Enzymatic Synthesis of Functional Oil from Rice Bran Oil and Dietary Effects on Hepatic ACAT Activities of High Cholesterol and High Fat Fed Mice (현미유를 이용한 기능성 유지의 효소적 합성 및 고 콜레스레롤, 고 지방 식이가 생쥐의 간 ACAT활성에 미치는 영향)

  • Monoacylglycerol (MG) and diacylglycerol (DG), as the components of enzymatically synthesized functional oil, were produced by glycerolysis of rice bran oil and glycerol using IM60 (immobilized lipase) in a stirredbatch reactor at 6$0^{\circ}C$ for 72 hours. After glycerolysis, the contents of triacylglycerol (TG), DG and MG in the produced functional oil were 41.71%,46.19%, and 11.15%, respectively. The functional oil also contained Phytosterols (2.04$\pm$0.17 mg/g), ${\gamma}$ -oryzanol (1.06$\pm$0.04 mg/g) and $\alpha$ -tocopherol (0.13$\pm$0.04 mg/g). In animal experiment the dietary effects of functional oil on hepatic acyl-CoA:cholesterol acyltransferase (ACAT) activities of the high cholesterol and high fat (HCHF)-fed mice were investigated. In functional oil-fed group, the liver ACAT activity was significantly lowered than in HCHF and corn oil-fed groups (p < 0.05). This results suggested that the synthesized functional oil may have an atheroproteetive effect by inhibiting ACAT activity.

Functional Properties of Cholesterol-removed Compound Whipping Cream by Palm Oil

  • The present study was carried out to examine the changes in functional properties of cholesterol-removed compound whipping cream made by $\beta$-CD treated cream and palm oil. Six different ratios of cream to palm oil (10:0 as control, 9:1, 8:2, 7:3, 6:4, and 5:5, v/v) were tested. The overrun percentage increased with an increased amount of palm oil. When the ratio of cream to palm oil was 10:0 (control), the overrun was 130%, which was significantly lower than other ratios reached to 150%. Foam instability was measured as 3.1 ml defoamed cream in control, however, the value of foam instability decreased with an increase of palm oil addition. The TBA value of cholesterol-removed compound whipping cream increased from 0.08 to 0.13 with no addition of palm oil during 4 wk storage. When the ratio of cream to palm oil was 5:5, TBA value increased dramatically at 3 wk and thereafter. Among sensory characteristics, texture value increased with higher amount of palm oil, however, flavor and overall preferences were opposite. Above results indicated that partial substitution of palm oil in manufacture of cholesterol-removed compound whipping cream resulted in a stable foam development with little adverse effect on flavor and lipid oxidation during storage. The present study showed a possible application in manufacture of cholesterol-removed compound whipping cream, which may be effective in other foods.

IAA-Producing Penicillium sp. NICS01 Triggers Plant Growth and Suppresses Fusarium sp.-Induced Oxidative Stress in Sesame (Sesamum indicum L.)

  • Application of rhizospheric fungi is an effective and environmentally friendly method of improving plant growth and controlling many plant diseases. The current study was aimed to identify phytohormone-producing fungi from soil, to understand their roles in sesame plant growth, and to control Fusarium disease. Three predominant fungi (PNF1, PNF2, and PNF3) isolated from the rhizospheric soil of peanut plants were screened for their growth-promoting efficiency on sesame seedlings. Among these isolates, PNF2 significantly increased the shoot length and fresh weight of seedlings compared with controls. Analysis of the fungal culture filtrate showed a higher concentration of indole acetic acid in PNF2 than in the other isolates. PNF2 was identified as Penicillium sp. on the basis of phylogenetic analysis of ITS sequence similarity. The in vitro biocontrol activity of Penicillium sp. against Fusarium sp. was exhibited by a 49% inhibition of mycelial growth in a dual culture bioassay and by hyphal injuries as observed by scanning electron microscopy. In addition, greenhouse experiments revealed that Fusarium inhibited growth in sesame plants by damaging lipid membranes and reducing protein content. Co-cultivation with Penicillium sp. mitigated Fusarium-induced oxidative stress in sesame plants by limiting membrane lipid peroxidation, and by increasing the protein concentration, levels of antioxidants such as total polyphenols, and peroxidase and polyphenoloxidase activities. Thus, our findings suggest that Penicillium sp. is a potent plant growth-promoting fungus that has the ability to ameliorate damage caused by Fusarium infection in sesame cultivation.

Studies of Physicochemical Properties of Baby Powder Developed from Rice-flour (쌀 분말을 이용한 유아용 파우더의 이화학적 특성 연구)

  • Baby powder is an astringent powder used to prevent diaper rash. It also has other cosmetic uses. In general, it is composed of talc powder (talcum powder). Talc powder is harmful if inhaled because it can cause significant lung damage. With the aim of developing a new rice-based baby powder, three kinds of rice varieties were selected and pulverized. To determine the cost-effectiveness of the different states of rice powder, several milling processes were tried, and the powder characteristics of the resulting rice powder, such as particle size, biological activities, digitalized color value, and moisture content before and after coating treatment with essential oil and silicon oil, were examined. "Goami" showed good flour characteristics with respect to lightness (92.0, $L^*$[D65] value) and particle size ($8.9{\mu}m$). SEM analysis showed that the rice powder particles coated in the essential oil and silicon oil showed a smoother and rounder appearance than those of the talc powder. In addition, the average particle size was decreased by the essential oil and silicon oil coating. The silicon oil coating solved the problem of moisture absorption in rice flour. Rice flour properly coated with essential oil and silicon oil shows great potential as a new material source of powder.

  • Concentrations of benzo[$\alpha$]pyrene in edible oils from Korean market were evaluated by high performance liquid chromatography. Benzo[$\alpha$]pyrene known of the carcinogenic polycyclic aromatic hydrocarbons(PAHs), has been found at variable concentrations in several foods. This is associated with several factors during the process including contaminated raw materials, exposure of environment, and procedure of process or cooking. The levels of benzo[$\alpha$]pyrene were ranged from 0.5 to 1.4 $\mu$g/kg in virgin olive oil. Benzo[$\alpha$]pyrene contents in refined and virgin olive oil, sesame oil, soybean oil, corn oil, sunflower oil, safflower oil, and processed oil were 0.6-1.0 $\mu$g/kg, 0.9-1.3 $\mu$g/kg, 0.6-3.3 $\mu$g/kg, 0.5-1.1 $\mu$g/kg, 1.2-1.7 $\mu$g/kg, 1.0-2.1 $\mu$g/kg, and 1.0-1.4 $\mu$g/kg, respectively.

Nutritional Components and Safety of Purified Pufferfish (Lagocephalus gloveri) Liver Oil

  • The safety of pufferfish (Lagocephalus gloveri) liver oil and the contents of some nutritional components were examined to obtain important information on their use as high valued functional foods. Pufferfish liver oil was extracted by the hot-water method using $1\%$ NaOH solution to remove toxic compounds, and then purified using a general purifying method of fish oil. Any extraordinary clinical symptoms were not observed from all groups administrated with pufferfish liver oil throughout the test period. None of the rats died when administrated the highest concentration of 10 mL/kg of the pufferfish liver oil. Vitamin A content was 114.2 ppm, as a retinal equivalent in the oil extracted using hot-water, but the content was higher (169.3 ppm) in oil extracted using n-hexane. Vitamin D and E were not detected in ppm in oil extracted using hot-water. Vitamin D in the pufferfish liver oil extracted using n-hexane was also undetected, but vitamin E was at 32.5 ppm. Among the 18 minerals detected, the sodium content was the highest at 253.5 ppm, followed by 13.9 ppm ofpotassium, 1.5 ppm of calcium, 0.2 ppm of magnesium, and other trace minerals. The contents of EPA and DHA were $0.8\%\;and\;14.8\%$, respectively, in the pufferfish liver oil extracted using hot-water. Considering these results, there is potential that pufferfish liver oil could be used as a functional food.

  • We developed functional synthetic lubricant for internal combustion engine oil, which would improve engine oil performance for internal combustion engine and extend engine life. We made base oil by synthesizing nonanoic acid, 1.1.1-trimethylol propane (which has good bio-degradability) and pentaerythrytol ester. We synthesized catalyst using p-toluene sulfonic acid 0.15 wt% and coloring-prevention agent hypo-phosphorus acid 0.18 wt% at 180-$190^{\circ}C$. Reaction temperature was increased at the rate of $10^{\circ}C$ for every 1 hour. When acid value reached below 3, reaction was completed. After cooling and deoxidization, we washed it by distilled water two times. After dehydration and filtering, we obtained trimethylol propane tripelargonate (TMTP) and pentaerythrytol tetrapelargonate (PETP) at yields of 96 % and 98 % respectively.

Compositional Changes of Functional Oil from Algae Oil during the Lipase-Catalyzed Production (Algae유로부터 디글리세롤 함유 기능성 유지의 효소적 합성 중 구성성분 변화에 관한 연구)

  • In the absence of organic solvent, di- and mono-acylglycerol enriched functional oil was produced by lipase-catalyzed glycerolysis in a stirred tank batch reactor. After glycerolysis for 48 hr, functional oil consisted of $47.1\%\;TAG,\;33.6\%\;DAG,\;and\;18.7\%$ MAG. In MAG and DAG, docosahexaenoic acid was found as $10.7\%\;and\;8.1\%$, respectively. During the reaction, total tocopherol content decreased, and $0.065\%$ tocopherols were existed in the functional oil produced after 48hr reaction.

Preparation and Characterization of Polyurethane Microcapsules Containing Functional Oil (기능성 오일을 함유하는 폴리우레탄 마이크로캡슐의 제조 및 분석)

  • Polyurethane microcapsules containing functional oil (citronella oil) were successfully prepared by conventional interfacial polymerization of tolulene 2,4-diisocyanate (TDI) and ethylene glycol (EG) and characterized by Fourier transform (FT-IR) spectroscopy, Ultraviolet spectroscopy, particle size analysis, thermogravimetric analysis (TGA), and scanning electron microscopy (SEM). Tile effects of polymerization variables, such as surfactant concentration and agitation speed, on the particle size and particle size distribution were investigated. FT-IR spectroscopic data showed that citronella oil was successfully encapsulated in the microcapsule. Thermogravimetric analysis data showed that the microcapsule was thermally stable up to $220^{\circ}C$. The controlled release of the citronella oil present in the microcapsule core in a methanol medium was demonstrated by ultraviolet spectroscopy showing that the amount of released citronella oil was increased with increasing time. It was observed that the amount of released citronella oil was increased with increasing stirring speed and emulsifier concentration in the rnicrocapsule preparation step. Polyurethane microcapsules containing citronella oil showed excellent anti-moth property.

  • A multifunctional sensor is designed to measure viscosity, cleanness, temperature and capacitance of engine oil to make a clear decision on its condition. The simple structure helps easy fabrication and low cost while measuring four parameters by one sensor. The operation is described theoretically and is supported by experimental data. A fuzzy based algorithm to fuse the four kinds of data from multi-functional sensor in order to make a decision on the best time to change the oil is proposed.
