59.3 years old, respectively. The height, obesity degree, BMI, and WHR of the smokers were significantly higher than those of the non-smokers (p < 0.05, p < 0.05, p < 0.05, p < 0.01) Approximately 45.5% of the smokers smoked 16-20 cigarettes per day. The average age that the smokers started smoking was 22.0 years old and their smoking history was 33.5 years. About 74.5% of the smokers drank alcoholic beverages, while 44.2% of the non-smokers did. The smokers tended to eat less meals and breakfast meal, but drink coffee more often compared to the non-smokers. The mean daily energy intake and CPF energy intake ratio were 1231.8 ㎉ and 69.8 : 14.8 : 14.7 in the smokers and 1210.2 ㎉ and 72.1 : 14.7 12.7 in the non-smokers, respectively. The results show that the smokers tended to consume more energy, lipid, and cholesterol compared to the non-smokers. The results also show that in both groups, nutrient intake was lower than the RDA. The two groups were not significantly different in terms of the intake frequency of green-yellow vegetables and fresh fruits. There were no significant differences in serum levels of Ca, P, Mg, Cu, Fe, Mn, and Zn. However, serum Se level of the smokers was significantly higher than that of the non-smokers. In conclusion, the subjects of this study showed a serious imbalance in the nutrient intake, and the smokers showed a more undesirable dietary intake in the light of their high intake of energy, lipid, cholesterol, alcoholic beverages, and coffee. The serum Se level of the smokers was higher than that of the non-smokers, showing that Se is involved in smoking, Therefore, it could be suggested that more systematic research be conducted with respect to Se and smoking and that increased nutrition education and guidelines for smokers are required.

  • kochukaru (chili powder) and various vegetables. As its main ingredient, fresh or sea-water fish is cut into several pieces and boiled with ground beef and green vegetables such as watercress as well as garland chrysanthemum. In addition, onion, radish, chilies, crown daisy, garlic and some times, pumpkin and bean curds are added to the mixture to absorb the kochujang which is the base flavor of this dish. It is then seasoned with kochukaru, garlic, soy sauce and if needed, more kochujang to suit everyone's taste buds. Restaurants that offer this dish often allow you to select your fish from a tank. Many specialty seafood restaurants have several tanks from which you may choose a fish. Popular fish for this dish may include Korean rockfish, flounder, yellow corvina, codfish, croakers, pollacks, and even fresh water fish like carp and trout. In addition, other shell fish such as crabs, clams and oysters can be also added to this soup to compliment and enhance its spicy but refreshing flavor. This soup is one of Korean's most popular dishes while drinking soju. If you order sushi or sashimi, the soup is made from the left-over parts of the fish. The objective of this study is to determine a standardized recipe of Maeun-Tang and to investigate consumption so as to increase its intake opportunities for consumers through its development. Fish species used in Maeuen-Tang's recipes were flounder, Korean rockfish and other fish. Onion, radish, chilies, crown daisy, garlic and some times, pumpkin and bean curds were added to the mixture to absorb the kochujang which is the base flavor of this dish. Most of the stock used in Maeuen-Tang's recipes is pure water, fish stock and vegetable stock, 1.0-1.5 Korean rock fishes and 0.5-1.0 flounders, with its head and bone, which were used in 3-4 portions of Maeun-Tang. Most of the seafood restaurants used seasoning which didn't age and was made by the restaurant. The cooking equipment used in the Maeuen-Tang's recipes were a cook-port and earthen bowl.

  • Epidemiological studies have observed a negative association between increased consumption of green and yellow vegetables and cancer incidence. These vegetables contain carotenoids, which are reported to exhibit anticarcinogenic effects. Overexpression of ErbB2 and ErbB3 genes is a frequent event in several human cancers. The present study was performed to determine whether $\alpha$-carotene, $\beta$-carotene, lutein, or lycopene inhibits cell growth and to assess such an effect is related to changes in the levels of the ErbB receptor family and tile ErbB3 receptor signaling pathway in HT-29 cells. HT-29 cells were cultured in serum-free medium in the presence of various concentrations (0~100 $\mu$M) of the individual carotenoids. $\alpha$ -Carotene and lycopene significantly inhibited cell growth in a dose-dependent manner, whereas lutein slightly inhibited cell growth and $\beta$-carotene increased cell growth. Lycopene is more potent than $\alpha$ -carotene in inhibiting HT-29 cell growth. Lycopene inhibited DNA synthesis and induced apoptosis of HT-29 cells. The ErbB3 ligand heregulin (HRG) increased cell growth but did not prevent the lycopene-induced inhibition of cell growth. Lycopene decreased ErbB2 protein levels in a dose-dependent manner. Immunoprecipitation/Western blot studies revealed that lycopene inhibited HRG-induced phosphorylation of ErbB3, recruitment of the 985 regulatory subunit of phosphatidylinositol 3-kinase (PI3K) to the ErbB3 receptor, and phosphorylation of Akt. These results indicate that downregulation of ErbB2/ErbB3/PI3K/Akt signaling may be one of the mechanisms by which lycopene inhibits HT-29 cell pro-liferation and induces apoptosis.
