Application of ATP bioluminescence assay for effect assessment of hygiene visiting education on children's foodservice facilities in the local small town (ATP bioluminescence assay를 이용한 경북 일부 어린이 급식시설에 대한 위생방문교육의 효과 평가)

  • The purpose of this study was to evaluate the application of ATP bioluminescence assay for effect assessment of hygiene visiting education on children's foodservice facilities in the local small town. The sanitary inspection results of the hygiene visiting education showed significant improvement in all items except 'To regularly disinfect cooking facilities, storage rooms, etc.' ATP bioluminescence analysis was performed on cooking utensils to evaluate the educational effect, and the results showed a correlation with the effect in most items. In the case of knives and cutting boards, all facilities showed a value of 20 RLU/cm2 or less after the educational support, and in particular, it was approximately 10 RLU/cm2 or less in national/public, corporation and private facilities. Correlation analysis between the post-education sanitary inspection results and ATP values for three items related to knives and cutting boards showed that they have a negative and high correlations.

  • In this paper checked up biomass which occurs in the Jeju as are classified as organic waste for integrated management system for review and circulation of resources. Biomass which occurs in the Jeju was the 10,818 tons of sludge, 61,284 tons of food-waste, 1,519,000 tons of livestock. Sludge is treated marine discharge, food-waste is treated regeneration and livestock is treated in the form of recycling. How to establish "System used by mechanism of recycling management on biomass resources" to introduce biomass town created by Hita-city, Oita-ken in Japan. Also there established a model system to building for recycling management of biomass and then checked up the economics. According to the report, it has the difference in facilities, but it will switch to a surplus in 4 years, therefore it was confirmed that the economy. To be considered priority most livestock in "System used by mechanism of recycling management on biomass resources" in Jeju. So it is introduced the urgent problem and the problem awaiting solution on treating livestock in this study.

  • This study was intended to examine the continuance and transformation of food culture during the enlightenment and Japanese ruling era by analyzing the novel of "Toji". In the novel "Toji", the chaotic political and economic situation is reflected, along with the peoples' hard lives in the latter era of the Choson Dynasty. After the full-fledged invasion of China by the Japanese, the shift to a wartime posture was accompanied by an increased need for food. This led to a rationing and delivery system for rice in the late 1930s. While it was hard for people to obtain even brewer's grains and bean-curd dregs, food distribution officers were well off. Another distinctive feature of the food culture during the enlightenment and Japanese ruling era was that foreign food and recipes were introduced naturally to Korea through the influx of various foreigners. The industry of Choson was held by Japanese monopolistic capital, as a result, Choson had equal to the role as a spending site and was only gradually left destitute. In the Japanese ruling era, there were new type of business including such as patisserie of the types of civilization in the town, and those tempted Korean people. However, the Japanese and pro-Japan collaborators dominated commercial business. Being urbanization through the modernization, it was became patronized fast food in the populous downtown, and the change of industry structure and life style greatly influenced into our food culture. Acceptance the convenient Japanese style fast food such as Udong, pickled radish made was actively accepted with a longing for the advancement civilization. After the enlightenment, many Japanese exchange students went to Tokyo to get advanced civilization and provided urban mood according to their consumption of bread, coffee, Western food, which were considered a part of the elite culture.

  • This research was carried out to show the method of preserving high-grade farmland or Agricultural Development Area to contribute to the self-sufficiency of food as well as promotion of industrialization and urbanization, which has reduced 22,000 ha of farmland per year during last 10 years. However, in securing housing estate areas, the farmland conservation policy conflicts with housing supply policy for demands on more comfortable dwelling life for people, which leads to serious situation in Capital Circle of living more than 50 % of total national population. Therefore, this presents the method of fulfillment both the farmland conservation policy for self-sufficiency of food and the housing supply policy for proposition of securable residential areas.

  • Topophilia refers to emotional bonding such as attachment to or nostalgia for one's home town, which is remembered or imagined as a beautiful and happy paradise experienced in youth. The time spent in one's home town may have been short, but the associated memories of it are strong and enduring. These can later act as a strong motivator to learn if the correlated emotions are positive. According to archival research conducted on Jooyoung Chung's life, his home town and the things found therein, such as cows, were the principal objects of his topophilia, and later became the driving forces behind his success story. The same applies to Dvorak. Dvorak sublimated his nostalgia for his home town by composing a piece of music on hearing the sound of a train. We can discover diverse rhythms in nature such as sunrises and sunsets, the changing seasons, and even our heart beat. If a melody is added to the rhythm, it transforms into art. And if we seek harmony and principles, it becomes science. In this study, Jeonbuk's nature, places, food, and arts, as represented in its educational resources, are analysed for their ability to give rise to topophilia. A Study on the Effect of Ratification of the Cape Town Agreement on Korean Deep-Sea Fishing Vessels (우리나라 원양어선의 케이프 타운 협정 비준 영향에 관한 연구)

  • Deep-sea fisheries in Korea play an essential role in supplying popular seafood and providing food security. Countries, as well as the IMO (International Maritime Organization), have attempted to establish an internationally harmonized safety standard for fishing vessels. However, starting with the adoption of 'The Torremolinos International Convention for the Safety of Fishing Vessel 1977', the '2012 Cape Town Agreement' was adopted, but the requirements for enforcement were not met. However, with the 2019 Torremolinos Declaration, the effect of the agreement became visible. Korea is also about to ratify the agreement, and deep-sea fishing vessels are subject to the agreement. The length of the hull or the gross tonnage can be selected as the criteria for applying the 2012 Cape Town Agreement, and this is also partially applied to the existing vessels. Analyzing 188 deep-sea fishing vessels registered as members of the Korea Overseas Fisheries Association to confirm the effect on the existing vessels showed that the application of gross tonnage had little impact on the ratification of the agreement. In addition, laws must be revised for the compulsorization of GMDSS facilities such as two-way VHF and radar transponders and for the safety familiarization of fishermen. In the industry, the facilities required by the agreement must be provided, and the fishermen must be familiarized with safety.

A Study on the Planning of Agropolis Framework (농업혁신도시의 표준 프레임워크 도출에 관한 연구)

  • The sustainable development of local communities is faced with limitation due to poor infrastructure and lack of cooperation among stake-holders. To overcome such circumstances and thus to ensure balanced development of the local communities, the central government is driving construction of innovative cities mainly through transfer of public institutions to local cities. In this study, to contribute to the development of plans for the future agropolis' associated with the transfer of public institutions, efficient organization mechanisms of the agropolis such as basic structure and spatial allocation was examined through analyses of advanced cases(Sophia Antipolis, St. Hyacinthe Science Part Food Valley, Stoneleigh Park) of foreign countries. The analyses showed that the organization of agropolis were consisted of three main components; 1) agricultural and food industry complex conducting R&D, 2) service facilities(information, trade, consulting and advertisement) supporting agricultural and food industries and rural enterprise center in charge of a variety of events including exhibition, rural experience, education, and contest, 3) silver facilities such as hospital and town providing medical service and residence. Based on the results, inventories of facilities which are necessary in 'the future agropolis' and their spatial allocation were suggested.

A Study on the Recognition and Preference of Hometown Foods Given to University Students in the Northwest Area of Chungnam Korea (충남 내포 지역의 향토 음식에 대한 대학생의 인지도 및 기호도 조사 연구)

  • This study performed recognition and preference tests on hometown foods given to University students in NaePo province, which is in the northwest area of Chungnam, Korea. The results indicated that female students and people who majored in food science were less interested in hometown foods than male students or who are not majors in food science. Moreover, they preferred Korean-style foods to food from other countries. Mass media has aroused interest in hometown foods. However, hometown foods require standard recipes certain levers of autonomy for the population. Hometown foods are valuable and should be handed down the next generation through publicity. For example, Kkotgetang(blue crab soup) was the best known hometown foods followed by kkotgegang(fermented blue crab with sauce), saeujeot(salted and fermented shrimp), eorigul jeot(salted and fermented oyster with red pepper) in that orders. The most preferred food was kkokgetang(blue crab soup) followed by kkotgegang(fermented blue crab with sauce).

Assessment of preschool children`s food preference according to the residing areas (거주지역에 따른 유아의 기호도 조사)

  • The purpose of this study was to evaluate the preference trend of children in the child-care centers in relation to certain environmental factors such as size of the residing town. This evaluation was conducted using questionnaire survey where the mother of each child was required to complete a preference questionnaire including 83 food items. Statistical data analysis was completed using SAS package program. The results of this survey showed the followings : 1. Generally, the preference level of the children living in large cities were higher than of medium cities except in case of vegetables, while the preference level of the children living in large cities were higher than those of rural area except in case of hard-boiling(jorim) and vegetables. The subjects showed high preferences to bulgogi(4.53), pork-cutlet(4.52), fried chicken(4.51), jajangmyone(4.45), kimgui(4.43), roasted fish(4.31), roasted ham(4.13). 2. There was a tendency that a la carte, bread and noodles received higher preference scores. Items of Korean style soup attained higher preference scores than stew(ggigae). The preference scores of fired, broiled or pan-fried items(jun) were higher than those of other items such as seasoned vegetables(namool). 3. The preference scores of children (routinely or occasionally) skipping breakfast or supper were generally low. There was no significant difference according to the existence of mother's job except in case of steamed or pan-fried items, provided that the preference scores of the size of the monthly income of the household except stew, provide that the preference scores of the children whose household had lower income were slightly higher in general.

A Study on the Perception, Importance and Satisfaction with Local Traditional Food among University students - Focused on Kyungsan City - (대학생의 향토음식에 대한 인식 및 중요도, 만족도에 관한 연구 - 경산시를 중심으로 -)

  • This study was to investigate the undergraduates in Gyeongsan city, an area heavily populated with students, on their awareness of and their satisfaction with the local traditional food to suggest an effective marketing direction to town restaurants and to provide them with useful information to activate their business. The samples were taken by the convenience sampling method and the measurement was done by 5 points-Likert. The result was as follows. The students recognized that cleanliness(4.69 points), food texture(4,57 points), the freshness of food materials(4,56 points) and food price(4.20 points) were important. However, they considered the legitimacy of local traditional foods(3.59 points), the supplementary explanation of food(3.58 points) and the quantity of food(3.34 points) as less important. On the level of satisfaction with the food, they were highly satisfied with food taste(3.55 points), food flavor(3.47 points) and quantity(3.39 points), while showing relatively low satisfaction with food creativity(2.94 points), food originality(2.75 points) and the explanation of food(2.61 points). The result of IPA indicated that the food texture, food cleanliness, the freshness of food materials, food flavor, food taste and food nutrients were thought to be important among customers, to be kept well by the restaurants and to be shown as the items to be maintained further. The customers took other items like menu price and the creativity of menu to be important, but their satisfaction with these items were low due to lack of practice. Therefore, those items should be managed intensively.
