This study evaluated the effect of steam heating, gamma irradiation, and ultraviolet (UV) irradiation on microorganism reduction in order to determine an effective sterilization method for red pepper powder. The effect of each treatment on the reduction of thermoduric bacteria and total aerobic bacteria in red pepper powder were as follows: 10 kGy gamma irradiation, reduction of 4 log and 6 log CFU/g, respectively; 12 mW/㎠ UV irradiation (264 nm UV-C), reduction of less than 1 log CFU/g; steam heating at 120℃ for 40 s, reduction of approximately 2 log CFU/g. High-temperature short-time processing at 110℃ for 30 s reduced the total bacterial count in Gochujang solution from 5.70 log CFU/g to 2.26 log CFU/g; at 121℃, the solution was commercially sterile. Steam heating resulted in 1, 2, and 4 log microbial inactivation in garlic, onion, and pepper powder, respectively. Steam sterilization, which consumers prefer over other methods, may be an effective method for reducing microorganisms in spice powders, including those in red pepper powder.
Gamma irradiation$(1{\sim}5\;kGy)$ was applied to Korean beef to improve the hygienics and quality preservation. The effective dose of irradiation was 3 kGy for the sterilization of the initially contaminated microorganisms. After 8 weeks of storage at $5^{\circ}C$, no growth of the microorganisms were observed in the samples irradiated above 5 kGy. The pH was slightly increased as storage period increased. However, no significant change in pH was observed by gamma irradiation. The acid value of beef during storage at $5^{\circ}C$ was increased rapidly with the elapse of the storage period in both nonirradiated and irradiated samples, but that of the 3 kGy irradiated samples increased more slowly than the nonirradiated. VBN value increased more rapidly in nonirradiated sample than the irradiated during storage. Especially VBN value of the nonirradiated sample was four fold higher than that of the 3 kGy irradiated sample after 8 weeks of storage at $5^{\circ}C$. No significant differences in the components of fatty acid were observed by gamma irradiation. The amount of released free amino acid was increased during storage and was not significantly affected by gamma irradiation.
This study was carried out to investigate the effects of Plantago asiatica L. extract on anti oxidative potential, free radical generation and the lipid levels in rats. Sprague-Dawley(SD) rats were divided into two groups based on their diet, as follows: the AIN-76 diet (control group), and the modified AIN-76 diet(cholesterol 0.5%) with 0.5% P. asiatica extract, for 7 weeks. The body weight and teed efficiency ratios of the two groups did not significantly differ. The antioxidative potentials more significantly increased in the group that was fed P. asiatica extract than in the control group(p<0.05). There was no difference in the rate of free radical generation, though. The weights of the organs, such as heart, kidney, liver, and spleen, of the rats in the two groups did not differ, though. The ratio of the HDL cholesterol to the total cholesterol in the P. asiatica group was significantly higher than that in the control group, and the other serum lipid parameters (total cholesterol, HDL cholesterol, triglyceride, and phospholipids) did not differ between the two groups. These results imply that supplementation with P. asiatica extract may improve the antioxidant potential and decrease the lipid levels in the blood.

This study was performed to determine the effects of drying methods on the quality and physiological activities of blueberry. Blueberries(Vaccinium ashei) were dried by hot-air ($60^{\circ}C$), cyclic low pressure ($50^{\circ}C$), and freeze drying methods. They contained high properties of carbohydrates(68.48~80.00%), crude protein(1.63~5.41%), crude fat(0.58~1.25%), and ash(0.71~1.11%) regardless of the drying methods. There were no differences in pH according to the drying methods. Browning index increased as the drying temperature increased. The L, a values of the freeze-dried sample were higher than those of the other dried samples, whereas the b value of the cyclic low pressure dried sample was higher than that of the other samples. The free sugar contents of the hot-air sample were higher than those of the other samples. Vitamin C content of the freeze dried sample was higher than that of either the hot-air or cyclic low pressure dried sample. The contents of total polyphenols and anthocyanins were higher in the freeze dried sample. The DPPH radical scavenging activity of freeze drying sample was higher than that of either the hot-air or cyclic low pressure dried sample. The result indicated that there were no differences in product quality depending on the freeze-drying and cyclic low pressure drying methods.
In this study, a commercial production stepwise method for restorative rice with high quality and microbial safety was developed. The stepwise treatment method included steaming, refrigerated aging, and low temperature drying. The soaking rice was steamed twice at $90-100^{\circ}C$, and then, the rice was aged at $0-10^{\circ}C$, frozen at $-20^{\circ}C$, and dried at low temperatures with 5 m/s wind speed at $1-20^{\circ}C$ and 85% relative humidity. Applying the three steps improved sensory qualities compared with the conventional hot air drying and made storage at room temperature for 3 months possible. Specifically, the moisture content of the restorative rice was increased to 30%, which was 4.3 times higher than the 7% of the conventional air dried rice, and the rice grain shape was well maintained. The texture and appearance of the three-step rice were significantly improved (p<0.05) in a sensory evaluation.
Seven antimicrobial agents known to be effective in inhibiting the growth of lactic acid bacteria were applied to ensure the microbial safety of low-salted squid and myungran jeotgal with 4-6% salinity. These agents reduced the salt content by 50% compared with the conventional Jeotgal. Lactic acid bacteria such as Lactobacillus sp., Streptococcus sp., and Pediococcus sp. were commonly found to account for 80% of microbial organisms, and yeast and fungi were observed in squid and myungran jeotgal, respectively. The total bacterial counts in squid and myungran jeotgal showed 94.20 and 90.87% reduction after the addition of 0.5% (w/w) glycine. The microbial counts in squid and myungran jeotgal decreased $10^1-10^2CFU/g$ when compared with the control after 21 days at $10^{\circ}C$. Glycine was found to be an effective commercial antimicrobial agent that can be used to control bacterial count in low-salted Jeotgal without affecting sensory qualities such as overall taste and flavor.
The objectives of this study are to determine the full extent of the negative media reports and to broaden public awareness through content analysis. Samples of this study are news reports on vibrio on three major broadcasting companies such as MBC, KBS and SBS and three major national newspapers such as Chosun daily, Joongang daily and Donga daily in Korea for 5 years from January 1st in 2000 to December 31st in 2004. Total 628 cases were searched through from the web sites of fore mentioned TV and newspaper companies. It is highly advised to adhere to the proven fact as much as possible and full and thorough research on the outcome should be sought by media before they reach to the public.
The purpose of this study was to determine the possibility of using Oenanthe javanica as a natural health food source. To accomplish this, its general and biological activities were measured. Its carbohydrate, crude protein, crude lipid, and ash contents were 44.7, 9.8, 8.9, and 27.8%, respectively. The K content was largest for minerals followed by Ca, P, and Mg, which means that Oenanthe javanica is an alkali material. The concentrations of total phenol and flavonoids of OJE were $88.9{\pm}0.46$ mg GAE/g, and $28.6{\pm}0.64$ mg QE/g, respectively. Gallic acid, catechin, chlorogenic acid, and caffeic acid in OJE as measured by using HPLC were $0.9{\pm}0.23$, $1.2{\pm}0.19$, $227.1{\pm}0.62$, and $4.0{\pm}0.35$ mg/g. The DPPH and ABTS radical scavenging activities of OJE were 72.2%, and 66.1%, respectively, at $1,000{\mu}g/mL$. The FRAP and reducing power of OJE were 0.79, and 0.41 absorbance units value respectively, at $1,000{\mu}g/mL$. OJE possessed significant antioxidant properties, which suggests its great potential as a functional ingredient for food applications.

Dodok (Codonopsis lanceolata Bench. et Hook) root contains abundant pharmaceutical substances and is widely used as a food and a medicinal herb. To identify the major components, fermented Codonopsis lanceolata was analyzed for its chemical compositions prior to their pharmaceutical substances, which were used as the fundamental data. The contents of carbohydrate, crude protein, crude lipid and ash are 79.3%, 13.0%, 2.40% and 5.3%, respectively. The calories of fermented Codonopsis lanceolata was 390.5 kcal. Total dietary fiber was 47.4% of total carbohydrates. The protein was composed of 18 different amino acids. The contents of essential and non-essential amino acids were 8,118.18 mg and 10,913.42 mg. The K was the largest mineral followed by P, Ca and Mg, which means fermented Codonopsis lanceolata is alkali material. The contents of saturated fatty acids, monounsaturated fatty acids and polyunsaturated fatty acids were 37.76%, 3.84%, and 35.64%, respectively. Therefore, the amount of the total unsaturated fatty acid was higher than that of any other plant. The content of crude saponin in fermented Codonopsis lanceolata was 60.1 mg/g. It is expected that a follow up study on fermented Codonopsis lanceolata through development and evaluation of processed foods for their functional properties would provide useful information as a source of medicinal foods.
Protected area based ecotourism is now the most interesting topic to the nature lover and policy maker throughout the world because of its linkage with economic benefits, protected area management and biodiversity conservation. Based on this premise our study explores the visitors' perception on the recreational potential of Kaptai National park and its potentiality in ecotourism development in Bangladesh. The field survey was carried out both in holidays and non-holidays of the week from the late winter season in 2009 to the spring season in 2010. A total of 118 visitors were interviewed with the help of a semi-structured questionnaire. Study findings revealed that about 62% male constitute the visitors group with the maximum number of visitors in the age of between 15-25 years (35.59%). The tourists were very much attracted by boat riding (93.22%) followed by scenic beauty of Rampahar-Sitapahar (85.59%). A major portion of about 57.14% tourists wished to visit the park within a year because they got a lot of pleasure from Natural and green environment (86.44%) followed by boating on Kaptai Lake (85.59%). Most of the visitors (36%) were happy about existing facilities but defined some problems such as tour guiding facility, food and drinking water supply, etc. About 71% and 66% respondents perceived that Kaptai National Park made them to be concerned and protective of nature and supports and sustains local ecosystem respectively and 43% respondents agreed that Kaptai National Park ensures the social equity and involve local people in ecotourism which are the most important elements of sustainable ecotourism. The present study results also predict that the park might be a good recreational area for enjoying with family members and group of friends through proper management and promoting the relationships among tourism, local people and biodiversity conservation.
