전처리 식재료 사용이 학교급식 생산성과 만족도에 미치는 영향 (Effectiveness of the Preprocessed Foods on Productivity and Satisfaction in School Foodservices)

  • Fresh-cut foods have been widely used in the school foodservice industry due to their convenience and saving effects of labor and working hours. This study evaluated the effectiveness of using fresh-cut foods in school foodservice with respect to cost efficiency, customer satisfaction, employee satisfaction, and productivity. First, in terms of cost efficiency, the cost of the fresh-cut food per meal price significantly increased by 2.6% via the new production plan. Meanwhile, the costs of labor and food wastes significantly decreased by 3.0% and 0.3%, respectively, after implementing the new plan. Second, customer satisfaction towards foodservice significantly increased, from 2.94 points prior to the new plan to 3.45 points. Third, foodservice productivity such as of the number of meals per full-time equivalent employee increased by 5.7 meals, from 143.0 meals to 148.7 meals after intervention. The productivity index of work hours for producing a meal also increased and was reflected by a work time reduction of 0.77 minutes, specifically from 4.25 minutes to 3.48 minutes. The labor cost per meal also decreased by 29.9 won, from 331.91 won to 301.97 won, but there was no significant difference. Through these results, we identified that using pre-process foods in school foodservice has positive effects on labor saving, customer satisfaction, and employee work satisfaction.

일부 위탁급식 중.고등학교 학부모의 급식모니터링 활동여부에 따른 급식만족도 조사 (A Study on Parents' Satisfaction with School Foodservice by Foodservice Monitoring Participation)

  • This study was carried out to compare parents' satisfaction with school foodservice between participants and non-participants of foodservice monitoring. Surveys were conducted in six schools that implemented foodservice monitoring. In these schools, 126 participants and 167 non-participants were surveyed. The results were as follows: The participant group was more satisfied with taste (participation 3.63, non-participation 3.20), quantity (participation 3.69, non-participation 3.20), and menu composition (participation 3.67, non-participation 3.16) than the non-participant group. In addition, the satisfaction level of the participant group (3.74) was significantly higher than that of the non-participant group (3.24) (p<0.01). It was also indicated that the overall level of trust toward the foodservice operation was significantly higher in the participant group (3.90) than in the non-participant group (3.32) (p<0.001). After participating in monitoring, 74.8% of the parents changed their perception on school foodservice and 84.7% of them became to have more positive views. In conclusion, we found that parents' participation in school foodservice monitoring had positive effects on their satisfaction and perceptions on school foodservice.

대학 기숙사 급식 서비스 품질 평가가 급식에 대한 관계 지향성에 미치는 영향 -광주광역시 일부 여대생 기숙사를 대상으로- (Effects of a Quality Assessment of a University Dormitory Foodservice on the Relationship Intention toward the Foodservice - Focusing on the University Dormitories for Female Students in Gwangju -)

  • The purpose of this study was to investigate the effects of a quality assesment of a university dormitory foodservice on the satisfaction degree, value awareness and relationship intention toward the foodservice. A total of 328 questionnaires were completed. Using SPSS package, Cronbach's alpha, analysis of variance and multiple regression analysis were applied. The results are as follows. First, the quality assessment of the foodservice varied depending on the period of service utilization. Customers of less than one year rated the nutrition supply of the university foodservice the highest, followed by those who were customers for more than 3 years and those who were customers for 2 to 3 years, respectively. Second, the quality assessment of the foodservice was substantially influenced by price as compared to service quality. Third, the quality assessment was significantly influenced by the price appropriateness of the foodservice. Fourth, foodservice assessment items such as customer-centeredness, pursuit of nutrition supply and food quality had a meaningful effect on the satisfaction degree toward the university foodservice. Fifth, customer-centeredness, pursuit of nutrition supply and food quality had a significant effect on relationship intention. Sixth, among the items of value awareness for the foodservice, value assessment as compared to service quality, and not price appropriateness, greatly affected the relationship intention. Seventh, the overall degree of satisfaction for the foodservice affected the relationship intention.

중학생의 학교급식에 대한 급식만족도 - 광주ㆍ전남지역을 중심으로 - (Degree of Satisfaction on the School Foodservice among the Middle School Students in Gwangju and Chonnam Area.)

  • A survey on the school foodservice was conducted from 693 middle school students to examine their degree of satisfaction on foodservice with the object to enhance the quality of school foodservice in Gwangiu and Chonnam area. The degree of satisfaction with school foodservice ranked high in taste, temperature and service categories. There were notable differences in the satisfaction level by the gender of the students. Male students ranked higher than female students in taste, temperature and the sanitary condition of food containers. According to grades, first grade students ranked the highest in satisfaction of food selection, temperature, services and cafeteria. Regarding the amount of left-overs, soup and pot-stew were the greatest followed by side dishes. Reasons for leftover food were listed as being tasteless, having no appetite, or large serving size. The items of priorities on school foodservice were revealed as sanitary conditions, taste and variety in menu selection by the students.

위탁급식업체 정보시스템 사용자 만족도에 관한 연구 (A Study of User Satisfaction of Contract Foodservice Information Systems)

  • User satisfaction is the most critical criteria in measuring information systems success or failure. In this study, Contract Foodservice Information Systems were evaluated with user satisfaction instrument based on previous work. A total of 70 Contract Foodservice Information Systems users was surveyed. The status of building area of Contract Foodservice Information Systems was more in foodservice management (M=3.74), but less in producing (M=2.53) and pruchasing (M=3.02) management. The users recognized .accuracy of information (M=4.27), lasting educational services on systems (M=4.34) and increasing work productivity (M=4.42) as the most important factors and they also recognized it was important factors to build systems such area database management, menu management, purchasing and producing management and foodservice management (p<.01.).

원주지역 초등학교 5.6학년 학생의 학교급식 만족도 조사 (Survey on Satisfaction of Fifth and Sixth Grade Students from Elementary School Foodservice in Won-ju)

  • This study was done to investigate satisfaction of fifth-grade(n=264) and sixth-grade(n=117) students from school foodservice in five elementary schools in Won-ju. On a scale of 1 to 5, with 1 being very poor and 5 being very good, overall satisfaction from school foodservice was found to be 3.21$\pm$0.98('so-so$\sim$satisfaction'). The highest satisfactory factor was neatness of foodservice staffs(3.79$\pm$1.00), while the lowest satisfactory factor was the students' overall opinions of school foodservice(3.03$\pm$1.06). The biggest unsatisfactory factor was found to be 'bland food'. 'Enhancement of taste'(49.08%) caused the most complaints against school foodservice. Soup was identified as the type of food most likely to be left over, and there was some significant difference between fifth-graders and sixth-graders. The reason cited most often for leftovers was unfavorable menus(33.42%). Students were more likely to try foods which were unfamiliar to them and also foods they previously disliked as a result of using school foodservice(28.87%). Also significant, when the meal director was present during the meal service, satisfaction was markedly higher than when the director was not present.

정형외과 환자의 관여도에 따른 병원급식 만족도 분석 (The Assessment of Foodservice Satisfaction by Orthopedic Patients according to their Involvement)

  • The purposes of this study were to evaluate the quality of hospital food services in view of patients in orthopedic wards and accomplish the quality improvement in hospital foodservice operations. Quantitative questionnaires for patients containing foodservice satisfaction and demographic information were developed. A survey of 8 general hospitals was undertaken and detailed information was collected from 290 patients in orthopedic wards. The collected data were processed using the SAS PC 6.12 for descriptive analysis, t-test. In demographic information of patients, 32.6% was over 50 years old and 31% was hospitalized over 30 days. 80% of patients was taking normal diet. 47.7% and 47.9% of patients showed moderate appetite and moderate pain respectively. The overall satisfaction score for patients was 3.24 out of 5, showing slightly higher level than the average score(3.00). According to foodservice involvement scores of patients, they were divided into two groups which were high involved group and low involved group. Two groups showed significant differences in taste of meals, variety of menu, punctuality of meal times, temperature of meals and portion size. The foodservice involvement factor which affected significantly patient foodservice satisfaction was 'kindness of foodservice staff'.

외식 업체 종사자들의 전공 특성에 따른 직무 만족도 비교 (Comparison of Job Satisfaction of Employees by Major in Foodservice Industry)

  • Employee turnover and job satisfaction are the main concerns of Foodservice indusryy because of a high dependence on human resources. This study was carried out to find out the differences of job satisfaction of employees in Foodservice industry and identify the effects of job satisfaction on turnover intention by major at the college or university. In comparison of job satisfaction of employees by 3 groups of food-related majored, tourism-business majored, and other majored, there were no significant differences among groups. But in the correlation between overall and 6 factors of job satisfaction, there were all significant correlations in food-related majored and tourism-business majored employees. Employees in Foodservice industry were satisfied by different demographic characteristics according to what they majored at college. Statistically significant variables that affect to the job satisfaction were gender, employment status, length of employment, monthly income, working hour per week in the food-related majored employees and employment status in the tourism-business majored employees. Finally, among job satisfaction factors, intention to quit was negatively affected by supervision in food-related majored and tourism-business majored employees, but positively affected by job environment only in tourism-business majored employees.

2010년도 조사대상별 학교급식 만족도 및 급식품질 속성 평가 (Evaluation of the Quality Attribute and Satisfaction on School Foodservice in 2010)

  • The purposes of this study were to analyze the quality attributes, quality factors and customer satisfaction in school foodservice and to provide suggestions for improving school foodservice environments. The survey was distributed to different respondents (5,771 students, 2,045 parents, and 1,981 faculty members) at different types of schools (elementary school, middle school, and high school) on September 2010 in 16 cities and provinces. The data were analyzed using SPSS for descriptive analysis, one-way ANOVA, t-test and multiple linear regression analysis. First, all foodservice quality attributes were significant different by respondents and the faculty had higher scores than parents and students. A comparison of scores by respondents and distribution place demonstrated that classroom of student and parents had a higher score for quality attributes. The overall satisfaction with school foodservice was significant different by respondents and higher for classroom than for dining hall for student and parents. In comparison of annual data, there was decreased overall satisfaction and quality attributes in student and parents. Second, in the regression results, which showed the effects of the foodservice quality attributes on overall satisfaction by respondents and distribution place, improvements of 'food taste', 'pleasant foodservice environment', and 'kindness of employee' would increase satisfaction in most of the respondents. Third, the overall satisfaction with school foodservice was higher for nutrition teachers than dietitians for students and faculty. Therefore, the operators will need to make different efforts based on each customer needs to improve the overall satisfaction on school foodservice.

산업체 급식 피급식자들의 저나트륨식 인식 및 실천현황과 만족도 (Status of Recognition, Effort, and Satisfaction of Customers on Low-Sodium Diet in Industry Foodservice)

  • This study surveyed the status of recognition, effort, and satisfaction of customers on a low-sodium diet in industry foodservice. For recognition related to sodium intake, 34.6% answered 'sure' for awareness of WHO's recommended daily sodium intake. Recognition of healthiness of low-sodium diet scored an average of $3.77{\pm}0.8$. The most frequent dietary effort related to low-sodium diet was 'I leave the broth of soup/stew (23.7%)', and the most common reason for not making an effort related to low-sodium diet was 'I often eat out (25.2%)'. Recognition of saltiness of foodservice meals was $2.84{\pm}0.69$, and the saltiest food was 'kimchi (30.4%)', followed by 'side dish (17.9%)', 'soup/stew (16.8%)', and 'sauce (8.3%)'. Satisfaction of low-sodium foodservice meal was $3.04{\pm}0.71$. Reasons for recognition of saltiness of foodservice meal were mostly 'appropriate' or 'prefer less salty (86%)'. In the analysis of satisfaction of low-sodium foodservice meal according to occupation, satisfaction of 'level of saltiness ($F=5.046^{**}$)' scored an average of $3.18{\pm}0.72$, with the highest satisfaction from 'professionals'. Satisfaction of 'dietary behaviors related to sodium ($F=3.534^{**}$)' scored an average of $3.95{\pm}0.59$, with the highest satisfaction from 'government employees (p<0.01)'. These study results show that despite recognition of the healthiness of a low-sodium diet, efforts toward practicing the diet were less than adequate. Further, 25% felt that foodservice meal was a blend, whereas satisfaction of low-sodium diet was only 19%. Therefore, continuous education and advertisements are necessary in order to raise awareness as well as developing more concrete methods during preparation of meals, such as using a salt meter.
