Comparison of the Levels of Nutrient Intakes by Different Dietary Methods and Days of Dietary Studies Among Young Females in Korea (식이섭취조사방법과 조사일수에 따른 한국 젊은 여성의 영양소 섭취 수준의 비교)

  • This study examined the patterns of nutrient intakes measured by 1-, 3-, 7-day recalls and records as well as food frequency questionnaire among 59 females volunteers enrolled in the university in Seoul, Korea. Over a 4 month period, a modified Willett food frequency questionnaire was administered once, and a 24-hour dietary recall was conducted 12 times and a weighted dietary record 14 times. From these 12 recalls and 14 records, 1-, 3-, 7-day data were randomly selected. For energy and 11 nutrients, group mean intakes derived from food frequency questionnaire were higher than from recalls and records. Group mean intakes from recalls and records showed little differences depending on days of dietary studies and dietary methods. Measures of agreement were calculated by weighted kappa and intraclass correlation coefficient values calculated for quintile categories while comparing to the results of 26 days recalls and records. Weighted kappa values ranged from 0.11 for riboflavin to 0.36 for vitamin C for and 1-day recall, and from 0.21 for iron to 0.31 for energy for the 1-day record. Weighted kappa values were increased as the number of days of dietary studies increased (0.34-0.57 for the 3-day recalls, 0.27-0.50 for the 3-day records, 0.50-0.68 for the 7-day recalls, and 0.50-0.65 for the 7-day records). Weighted kappa values for food frequency questionnaire were higher than the 1-day data, but lower than the 3-and-7day data(0.34 for energy, 0.31 for iron and 0.22 for vitamin C). Intraclass correlation coefficients ranged from 0.21 for vitamin A to 0.57 for calcium. The degrees of agreement by different methods and days of dietary study are lower in our study compared to agreement by different methods and days of dietary study are lower in our study compared to those in previously published studies for Western populations, partly due to the differences of data analysis methods as well as of dietary patterns between those samples and ours.

Relationship between Food Intakes, Glycemic Index, Glycemic Load, and Body Weight among High School Boys in Seoul (서울 일부지역 남자 고등학생의 식품 섭취, Glycemic Index, Glycemic Load와 체중과의 관련성 비교)

  • This study was conducted to study the relationship between food intakes, glycemic index (GI), glycemic load (GL), and body weight with high school boys residing in Seoul. The subjects of 329 boys were divided into normal weight group (BMI < $23\;kg/m^2$, n = 212) and overweight group (BMI ${\geq}\;23\;kg/m^2$, n = 117) by body mass index (BMI). The food intakes data obtained by the 3-day food record were analyzed by Can pro 3.0 software. Anthropometric measurements and physical activities were collected from each subject. Daily dietary glycemic index (DGI) and dietary glycemic load (DGL) were calculated from the 3-day food record. Body weights and BMI of normal weight group were 58.8 kg and $19.9\;kg/m^2$ and those of overweight group were 79.2 kg and $26.8\;kg/m^2$, which were significantly different between two groups (p < 0.05). Total food and animal food intakes of normal weight group were significantly higher than overweight group (p < 0.05), and vegetable food and other food intakes of normal weight group showed higher than overweight group. All nutrient intakes of normal weight group were higher than overweight group. Dietary fiber, calcium, potassium and folate intakes of normal weight group and overweight group were under 65% of the dietary reference intakes (DRIs). Major food sources of energy intake for both groups were rice, pork and instant noodle in order. Mean adequacy ratio (MAR), an index of overall dietary quality were 0.83 in normal weight group and 0.79 in overweight group, which showed significantly higher in normal weight group than overweight group (p < 0.05). Mean daily dietary GI of normal weight group and overweight group were 67.7 and 68.2, respectively. Mean daily dietary GL of normal weight group and overweight group were 214.6 and 202.7, respectively, and which was significantly different between the two groups (p < 0.05). Major food sources contributed to DGI and DGL were rice ($\geq$ 55%) in both groups. DGI and DGL were not significantly correlated with anthropometric data. Activity adjusted to energy intake was negatively correlated with percentage of body fat (r = -0.1308, p < 0.01) and that was positively correlated with height (r = 0.1227, p < 0.05) and lean body mass (r = 0.1351, p < 0.05).

  • We analyzed the HACCP prerequisite of National Veterinary Research and Quarantine Service (NVRQS) and the Food Establishment Inspection Report of US Food and Drug Administration (FDA) to recommend contents and ranges to be complemented and used for preparation of guidelines for more effective application of HACCP prerequisites. We used the HACCP inspection reports implemented by Korea Livestock Products HACCP Accreditation Service from 2007 to 2009, FDA Food Code 2009 Guide 3-B Instructions for Marking the Food Establishment Inspection Report, and Retail Food Establishment Sanitation Requirements of 410 Indiana Administrative Code. Major non-compliance items were open doors and windows, insanitary cleaning of in-use utensil, inadequate record of warehousing, and improper storage, transportation, and labelling. Hot water supply, personal hygiene, and regular product testing were additional week points which should be more strongly controlled by detailed operating guidelines. Also, current prerequisite items were required revision into more precise contents to enhanced the effective evaluation and practical application in meat markets.

A Historical Study on the Utilization of Wild Vegetables as Foods in Korea (한국산채류 이용의 역사적 고찰)

  • The first historical record on the use of wild edible plants as foods in Korea involves sswuk and manul concerned with the mythology of Tangun. Numerous names of wild vegetables had been recorded in various ancient books. Wild edible plants are of great value as food resources and for domestication, since they have variable edible portions and quite a long picking season. Several kinds of wild edible plants have been already grown as vegetable crops. Doragi (Platycodon grandiflorum) is probably the one with the longest history of cultivation. During World War II, an attempt had been made to substitute vegetable crops for wild edible plants. As picking wild greens requires a great deal of labor and plants of wild growth are limited in the amount, domestication of wild vegetables as crops appears to be an urgent need for securing food resources in Korea.

  • The study was conducted with funding from the government (Ministry of Agriculture, Food and Rural Affairs) in 2018 with support from the Agricultural, Food, and Rural Affairs Agency, 318069-03-HD040, and in based on artificial intelligence-based HPAI spread analysis and patterning. The model that is actively used in time series and text mining recently is LSTM (Long Short-Term Memory Models) model utilizing deep learning model structure. The LSTM model is a model that emerged to resolve the Long-Term Dependency Problem that occurs during the Backpropagation Through Time (BPTT) process of RNN. LSTM models have resolved the problem of forecasting very well using variable sequence data, and are still widely used.In this paper study, we used the data of the Call Detailed Record (CDR) provided by KT to identify the migration path of people who are expected to be closely related to the virus. Introduce the results of predicting the path of movement by learning the LSTM model using the path of the person concerned. The results of this study could be used to predict the route of HPAI propagation and to select routes or areas to focus on quarantine and to reduce HPAI spread.

The inflow of highly pathogenic avian influenza is coming through migratory birds from abroad, but it is not known exactly what pathways provide the farm with the cause of the infection. And the transition between farms from the generated farms only assumes that the vehicle is the main cause, and the main cause of the spread is not exactly known. Based on the call detailed records (CDR) data provided by KT, the study aims to see how people visiting migratory bird-watching sites, presumed to be the site of the outbreak, will flow through infected farms.

A new record of Trichocladium griseum in Korea: morphological and molecular characterization

  • A unrecorded species of Trichocladium, Trichocladium griseum, was isolated in 2017 during a survey of fungal diversity in Ulsan province, South Korea. This species was identified based on morphological characteristics and phylogenetic analysis of the internal transcribed spacer (ITS) rDNA and ${\beta}-tubulin$ gene sequences. T. griseum has not yet been reported in South Korea. Thus, we report for the first time a new record of Trichocladium griseum in Korea, and we include the descriptions and morphological illustrations of this fungus.

Comparison of the dietary intake and clinical characteristics of obese and normal weight adults

  • Obesity contributes to an increased risk for chronic diseases, including diabetes, cardiovascular diseases, and certain types of cancer. The prevalence of obesity has increased in Korea. We compared the clinical and dietary characteristics of obese adults (n = 30, 17 men and 13 women, mean age 29.9) to those with a normal weight (n = 15, 8 men and 7 women, mean age 26.5). We determined lipid profiles, fasting blood sugar (FBS), blood pressure, and serum free fatty acid (FFA). Dietary intake was estimated using a food frequency questionnaire (FFQ) and a 3-day dietary record. Exercise patterns and average alcohol intake were determined. The average body mass index was 28.3 kg/$m^2$ in the obese and 21.2 kg/$m^2$ in the normal weight groups. The obese group had significantly higher levels of total cholesterol, LDL cholesterol, and triglycerides, lower levels of HDL cholesterol, and higher blood pressures compared to the normal weight group. FBS was not significantly different between the two groups. The obese group had significantly more subjects with metabolic syndrome (26.7%) compared to the normal weight group (0%). Serum FFA levels tended to be higher in the obese (P = 0.087). No significant difference in caloric intake was observed between the two groups. No differences in carbohydrate, protein, or fat intake between two groups were observed from the FFQ. However, results from the 3-day dietary record showed that the percentage of energy from fat was significantly higher in the obese group. The frequency and amount of exercise did not differ between the two groups. Alcohol consumed per drinking episode was significantly higher in the obese group. These results confirm that excessive weight is associated with disturbances in lipid metabolism in these fairly young and otherwise healthy adults. Dietary factors, including higher fat intake and alcohol consumption, seem to be contributing to the obesity of these subjects.

Analysis of Financial Management Activities in Elementary School Foodservices (초등학교급식에서 수행되는 급식비 관련 재무관리 업무분석)

  • The purpose of this study was to examine financial management practices in elementary school foodservices. Respondents were asked to provide information on demographics, operational characteristics, financial management activities(responsibility, importance and time demand). Data were collected from 106 elementary school foodservice using the mail questionnaire. The results were as follows 1. Time demand of 14 financial management activities was examined. The results of time-demand showed that most financial activities were performed about once per month. Reporting, inventory checking and production cost accounting were performed several times per week. 2. Major financial management activities performed by school dietitians were inventory checking, record keeping, production cost accounting, and foodservice operation planning. 3. Results of the importance rating of 14 financial management activities showed that the production cost accounting, budgeting, controlling meal costs, reporting the national treasury accounts, and inventory checking were rated as very important(4.00-4.49). Factor analysis was conducted on the importance ratings. Five activities were differentiated such as budgeting, record keeping, cost controlling, cost accounting, and reporting. The cost controlling task was identified at the most important one among them. 4. Important ratings for reporting were found to be significantly different by age, and years of experience. The younger and the less experienced were responded with higher scores on reporting. Analysis of variance for the importance scales by meal costs per one person, food cost percentage, labor cost percentage was conducted, but significant differences were not founded.

Comparison of various dietary intake assessment method in monitoring the adherence to fat-modified diet (저지방.저콜레스테롤 식이요법 환자군의 식이섭취실태 평가법에 대한 비교 연구)

  • This study was designed to compare various dietary assessment methods and to determine the appropriate method that would be reliable for monitoring the adherence to a fat-modified diet. Dietary intake data was collected from the twenty-two (12 males, 10 females), type IIa hypercholesterolemic patients by the 24-hour dietary recall and the food records of various durations(9, 7, 4, 3days). Intakes of energy, protein, fat, carbohydrates, cholesterol, polyunsaturated fatty acids, saturated fatty acids, monounsaturated fatty acids, P/S ratio, and alcohol were analyzed by a computer-assisted method using the Natinal Heart, Lungand Blood Institute Nutrition Data System. The nutrient intake data of the 24-hour recall method were consistently higher than tat of the food record method. In all subjects, food record keeping of the 7 consecutive days provided acceptable dietary data (within 5% difference) when compared to that of the 9 consecutive days. Food records of 4 consecutive days however, were found to be adequate for female subjects, showing a sex difference. Except for P/S ratio, nutrient intakes did not vary significantly between weekdays and weekend-days. Among other components, alcohol and P/S ratio were shown to be the two most varied components in this study.
