냉동 동결 건조 머큐베리 분말 첨가 파운드케이크의 항산화 활성과 품질 특성 (Antioxidant Activity and Properties Characteristics of Pound Cakes Prepare using Freeze Dried Maquiberry (Aristotelia chilensis [Mol.]) Powder)

  • A study was undertaken to examine the effect of adding freeze dried maquiberry powder on the quality of pound cakes. Freeze dried maquiberry was added to the flour at a ratio of 0.5, 1, 1.5 and 2.5%. The antioxidant activity was estimated by DPPH free radical scavenging activity, the total phenolic compounds content, and flavonoid content in freeze dried maquiberry powder of pounds cakes. Antioxidative activity was highly correlated with the total phenolic and total flavonoids contents of freeze dried maquiberry powder of pound cakes (r=0.9126, p<0.001, r=0.8366, p<0.001, respectively). The quality characteristics of freeze dried maquiberry powder of poundcakes were estimated. The specific volume decreased significantly with increased substitution level of freeze dried maquiberry powder (p<0.01). The lightness significantly decreased with increased freeze-dried maquiberry powder of pound cake crust and crumb (p<0.01, p<0.01). The hardness and adhesiveness increased, while gumminess tended to reduce with increased maquiberry powder. The consumer acceptability score of 0.5~2.5% freeze dried maquiberry powder of pound cakes ranked significantly (p<0.01) higher than those of the other groups in overall preference. These results showed that freeze dried maquiberry powder is a good ingredient to increase consumer acceptability and health.

Processing Characteristics of Freeze-Dried Pork Powder for Meat Emulsion Gel

  • The processing characteristics of freeze-dried pork powder as raw meat for comminuted meat products were compared with those of freeze-thawed pork. The tertiary structural properties, oxidation, and solubility of proteins in the freeze-dried pork powder were investigated. In addition, the properties of the emulsion gels manufactured with freeze-dried pork powder (GFD) and freeze-thawed pork (GFT) at 1.5% and 2.0% NaCl were evaluated. The surface hydrophobicity and intrinsic tryptophan fluorescence intensity of myofibrillar proteins between the freeze-dried pork powder and freeze-thawed pork were similar. However, freeze-dried pork powder had higher carbonyl compounds and lower solubility of sarcoplasmic and myofibrillar proteins than freeze-thawed pork (p<0.05). GFD had higher cooking loss than GFT in 2.0% NaCl, and lower hardness and a* value of GFD were observed regardless of NaCl level (p<0.05). Moreover, GFD had higher malondialdehyde content than GFT at the two NaCl concentrations (p<0.05). Therefore, our study demonstrated that freeze-dried pork powder has lower functional properties than freeze-thawed pork as raw meat for comminuted meat products.

밀웜(Tenebrio molitor L.) 분말과 북어 분말을 혼합하여 제조한 기능성 다식의 품질평가 (Quality Characteristics of Functional Dasik Prepared with Mixture of Freeze-dried Mealworm (Tenebrio molitor) Powder and Dried Pollack Powder)

  • This study was performed to evaluate the quality characteristics of functional Dasik prepared with a mixture of freeze-dried mealworm (Tenebrio molitor) powder and dried pollack powder along with assessment of the general and fatty acid compositions of mealworms. General compositions, except for moisture content of freeze-dried mealworm powder, were higher than those of raw mealworms. The ratios of saturated fatty acids and unsaturated fatty acids of freeze-dried mealworm powder and raw mealworms were 1:3.31 and 1:3.19, respectively. Amounts of oleic acid, which was the most abundant among unsaturated fatty acids, of freeze-dried mealworm powder and raw mealworms were 41.12 and 37.84%, respectively. For color values, greater content of freeze-dried mealworm powder in functional Dasik resulted in lower L and b scores, whereas a value increased. In the case of mechanical properties, greater content of freeze-dried mealworm powder resulted in significant reduction of hardness, chewiness, and gumminess. In the case of sensory evaluation, color, taste, and overall quality of DPMD50, which was prepared with a 1:1 ratio of freeze-dried mealworm powder and dried pollack, were the highest. It was concluded that DPMD50 is a nutritious combination of edible insects and fish for protein fortification for growth and the elderly.

건조 방법에 따른 호박 분말 및 죽의 품질 특성 (Quality Characteristics of Ripened Pumpkin Powder and Gruel in Relation to Drying Methods)

  • To develop a new instant pumpkin gruel food, this study investigated the dried powder and gruel quality characteristics depend on drying method. The pumpkin powder was dried by infrared and freeze drying, and then milled to 80 mesh, after which the manufactured gruel was mixed with glutinous rice by heating. The gruels prepared by dried pumpkin powder were compared with steamed and freeze dried powder as a control, the crude protein and total sugar contents were high in the infrared drying powder, but freeze drying kept more carotenoid content. Soluble solid of gruel was higher in the freeze dried powder, and steam treated powder showed increased L and b values. Sensory test was carried out to select proper drying methods with 5-point scale. The gruel with freeze dried powder gained the highest score in overall quality. These results suggest that freeze drying could be used for manufacturing high quality instant pumpkin gruel.

냉동오디의 이화학적 특성과 건조조건을 달리한 오디 분말을 첨가한 베이글의 품질과 관능적 특성에 관한 연구 (A Study on Physicochemical Characteristics of Frozen Mulberry Fruit and the Quality and Sensory Characteristics of Bagel with Different Drying Conditions of Mulberry Powder)

  • 본 연구는 냉동오디를 냉동건조와 열풍건조 방법으로 건조 후 분말화하여 건강 기능성 빵인 베이글 레시피에 0%(control), 1%, 3%, 5%, 7%를 첨가하여 만들었다. 우리는 냉동오디의 일반성분, 이화학적 특성, 총 폴리페놀 함량과 DPPH 라디컬 소거능을 측정하였다. 또한 제조된 베이글 pH는 냉동건조오디분말 첨가군 보다 열풍건조오디분말 첨가군이 높게 나타났다. 명도(L값)와 황색도(b값)는 냉동건조오디분말 첨가군 보다 열풍건조오디분말 첨가군의 값이 높은 것으로 나타났다. 적색도(a값)는 냉동건조오디분말을 첨가했을 때가 열풍건조오디분말을 첨가했을 때보다 적색도가 높은 것으로 나타났다. 경도(Hardness)는 냉동오디분말의 첨가량이 증가함에 따라 유의적인 차이를 보였으나 열풍건조오디분말을 첨가한 베이글은 반대의 결과를 나타내었다. 탄력성(Elasticity)은 열풍건조오디분말을 첨가한 베이글은 유의적인 차이가 없었으나 냉동건조오디분말의 첨가량이 증가함에 따라 유의적인 차이를 보였다. 응집성(Cohesivness)은 유의적인 차이가 나타나지 않았고 검성(Gumminess)은 냉동건조오디분말과 열풍건조오디분말의 첨가량이 증가할수록 감소하는 경향을 보였다. 냉동건조오디분말 5%를 첨가군과 열풍건조오디분말 3% 첨가군의 기호도가 가장 높게 나왔다.

연잎과 연자육 아이스크림 개발 (Development of Ice Cream Prepared Lotus(Nelumbo nucifera Gaertner) Leaf and Seeds)

  • The purpose of this study was to determine the content attributes and sensory characteristics of ice cream flavored with lotus leaf and seeds (Nelumbo nucifera Gaertner). Analysis of freeze dried lotus leaf powder produced the following technical results: Freeze dried lotus leaf powder contained moisture 12.2, crude protein 5.9, crude fat 1.2, crude ash 7.0, crude fiber 13.4g/100mg; raw lotus seed powder contained moisture 65.0, crude protein 8.2, crude fat 0.3, crude ash 1.0, crude fiber 10.8g/100mg; freeze dried lotus seed powder contained moisture 14.0, crude protein 17.1, crude fat 1.9, crude ash 4.0, crude fiber 2.8g/100mg. Lotus seed was processed by 4 methods: freeze dried, roasted, freeze dried peeled inner layer, cooked cut peeled inner layer. Analysis of the color value produced the following technical results: freeze dried lotus leaf powder were L(lightness) 14.5, a(redness) 4.4, b(yellowness) 24.0; freeze dried lotus seed powder L 57.3, a 14.4, b 12.0; roasted lotus seed powder L 52.7, a 22.5, b 11.9; freeze dried lotus seed peeled inner layer L 60.0, a 1.4, b 12.3. Proportional lotus ingredients used for ice cream were 1%, 3%, 5%, 7%, 10% for lotus leaves and 1%, 3%, 5% for lotus seeds. The maximum over run ratio for lotus leaf ice cream was 45.3~56.9% at 20~25 minutes operating time. Over run was significantly decreased by increasing the contents of lotus leaf powder. A maximum over run ratio for lotus seed ice cream was 46.1~54.3% at 20~25 operating time. Over run was not significantly different based on content of lotus leaf versus lotus seed. Sensory evaluation of lotus leaf ice cream produced the following results: the highest score was for color of 4.42 and the lowest score was for sweetness of 3.30. The total mean score significantly decreased by increasing the content of lotus leaf powder. Sensory evaluation of lotus seed ice cream produced the following results: the highest score was for cooked cut peeled inner layer type and the lowest was for freeze dried type 3.86. The sensory scores were not significantly different based on the content of lotus seed. Texture was evaluated highest with a rating of 4.21 and the taste was evaluated lowest with a rating of 3.68 For whole evaluation. This study concluded that lotus leaf ice cream demonstrates relative strength in terms of color and taste, and a relative weakness in terms of over run and sweetness. Suitable content of lotus leaf ranged from 1~5%. The lotus seed processed by the cooked cut peeled inner layer method received a higher rating than dried powder for lotus seed ice cream.

함초를 이용한 브라운소스에 관한 품질특성 (Quality Characteristics of Brown Sauce Made with Freeze-dried Salicornia herbacea L. Powder)

  • 본 연구는 동결 건조 함초 분말을 첨가한 브라운소스의 최적의 제조법을 알아내고자 하였다. 이를 위해, 동결 건조 함초 분말 함량을 달리하며 브라운소스의 이화학적 특성 및 관능검사를 실시하였다. 그 결과 동결 건조 함초의 최대 염도는 정제수인 SP1에 1%의 동결 건조 함초 분말을 첨가했을 때 0.15%이었다. 함초 분말을 첨가한 브라운소스의 최대 명도는 1.2%로 45.29인 BSP12가 가장 높게 측정이 되었다. 염도와 명도는 분말함량이 증가할수록 시료 간에 유의적(p<0.001)인 차이를 보이며 증가하였다. 적색도는 BSP0이 6.79로서 가장 높았다. 황색도는 동결 건조 함초 분말을 1.2% 첨가한 BSP12가 24.79로 가장 높았다. 동결 건조한 함초 분말을 첨가한 브라운소스는 DPPH 자유 radical 소거능이 첨가량이 많아질수록 증가하였다. 점도는 4.45로 대조군 BSP0에서 가장 높았고, BSP3 및 BSP6와도 큰 차이가 없었다. 맛은 6.36로 동결 건조 함초 분말을 0.6% 첨가한 브라운소스가 가장 높았고, BSP6, BSP9와 큰 차이가 없었다. 이와 같이 결과를 통해 동결 건조 함초 분말을 첨가한 브라운소스는 산화 방지 특성을 가지고 있었으며, 염도는 0.6% 함초분말 첨가한 경우가 가장 좋았다. 동결 건조한 함초 분말은 소금을 일부분 대체할 수 있는 염도를 가지고 있었고, 브라운소스에서 산화 방지 특성과 관능검사 결과에 좋은 영향을 준 것으로 평가되었다.

열풍건조와 동결건조에 따른 수창포(Acorous calamus L.) 분말의 부위별 이화학적 특성 (Physicochemical Characteristics of Powder from Hot Air and Freeze Dried Leaves and Roots of Acorous calamus L.)

  • 수창포의 부위별 건조조건을 달리한 분말의 일반성분, 당 및 클로로필 등을 분석 검토하였다. 각 부위별 수분의 함량은 모두 온도가 증가할수록 낮았고, 동결건조를 실시한 시료가 가장 낮았다. 회분함량은 온도가 증가할수록 같거나 높아졌으며 동결 건조한 시료의 함량이 가장 낮았다. 조지방과 조단백 함량은 각 부위별 건조방법에 따라 유의적 차이가 없었다. 색도 중 잎의 품질특성에 중요한 $a^*$값은 잎상부가 하부에 비하여 $a^*$값이 낮아 품질 면에서 우수하였다. 클로로필 함량 역시 잎상부가 하부에 비하여 함량이 높았다. 환원당함량은 뿌리에 높았으며, 특히 $40^{\circ}C$ 열풍 건조한 시료가 가장 높았으며, 총당 함량은 건조조건별로 차이가 없었으며 잎상부가 가장 높았다. 총 폴리페놀은 창포의 잎에서 상당히 높은 함량은 보였으며, 건조조건에 따라서 유의성 검정 결과 큰 차이는 없었지만 잎이 뿌리보다 상당히 높은 함량은 나타내었다. 총 플라보노이드는 뿌리와 잎에서 고른 분포를 나타내었으나 잎상부가 더 높은 함량을 나타내었다. 위의 결과로 시료의 품질저하를 막기 위해서는 동결건조를 실시하는 것이 유리할 것으로 생각된다.

Physicochemical Properties of Chaga (Inonotus obliquus) Mushroom Powder as Influenced by Drying Methods

  • The effects of drying methods on the physicochemical properties of chaga (Inonotus obliquus) mushroom powder were investigated. Scanning electron micrograph revealed that freeze drying produced smaller particle- sized samples which in turn resulted in higher porosity than did vacuum and hot-air drying. Samples prepared by freeze drying showed a significantly higher L*-value as compared with those prepared by hot-air drying and vacuum drying (p<0.05). The lightness (L*-value) significantly decreased with increasing relative humidity and storage temperature regardless of drying method (p<0.05). The yellowness (b*-value) increased significantly with increasing relative humidity (p<0.05). Browning index was significantly lower in samples prepared by freeze drying (p<0.05) but not significantly different between samples dried by hot-air and vacuum drying. Freeze dried sample exhibited a significantly higher degree of rehydration than other samples (p<0.05) probably due to the small particle size. Water solubility of the freeze dried sample was higher than those of the other methods while swelling ratio of the same sample appeared to be lower than those of others. Freeze dried chaga mushroom powder contained significantly lower amount of total phenolics and total sugar as compared to other samples (p<0.05).

동결김치분말을 첨가한 국수의 품질과 맛에 미치는 영향 (Effect of Analysis in the by Taste and Quality Freeze-Dried Kimchi Powder Adding of Noodles)

  • 김치국수를 제조하기 위하여 1차적으로 동결김치분말을 만들어야 하는데, 김치시료는 김치를 담아 5$^{\circ}C$에 저장하며 이틀째 되는 날과 10일, 15일, 25일 김치를 꺼내 pH 4.0∼4.7, 산도 0.5∼0.8% 사이의 김치가 일반적인 적숙기로 판단되어 이 중 국수제품의 시료에 가장 적당한 14일 정도 경과한 김치를 동결건조하여 분말화 한 다음 국수제춤의 첨가량을 조절하고 관능검사를 실시하여 동결김치분말 첨가는 4%가 최적점으로 나타났다. 김치 국수를 국수적인 관점과 김치의주 성분인 김치 맛의 측면과 향의 측면에서 접근하여 항목을 선정하여 수행하여 고소한 맛, 부드러움, 점도 미치 오일향 등의 국수적인 질감 측면과 색도, 김치향, 매운맛을 항목으로 하였다. 전체 경향에서 control에서 보이는 높은 오일향이나 고소한 맛 등은 동결김치분말 첨가량에 따라 줄어드는 경향을 보였다. 특이적으로 6% 첨가군에 있어서는 김치향의 첨가가 미치는 영향의 경향이 매우 확연하게 나타나고 있다. 점도나 부드러움같은 질감(texture)의 관점에서는 6% 이상 첨가시 국수의 면발이 부서지듯 짧게 끊어지고 4% 이하 첨가시 기존의 국수와 차이가 없는 결과를 나타내었고 묘사 분석까지의 관능검사 결과 4%가 관능적으로 최적점을 도출하였다.
