Comparison of Dietary Habits, Nutritional Knowledge, and Health-related Behaviors between Academic and Specialized Male High School Students in Gyeongnam (경남지역 일부 인문계 및 전문계 고등학교 남학생들의 식습관, 영양지식 및 건강관련행동에 관한 비교 연구)

  • This study aimed to compare the dietary habits, nutritional knowledge, and health-related behaviors of students by high school type using questionnaires. The subjects were 586 male students (academic high school students (AS); 294, specialized high school students (SS); 292) in Jinju, Gyeongnam. The frequencies of eating breakfast and snacks were higher in AS than in SS (p<0.05), whereas the frequency of drinking was higher in SS than in AS (p<0.05). The main reason for skipping breakfast was 'poor appetite' in AS (45.2%) and 'lack of time' in SS (56.5%) (p<0.05). Favorite snacks included 'pizza, hamburger' (33.0%) and 'bread, noddle, ramyun' (31.0%) in AS as well as 'pizza, hamburger' (32.5%) and 'fruit, fruit juice' (26.0%) in SS. A mean of 56.2% of students ate an unbalanced diet, and the main reason was 'untasty' (47.2%). The frequency of eating out was higher in SS than in AS (p<0.05), and the main menu while eating out was 'Korean food' in AS (96.3%) and SS (90.3%). The frequency of 'meat, fish, egg, beans' was higher in AS than in SS (p<0.05). On the other hand, the frequencies of 'fruit, fruit juices' (p<0.05), 'milk, milk products' (p<0.01), 'seaweeds' (p<0.05), 'instant foods' (p<0.001) and 'soda and ion drinks' (p<0.001) were higher in SS than in AS. The mean rates of drinking and smoking in students were 84% and 29.5%, respectively. The main reason for drinking and smoking was 'to relieve stress' in AS (38.0%) and SS (30.9%) (p< 0.001). In general, the nutritional knowledge level of SS was higher than that of AS. In conclusion, there were significant differences in the frequencies of eating breakfast, food intake, drinking and reasons for eating snacks, unbalanced diet, drinking and smoking between AS and SS. Therefore, it's necessary to provide proper nutritional education for students according to high school type.

Effects of plant-based Korean food extracts on lipopolysaccharide-stimulated production of inflammatory mediators in vitro

  • BACKGROUND/OBJECTIVES: The traditional Korean diet is plant-based and rich in antioxidants. Previous studies have investigated the potential health benefits of individual nutrients of Korean foods. However, the cumulative effects of a Korean diet on inflammation remain poorly understood. Therefore, the aim of this study was to investigate the anti-inflammatory effects of a plant-based Korean diet. MATERIALS/METHODS: Using data from the Fifth Korean National Health and Nutrition Examination Survey, 75 individual plant food items were selected which represent over 1% of the total diet intake of the Korean diet. These items were classified into ten different food groups, and the vegetable (Veg) and fruit (Fruit) groups were studied based on their high antioxidant capacity. For comparison, a mixture of all ten groups (Mix) was prepared. To produce a model of inflammation with which to test these Veg, Fruit, and Mix plant-based Korean food extracts (PKE), RAW264.7 macrophages were treated with lipopolysaccharide (LPS). RESULTS: Levels of nitric oxide (NO) and prostaglandin $E_2$ ($PGE_2$), as well as protein expression of inducible nitric oxide synthase (iNOS) and cyclooxygenase-2 (COX-2) were found to be lower following PKE treatment. Furthermore, PKE treatment was found to suppress tumor necrosis factor-${\alpha}$ (TNF-${\alpha}$) and interleukin-6 (IL-6) via the nuclear transcription factor kappa-B ($NF-{\kappa}B$) signaling pathway. Overall, the Mix group exhibited the greatest anti-inflammatory effects compared with Veg and Fruit PKE group. CONCLUSIONS: Inhibition of LPS-induced pro-inflammatory mediators by the PKE tested was found to involve an inhibition of NF-kB activation. Moreover, PKE tested have the potential to ameliorate various inflammation-related diseases by limiting the excessive production of pro-inflammatory mediators.

Survey on the Content and Intake Pattern of Sugar from Elementary and Middle School Foodservices in Daejeon and Chungcheong Province (대전.충청지역 초.중학교 급식의 당 함량 및 급식을 통한 당류의 섭취실태 연구)

  • Korean government will set up the nationwide food safety system with strict control of hazardous nutrients like sugar, fatty acids and sodium as well as advanced nutrition education system. In addition, almost one hundred percent of school food service rate forced the government to consider more effective ways to upgrade the nutritional status of school meals. The object of our study was to provide the data on content and consumption of sugar in school meal for the nationwide project. For this purpose, we surveyed the sugar content of 842 school meal menus and their intake level for 154 days in 8 schools in Daejeon and Chungcheong Province. Sugar contents, the sum of the quantity of 5 sugars commonly detected in food, were analysed with HPLC-RID (Refractive Index Detector). Sugar intakes were calculated by multiplying the intake of each menu to the sugar content of that menu. The sugar content was highest in the desserts, which include fruit juices, dairy products and fruits. Sugar content of side dish was high in sauces and braised foods. Sugar intake from one dish is high in beverage and dairy product, and one dish meals contribute greatly to sugar intake because of their large amount of meal intake. The average lunch meal intakes of second grade and fifth grade elementary school students were 244 g/meal and 304 g/meal, respectively. The meal intake of middle school student was 401 g/meal. The average sugar intake from one day school lunch was 4.22 g (4.03 g on elementary and 5.31 g on middle school student), which is less than 10% of daily sugar reference value for Koreans. The result of this study provides exact data of sugar intake pattern based on the content of sugar which is matched directly to the meals consumed by the students.

The Association of Dietary Patterns with Bone Mineral Density in Middle-aged Women: A Cohort of Korean Genome Epidemiology Study (중.장년기 여성의 식사패턴과 골밀도간의 연관성 연구: 한국인유전체역학조사사업 예방유전체 지역사회 코호트)

  • Several nutrients are known to affect bone mineral density (BMD). However, these nutrients are combined with food intake and dietary patterns and little is known about the association of dietary patterns and BMD. The objective of this study was to investigate the association of dietary patterns with BMD in Korea Genome Epidemiology Study subjects. Among 2,884 women (40-69 yr) recruited at baseline study (2001), 861 subjects with BMD measurements at baseline and a 4-year follow up study (2005) completed the semi-quantitative food frequency questionnaire. BMD was measured by the Quantitative Ultrasound method. One hundred three food items were combined into 17 food groups and 4 dietary patterns were identified by factor analysis. Cluster analysis using factor score classified each subject into one of three dietary pattern groups named 'Rice and kimchi eating' (n = 617), 'Contented eating' (n = 124), and 'Healthy and light eating' (n = 120). The 'Healthy and light eating' group, characterized by higher intake of fruit, vegetables, fish, milk and dairy products, and younger age, more exercise, higher education, and higher income than other groups. The tibia BMD of the 'Healthy and light eating' group was higher than the other groups after adjusting for the age. After the adjustment for the age BMI and exercise, the 'Healthy and light eating' group showed significantly lower odds of tibia osteopenia/osteoporosis risk compared to the 'Rice and kimchi eating' group both at the baseline [OR(95% CI) : 0.50(0.30-0.84)] and follow-up [OR(95% CI) : 0.59(0.36-0.97)] examinations. The dietary pattern with low calorie and high intakes of fruit, vegetables, fish, milk and dairy products may have beneficial effects on BMD in middle-aged women.

Effect of Beverage Containing Fermented Akebia quinata Extracts on Alcoholic Hangover

  • The present study was conducted to investigate the effects of beverages containing fermented Akebia quinata extracts on alcoholic hangover. For this study, 25 healthy young men were recruited. All participants consumed 100 mL of water (placebo), commercial hangover beverage A or B, fermented A. quinata leaf (AQL) or fruit (AQF) extract before alcohol consumption. After 1 h, all participants consumed a bottle of Soju, Korean distilled liquor (360 mL), containing 20% alcohol. Blood was collected at 0 h, 1 h, 3 h, and 5 h after alcohol consumption. The plasma alanine transaminase (ALT) activity was highest in the placebo group. Compared with the control group, the AQL and AQF groups showed decreased ALT activity at 5 h after alcohol consumption. Plasma ethanol concentration was increased after alcohol intake and peaked at 3 h after alcohol consumption. Compared with the control group, the A group showed a higher plasma ethanol concentration at 1 h (P<0.05). At 3 h after alcohol consumption, the AQF group showed the lowest mean plasma ethanol concentration compared to the other groups; however, there were no statistical differences. After 5 h of alcohol consumption, the AQL and AQF groups showed lower plasma ethanol concentrations compared with the B group. The sensory evaluation score for the fermented A. quinata fruit extract was lower than for the commercial hangover beverages. In conclusion, the present intervention study results suggest that fermented A. quinata extracts alleviate alcoholic hangover and reduce plasma ethanol concentrations.

PREVALENCE AND ASSOCIATED RISK FACTORS OF DENTAL EROSION IN 9- AND 10-YEAR-OLD CHILDREN IN BUSAN (부산시에 거주하는 9~10세 어린이의 치아침식증 유병률과 관련된 위험요소)

  • The prevalence and interest of dental erosion seems to be rising in children all over the world. Thus, This study was performed to investigate the prevalence and severity of dental erosion in the primary molars at terminal stage nearing exfoliation, and associated risk factors. An examination was performed on 788 children using modified Linkosalo & Markkanen system, and questionnaires were gained. Association between dental erosion and the risk factors were statistically analyzed with chi-squared test and logistic regression analysis at a significance level of p < 0.05. As a result, 213 children (27%) showed dental erosion, and the mandibular left first primary molar was the most influenced tooth. According to the analysis of risk factors, frequent intake of carbonated drinks and fruit juices showed significant development of erosion (p < 0.05), and using straw for drinking fruit juices showed significant a reduction of erosion (p < 0.05).

Development and Evaluation of a Brief Fruit and Vegetable Food Frequency Questionnaire for Higher-Grade Elementary School Children (초등 고학년 아동의 과일 및 채소 섭취 수준 평가를 위한 간단한 식품 섭취 빈도 조사지의 개발과 평가)

  • 본 연구는 초등 고학년 아동의 과일과 채소 섭취 수준 측정을 위한 간단한 식품 섭취 빈도 조사지를 개발 및 평가하고자 실시되었다. 2001년도 국민건강영양조사에 참가한 만 $9{\sim}11$세 아동의 24-시간 회상 자료에 기초하여 식품섭취빈도 조사지의 항목 선정을 위한 기초 조사를 하였다. 각 과일과 채소 식품의 일일 평균 섭취량을 전체 아동 및 섭취량의 4분위 집단 별로 산출한 후, 이 자료를 바탕으로 전체 인구 집단의 섭취량을 대변할 수 있을 뿐만 아내라 고 섭취군과 저 섭취군 간의 차이도 나타낼 수 있는 항목을 선정하였다. 총 9개의 과일 항목과 11개의 채소 항목이 식품 섭취 빈도지에 포함되도록 선정되었으며, 섭취 빈도에 대한 응답 항목은 지난 7일 간의 섭취에 대하여 1개의 선택 범주가 제시되었다. 개발된 조사지의 신뢰도와 상대적 타당도에 대한 평가는 서울에 위치한 한 공립 초등학교에 재학 중인 153명의 $4{\sim}6$학년 학생들을 대상으로 실시하였다. 한 달간의 간격을 두고 2회에 걸쳐 조사를 실시한 자료를 이용하여 검사-재검사 신뢰도를 평가하였으며, 두 번째 방문 시에 28개의 과일 및 채소 항목을 추가로 포함하고 있는 식품섭취빈도 조사지를 더불어 실시한 자료를 바탕으로 상대적 타당도를 평가하였다. 상관 분석과 항목 별 빈도 응답 및 섭취 수준에 따른 집단내 순위 분류의 일관성에 대한 분석을 실시한 결과, 본 연구에서 개발된 20개 항목의 과일 채소 식품 섭취빈도 조사지의 신뢰도와 상대적 타당도가 적정 수준 이상으로 나타났다. 신뢰도를 살펴보기 위한 개별 항목 및 과일, 채소, 과일+채소 섭취 빈도에 대한 상관계수는 $0.22{\sim}0.64$(p<0.001)이었으며, 항목별 빈도 응답의 일관도는 평균 69.3%(<=1 빈도 응답차이)와 81.3%(<=2 빈도 응답 차이)로 나타났다. 상대적 타당도를 살펴보기 위한 과일, 채소, 과일+채소 섭취 빈도에 대한 상관계수는 $0.91{\sim}0.93$(p<0.0001)로 높게 나타났다. 따라서 본 연구를 통하여 개발된 식품섭취빈도 조사지는 초등고학년 아동의 과일채소 섭취 수준을 간단히 심사하거나 평가하는 도구로서 유용하리라 사료된다.

Comparisons of Body Image Perception, Health Related Lifestyle and Dietary Behavior Based on the Self-Rated Health of University Students in Seoul (서울지역 대학생의 주관적 건강상태에 따른 체형인식, 건강관련 생활습관 및 식습관 비교)

  • This study was conducted to examine the differences in perceived body weight and image and various lifestyles based on the self-rated health of university students when gender was adjusted. Five hundred fifty-five participants were asked their perceived health condition, and 58, 289, 160 and 48 students answered themselves as "very healthy", "healthy", "normal", and "unhealthy", respectively. As compared to the other 3 groups, "unhealthy" group showed higher proportions in dissatisfaction of body weight and negative perception of body image (P < 0.01). As health related lifestyles, "very healthy" group reported longer sleeping time than "unhealthy" group (P < 0.05), and had a higher proportion of people with regular exercise. Among the dietary behaviors, the frequencies of followings significantly different among the groups: "Regularity of meal time" (P < 0.01), "Eat protein foods more than twice a day" (P < 0.001), "Eat vegetables" (P < 0.01), "Eat fruit and fruit juice" (P < 0.01), "Eat vegetable oil added foods" (P < 0.01), "Eat seaweed" (P < 0.01), "Eat breakfast" (P < 0.01), "Modulation in animal fat and high in cholesterol intake" (P < 0.01). Particularly, higher proportion of subjects answered "very healthy" had higher frequencies (6-7 times/week) of these dietary behaviors. Overall results suggest that healthy lifestyle including adequate sleeping time, regular exercise, and good dietary behaviors might be potential factors affecting positive perception of health. In addition, positive perception of body weight and image were related with positive perception of health.

Factors Associated with Fruit and Vegetable Consumption of Subjects Having a History of Stroke: Using 5th Korea National Health and Nutrition Examination Survey (2010, 2011) (제5기 국민건강영양조사(2010년, 2011년) 자료를 이용한 뇌졸중 유병 경험자들의 과일 및 채소 섭취 관련 요인 분석)

  • Objectives: Intake of fruits and vegetables has protective effects against stroke attack. This study intended to examine the status of consuming fruits and vegetables and to find out which factors may influence the frequency of consumption of fruits and vegetables in individuals with a history of stroke. Methods: The data of 208 subjects from 5th (2010, 2011) Korea National Health and Nutrition Examination Survey (KNHNES) who reported a stroke diagnosis was used for analysis. To identify major factors influencing the consumption of fruits and vegetables, a classification-tree analysis was carried out. Results: Among those who reported a stroke diagnosis, the frequencies of consumption of fruits and vegetables were influenced by their age, place of residence (urban or rural), economic status, educational level, occupation, number of family members, frequency of eating out, and having meals (breakfast or lunch) with family members. Two factors from fruits and three factors from vegetables were generated by exploratory factor analyses. Urban residents ate fruits and vegetables more frequently in all factors than rural residents. Eating frequencies of 'seasonal fruits (orange, apple, strawberry, melon, pear and watermelon)', 'easily-accessible fruits (persimmon, tangerine, grape, peach, banana)', and 'Western-style vegetables (cabbage, mushroom, carrot, tomato, spinach)' were influenced by the socioeconomic status. Eating frequencies of 'Korean-style vegetables (bean sprout, radish leaves, pumpkin/squash, sea weed)', 'preserved vegetables (Korean cabbage, radish, laver, cucumber)' were influenced by having breakfast with family members. Conclusions: The results of this study suggested that by eating more fruits and vegetables, more preventive effects against secondary stroke attack are expected in stroke patients who live in the rural areas and who do not eat breakfast with family members. In addition, more outreach and education programs are needed for them.

  • This study investigated the effects of dietary cactus Opuntia ficus-indica stem and fruit extract on the growth, flesh quality, lysozyme activity, and histological changes of growing Korean rockfish Sebastes schlegeli. Three replicates of fish (152 g/fish) were fed one of the following diets: containing 0 additions (control); 0.1, 0.5, or 1.0% cactus stem powder; or 1.0% fruit extract for 11 weeks. Growth performance did not differ significantly among treatments, including survival, final weight, feed efficiency, and daily feed intake. The experimental diets did not affect the proximate and fatty acid compositions, plasma biochemistry, or dorsal muscle texture of the fish. However, the plasma lysozyme activity of the fish fed the diet containing 0.1% cactus stem was significantly higher than that of the fish fed the control diet. These fish had variously sized lipid vacuoles in the liver tissue compared with the control. Distinct mucosal folds and mucus-secreting goblet cells developed in the fish fed the diet containing 1% cactus stem compared with the other dietary groups. These results suggest that feeding growing Korean rockfish cactus stem might increase the plasma lysozyme activity and induce histological changes in the gastrointestinal tract that might be related to digestion.
