This experiment investigated seed yield and grain quality of rice plants treated with different irrigation methods (water supply until complete saturation, field capacity, and surface soil crack) compared with a conventional irrigation method (inundation). Each treatment began 20 days after transplanting and ended 35 days after heading. There was an 8, 18 and 18% reduction in irrigation water in the three treatments, respectively. Rice yield with complete saturation treatment was similar to that of conventional irrigation, while those of field capacity and soil crack were less by 7 and 13%. The ratio of filled grain was lower and amylose content was higher in the water-saving irrigation than those from conventional irrigation.
A field experiment was conducted to investigate effects of application time and rate of biofertilizer alone and in combination with chemical NPK fertilizer on growth, yield and quality of rice. The biofertilizer used composted food waste as substrate and added with effective microorganism. The treatments included recommended NPK fertilizer(RF, $11-5.5-4.8kg\;10a^{-1}$), half recommended NPK fertilizer(HRF, $5.5-2.8-2.4kg\;10a^{-1}$), half recommended NPK fertilizer plus $250kg\;10a^{-1}$ biofertilizer(HRF+Bio 250) and $500kg\;10a^{-1}$ biofertilizer(HRF+Bio 500). The biofertilizer treatments were applied at 0, 5 and 10 days before transplanting(DBT). Grain yield of HRF+Bio 250 at 5 DBT($648.4kg\;10a^{-1}$) was statistically similar to the highest obtained in the RF($654.1kg\;10a^{-1}$). Tiller numbers at HRF plus biofertilizer treatments were already high during the maximum tillering stage, and were similar with that of the RF and higher than that of the HRF during heading stage. Likewise, ripening ratio at HRF plus biofertilizer treatments was similar with that of the RF and higher than that of the HRF. Furthermore, all the biofertilizer treatments improved protein content but reduced the amylose content and palatability compared to treatments with chemical NPK fertilizer alone. Thus, HRF+Bio 250 at 5 DBT can be used to save 50% chemical NPK fertilizer and at the same time obtain an improved rice grain yield and quality.
To standardize a manufacturing method and improve the quality of traditional kochujang, eight-types of meju with different shapes (brick, grain) were prepared using Aspergillus oryzae (A.o) or Aspergillus sojae (A.s) alone or in combination with Bacillus subtilis (B.s). The physicochemical characteristics and enzyme activities of the various meju were compared during fermentation for 12 days at $28^{\circ}C$. The moisture content of both the brick- and grain-shaped meju were gradually decreased from an initial content of 50.47 to 54.89% to a content of 12.91 to 16.25% on day 12 of fermentation. The neutral protease activities of the brick-shaped meju ranged from $1.19{\pm}0.12$ to $1.25{\pm}0.28\;unit/mL$, and were similar for all treatments. The ${\alpha}$-amylase activities in A.s+B.s treatment of brick-shaped and grain-shaped meju were the highest, $11{\pm}0.6$ and $9{\pm}0.7\;unit/mL$, respectively. The ${\beta}$-amylase activities ranged from $1.53{\pm}0.01$ to $1.56{\pm}0.02\;unit/mL$, and were similar for all treatments. The amino type nitrogen content of A.o+B.s brick-shaped meju was the highest, $0.39{\pm}0.03%$. We confirmed that the brick-shaped meju prepared with A. oryzae and B. subtilis could be used to prepare traditional kochujang to improve the quality of the product.

The purpose of this study was to examine the quality characteristics of byeolmijang prepared several roasted whole grain powders (oat, brown rice, black soybean, corn) for eight weeks. As the fermentation progressed, the pH decreased from 6.10~6.12 to 4.48~4.92 and the total acidity increased dramatically from 0.41~0.48% to 1.67~2.24%. There were no differences in the moisture content. The content of reducing sugar decreased, in particular, brown rice sample(C) decreased significantly than the other samples during fermentation. In color, L and b-value decreased all samples, whereas a-value showed a tendency to slightly increase. The total cell counts and lactic acid bacteria revealed an increasing tendency during fermentation. In case of the amino-type nitrogen contents, it increased significantly during the fermentation period, especially control sample (A) showed the highest content significantly. The total polyphenol of all samples increased in the fermentation period. ABTS and DPPH radical scavenging activities also increased, especially corn sample (E) had the highest levels. In by electronic tongue analysis, corn sample (E) revealed higher umami and sourness than the control. So, by adding roasted corn powder, it can enhance function and taste of byeolmijang.
Stored rice grain undergoes physical and chemical deteriorations over time. As temperature and moisture content are important factors affecting to the denaturation of rice, it is important to store rice at a low temperature and hermetic condition. From a microscopic point of view, many studies have already reported how proteins and lipids were denatured within rice grain. Meanwhile, the weight loss of rice is currently observed at actual storage sites and can occur for diverse reasons. In this study, it was assumed that the decomposition process of polysaccharides, known as the main component of rice, plays an important role in its weight loss. In specific, the roles of enzymes were also evaluated. Our interest is in the major polysaccharides within a rice grain such as starch as well as within a rice endosperm cell wall. It is suspected that the weight loss of rice grains during storage seems to associate with the degradation of amylose and amylopectin. Nevertheless, it should be also speculated the correlating effect of other components such as proteins and lipids.
Improvement in production, post-harvest processing, quality grading, storage and malting process of malting barley is apparantly necessary to upgrade the beer quality and to reduce the losses in malt production. To establish the bases for the improvement, the present study examined the effect of storage conditions on the germinability of malting barley by quality grade of barley at production, and feasibility of mixing different varieties and different quality grades. Germinability of malting barley decreased significantly after 13 months of storage in the off-grade grain storage house, and after 15 months in the 1st grade storage house under the climate of Korea. Malting barley that was off-grade at harvest deteriorated faster than the 1st grade during 5 years storage under ordinary conditions. Mixing of varieites, different grain-quality grades or differently stored barleys seems to increase variability in germinating forces and germinability, resulting in uncontrollable malting processes and poor quality of malts and beer.
For preparation of high quality kochujang by the traditional fermentation method, 4 types of kochujang were prepared with brick- or grain-shaped meju fermented with different strains (Aspergillus sojae, Aspergillus oryzae+Bacillus subtilis). After 100 days of fermentation at $25^{\circ}C$, the moisture, pH, salt, and ethanol content of kochujang were 40.52-43.20%, 4.71-4.82, 8.7-9.1%, and 0.75-0.94%, respectively, showing slight differences according to the strains and shapes of meju. Titratable acidities were slightly increased for up to 60 days of fermentation. The amino-type nitrogen content of kochujang prepared with brick-shaped meju (A. oryzae+B. subtilis) was the highest (164.20 mg%) among all of the kochujang types. The redness (a) value of kochujang prepared with brick-shaped meju (A. sojae) were higher (19.08) than those of other treatments (18.37-18.59). Sensory evaluation of kochujang prepared with grain-shaped meju (A. sojae) showed the highest scores for color and overall acceptability, 'at $6.43{\pm}1.87$ and $6.29{\pm}1.44$, respectively. It was estimated that high quality kochujang could be made by using meju fermented with selected strains.
Purpose: To improve the cooking quality of brown rice, newly inbred soft rice cultivars were investigated. Methods: The physicochemical properties of brown rice flour and water absorption patterns and cooking characteristics of brown rice grain were compared to Ilmi white and brown rice. Results: General composition and total dietary fiber contents of five rices were significantly different with higher ash, protein, and total dietary fiber contents in soft brown rice than white rice. The hardness of raw rice grain was higher in Ilmi brown rice than in soft brown rice. The water absorption increased rapidly in 30 min of white rice and in 4-6 h of brown rices. The apparent amylose content of soft brown rice was lower than that of Ilmi rice. The initial pasting temperature and all viscosities were significantly different, but the trend was not similar. The textural properties of hardness and roughness were higher, but adhesiveness, cohesiveness, and stickiness were lower in Ilmi brown rice than white and soft brown rices. In sensory preference test, not only textural properties, hardness, adhesiveness, cohesiveness, stickiness, and roughness, but also color, glossiness, and roasted flavor were higher in soft brown rices. Especially soft brown rice B showed the best cooking quality among all rices. Conclusion: The results of the study suggested that soft brown rice is developed for cooking with high nutritional and functional quality.
Wheat is the most abundant crop in the world, accounting for one third of the world's population diet. In Ukraine, wheat is in fact, in addition to its nutritional value, a national symbol of the state. Therefore, the main thesis on the development of modern plant growing in Ukraine is the reduction of costs and the introduction of innovative technologies. The quality of grain and seed depends on many factors, namely: agro-climatic conditions, sowing condition of the seed material, quality characteristics of the soil, yielding properties of seeds, pre-sowing seed treatment. etc. For this purpose, the photosynthesis and intensity of photosynthesis need to be limited to the width of the leaf and the height of the leaves by a smaller cut of the stem. It is extremely important to ensure that the head and side pagons of wheat are in good condition. All parameters are often secured by the technology of grain preparation before delivery. Prior to this technology, it is possible to introduce processing of the material in the form for the development of the material. This article presents the effectiveness of the use of infrared irradiation for the pre-sowing treatment of winter wheat seeds in Sekobra Research, Germany.
'Manbaek' is a bacterial blight resistant mid-late maturing rice cultivar with high grain quality. 'Manbeak' was derived from anther culture using the backcross combination, $Hopum^*2/SR30075$. 'Hopum' is a mid-late maturing rice cultivar with high grain quality and 'SR30075' is a pyramid line carrying three bacterial blight resistance genes. 'Manbaek' was selected through the pedigree method, yield trials, and local adaptability tests. 'Manbeak' carrying two bacterial blight resistance gene Xa3 and xa5 showed high-level and broad-spectrum resistance against bacterial blight. 'Manbaek' was resistant to K3a, mostly virulent race in Korea, and exhibited resistance reaction against 16 Korean bacterial blight isolates. 'Manbaek' was a mid-late maturing rice. The heading date of 'Manbaek' was August 19th, which was 5 days later than that of 'Nampyeong'. Manbaek' was a lodging-tolerant rice with short culm and dark green leaf. Due to the low viviparous germination, 'Manbaek' could be a useful material to prevent pre-harvest sprouting. 'Mabeak' was resistant to bacterial blight and rice stripe virus, but susceptible to other virus diseases and insect pests. The yield of 'Manbaek' was similar to 'Nampyeong'. 'Manbaek' showed excellent grain appearance and good tastes of cooked rice, so that it could contribute to improving the quality of bacterial blight resistant cultivars. 'Manbaek', bacterial blight resistant cultivar with high grain quality, is suitable for the cultivation at bacterial blight prone area and has been utilized in the breeding programs for enhancing the resistance against bacterial blight (Registration No. 6069).
