Absorption Characteristics of Korean Yam Powder by Different Drying Methods (건조방법에 따른 분말마의 흡습특성)

  • The absorption characteristics of Korean yam powder according to different drying methods were investigated. The physical properties of yam powder by different drying methods were showed the biggest porosity in freeze drying sample, while the smallest in hot air drying sample. No difference was founded in proximate compositions of yam powder by various drying methods. The amount of total phenolic compound and Vit C were showed the bigger decrement in freeze dried sample than other drying methods. The time reaching to equilibrium moisture content were determined in 12 days. Monolayer moisture contents were predicted to 0.0508∼0.0588 by BET equation and 0.0705∼0.0811 g H2O/g solid by GAB equation. BET equation for isothermal absorption curve showed over 0.95 R-square for every drying methods. GAB equation showed over 0.99 in vacuum and freeze drying but a poor R-square in hot air drying.

  • This research was conducted to study the changes in physical characteristics of mushrooms (Agaricus bisporus) as influenced by drying methods. Samples were dried using either hot air drying, vacuum drying, or freeze drying and changes in the color, browning index, hardness and rehydration rate were evaluated by response surface methodology. Hot air drying resulted in the fastest drying of sample as compared to other methods. The rate of drying was most affected by the environmental temperature rather than air velocity or vacuum pressure. The overall color difference increased as the temperature and air velocity increased. The overall color changes of the freeze dried samples were minimal as compared to those of fresh mushrooms. The hot air dried samples showed the greatest changes in the overall color, browning index as well as hardness. The freeze dried samples showed the best rehydration characteristic and maintained the best overall quality after drying.

The Stability of Color and Antioxidant Compounds in Paprika (Capsicum annuum L.) Powder During the Drying and Storing Process

  • The objectives of this study were to examine changes in the color and antioxidant compounds of paprika powder under various conditions, as well as to establish the suitable conditions for drying and storage. Paprika was dried using the following methods: freeze-drying, vacuum drying, far infrared-ray drying, and hot-air drying. Measurements of the moisture content, color pigments, and antioxidant compounds (total carotenoids, capsanthin, ascorbic acid, and total polyphenols) were completed during 120 days of storage at 4 and $30^{\circ}C$. We found that drying methods, storage temperatures, and packaging materials affected the American Spice Trade Association (ASTA) and Hunter color values, as well as the antioxidant content of paprika powder. There was a high correlation (r=0.87, p<0.01) between the ASTA color and the $a^*/b^*$ value. The loss of red color was closely related to the reduction of moisture content (r=0.81, p<0.01) during storage. Drying paprika with a low temperature in the absence of air resulted in better retention of the carotenoids and ascorbic acid. Also, as the retention of the carotenoids and ascorbic acid increased, the stability of the red pigment increased. Freeze-drying was found to be the most suitable drying method for the stability of the antioxidant compounds and red pigment.

Change of Physicochemical Characteristics and Functional Components in the Cereals of Saengsik, Uncooked Food by Washing with Electrolyzed Water (전해수 처리한 생식 원료 곡류의 이화학적 특성 및 기능성 성분의 변화)

  • We investigated changes in the physicochemical characteristics and functional components of the Saengsik cereal grains-milled rice, brown rice, glutinous rice, and barley- by washing with electrolyzed water. There were no changes in the composition of all cereal grains that was dried with hot-air and freeze-dried after being washed with electrolyzed water. The L and a values were not affected by drying in milled rice, brown rice, glutinous rice, or barley, but the b value increased in milled rice and glutinous rice-this increase was greater with hot-air drying than with freeze-drying. The dietary fiber content of the all cereals increased with hot-air drying. The niacin content decreased in all cereals; the extent of this change was greater with hot-air drying than with freeze-drying. The ${\beta}-glucan$ content of barley was higher in samples that underwent freeze-drying than in those treated by hot-air drying, but was not affected by washing with electrolyzed water. Thus, other than a change in color for milled and glutinous rice, no changes in the physicochemical characteristics and functional components these products were observed with freeze-drying. Data indicate that the electrolyzed water washing could be effectively used as pasteurization step in the uncooked cereal grains.

  • The inclusion of ${\alpha}-cyclodextrin$ and ${\beta}-cyclodextrin$ with flurbiprofen in aqueous phase was investigated by UV absorption and circular dichroism spectroscopies. The inclusion complex in solid powder form were made by the freeze-drying and coprecipitation methods in molar ratio 1:1. The inclusion complex formation was confirmed by infrared absorption spectroscopy. The freeze-drying method was successful in obtaining the inclusion compounds compared with the coprecipitation method. The dissolution of solid flurbiprofen inclusion complex was examined in comparison with those of flurbiprofen alone. The inclusion complex obtained by freeze-drying method increased the dissolution rate.

  • A new method to evaluate erosion of biodegradable polymer, polyanhydrides, was developed. The polymer devices were prepared with the melt-casting method and weight loss was accurately measured after agitating the devices in buffers (pH 1-9), and removing the device at selected time intervals and freeze-drying the device. The erosion rate was estimated from the plot of the weight loss(%) of device as a function of time. The freeze-drying technique used in this study is particularly useful for estimating the erosion rate of biodegradable polymer.

High Concentration of Sodium Chloride Increases on Survival of Non-pathogenic Erwinia carotovora subsp. carotovora 9-3 during Drying and Storage (비병원성 Erwinia carotovora subsp. carotovora 9-3의 건조 및 저장의 과정에서 생존에 미치는 염 효과)

  • Dry formulation is a limiting step for successful development of microbial bio-pesticides with the antagonistic Gram-negative bacteria because their survival rates are too low during drying and storage. The high concentration of sodium chloride (NaCl) in culture medium that induces osmolyte in bacterial cells is known to increase of survival rate during drying in many Gram-negative bacteria. Effect of NaCl on survival of antagonistic non-pathogenic Erwinia carotovora subsp. carotovora 9-3 (Ecc 9-3) during drying and storage was studied. Growth rate of Ecc 9-3 was not much different up to 0.5 M NaCl in NB while it was lower significantly with 0.7 M NaCl. Survival rates were twice and 3 times higher with 0.5 M NaCl than with no additional NaCl during drying at room temperature and freeze-drying, respectively. Survival rate was also higher with high NaCl in culture medium during storage after drying. It was not much different on storage at $4^{\circ}C$ both of drying at room temperature and freeze-drying. However, the survival rate was higher on storage at $27^{\circ}C$ and $37^{\circ}C$ with high NaCl concentration. Among the additives tested, lactose affects most to survival rate both of drying at room temperature and freeze-drying, and dextrin influenced significantly to survival rate of drying at room temperature.

Physicochemical characteristics of onion with cold tolerance cultivated in Kangwon (강내한성 강원양파의 이화학적 특성)

  • This study was performed to provide the basic data for the prediction of the usefulness of onion with cold tolerance cultivated in Kangwon. The physicochemical properties and antioxidant activity of freeze-dried and hot-air-dried (40 and $60^{\circ}C$) onions were investigated. The moisture content of the raw onion was 90.55%. The crude protein and crude fat contents of the freeze-dried onions were slightly higher than those of the hot-air-dried onions ($40^{\circ}C$ and $60^{\circ}C$). As for the color values, the freeze-dried onion powder was highest in lightness (77.19), and the $60^{\circ}C$ hot air-dried onion was highest in redness (6.09) and yellowness (24.60). Moreover, the color difference (${\Delta}E$) between the freeze-dried and hot-air-dried ($40^{\circ}C$ and $60^{\circ}C$) onion powders was significant. The brown index was lower in the freeze-dried onion than in both hot-air-dried onions. The total phenol content and the 2,2-diphenyl-1-picrylhydrazyl radical (DPPH) scavenging activity of both hot-air-dried onions were higher than those of the freeze-dried onion. These results indicate that the freeze-drying methods protected the physicochemical properties of the onion powder, whereas the hot-air-drying method enhanced the antioxidant activity and the total phenol content of the onion powder.

  • The effects of freeze-drying (FD), room-temperature drying (RD), and room-temperature drying after roasting (RDAR) on the volatile organic compounds (VOCs), sugar content, flavonoids, and antioxidant activity of Hallabong peel tea were tested. This experiment was conducted to collect a basic information for developing of peel tea. FD samples showed lower total soluble solids and VOCs than other drying treatments. RDAR samples showed a significant difference in VOCs and visual color of FD samples. The reduced VOCs in FD samples was caused by freeze drying treatment; identical VOCs composition of hallabong peel was detected from condensed ice of freeze-drying machine. Metabolomics analysis showed no difference among three drying treatments. In addition, antioxidant activity and total phenolic compounds were not significantly different from three different drying treatments. Thus, RD or RDAR is a suitable drying method for hallabong peel tea rather than FD method in terms of VOCs and economical reasons.

  • The purpose of this study was to investigate the differences in proximate composition, free sugars, organic acids, fatty acids, amino acids, mineral components, hunter color values and calory values between freeze dried and steam dried Gastrodia elata Blume. Crude fat and crude fiber decreased during manu facture of steam dried Gastrodia elata Blume. The contents of sugars in steam dried Gastrodia elata Blume decreased during manufacture than that of freeze dried Gastrodia elata Blume. The contents of malic acid, oxalic acid, ketoglutaric acid, malonic acid and succinic acid in freeze dried were similar to those in steam dried Gastrodia elata Blume. Citric acid decreased in steam dried Gastrodia elata Blume. The contents of linoleic acid, palmitic acid and oleic acid in freeze dried were similar to those in steam dried Gastrodia elata Blume.
