A Study on Contents of Sulfites in Fruits and Vegetables (과실류 및 채소류 중 아황산염류 함유량 조사연구)

  • To compare the content of natural existence with artificial addition experimental subject of 152 cases(25 kinds) were classified by two category of 42 fresh samples(14 kinds) and 110 processed samples(23 kinds). The content of sulfur dioxide were determined by Monnier-Williams's modified method. In mean content of 42 non-processed samples studied the range of contents was between 0.00 and 9.46 mg/kg. Radish contained the highest amount of sulfur dioxide(8.97 mg/kg), followed by onion(8.04 mg/kg). In mean content of 110 processed samples studied, the range of content was between 0.00 and 1,828.59 mg/kg. Gourd contained the highest amount of sulfur dioxide(1,064.61 mg/kg), followed by apricot(869.62 mg/kg), dried persimmon(64.11 mg/kg), dried radish(29.00 mg/kg), dried pumpkin(17.63 mg/kg), and those were lowe. than criteria. To supply safe food for the citizens, the quantitative level is required to be reinforced to supply safe foot continuously.

Enhanced Graft-take Ratio and Quality of Grafted Tomato Seedlings by Controlling Temperature and Humidity Conditions (토마토 공정묘의 접목활착율과 묘소질 향상을 위한 접목 활착실내의 적정 온.습도 조건 구명)

  • This study was conducted to enhance graft-take ratio and quality of grafted tomato seedlings by controlling temperature and humidity during the healing and acclimatization processes. Three temperature levels ($20^{\circ}C$, $23^{\circ}C$, and $26^{\circ}C$) were carried out to determine optimum temperature on four rootstocks. In addition, twelve combinations of three relative humidity levels (70%, 80%, and 90%) and four temperature levels ($17^{\circ}C$, $20^{\circ}C$, $23^{\circ}C$, and $26^{\circ}C$) were set up to evaluate the effect of relative humidity and temperature on the graft-take ratio of grafted seedlings. In the other hand, five relative humidity periods (H0, H1, H2, H3, and H4: 90% relative humidity for first 0, 1, 2, 3 and 10 days and afterwards relative humidity was reduced to 70%, respectively) were examined effect of relative humidity periods on the graft-take and quality of grafted seedlings. The higher graft-take ratios (84.0~87.4%) were showed at $23^{\circ}C$ compared to $20^{\circ}C$ and $26^{\circ}C$ in all rootstocks. Graft-take ratios decreased and number of diseased plants increased at high temperature. The graft-take ratios increased with increasing relative humidity in all temperature levels on the $3^{rd}$ and $7^{th}$ day after grafting. However, increasing relative humidity significantly increased percent of diseased plants. The graft-take ratio reduced at ($26^{\circ}C$) and ($17^{\circ}C$) temperature under all relative humidity conditions. The graft-take ratio increased with increasing period of 90% relative humidity. Maximum graft-take ratios were observed in H2 and H3 treatments. Graft-take ratio decreased with increasing 90% relative humidity for 10 days (H4). Diseased plants had not been found in H0, H1, H2, and H3 treatments. Seedling quality was improved through increasing fresh and dry weight of root, compactness, and root morphology of tomato seedlings in H2 and H3 treatments. Therefore, high relative humidity (90%) for first 2 or 3 days and afterwards reduced low relative humidity (70%) at $23^{\circ}C$ condition during healing and acclimatization promoted the graft-take and quality of grafted tomato seedlings.

Effects of Harvest Time on Growth and Phytochemical Contents of Baby Leaf Vegetables in Multi-layer System (다단재배에서 수확시기가 어린잎 채소의 생육과 항산화물질 함량에 미치는 영향)

  • This study aimed to determine the suitable of harvest time on the growth and quality of baby leafy vegetables (Agastsche rugosa O. Kuntze and Lepidium sativum L.) grown on rice seedling tray in a six-layered bench system at 30cm intervals in order to exploit the space during rice growing off-season. Seedlings were grown on the rice seedling tray for 10 days after sowing with coir substrate supplied with nutrient solution at EC $1.5dS{\cdot}m^{-1}$ every 2 days prior to placing the tray on the bench, which were at $1^{st}$ (Low) layer above 20cm and $6^{th}$ (High) layer above 170cm apart from the ground. Growth and phytochemical contents were measured at 7-day and 14-day harvest time. During the culture periods, daily average of integrated solar radiation and temperature were $9.3{\sim}9.6MJ{\cdot}m^{-2}$, $27.5^{\circ}C$ in the High layer and $5.1{\sim}6.2MJ{\cdot}m^{-2}$ in average, and $26.5{\sim}26.6^{\circ}C$ in the Low layer, respectively. For A. rugosa, the highest growth was observed in the Low layer bench at a 14-day harvest time, while their plant height in the High layer was shorter and the leaf number was lower. For L. sativum, the plant height, leaf length and width, leaf number and fresh weight were higher in the Low layer. For A. rugosa, a high yield was observed with the increase in integrated temperature and integrated solar radiation, while a higher yield of L. sativum was found with the increase in integrated temperature, but not with integrated solar radiation. For A. rugosa, both polyphenol and anthocyanin contents were higher in the High layer at a 14-day harvest time. For L. sativum, polyphenol contents were higher in the High layer, whereas no significant difference in anthocyanin and flavonoid contents was observed depending on the layer and harvest time. The highest chlorophyll content showed in Low layer at a 7-day harvest time in both A. rugose and L. sativum. All of the results suggest that in terms of growth and quality, it may be better growing in the high layer for 14 days after seedling in A. rugosa, and low layer for 7 days in L. sativum.

Method Validation and Quantification of Lutein and Zeaxanthin from Green Leafy Vegetables using the UPLC System (UPLC를 이용한 lutein과 zeaxanthin의 분석법 검증 및 엽채류에서의 정량적 평가)

  • The objective of this research is to present method development and validation for the simultaneous determination of lutein and zeaxanthin using ultra performance liquid chromatography (UPLC). Also, rapid quantification was performed on six green leafy vegetables (Allium tuberosum, Aster scaber, Hemerocallis fulva, Pimpinella brachycarpa, Sedum sarmentosum and Spinacia oleracea) that are commonly consumed in Korea. Separation and quantification were successfully achieved with a Waters Acquity BEH C18 ($50{\times}2.1mm$, $1.7{\mu}m$) column by 85% methanol within 5 min. Two compounds showed good linearity ($r^2$ > 0.9968) in $1-150{\mu}g/mL$. Limit of detection (LOD) and quantification (LOQ) for lutein and zeaxanthin were 1.7 and 5.1 g/mL and 2.1 and 6.3 g/mL, respectively. The RSD for intra- and inter-day precision of each compound was less than 10.69%. The recovery of each compound was in the range of 91.75-105.13%. Aster scaber and Spinacia oleracea contained significantly higher amounts of lutein ($4.06{\pm}0.24$ and $3.97{\pm}0.10mg$/100 g of fresh weight), respectively.

Determination of Appropriate Location for Baby Leaf Vegetable in Multi Bench System of Rice Seedling Nursery Facility During High Temperature Periods (다단식 벼육묘시설을 활용한 고온기 어린잎채소 재배 적정 위치 선발)

  • This study aimed to investigate the suitable of layer on growth of six baby leaf vegetables using existing facilities and equipment in rice seedling nursery. Three kinds of Lactuca(lettuce 'Jinppallola' and 'Romain white', and indian lettuce), two of Brassica(tatsoi and red tatsoi) and amaranth were used as the materials. After sowing, the rice seedling tray was placed in multi bench system($L120{\times}W60{\times}H195cm$, 10th floor), which were low(1st) layer above 15cm, middle(4th) layer above 115cm and high(7th) layer above 175cm apart from ground. Irrigation was sprayed 2~3 times a day using a automatic irrigation system. The growth characteristics and leaf color were investigated when leaf vegetables were reached the optimum size(within 10cm of plant height). During the culture periods(29th Jun.~31th Jul. 2017), daytime average temperature was $27.4{\sim}28.3^{\circ}C$ regardless of layers but solar irradiance was higher in the high-layer than low and middle-layer of 37% and 22%, respectively. The leaf length, leaf width and number of leaves in middle and high-layer have a tendency to increase but, fresh weight was different according to the layer. When the correlation between accumulation radiation and growth was analyzed, all of growth factor of Amaranth showed a high correlation and other cultivars showed correlation with each growth factors. As a result, It is suitable that amaranth and red tatsoi for high-layer, Indian lettuce and tatsoi for middle and high-layer and 'Romain white' for middle-layer. The growth of red lettuce 'Jinppallola' was good at low layer, but leaf color expression was poor. So the high layer is suitable for 'Jinppallola'.

Degradation of the Selected Pesticides by Gas Discharge Plasma (기체플라즈마에 의한 농약분해특성 연구)

  • As increasing the use of pesticides both in number and amount to boost crop production, consumer concerns over food quality and safety with respect to residual pesticides are also continuously increasing. However, there is still lacking of information that can effectively help to remove residual pesticides in foods. In recent years, contaminant removal by gas (or) glow discharge plasma (GDP) attracts great interests on environmental scientists because of its high removal efficiency and environmental compatibility. It was shown to be effective for the removal of some organophosphorus pesticides, phenols, benzoic acid, dyes, and nitrobenzene on solid substrate or in aqueous solution. This work mainly focuses on the removal of wide range of residual pesticides from fresh fruits and vegetables. As for preliminary study, the experiments were carried out to investigate whether GDP can be used as an effective tool for degrading target pesticides or not. With this objective, 60 selected pesticides drop wised onto glass slides were exposed to two types of GDP, dielectric barrier discharge plasma (DBDP) and low pressure discharge plasma (LPDP), for 5 min. Then, they were washed with 2 mL MeCN which were collected and used for determination of remaining concentration of pesticides using LC-MS/MS. Among selected pesticides, degradation of 18 pesticides (endosulfan-total was counted as one pesticide) by GDP could not be examined because control treatments, which were left in ambient environment, of those pesticides recovered less than 70% or even did not recover. However, majority of tested pesticides (42) were degraded by both types of GDP with satisfactory recovery (>80%) of control sample. Pesticides degradation ranged from 66.88% to 100% were achieved by both types of plasma except clothianidin which degradation in LPDP was 26.9%. The results clearly indicate that both types of gas discharge plasma are promising tools for degrading wide range of pesticides on glass substrate.

A Study on the Kyungsangnamdo Native Local Food Culture in the Novel "Toji" (소설 "토지"에 나타난 경상남도 향토 음식문화)

  • This study was intended to outline the characteristics of the food culture in the area of Kyungsangnamdo and its modernization by interpretation and analysis of the novel Toji, which was set in Hadong, Jinjoo in the area of Kyungsangnamdo in the early 20th century. The characteristics of the Kyungsangnamdo area's native dish during the Japanese ruling era in the latter half of the Choson dynasty are as follows. In the first part of the novel, which spans from 1897 to 1908, vegetable and grain food development can be seen in the area of Hadong, the interior plains of Kyungsangnamdo, where there is a typical farming village in the mountains. The second part of the novel, which spans from 1911 through 1917, includes some mentions of the properties of Kyungsangnamdo area's native dishes through the lens of emigrated Koreans living on Gando island. Gando island is in China, and is where Seohee, the heroine, escapes from her homeland and remains for a period of years. There is a unique type of seafood in the Gando area using fresh marine products, exactly the same as in the Kyungsangnamdo area. The third part of the novel spans 1919 through 1929, after Seohee returns to her own country and regains her house. There is a noticeable description of food culture in the area of Jinjoo in Kyungsangnamdo through the description of Seohee focusing on the education of her children. The well-described features of Jinjoo are boiled rice with soup of beef leg bones and Jinjoo bibimbob, with vegetables and a variety of foods using cod. Cod are caught in large quantities in Kyunjgsangnamdo, and cities in the area grow to medium size as the area became traffic-based. The fourth part of the novel spans from 1929 through 1938, and includes very detailed descriptions of characters and background locations. Salted fish combined with the wild ingredients of Mt. Jiri feature prominently in the Kyungsangnamdo's area descriptions. The fifth part spans from 1940 through 1945, and as the Japanese colonization era ends, the foods described in Kyungsangnamdo seem to develop the usage of soybean paste. With abundant fish and shellfish Kyungsangnamdo, the dishes that evolve to use soybean paste include mussel soybean paste soup, picked bean leaves in soybean paste, chaitgook - cold soup from soybean paste, and seolchigook used with seaweed and sea laver.

Changes on the Components of Salted Eggplants during Storage (저장방법에 따른 절임 가지(시키부품종)의 성분 변화)

  • This study was carried out to investigate the changes on the components of salted eggplant(shikibu) during storage. The contents of total and reducing sugars were decreased during storage, and the tendency of decrease was lower in the salted eggplants of vacuum packing storage than in the salted eggplants of rice bran immersion storage. The contents of acetic and malic acid were higher than other organic acids. The content of acetic acid was increased during storage, but malic acid was decrease. The major amino acid were valine, leucine, aspartic acid, glutamic acid. The content of essential amino acids was increased during storage. Aspartic acid, alanine, cystine and proline were high content of free amino acids. The contents of phosphoserine, taurine, Y-aminoisobutyric acid and hydroxyproline were higher than others. Posphoserine content was decreased during storage, but Y-aminoisobutyric acid was increased to 5 times of fresh eggplant at 20 days of storage.

A Study on Fluid Intake and Output Measurements (수분 섭취 및 배설량의 측정방법에 관한 연구)

  • The Fluid and electrolytes balance in the body is of critical importance in maintaining good health. When the fluid and electrolyte imbalance is present, patients are in great danger. They must be assessed immediately by a nurse so that appropriate treatment can be started as soon as possible. Patients' fluid intake and output records contain highly important information for the diagnosis and treatment of fluid imbalance, but, these records are often inaccurate and the method of recording the fluid intake is not universal for every hospital. Be-cause they are few quantitative measurements of a patient's hydration, the need to improve the accuracy of fluid intake records is very important. However, very few studies have been done to investigate the accuracy of measurements of patients' fluid intake and output. The purpose of this study was to investigate the methods used for calculation of fluid intake which is most similar to fluid output in normal adults and hospitalized patients. This study focused on three different calculation methods for fluid intake and compared these to fluid output and developed suggestions as to the ideal way to record fluid in-take. Data for 43 hospitalized patients and 37 normal adults were analyzed. The findings of this study are as follows ; 1) In normal adults, the daily intake of water which enteres by the oral route was 2415m1 (the first method of calculation). The daily intake of water in the form of pure water or some other beverage was 1365m1 (the third method of calculation) The daily intake of water including fresh fruits and vegetables, rice, porridges, and Me m which have water content more than 80% were 2186m1 (the second method of calculation). 2) The urine output of the normal adults was 1350m1. This apprroximates the amount of fluid an adult takes in the form of pure water. 3) In patient group, the total intake of water was 2550m1 (the first method of calculation). The in-take of water in the form of pure water or as some other beverage and IV fluid was 1661m1 (the third method of calculation). The daily in-take of water including foods which have high water content was 2356m1 (the second method of calculation). 4) The urine output of the patient's group was 1728m1. This approximates the amount of fluid an adult takes in the form of pure water. 5) Investigation of the method of calculation of the patient fluid intake showed that among the 31 hospitals studied, only eight use the third method of calculation which reflects the most close value to urine output. From the results obtained in this study, it was indicated that the amount of fluid taken in the form of pure water reflects the most close value to urine output. Therefore, it can be suggested that the third method of calculation which includes water in-take only in the form of pure water or beverage should be used as patients' fluid intake record.

Changes in Components of Salted Eggplants (Chukyang) during Storage (축양품종 염절임 가지의 저장중의 성분 변화)

  • This study was carried out to investigate the changes in components of salted eggplant (chukyang) during storage. The contents of total and reducing sugar were decreased during storage, and the tendency was lower in the salted eggplants of vacuum packing storage than in the salted eggplants of rice bran immersion storage. The organic acids of salted eggplants were acetic acid, citric acid, lactic acid, and malic acid. And acetic and malic acid contents were much higher than the others. The content of acetic acid was increased during storage, but malic acid was decreased. Major amino acids of eggplants were valine, aspartic acid, glutamic acid, glycine, and alanine. The content of total amino acid was 1,488.18 mg/100 g in eggplant packed vacuum film at 20 days of storage, and higher than those in fresh eggplant. The content of total amino acid in eggplant immersed in wet rice bran was 745.42 mg/100 g at 20 days of storage, and decreased during storage. The contents of aspartic acid, alanine, cystine, and proline in free amino acids of salted eggplants were higher than other amino acids. The contents of phosphoserine, taurine, ${\gamma}$ -aminoisobutyric acid and hydroxyproline were higher than others. Posphoserine content was decreased during storage, but ${\gamma}$ -aminoisobutyric acid content was increased during storage.
