Development of device for the degree of freshness of wet fish (어육신선도 측정장치의 개발)

  • Recently, the digital circuit technique has had great success and gained importance in all industries. For the measurement of degree of freshness of plant and animal's tissue, many devices has been developed. But it's data was inaccurate and it had difficulty in making database because it was depend on analog circuit technique. The purpose of this paper is the development of a device based on digital circuit for measurement of freshness degree of wet fish such that its accuracy is very trustworthy and it can be measured in a short time. The device is developed by using micro-computer with some interface modules of A-D/D-A converter and digital circuit with IC modules and its effectiveness has been evaluated through two experimental results of electrical Q-value test and chemical K-value test.

A Study on the Organoleptic Characteristics and Changes in Freshness of Cultivated and Wild Paralichthys olivaceus During Storage (양식산 넙치와 자연산 넙치의 관능적 특성 및 저장중 신선도 변화 연구)

  • This study was conducted to investigate the physicochemical and organoleptic characteristics and freshness of wild and cultivated Paralichthys olivaceus during storage. By the results of morphological observation, wild Paralichthys olivaceus had white abdomen, light black skin and transparent muscle, but cultivated Paralichthys olivaceus had black spotted abdomen, dark black skin and dark pink muscle. Moisture contents of wild and cultivated Paralichthys olivaceus were similar, but the lipid content was higher in cultivated Paralichthys olivaceus than that of wild Paralichthys olivaceus. Sensory scores of appearance, taste, texture and overall acceptability were higher in wild Paralichthys olivaceus than that of cultivated Paralichthys olivaceus. The reason was that lipid content was higher in cultivated Paralichthys olivaceus The freshness of cultivated Paralichthys olivaceus seemed to last shorter than that of wild one due to rapid increase of the volatile basic nitrogen content, pH and total microbial count during storage.

  • Hospitalized patients' perceptions of the quality of hospital food and their importance were surveyed through questionnaires by 820(men 435, women 385) hospitalized patients in Seoul. The results are as follows: Men rated the size of food portion as being smaller, compared with women. The mean rating for nutrition of food was 3.24, freshness 3.15, taste 2.88, temperature 2.82; Among the food characteristics, nutrition was considered important by largest percentage(75.5%) of respondents, the taste ranked second(74.4%), and freshness was 62.2%; Appetite, atmosphere of ward were positively correlated(p<0.001) with rating of the taste, nutrition, and freshness, but length of hospitalization was negatively correlated (p<0.001) with them; Multiple regression analysis showed that appetite made the greatest contribution and length of hospitalization made the second greatest contribution. The third was atmosphere of ward, and the forth mood condition.

Age of Information for Discrete Time Queueing Model (이산 시각 대기 행렬 모형의 정보 신선도)

  • The age of information (AoI) was proposed to quantify the freshness of information about the status of a remote source system, which is defined as the amount of time that has elapsed since a packet was created at its source. This paper analyzes the age of information of a discrete time Geo/D/1/1 status update system. For this purpose, the system is modeled as a discrete-time two-state Markov chain. The stationary probability distributions for peak AoI and AoI are obtained. The average peak AoI, the average AoI, and the freshness ratio of information are also derived. Some numerical results of the analysis are presented.

Fresh Produce E-Commerce Supply Chain Coordination Considering Promotional and Freshness-Keeping Efforts

  • Supply chain coordination plays a critical role in improving the enterprise performance and the competitive advantage of fresh e-commerce. This study explores the coordination problem of a two-echelon fresh produce e-commerce supply chain comprising a fresh e-commerce enterprise and a fresh supplier in a novel framework. In this framework, the fresh e-commerce sells fresh produce and provides promotion effort; meanwhile, the fresh supplier deliveries fresh produce and provides freshness-keeping effort. Specifically, the optimal decisions under centralized and decentralized decision-making are compared, and it is found that centralized decision-making is more profitable. Based on this work, we created a cost-sharing and revenue-sharing combination contract. This study demonstrates that this contract effectively coordinates the supply chain and makes both parties achieve Pareto optimization when the parameters meet certain conditions. Finally, the feasibility and validity of the contract are presented through a numerical example.

Evaluation of Beef Freshness Using Visible-near Infrared Reflectance Spectra (가시광선-근적외선 반사스펙트럼을 이용한 쇠고기의 신선도 평가)

  • The objective of this study was to develop models to predict freshness factors (total viable counts (TVC), pH, volatile basic nitrogen (VBN), trimethylamine (TMA), and thiobarbituric acid (TBA) values) and the storage period in beef using a visible and near-infrared (NIR) spectroscopic technique. A total of 216 beef spectra were collected during the storage period from 0 to 14 d at a $10^{\circ}C$ storage. A spectrophotometer was used to measure reflectance spectra from beef samples, and beef freshness spectra were divided into a calibration set and a validation set. Multi-linear regression (MLR) models using the stepwise method were developed to predict the factors. The MLR results showed that beef freshness had a good correlation between the predicted and measured factors using the selected wavelength. The correlation of determination ($r^2$), standard error of prediction (SEP), and ratio of standard deviation to SEP (RPD) of the prediction set for TVC was 0.74, 0.64, and 2.75 Log CFU/$cm^2$, respectively. The $r^2$, SEP, and RPD values for pH were 0.43, 0.10, and 1.10; those for VBN were 0.73, 1.45, and 2.00 mg%; those for TMA were 0.70, 0.19, and 2.58 mg%; those for TBA values were 0.73, 0.13, and 2.77 mg MA/kg; and those for storage period were 0.77, 1.94, and 2.53 d, respectively. The results indicate that visible and NIR spectroscopy can predict beef freshness during storage.

Quality Factors Affecting Egg Freshness and Palatability During Storage (계란의 저장에 따른 물리화학적 특성 평가 및 품질 인자 설정)

  • This study investigated the effects of storage temperature and time on the physicochemical properties of eggs, and the corelationship of quality factors with egg freshness and the palatability during storage. As storage temperature and time increased, weight loss significantly increased (p<0.05), while the specific gravity, Haugh unit, yolk index, albumen index, and yolk viscosity decreased significantly (p<0.05). A multiple regression equation of $Y_1$ (freshness)=$106.50286-0.81196X_1$ (weight loss)-$77.51667X_5$ (specific gravity)-$2.27156X_8$ (yolk pH)+$0.00178X_{16}$ (yolk viscosity) with $r^2$=0.89 was obtained for the evaluation of egg freshness. Also, sensorial palatability through the multiple regression equation was determined as $Y_2$ (palatability)=$104.98174-0.81466X_1$ (weight loss)-$76.53434X_5$ (specific gravity)-$2.20338X_8$ (yolk pH)+$0.00178X_{16}$ (yolk viscosity) with $r^2$=0.89 indicating that weight loss, specific gravity, yolk pH and yolk viscosity are major factors that affect the freshness and palatability of eggs during storage.

  • Non-destructive freshness measurement using spectroscopy has been carried out several times, but research on freshness and freshness has not been conducted. Therefore the purpose of this study is to develop a system for visually measuring and quantifying the air sack inside the egg by non - destructive method. The experimental environment which designed a small chamber was composed of 850nm band of two IR lasers, IR camera and two servo motors to acquire air sack Images. When the air sack volume ratio is 2.9% or less and the density is 0.9800 or more, the Haugh Unit value is 60 or more It was judged to be a fresh egg of a grade B or higher. These results mean, using the weight measurement, nondestructive decision system, and freshness evaluating algorithm. It can be expected to distinguish grade B or more marketable eggs without using destructive methods.

  • The purpose of this study was to examine how can we keep the freshness of peeled chestnuts in distribution process. The 30 minutes impregnation treatment at the preservation solution of 0.3% consistency showed a good result. The solution treatment prevented from surface yellowing and quality degradation of peeled chestnuts. And, in vaccum packaging after treating chemicals surface drying was faster than the other packaging from 7th day. A vitamin C treatment was no effective to restrain the growth of microbials.
