The aim of this study was to investigate antibacterial activities of essential oil from C. morifolium against four Grampositive bacteria and six Gram-negative bacteria. The antibacterial activity of the oils was determined by agar-well diffusion assay, minimum inhibitory concentration(MIC), and minimum bactericidal concentration(MBC). Essential oil of C. morifolium had a large inhibition zones especially against Salmonella enterica(21 mm) and Bacillus cereus(19 mm). Essential oil of C. morifolium generally showed higher antibacterial activity against Gram-positive bacteria than Gram-negative bacteria. MIC of essential oil from C. morifolium was 5 ${\mu}g/m{\ell}$ against ten food-borne pathogens. MBC values were determined to be from 5 to 20 ${\mu}g/m{\ell}$ against eight bacteria except Salmonella choleraesuis and Listeria monocytogenes. Therefore, the essential oil of C. morifolium and its components have a potent antibacterial activity against food-borne pathogens, and is expected to be used as a novel food preservative.
This study was performed to evaluate and compare the antioxidant and antimicrobial activities of various berry juices (cherry, grape, blueberry, aronia, cranberry, and raspberry). The cherry, aronia, and cranberry juices included higher levels of total polyphenol than the other berry juices. The DPPH radical scavenging activity of various berry juices increased according to the juices concentration. The scavenging activity of DPPH radicals by the aronia, cranberry, and raspberry juices was higher than those of other samples and was in the following order: aronia > cranberry > raspberry. The FRAP values of 100% aronia juice was the highest among the samples, which was more than five times higher than grape juice at a concentration of 25%. The cranberry and raspberry juices exhibited a strong inhibitory effect against important food-borne bacteria, and in general, the berry juices inhibited the growth of Gram-negative bacteria more than that of Gram-positive bacteria. The cranberry and raspberry juices exhibited high antimicrobial activities against important food-borne bacteria at a concentration of 100% and 75%, however, they did not affect food-borne bacteria at a concentration below 10%. These results suggest that aronia, cranberry, and raspberry may be used effectively as natural additives and as functional foods due to their high antioxidant and antimicrobial activities.

Guava (Psidium guajava L.) contains high amount of vitamins and minerals, and its leaves have been reported to be very effective on reducing blood pressure. In this study, antimicrobial characteristics of extracts from four different parts of guava (fruit, branch, leaf, and seed) with four different solvents (methanol, ethanol, acetone, and water) were evaluated. Four targeted food-borne microorganisms were selected; two Gram negatives (Escherichia coli O157:H7 and Salmonella Typhimurium) and two Gram positives (Staphylococcus aureus and Listeria monocytogenes). By the paper disc method, guava extracts showed stronger clear hollow zone against Gram positive bacteria than Gram negatives in nutrient broth agar plate. Especially, extracts of branches and leaves showed significant antibacterial activity. Guava extracts also showed significant inhibition activity on the growth of Gram positive food-borne bacteria in nutrient broth. For example, S. aureus did not grow at all at 200 ppm of acetone extracts of guava branch and leaf. In the case of L. monocytogenes, the same concentration of acetone extracts of guava branch and leaf inhibited the growth 33.5% and 55.4%, respectively, at 32 hrs of incubation time. The results indicated that extracts of guava branch and leaf showed significant antibacterial activities against food-borne Gram positive microorganisms, and that guava branches, the byproducts of guava, might be a valuable resource for antibacterial materials.
120 samples of ready-to-eat salad product were purchased at department stores, marts and family restaurants in metro area. Coliform bacteria and food borne pathogenic bacteria were isolated from these samples. In 73 samples among the 120 salad product samples, coliform bacteria and food borne pathogenic bacteria were detected by 60.8% of isolated rate. Salad were classified into organic and non-organic salad. According to a salad type, salad were classified into vegetable salad and mixed vegetable salad with fried chicken and extra food. According to a packing type, packed salad product and salad-bar product were classified. After the classification, the results of each cases were compared. There is no statistical relation between cultivation or packing methods and contaminated bacteria. But the incidence number of microbial strains was significantly different between vegetable salad and mixed vegetable salad(p<0.005). In vegetable salad, more various strains were detected. E. coli was isolated in 10 cases among the 90 cases in non-organic vegetable and in 7 cases among the 30 cases in organic salad. Food borne pathogenic bacteria were isolated in non-organic vegetable salad product. Staphylococcus aureus was isolated in 4 cases of vegetable salad product and Salmonella spp. isolated in 1 case. After 5 times examination of each 4 market products, the total number of aerobic bacteria was average 4.8$\pm$0.19 log cfu/g. One sample from this product, saline and a detergent for vegetable were used for 3 minutes to notice the effect. As a result, when saline was used 5 times and detergent for vegetable was used 1 time, bacterial contamination was decreased up to 95.5%.

Meat and meat products are a potential source of food-borne pathogens, including Staphylococcus aureus, Salmonella spp., Escherichia coli O157:H7, and Bacillus cereus. A sensitive and specific PCR assay for the detection of these pathogens in meat and meat products was developed in this study, as part of a broader effort to reduce the potential health hazards posed by these pathogens. Initially, PCR conditions were standardized with purified DNA. Under standard conditions, the detection level for PCR was as low as 10 pg of purified bacterial DNA. After overnight growth of bacteria in a broth medium, as few as $10^2$ CFU of bacteria were detected by PCR assay. The primers employed in the PCR assay were found to be highly specific for individual organisms, and evidenced no cross-reactivity with heterologous organisms. Additionally, the multiplex PCR assays also amplified some target genes from the four pathogens, and multiplex amplification was obtained from as little as 10 pg of DNA, thus illustrating the excellent specificity and high sensitivity of the assay. In conclusion, this PCR-based technique provides a sensitive and specific method for the detection of S. aureus, Salmonella spp., E. coli O157:H7, and B. cereus in meat and meat products.

To developed natural food preservatives, ethanol and water extracts were prepared from the defatted camellia(Camellia japonica L.) seeds. Antimicrobial activities were examined against 14 microorganisms which were food borne pathogens and/or food poisoning microorganisms and food-related bacteria and yeasts. Ethanol extract showed antimicrobial activities against several microorganisms tested, but not on lactic acid bactria. Especially, minimum inhibitory concentrations(MIC) for yeasts were as low as 1mg/ml. Water extract exhibited antimicrobial activities for the yeasts tested, but almost bacteria were not observed. The ethanol extract was fractionated in the order of hexane, chloroform, ethylaetate and butanol fractions to test antimicrobial activity. The strongest activity for the tested yeasts were found in the butanol fractions, but bacteria were chloroform fraction. Hansenula anomala treated with ethanol were observed by scanning electron micrograph, and the results exhibited morphological changes, including the irregularly contracted cell surface and expanded ellipsoidal shape.

The antibacterial activity of ethanol (99.9%) extracts from marine micro-algae, namely, Mixed A (Pavlova sp., Thalassiosira weissflogii, Tetraselmis suecica and Isochrysis galbana were mixed with 1:1:1:1 ratio), Chlorella vulgaris, Nannochloropsis oculata and Chaetoceros calcitrans were estimated against food-borne bacteria, namely, Escherichia coli, Salmonella Typhimurium, Staphylococcus aureus and Bacillus cereus. The extracts from these marine micro-algae showed potent antibacterial activity against all tested bacteria by the paper disk method. The extracts from C. vulgaris showed the strongest antibacterial activity against E. coli with minimum inhibitory concentration (MIC) of 0.62 mg/mL, and minimum bactericidal concentration (MBC) of 2.50 mg/mL. The extract from C. vulgaris contained 2 active compounds, 38.8% linoelaidic acid and 30.0% phytol. These results indicated that the ethanol extract from C. vulgaris may be a putative natural antibacterial agent against food-borne bacteria.
Antimicrobial coating on chicken carcasses may reduce the effects of cross-contamination and improve product shelf-life and safety. Thyme oil was mixed at 0.5%(v/v) with a pre-gelatinized pea starch coating solution. The coating solution was spread on chicken breast meat after inoculation with selected spoilage and pathogenic bacteria. After inoculation, the chicken meats were packaged in plastic bags and stored at $4^{\circ}C$. During 12 day storage, total aerobic bacteria, lactic acid bacteria, and inoculated organisms were counted at 4 day intervals. Thyme oil treatments reduced the viability of Salmonella as well as the growth of Listeria and Pseudomonas by 2 log CFU/g, and appeared to eliminate inoculated Campylobacter during storage. The addition of thyme oil increased the viscosity of the pre-gelatinized pea starch solution. The results suggested that thyme oil inclusion in an edible starch coating may be a satisfactory delivery system to enhance the safety of processed fresh meat.

Titanium dioxide ($TiO_2$) shows antibacterial effects when exposed to near ultra violet (UV) light. In this study, $TiO_2$ photocatalytic continuous reactor was designed and applied to food-borne pathogens such as Vibrio parahaemolyticus ATCC 17802, Salmonella choleraesuis ATCC 14028, and Listeria monocytogenes ATCC 15313. $TiO_2$ films were prepared by conventional sol-gel dip-coating method using titanium tetra iso-propoxide (TTIP). The antibacterial activity of photocatalytic reactor with various flow rates and UV-A illumination time showed effective bactericidal activity. As the UV-A illumination time increased, survival rates of those bacteria decreased. After 60 min of UV-A illumination, the survival rates of V. parahaemolyticus and S. choleraesuis were less than 0.1%. However, that of L. monocytogenes was about 5% at that time point. These results present an effective way to exclude pathogenic bacteria from aqueous foods.
Water- borne infectious diseases can be acquired by contact with contaminated water or by ingestion of contaminated water. There are many water- borne infectious agents such as bacteria, virus, and parasite. Among many of water- borne infectious diseases, health authorities of Korean government has particularly intensified to prevent and control typhoid fever(class I ), shigellosis(class I ), cholera(class I ), paratyphoid fever(class I), amebiasis(class II ) and leptospirosis(euivalent to class II ) under the communicable disease control law. Water- borne disease Prevention and control guideline itself has been also well provided by the health authorities. However, in practical public health point of view, there are still many problems remained to be solved out; no prospective investigation project to survey water borne infectious diseases under the national disease prevention and control programmes, incredible statistic data of annual notifiable disease report frequent appearance and varieties of drug resistance water- borne infectious agents, little cooperation and information- exchange system in between the related government authorities( the health authorities, the environment sanitation authorities and the food hygiene authorities) which should be closely collaborated, lack of health consciousness of the people, necessity of evaluation and Hndification on to the outcomes of performed health activities and programmes, neglect activities for water quality investigation, shortage of expertise and human resources in the related field, and poor investment of the government budget to develope and improve public health and sanitation field. In order to prevent and control water- borne infectious diseases effectively, it is emphasized that all the above indicated should be considered and performed to improve under the national health and sanitation development programmes.
