Literature Review on The Korean Traditional Non-Alcoholic Beverages -II. Recent Status of Research and Developments- (한국 전통음료에 관한 문헌적 고찰 -II. 최근의 연구동향-)

  • The scientific research results on the Korean traditional non-alcoholic beverages published in the literatures were reviewed. A total of 79 research papers were collected; 11 papers were on green tea, 38 on tea analog, 3 on rice tea, 4 on roasted cereal powder, 9 on malt saccharified rice beverage, 1 on ginger-fruit drink, 10 on fruits drink and 5 papers on others. Most of the researches were concerned to the chemical composition and processing conditions. More researches are needed on the quality requirements of the ingredients, the keeping qualify of the products and the industrialization of the traditional processing methods.

Studies on the production and marketing of apple of Kyungpook region and strategies of its improvement (경북지역의 사과생산 및 유통에 관한 연구)

  • Apple is most favorable fruit in Korea, and apple farmland has been increased before and after the agreements of Uruguay Round and apple is considered as one of strategic agricultural products. Especially expansion of apple farmland is concentrated in Kyungpook region because of the suitable climate and its market share is about 70 percents in 1992. The marketing channels of apples of Kyungpook region are widely classified by merchant, agricultural or horticultural co-op and large scale farmer's. Among them market share of merchant's occupy over 65 percent. In marketing margins, commercial profit is higher than cost in total marketing margins and, assembler and retailer's margin is not less than wholesaler's. The fluctuation of the price of apple is high in year. The marketing problems of apples are several, first, complex marketing channels, secondly, the high percentage of market share by growing district assembler, thirdly, low rate of package and quality standardization, finally, concentration of shipment of apple because of the shortage of apple processing, storage and marketing facilities, of newly produced apples. In conclusion, to increase apple grower's income with the stabilization of supply and quality upgrade, the improvement measures of marketing system are as follows, first, government level's support in marketing facilities and mechanism, secondly, the increment of supply by grower's cooperatives, thirdly, the establishment of a serious of marketing system to increase the efficiency, fourthly, the establishment of cold-chain system and quality standardization of apple, finally, production of various kinds of apple processing goods.

Research on the Variable Rate Spraying System Based on Canopy Volume Measurement

  • Characteristics of fruit tree canopies are important target information for adjusting the pesticide application rate in variable rate spraying in orchards. Therefore, the target detection of the canopy characteristics is very important. In this study, a canopy volume measurement method for peach trees was presented and a variable rate spraying system based on canopy volume measurement was developed using the ultrasonic sensing, one of the most effective target detection method. Ten ultrasonic sensors and two flow control units were mounted on the orchard air-assisted sprayer. The ultrasonic sensors were used to detect the canopy diameters and the flow controls were used to modify the flow rate of the nozzles in real time. Two treatments were established: a constant application rate of $300Lha^{-1}$ was set as the control treatment for the comparison with the variable rate application at a $0.095Lm^{-3}$ canopy. The tracer deposition at different parts of peach trees and the tracer losses to the ground (between rows and within rows) were analyzed in detail under constant rate and variable rate application. The results showed that there were no significant differences between two treatments in the liquid distribution and the capability to reach the inner parts of the crop canopies.

  • 일반적으로, 과실 재배 농가에서의 과실 분류 작업은 많은 노동력을 필요로 한다. 최근 코로나19 방역조치로 외국인 근로자 입국 제한으로 인해 농가에서는 인력 수급에 어려움을 겪고 있다. 본 연구에서는 이러한 농가 피해 상황을 해소하고 수급 문제를 해결하기 위해 YOLO 기반 과실 분류 모델설계 및 구현을 소개한다. 본 모델을 기반으로 여러 과실 중 사과에 적용하여 인력이 많이 동원되는 선별과정을 YOLO의 객체 인식을 통해 해결하고 적은 비용으로 효율성 있는 분류 모델을 구축한다.

Literature survey on steaming processing method based on 'Dongeuibogam' and 'Euihakipmun' ("동의보감(東醫寶鑑)"."의학입문(醫學入門)"에 나타난 증제법(蒸製法) 운용에 관한 문헌적 고찰)

  • Objectives : provides the basis on steaming processing method (SPM) which was stated in 'Dongeuibogam' and 'Euihakipmun'. Methods : Drugs and prescriptions listed in 'Dongeuibogam' and 'Euihakipmun' were investigated by following criteria; (i) name and prescription of SPM-applied drugs, (ii) protocols on the use of the supporting materials, (iii) kind of supporting materials, (iv) processing period, (v) part of the herb plants, (vi) efficacy of herbal drugs, (vii) tastes of herbal drugs, (viii) meridian tropism of the herbal drugs. Results : 1. The number of herbs was 92 species of from 'Dongeuibogam', 87 from 'Euihakipmun', and the number of prescriptions was 197 from 'Dongeuibogam' and 119 from 'Euihakipmun'. 2. Infiltrating steaming and mixing and steaming procedures were used to process supporting materials. 3. The abundance of supporting materials was in the order of alcohol and ginger juice. 4. A twelve hour-period was most frequently used. 5. The herbal parts used most were in the order of fruit, seed, roots, and stem. 6. According to an efficacy category, a drug supplementing invigoration was used most frequently and a drug eliminating heat followed next. 7. Based on four spirit features, herbs showing warm, cold, and mild features were used most. 8. In considering five tastes, herbs showing sweet and bitter tastes were used most. 9. The herbs supporting the function of liver, kidneys, spleen, stomach, and lung were used in SPM. The herbs converging to the kidneys and the liver were conducted most in 'Dongeuibogam' and 'Euihakipmun' respectively. No case for herbal drug converging to 'Samcho' was reported. Conclusions : Our investigation on the use of SPM from 'Dongeuibogam' and 'Euihakipmun' revealed that there are special principles underlying the use of supporting materials, SPM period, parts and efficacy.

Studies on steaming processing method in the literatures 'Roegongpojaron', Pojadaebub', and 'Susajinam' (『뇌공포자론(雷公炮炙論)』·『포자대법(炮炙大法)』·『수사지남(修事指南)』에 나타난 증제법(蒸製法)에 관한 문헌적 고찰)

  • Objectives : Provides research basis on steaming processing method (SPM) as described in literatures 'Roegongpojaron', 'Pojadaebub', and 'Susajinam'. Methods : The following issues were considered for current investigation regarding herbal drugs: (i) categorizing SPM-applied drugs, (ii) protocols on the use of the supporting materials, (iii) kind of supporting materials, (iv) processing periods, (v) part of the herb plants, (vi) herbal efficacy, (vii) intrinsic properties and tastes of the herbal drugs, (viii) meridian tropism of the herbal drugs. Result : The number of herbal drugs was 70 species from 'Roegongpojaron', 73 from 'Pojadaebub', and 66 from 'Susajinam'. The abundance of supporting materials was in the order of alcohol, honey and tofu. The herbal parts of the roots, stem, fruit, and seed were most widely used. Based on herbal efficacy, a drug supplementing invigoration was used most, and a drug eliminating heat followed next. Based on four spirit features, herbs showing warm, cold, and mild features were used. In considering five tastes, herbs showing bitter and sweet tastes were used most. In considering meridian tropism, herbs converging to liver and kidneys were used, and drugs converging to 'Samcho, and gallbladder were not used. Conclusion : The present survey on SPM as described in 'Roegongpojaron', Pojadaebub', and 'Susajinam' indicates that there is a principal specialty on the use of supporting materials, steaming periods, steaming parts and efficacy.

Establishment of Minimum Harvesting Time for the Girdled 'Campbell Early' Grape (환상박피된 '캠벨얼리' 포도의 최소 수확시기 설정)

  • This study was conducted to establish the minimum harvesting time of 'Campbell Early' grape with girdling of 8 years old vines by the investigation of fruit quality. Girdling was performed as 5~7mm width at 1.0m height with a Y-trellis system on July 5th at Gimcheon, Gyeongbuk province. Skin color, soluble solids contents, sugar content, organic acid, and titratable acidity were analyzed every seven days period after the girdling. From 14 days after the girdling, pericarp color changed quickly as compared to the control, and also decreased b value and increased a value of Hunter L were observed. The content of organic acids decreased quickly as 0.85% as compared to the control's one, 1.10%. Sugar-acid ratio increased rapidly from the 21days as 15.1 against 10.8 of the control at harvesting time. After 14days, sugar content was abruptly increased such as fructose and glucose, that is 7days faster than the control. In harvesting time, their contents were high as $64.5mg{\cdot}g^{-1}FW$ and $61.0mg{\cdot}g^{-1}FW$ as compared to $56.1mg{\cdot}g^{-1}FW$ and $53.7mg{\cdot}g^{-1}FW$ of the control respectively. Among the content of organic acids, malic acid decreased quickly than the control's one in coloring time. The content of tartaric acid was obviously lower as $4.13mg{\cdot}g^{-1}FW$ than the control's one, $5.96mg{\cdot}g^{-1}FW$ in harvesting time. From these results, we assume that the harvesting of girdled 'Campbell Early' grape should be started in 42days after the girdling, when sugar-acid ratio is above 15.

  • If the lowest leaves of the cucumber were removed or training cultivable method was changed, a computer vision system could divide well the cucumber fruit from the others, and also an end-effector could reach and grip cucumber fruit and cut well its fruit stalk. Therefore, this study investigated whether removal leaves and training cultivable method of a cucumber could affect its growth and yield. They can help to be designed the vision system and the end-effector. A cucumber fruit grew by 6-l5cm long for 2 days regardless of removing leaves. Removal leaves didn't affect growth of cucumber fruit. Number of cucumber fruit was produced within 10% different values by three methods (A, B, C) of removal leaves. The first grade rate (best quality) of 4 B and C was 56.7%, 53.1%, 56.3% respectively. Consequently, proper removal leaves were better than traditional way, which does not remove a leaf, because they make cucumber plant ventilate more freely and absorb more light.

Antioxidant Activities and Quality Characteristics of Mulberry Concentrate, Freeze-dried Mulberry, and Pomace (건오디, 건오디박, 오디 농축액의 품질특성 및 항산화성)

  • Mulberry pomace, a by-product obtained from mulberry juice, has not been utilized as food. In this study, antioxidant activities, proximate composition and physiochemical characteristics of mulberry pomace were evaluated and compared with those of mulberry fruit or mulberry concentrate. Mulberry fruit was pressed and filtered. The filtrate and residue were used as mulberry juice and mulberry pomace, respectively. Mulberry juice was evaporated, after which a concentrate ($24.7^{\circ}Brix$) was obtained. Moisture contents of mulberry concentrate, freeze-dried mulberry, and pomace were 68.7%, 6.03%, and 7.32%, respectively. Reducing sugar contents were 45.7% in freeze-dried mulberry, 24.5% in pomace, and 30.9% in mulberry concentrate. The pH and acidity of the three samples ranged from 5.80~5.92 and, 0.035~0.080%, respectively. Carbohydrate and crude ash contents were the highest in mulberry fruit, whereas crude protein, fat, and fiber contents were the highest in pomace. Redness of the Hunter color system was 4.7 in mulberry and 4.3 in pomace. Total phenolic content was the highest in mulberry fruit, whereas total flavonoid content was the highest in pomace. Antioxidant activities (DPPH, hydroxyl, and ABTS radical scavenging activities) were enhanced in the order of mulberry fruit> pomace> mulberry concentrate. Especially, antioxidant activities, such as DPPH and hydroxyl radical scavenging activities, of mulberry pomace were similar with those of mulberry fruit. Based on these results, freeze-dried mulberry pomace may be considered as a functional as well as an additive material for food processing.

  • Fourteen varieties of Korean chestnut were subjected to the test of adaptability for processing and the possibilities of colored products development. The fruit size of Korean chestnut ranged $11{\sim}18g$ and these small fruits could not be expected to be utilized for the processing of Marron glaces which requires larger size as $25{\sim}30g$. As the storge period is extended the discoloration tendency of chestnut flesh was increasingly developed, however, the fresh chestnut has shown layer-separating phenomenon and ragged surface of fruit which delivers disagreeable appearance to the finished product. The principal factors of discoloration occurred during processing were the behavior of tannin and darkening rate shown on flesh differed each other among varieties; the Chukpa and Yuma variety have exhibited the most serious discoloration and the Taab-b variety, the lightest. Taab-b variety in this connection could be expected to be available for Kanroni processing. For the industrialization of chestnut processing the flame-scorched peeling method is advisable. The capacity of this method is proportional to the square of scorching radius and highly flexible in controlling its performance. As for the processing of colored product, the sugar dehydration and coating and the sugar penetration method demand further study in basical views; however, the canned product of chestnut-redbean has shown the possibility of being utilized as a substitute for or paralleled use with the sugar-syruped canned product which so far has been considered as the only item of export to Japan.
