한국 성인의 시판 주식류 섭취 현황: 국민건강영양조사 2010~2014년 데이터를 중심으로 (Consumption Status of Commercial Staple Food in Korean Adults: Data from 2010~2014 Korea National Health and Nutrition Examination Survey)

  • The purpose of this study was to investigate the nutrient intake status and factors affecting the consumption of commercial staple food for Korean adults using the Korean National Health and Nutrition Examination Survey data from 2010 to 2014. As a result of analyzing the frequency of consumption of commercial staple food, in 27.578 subjects, 75.5% of them did not eat it once a day, 21.7% of the subjects consumed once a day, and more than two times showed 2.8%. According to the results of age, the higher the age, the higher the rate of not consuming commercial staple food, and the lower the age, the higher the rate of consumption of commercial staple food(p<0.0001). In addition, the rate of consumption of commercial staple food was higher in cities than in rural areas. The higher the education level, the higher the proportion of commercial staple food. The intake of rice, noodles, and bread increased significantly as the frequency of consumption of commercial staple foods increased. Protein, fat, riboflavin, and niacin showed significant differences with increasing frequency of commercial staple food in nutrient intakes(p<0.0001). As the number of commercial staple food increased, the intake of grains, egg products, milk and dairy products, beverages and other food groups increased and the consumption of vegetables decreased significantly.

국내산 발효유 선택속성의 상대적 중요도 및 최적효용 도출 (Investigation of the Relative Importance and Optimal Utility on Choice Attributes of Fermented Milk)

  • This study examined the relative importance and the effective utility of fermented milk by consumers. The questionnaire was developed by an in-depth interview and literature review and was surveyed on-line. Statistical analysis was carried out descriptive analysis, ANOVA, paired t-test, and conjoint analysis using the SPSS package. First, an analysis of the consumption status of fermented milk found that the consumption frequency was 1-2 times/week (36.2%), 3-4 times/week (26.5%). The product choice attributes of fermented milk were found to be the same with 'taste' (3.93) and 'manufacturing date/expired date' (3.92), rated the highest, followed in order by, 'sanitary quality' (3.82), 'origin of ingredient' (3.81). Comparative analysis of the importance and satisfaction level of the choice attributes of fermented milk showed that the choice attributes with lower satisfaction compared to importance were 'taste', 'nutrients', 'manufacturing data/expired date', 'sanitation quality', 'price', 'manufacturing method' and 'certification of quality' (p<0.001, p<0.01). 'Price' and 'certification of quality' were the choice attributes of fermented milk classified as 'Focus Here' because of its high importance and low satisfaction. The preferred combination of relative importance in choice attributes of the fermented milk was 'domestic resource', 'Eat with spoon', and 'none additives'. Therefore, it is believed that sales will increase if dairy companies can improve the 'price' and 'certification of quality'. In addition, the use of domestic ingredients in the development of new fermented milk products in the future could be an important marketing factor in consumer choice.

서울지역 중년의 영양소 섭취와 식품 섭취빈도에 영향을 주는 생활습관에 관한 연구 (The Influence of Health-Related Habits on Nutrient Intake and Food Frequency of Middle-Aged Subjects in Seoul)

  • This study examined the effectiveness of two commonly used dietary assessment methods (the 24-hour recall and the food frequency questionnaire) in the epidemiological investigations of health-related habits and degenerative diseases. This cross sectional project in the Seoul area was conducted for the purpose of establishing cohort subjects and collecting reliable nutrient intake data for a further large-scale cross sectional study. The subjects were 91 volunteers from the Seoul area with a mean age of 53.5 \pm 9.6 for the males and 52.2 \pm 8.9 for the females. The subjects had a relatively high educational background, were from high socioeconomic levels, and were greatly concerned about healthrelated life styles. There was a significantly negative correlation between their smoking and their nutrient intake. Their drinking habits, their self-estimated health status and their concern or stress about being healthy did not have any influence on their nutrient intakes. Skipping meals was the most undesirable dietary habit influencing their nutrient intakes, and the next was their irregularity of eating meals. The subjects who liked legumes and fish had higher intakes of iron and niacin and those who liked milk and dairy products had higher intakes of calcium, vitamin \B_2 and fat. The subjects who considered themselves not to be healthy consumed higher amounts of fish and shell-fish, and those who considered themselves to be healthy consumed higher amounts of vegetables. The smokers consumed less fruits than non-smokers, but there was no correlation between their drinking and consumption of the food groups. There was no correlation between their food consumption frequency and their skipping meals or meal irregularity. There were positive correlations between their food likes and food consumption frequency for foods such as meat, milk and dairy products, seaweeds and fruits. Therefore, their smoking, skipping meals and meal irregularity appeared to greatly influence their nutrient intakes. Significant correlations were found between their health-related habits and their food group preferences and food frequencies. This implies that simple surveying methods using criteria such as smoking, skipping meals and meal irregularity, food group preferences and eating frequencies can be used as useful tools in the assessment of nutritional statuses.

일산 지역 중학생의 간식 섭취에 영향을 미치는 요인 (Factors to Influence Consumption Pattern of Snacks of Middle School Students in Ilsan Area)

  • 본 연구는 일산 지역의 중학생들의 개인 특성 요인(성별, BMI)과 가정 내 환경 요인(어머니 직업 유무, 부모 교육 정도)들이 간식 섭취에 미치는 영향을 분석하고자 하였다. 대상자의 성별에 따라서 간식 식품군별 섭취 빈도를 조사한 결과, 남학생은 우유 및 유제품(p<0.05), 씨리얼류(<0.05)와 면류(p<0.01)의 섭취가, 여학생은 과자류(p<0.01)와 사탕-초콜릿류(p<0.01)의 섭취가 유의적으로 높게 나타났다. 대상자를 BMI에 따라서 분류한 결과, 저체중군은 과자류(p<0.05)와 사탕-초콜릿류(p<0.001)의 섭취가 정상체중군 및 과체중군에 비하여 높게 나왔다. 대상자의 어머니가 전업주부인 경우 부모가 준비하는 간식을 섭취하는 비율이 유의적으로 높았고(p<0.001), 과일-과일주스류(p<0.05) 및 우유-요구르트류(p<0.001) 섭취 빈도가 높게 나타났다. 또한 부모의 학력이 높은 군의 조사대상자에서 간식 섭취가 비교적 규칙적이었으나 패스트푸드와 청량음료의 섭취 빈도가 높았다. 본 연구 결과 청소년들의 간식 섭취 및 소비 태도는 성별, BMI, 어머니의 직업 유무와 부모의 교육 정도에 의하여 영향을 받았다. 따라서 청소년들이 간식 섭취 및 소비 태도가 올바른 습관으로 정착되어 성인이 되어서도 건강하고 자주적인 식생활이 가능하도록 다양한 요인을 고려하여 청소년 스스로가 바람직하고 계획성 있는 간식을 구입 및 섭취할 수 있는 태도에 대한 교육뿐만 아니라 어머니의 취업으로 인한 청소년의 간식 섭취의 부정적인 영향을 보완할 수 있는 방안이 개발하고 적용해야 할 것이라고 사료된다.

대학생들의 음료 소비실태 및 이미지 조사 연구 (A Study on Beverage Consumption Pattern and Image of College Students)

  • In order to investigate consumption pattern and image of beverage, this study was performed by using questionnaire based on stratified random sampling about 200 students from September 6, 1999 to September 18, 1999. The result was as followings: 1. For the reasons of each beverage consumption, coke, soda pop and sport drinks were for quenching thirst. And coffee and juices were for dessert and milk.yoghurts, dietary beverages, green tea and ginseng tea were for health. 2. For the priority in selecting each beverage, trademark was dominant factor for choosing coke. And the dominant factor of choosing milk.yoghurts and ginseng tea was nutrition and in case of other beverages taste was the first factor. 3. For the place of taking beverages, coffee, coke and sport drinks were mainly consumed in school and milk.yoghurt and juices in home. 4. The college students loved or liked milk.yoghurt and juices, and they liked or enjoyed coke, soda pop, sport drinks and green tea moderately, and enjoyed ginseng tea and black tea moderately or disliked them. 5. For the frequency of each beverage, many of them consumed coffee and milk.yoghurt once or twice a day. and consumed coke. soda pop. sport drinks and juices once or twice a week. And they answered that they did not consume dietary beverages, green tea, ginseng tea and black tea so often. 6. There was significant correlation with frequency of drinking and preference score of beverage. 7. For the consumption of the Korean traditional beverages, more than 50% of the subjects had no experience in taking sangwha tea, omiza tea, and Kugiza tea. Among them, many answered that they would try the Korean traditional beverages, if they had an opportunity, and that their price was moderate. 8. The results from the analysis of the image of those beverages were as followings; \circled1 Coffee, coke, sport drinks and dietary beverages had a modern image and green tea, ginseng tea and black tea had a traditional image. \circled2 Coke, sport drinks and ginseng tea had a manly image and juices, dietary beverages, green tea and black tea had a womanlike image. \circled3 The students recognized coffee, coke, milkㆍyoghurt, sport drinks, juices, dietary beverages and green tea to be daily and catholic. \circled4 Milkㆍyoghurt, juices, dietary beverages, green tea, ginseng tea and black tea were recognized to be good for health and coffee and coke bad for health. \circled5 Coffee, coke, soda pop, sport drinks, juices and green tea were slightly concerned with a change. \circled6 Coke, soda pop and sport drinks had a dynamic image and coffee, juices. green tea, ginseng tea and black tea had a little static image.

성별, 연령별에 따른 우유·유제품 섭취와 골 건강과의 관련성 - 2008~2011 국민건강영양조사 자료를 이용하여 (Relationship between Intake of Milk and Milk Products and Bone Health by Sex and Age-Group in Koreans - Using Data from the Korea National Health and Nutrition Examination Survey 2008~2011)

  • 본 연구는 만 19세 이상~만 65세 미만 성인의 우유 유제품 섭취빈도 분포를 파악하고 골밀도에 근거한 골 건강상태와 우유 유제품 섭취 간의 관련성을 조사하였다. 우유와 유제품, 우유, 유제품을 섭취한 MMP, M, MP군에서 섭취빈도가 1일 1회 미만인 대상자는 성인 남성 75.4%(3,480명), 82.4%(3,812명), 94.4%(4,367명)와 성인 여성 66.2%(4,069명), 74.9%(4,603명), 92.4%(5,680명)로 조사되었다. 우유 유제품 섭취빈도에 따른 골밀도는 성인 여성의 MMP군에서 1일 섭취빈도가 1회 이상인 집단과 M군에서 1일 섭취빈도가 1회 이상인 집단은 그렇지 않은 집단보다 만 50세 이상~만 65세 미만에서 연령, 체질량지수 등 혼란변수 보정 후 대퇴골 전체 골밀도, 대퇴골 경부 및 요추 골밀도가 모두 유의하게 높았다(P<0.01). 또한, 성인 여성 MMP군과 M군의 동일 연령에서 1일 섭취빈도가 1회 이상인 집단은 섭취빈도가 1일 1회 미만인 집단보다 연령, 체질량지수 등 혼란변수 보정 후 골다공증의 위험이 유의하게 감소하였다(OR: 0.49, CI: 0.28~0.86, OR: 0.36, CI: 0.21~0.62). 성인 남성의 MMP군과 M군에서는 1일 섭취빈도가 1일 1회 이상인 집단은 그렇지 않은 집단보다 만 30세 이상~만 40세 미만에서 대퇴골 전체 및 대퇴골 경부 골밀도가 모두 유의하게 높았고(P<0.05), 만 40세 이상~만 50세 미만에서 대퇴골 경부 골밀도가 유의하게 높아(P<0.05) 만 30세 이상~만 50세 미만에서 우유 유제품의 섭취는 골밀도와 연관성이 있었다. 본 연구는 단면적 연구로 식이섭취와 골 건강의 인과관계를 명확히 할 수 없는 연구의 제한점은 있으나 국내 우유 유제품과 골 건강의 연관성에 관한 역학 연구 및 식생활 관리의 기초자료가 될 수 있을 것으로 생각된다. 또한, 성별과 연령을 고려한 골 건강 관련 식생활이 필요할 것으로 보이며 그 기전 및 인과관계에 따른 후속연구가 필요하다.

Effect of Dietary Supplementation of Glutathione on Blood Biochemical Changes and Growth Performances of Holstein Calves

  • The objective of this experiment was to evaluate the effect of dietary supplementation of glutathione (GSH) on health, solid feed consumption, nutrient intake, body weight gain (BWG), feed efficiency, blood metabolites and the occurrence of diarrhea in Holstein neonatal calves. The calves were fed plain milk as a control (CON) or milk with GSH supplementation. Sixteen calves were separated from their mothers immediately after birth, moved into individual cages and fed colostrum for the first three days. For GSH supplementation, three grams of GSH powder were mixed in 1.8 L of heat-treated milk and placed in a plastic bottle with a rubber nipple. The calves were fed GSH-supplemented milk only once out of four daily feedings. For the first 25 d, calves were fed 1.8 L of milk four times per day. Milk feeding frequency was reduced to three times per day from days 26 to 30, followed by twice a day from days 31 to 44, and once a day from days 45 to 49, after which they were weaned at day 50. Body weight gain (BWG), feed consumption, and growth performance were monitored until day 70. The dietary supplementation of GSH had no effect on daily feed intake and growth performance in growing calves. Hematological results revealed red blood cell distribution width (RDW) was lower, and mean corpuscular volume (MCV) was significantly higher in calves fed GSH. Serum lactate dehydrogenase (LDH) concentrations were lower in calves fed GSH. Rectal temperature at day 70 was higher in calves that did not receive GSH, while mean frequency of diarrhea and enteritis was less in calves fed GSH. It is concluded from the present study that BW gain, total dry matter intake (DMI), feed efficiency, and breathing rate did not differ between groups. However, there were some positive blood parameters and the mean frequency of diarrhea and enteritis was less in calves fed GSH compared to CON which did not receive GSH. With the results obtained, supplementation of GSH is highly recommended.

폐경후 골밀도 저하 여성의 골밀도와 식생활 관련 요인에 관한 연구 (Dietary Risk Factors Related to Bone Mineral Density in the Postmenopausal Women with Low Bone Mineral Density)

  • This study was conducted to detennine the dietary and lifestyle factors related to bone the mineral density (BMD) of postmenopausal women with decreased BMD. The subjects (N =163) were recruited from women who visited a orthopedic clinic for BMD check up. A trained dietition interviewed subjects individually to obtain data about dietary behavior, consumption frequency of foods known as main dietary source of calcium and potassium, and clinical symptoms. The risk factors were identified by correlation and multiple regression analysis of variables. The mean age of the subjects was 66.8 yews. Most of them showed low levels of education and monthly income. The mean age of menarche and menopause were 17.2 and 48 year, respectively. The mean menopause duration was 18.7 year. Most of the consumption of calcium was centered to vegetable foods. Education level were positively correlated (r =0.272, P < 0.05) with BMD whereas age, menarch age, menopause duration, number of children were negatively correlated (r=-0.355, r=-0.240, r=-0.283, r=-0.193, respectively, p < 0.05) with BMD. The consumption of soybean, radish were positively correlated (r=0.187, r=0.158, respectively, p < 0.05) with BMD. Potassium intake with rice showed significantly negative correlation with BMD (r =-0.189, P < 0.05), but calcium intake with brown seaweeds, bean sprouts were positively correlated (r =0.247, r =0.254 respectively, p < 0.05) with BMD. Protein intake with roasted pork was also positively correlated (r =0.216, P < 0.05) with BMD. Multiple regression analysis showed that the most prominent negative predictor influencing the BMD was age. Minor negative factors influencing the BMI were age of menarche, potassium intake from rice. But the significantly positively factors influencing the BMD were consumption of radish and soybean intake, education, and protein intake with roasted pork. In conclusion brown seaweeds, radish or soybeans can be promoted as cheap foods replacing milk and milk products for menopausal women with low income.

Diet Related Factors Influencing BMI Changes for Korean-Americans Residing in Eastern Area of America

  • This study was performed to examine the dietary and BMI change of Koreans after moving to America and to identify the factors influencing changes of BMI. The subjects were 192 Korean-Americans (men : 86, women : 106) residing in the eastern area of the U.S.A. 1) subjects reported significantly increased consumption frequency in American foods like, low fat milk(p<0.001), cold cereals (p<0.001), whole wheat bread(p<0.001), hamburger(only in males p<0.01) and pizza(only in males p<0.01). Whereas significantly decreased consumption frequency in fish (p<0.05), cooked vegetables(p<0.001), kimchi(p< 0.001) and cooked rice (p<0.001) were reported. 2) It was reported that weight, accordingly BMI were significantly increased (p<0.01). The smoking habit score was significantly decreased for males (p<0.05). 3) Multiple linear regression analysis for BMI change showed that education years in Korea was the most prominent negative factor(p<0.001) in predicting BMI change in America. Elevated frequencies of alcohol, chicken and soft drink in America were also associated with greater increase of BMI. When the length of residence (increase of age) was included in regression model, the increase of age was the most significant factor (p<0.001). Changes of chicken and soda scores were other significant factors.

Food consumption frequency of Korean adults based on whether or not having chewing difficulty using 2013-2016 KNHANES by sex-stratified comparative analysis

  • BACKGROUND/OBJECTIVES: This study examined the associations between food consumption frequency of Korean adults and self-perceived chewing difficulty, using the food frequency questionnaire (FFQ, 112 items) from 2013-2016 of the Korea National Health and Nutrition Examination Survey (KNHANES). SUBJECTS/METHODS: Subjects were divided into not difficult in chewing (NDC) and difficult in chewing (DC) groups, with 24.17% being classified into DC. Males and females consumed 35 and 37 items less frequently than the other sex, respectively. Due to the remarkable gender difference in food consumption, gender-stratified one-sided survey regression analysis was performed after adjusted for the effect of age, household income, and self-rated health status. RESULTS: Thirty-four items of FFQ were significantly less consumed by the DC group. Females exclusively consumed less beverages and alcohol while males showed the same for fruits and milk·dairy products. Consumption frequency of 8 items such as steamed potatoes·grilled potatoes, stir fried beef, other kimchi·fresh vegetable kimchi, orange, sour pork·pork cutlet, tteokbokki and green tea were significant only in males. In contrast, 17 items including cooked rice with other grains and legumes, boiled egg·steamed egg, Korean cabbage kimchi, banana, and tofu stew·soft tofu stew were significant only for females. Finally, items that showed significance for both were 9 items including loaf bread, ready-to-eat cereal, steamed sweet potatoes·grilled sweet potatoes, stir-fried lotus roots·stir-fried burdock, green laver salad·brown seaweed salads, apples, tomato·cherry tomatoes, squid (raw, dried shredded, boiled, stir-fried), and curd type yogurt. CONCLUSIONS: Findings in this study suggest chewing difficulty may be an important nutritional issue that has to be dealt with for healthful food consumption, with distinct interest of gender.
