This experiment was initiated to determine the effective components of garlic during the growth stages and to regulate the contents artificially. The following results were obtained : 1. Alliin content was increased during its growth and showed drastic increase at maturing stage. 2. The kinds of free amino acids detected during growth stages were 15 for leaf growth, 14 for bulbing and 18 for maturing stage. The total content of free amino acids was high. est at maturing stage. 3. The optimum conditions for the maximum amounts of alliin and free amino acid determined by the binary interaction of Systematic Variations Method were 40% $NO_3^{-1}+60%\;SO_4^{-2}$, 62% $NO_3^{-1}+38%\;PO_4^{-3}$, 42% $K^{+1}+58%\;Ca^{+2}$ and 56% $K^{+1}+44%\;Mg^{+2}$ for alliin, and 72% $NO_3^{-1}+28%\;SO_4^{-2}$, 49% $NO_3^{-1}+51%\;SO_4^{-2}$, 45% $K^++55Ca^{+2}$ and 66% $K^{+1}+34%\;Mg^{+2}$ for free amino acid. 4. Ideal curve for alliin and free amino acid was attained by applying the binary interaction of Systematic Variations Method and it was possible to approach the optimum ionic proportion from the optimum contents on this curve.

Under recent educational and social backgrounds, alternative education schools are increasing continuously, to compare Japanese example that experience of similar circumstance given before with the investigation of general present condition, specialized education contents, facilities and utilization of 5 schools of Tokyo area, I could know following contents ; First, free schools of Tokyo area were operated by individual education type that consider each student's special quality maximum comparing with Korea's alternative schools which seek community education type. Second, there were not many schools which prescribe school personal allowance per division or class comparing with our cases that operate divides step by equal class with general school and prescribes personal allowance by class, and whole students are generally about $20{\sim}30$. Third, comparing with our cases that are located in mountain and rural area according to profitable locational conditions for environment and experience studying, it was general which islocatedin downtown for the purpose of free attending school of non attending school students. Fourth, usually, comparing with our that unused schools in mountain and rural area are general for alternative school and there were a lot of cases that uses small building of downtown such as lease office, unused warehouse and factory for free school of Tokyo area.

The variations of growth gain and the composition of free amino acid levels in plasma and erythrocytes of young rats(wistar strain male) were determined by microbioassay method, feeding diets of rice group and 7% casein group as a control for three weeks. The results were as follows; 1. The growth gain of control diet group was higher than the rice diet group. 2. The contents of free tryptophan, lysine, and threonine levels in plasma and erythrocytes on rats of 7% casein group were higher than the rice group. 3. In the 7% casein diet group and the rice group, these free amino acids were included more in erythrocytes than in plasma. 4. Therefore, generally feeding by high protein score diet was included more Try, Lys, Thr in plasma and erythrocytes than feeding by low protein score diet. So the high and low of protein score was assumed by the contents of Try, Lys, Thr in plasma and erythrocytes on rats.

In order to investigate an effect of non-protein nitrogen on the biological utilization of protein, hatched single comb White Leghorn male chicks were fed for the first 8 days with a commercial chicks mash, next 6 days with protein-free diet and subsequent 6 days with protein-free diets and protein diets containing 10.59% of crude protein supplemented with 0, 0.5, 1.0 and 1.5%, respectively. During experimental feeding period, chicks fed protein-free diets had intaked gradually lower feed and had shown a similar body weight loss though urea contents were increased. When birds fed protein diets, body weight gain and feed intake were not different among birds fed the graded levels of urea although feed conversions were shown a highering tendency along with increasing urea contents. According as supplemented urea were increased, protein efficiency ratio f (PER) and net protein ratio (NPR) were increased in chicks fed protein-free diets, which were shown a lowering trend in chicks fed protein diets. Effect of supplemented urea on the urinary excretion of uric acid were not found in birds fed protein-free diets, while which were increased in birds fed protein diets with the increase of urea contents. Urea addition did not affect the excretion of total creatine in birds fed protein-free or protein diets. Excretion of ammonia was jogjered in order to increasing level of urea in birds fed protein-free diets, but which were not found any particular effect in birds fed protein diets. Also urea excretion were gradually increased with the increasing contents of urea in protein-free and protein diets. Nitrogen balance of birds fed protein-free diets were minus values, which were increased with increasing urea contents in diets. When birds fed protein diets, nitrogen balance and urinary nitrogen excretion was highered and fecal nitrogen excretion were not altered as urea levels of diets increased. Digestibility of urea nitrogen supplemented in protein-free diets were lowered along with increasing contents of urea, but biological value(BV) and net protein utilization(NPU) was found a highering tendency in birds fed protein-free diet containing 1.5% of urea. When birds fed with protein diets, digestibility, BV and NPU of protein were found a highering trend in birds fed protein diets added with 0.5% of urea.

In this paper it was attempted to observe the effect of defatted panax ginseng supplement of the growth rate, feed and protein efficiency ratios, and the contents of cholesterol, total lipid and protein in the serum, liver and aorta in Sprague-Dowley Albino male rat (weighing 83 ${\pm}$ 4 g). Seven kinds of experimental diets were prepared as follows : Stock (control) diet, ginseng control diets supplemented with 0.5, 1.0 and 3.0% of ginseng powder to the stock diet, and defatted ginseng Powder diets supplemented with 0.5, 1.0 and 3.0% of defatted ginseng powder to the stock diet. .All diets contained same level of lipid and protein, respectively. The results obtained are as follows : 1. The growth rate in the feeding group of 0.5% defatted ginseng powder diet for 16week were higher than other diet groups. 2. Feed and Protein efficiency in 0.5% defatted ginseng group showed similar tendency to that in body growth rate. 3. The total cholesterol contents in the serum of 0.5% defatted ginseng Powder diet$.$ group showed the tendency to decrease gradually for 4 to 12 weeks, maintaining higher level than other groups. The free cholesterol contents in the serum of defatted ginseng powder diet group in 8 the and 16th weeks were higher than all ginseng control diet group. The total and free cholesterol contents in the liver of all defatted ginseng diet groups in 16th week were higher than hose of all ginseng control groups. The total cholesterol content at 12h week and the free cholesterol content at 16th week i n the aorta of all defatted ginseng diet groups were lower than those of ginseng control groups, respectively. 4. The total lipid contents in the serum of 1.0 and 3.0% defatted ginseng diet groups at 2nd to I2th weeks were lower than other groups, and those in the liver and aorta of all defatted ginseng diet groups at 12th weeks were lower than those of ginseng control diet groups. 5. The protein contents of the serum and aorta were continuously increased throughout whole experimental period in all experimental groups. The protein content of the liver of all groups were decreased at 2nd week and after then no change was observed.

The purpose of this study was to investigate the effects of vitamin E on liver microsomal cytochrome P450 contents and xanthine oxidase activity in acute cadmium poisoned rats. Sprague Dawley male rats weighing 100$\pm$10g were randomly assigned to one normal and three cadmium injected groups. Cadmium injected groups were fed vitamin E free diet(0E Cd group), 40mg vitamin E per kg diet(40E Cd group) or 400mg vitamin E per kg diet(400E Cd group). Vitamin E level of normal group was 40mg per kg diet. Animals were injected intraperitoneally with 2.0mg Cd2+/kg bw for 4 days after the rats were fed diets with three different levels of vitamin E for 2 and 4 weeks. Body weight, food intake and feed efficiency ratio of cadmium injected animals, were decreased compared with those of normal group. The weights of liver and kidney in cadmium injected groups were not different from those of normal group. Cadmium contents of liver in cadmium groups were 160 fold higher those that of normal group. Accumulation of cadmium poisoned rat liver was reduced by vitamin E supplementation. Contents of blood hemoglobin and hematocrit in 0E Cd groups were decreased to 2~ 14% of those of the other groups. Contents of serum triglyceride in all experimental groups were not significantly different each other. Levels of serum total cholesterol, LDL cholesterol and antherogenic index in 0E Cd and 40E Cd groups were higher than those of normal group, while the contents of HDL cholesterol in 0E Cd and 40E Cd groups were lower than those of normal group. Xanthine oxidase(XOD) activity and cytochrome P450 contents in the liver were significantly increased in cadmium injected groups but these were reduced by vitamin E supplementations. The present results indicate that acute cadmium poisoning in rats causes increasing free radical generation systems in the liver and that leads to liver tissue damage. But these abnormalities can be reduced by dietary vitamin E supplementations.

The major free sugars of buckwheat plants were fructose, glucose, and maltose but their contents and compositions were influenced by the different wavelength of light. Free sugar contents of Clfa 39 (Fagopyrum tataricum) were higher than those of Yangjul-maemil (Fagopyrum esculentum) regardless of the light sources. As treated with red and blue light, the free sugar contents in the leaves of buckwheat plants were slightly increased, but their contents in the stems and flowers were lower than those of natural light condition. Under the natural light condition, maltose was detected in every tissues of buckwheat plants, but as treated with blue and red light, it was not detected in the flowers of buckwheat plants. Citric, malic and acetic acid were detected as major organic acids in buckwheat plants. Red and blue lights decreased the total organic acid contents in buckwheat plants as compared with natural light condition. It was considered that blue light are less active than red light for the accumulation of organic acids. Tataric acid was detected only in the leaves of buckwheat plants, however, as treated with red and blue light, it was not detected in the leaves of Clfa 39. Flowers of Yangjul-maemil contained a considerable amount of rutin and quercitrin. Only small amount of quercitrin was detected in leaves, but it was not detected in stems. On the other hand, Clfa 39 leaves contained a considerable amount of rutin, quercetin and small amount of quercitrin, but quercitrin and quercetin were detected only in the stems of Clfa 39. Red and blue lights significantly decreased the contents of rutin, quercitrin, and quercetin in buckwheat plants as comparing with natural light condition. Rutin content in the flowers of Clfa 39 was increased under the red and blue light conditions.

Physicochemical properties such as proximate components, minerals, amino acids, organic acid and free sugars of Pleurotus eryngii were investigated. Among the proximate components of Pleurotus eryngii contents of crude protein and total sugar were higher than that of others. The contents of magnesium and sodium were higher than that of other minerals. Hypoproline content was the highest in free amino acid. Among the amino acid, the contents of arginine, lycine, glutamic acid and phenylalanine were 509.03, 410.53, 190.05 and 150.63 mg$\%$, respectively. Organic acids such as citric acid, oxalic acid, formic acid and malic acid were analyzed, contents of citric acid and lactic acid were higher than that of others. Among the free sugars, the content of glucose was the highest, followed by fructose, ribose, galactose, lactose, arabinose and maltose.

This study was conducted to examine the changes of nutritive substances in the edible potato varieties ('Superior', 'Atlantic', 'Irish Cobbler', 'Dejima') during storage under low temperature condition($4^{\circ}C$, 85-90% RH) from January to May. The items examined in this experiment were moisture, free soluble sugars, starch and vitamin C. The contents of starch and vitamin C decreased with increasing storage period. The rates of decrease in starch and vitamin C contents were high in February and low after that. The contents of moisture and free soluble sugars did not show a constant tendency during storage period. The contents of glucose and fructose were the highest in February and March. Among the four varieties, 'Superior' contained highest vitamin C, free sugar, and moisture, while 'Atlantic' contained the highest starch.
