The purpose of this study was to explore ecological concepts, epistemological reasoning and reasoning processes through constructing 'food web and food pyramid' in ecology. We conducted classes which involved a 'food web and food pyramid' for $6^{th}$ grade students. Each class is constructed of small groups to do modeling and epistemological reasoning through communication. The researcher had videotaped and recorded each class and have made transcription about classes. We analysed patterns of 'food web and food pyramid models' and reasoning processes according to scientific epistemology using transcription data and student outputs. As a result, students represented phenomenon-based reasoning, relation-based reasoning and model-based reasoning in scientific epistemology from their modeling. Students usually did relation-based reasoning and model-based reasoning in food web which explains ecological phenonenon, while they usually did model-based reasoning in food pyramid which expects ecological phenomenon. Student's reasoning can be limited when they have misconception of scientific knowledge and are limited by fragmentary knowledge. This represents that students has to do relation-based reasoning and model-based reasoning is beneficial in their ecological model. It also suggests that students need to define correct-conception related to ecological modeling(food web, food pyramid).
This study explores how elementary school students construct food pyramid prediction models using scientific reasoning. Thirty small groups of sixth-grade students in the Kyoungki province (n=138) participated in this study; each small group constructed a food pyramid prediction model based on scientific reasoning, utilizing prior knowledge on topics such as biotic and abiotic factors, food chains, food webs, and food pyramid concepts. To understand the scientific reasoning applied by the students during the modeling process, three forms of qualitative data were collected and analyzed: each small group's discourse, their representation, and the researcher's field notes. Based on this data, the researcher categorized the students' model patterns into three categories and identified how the students used scientific reasoning in their model patterns. The study found that the model patterns consisted of the population number variation model, the biological and abiotic factors change model, and the equilibrium model. In the population number variation model, students used phenomenon-based reasoning and relation-based reasoning to predict variations in the number of producers and consumers. In the biotic and abiotic factors change model, students used relation-based reasoning to predict the effects on producers and consumers as well as on decomposers and abiotic factors. In the equilibrium model, students predicted that "the food pyramid would reach equilibrium," using relation-based reasoning and model-based reasoning. This study demonstrates that elementary school students can systematically elaborate on complicated ecology concepts using scientific reasoning and modeling processes.
전 세계 대부분의 BoP (Base of the Pyramid) 층은 균형 잡힌 식생활을 취할 수 있는 경제력을 가지고 있지 않다. 따라서 이에 대한 해결책으로 일상적으로 섭취하는 식품에 필수 영양소를 첨가하는 방법이 이들 계층에게 지출에 대한 부담을 주지 않고 영양 상태를 개선할 수 있는 방안으로 제시되고 있다. 본 연구의 목적은 적정한 신기술을 활용하여 저소득층의 영양개선에 참여한 다국적기업인 아지노모토(Ajinomoto)와 그라민다농(Grameen Danone)의 사례를 소개하고, 이들 기업의 비즈니스 전략을 비교·평가하는 것이다. 기술 중심의 적정기술이 가지는 한계점을 극복하기 위해서는 기술과 사회, 비즈니스를 아우르는 사회기술시스템으로 진화할 필요가 있다. 이를 위해 본 연구는 적정한 신기술과 저소득층(BoP) 비즈니스를 접목하여 저소득층의 삶의 질 개선과 소득 증대에 기여한 사례를 발굴하였다. 본 연구에서는 기술적 관점에서 "적정기술 2.0" 프레임워크를 통해 사례를 분석한 후, 비즈니스 모델 분석 기준을 바탕으로 BoP 비즈니스의 전략을 살펴보았다. 이러한 분석 결과를 바탕으로 4A모델을 통해 BoP 시장에서 적정기술의 성공요인을 분석하였다.
This study was undertaken to develop web-based nutrition information contents for the older adults. Twenty six domestic web-sites were analyzed and then 12 foreign web-sites and 4 education materials for the elderly of foreign university were benchmarked. Also a lot of literatures on elderly education program were reviewed. A card-sorting task was performed with 8 older adults to ascertain how the target audience organized information about nutrition. The results were as fellows. Among 26 domestic web-sites, 2 sites(7.7%) were only for the elderly. Main topics of information contents for the elderly included 'Importance of Healthy Eating', 'DRI', 'Dietary Guidelines'. Four of twelve foreign web-sites were for the elderly nutrition education. Topics of 'Dietary Guideline', 'Meal Program' were found in 4 sites and 'Importance of Healthy Eating', 'Diet & Disease', 'DRI, 'Food Guide Pyramid', 'Nutrition Fact Labels' were found in 3 sites. Education materials of foreign university dealt with basic information on 'nutrient needs changes related with aging', 'Heart & Bone Healthy Eating Plan', 'Food Guide Pyramid'. Also topics on 'Eating on a budget', 'Eating Out Guideline' were included for practical use for the elderly. Based on card-sorting process, contents framework for web-site was developed and 4 main menus for framework were respectively named as 'Nutrition', 'Meals', 'Foods'. 'Check up Nutritional Health' by panel discussion. Finally we developed nutrition information contents for 4 main menus. We focused on helping older adults recognize the importance of healthy eating and apply the nutrition information to practical use. We expect that the developed framework of contents can be a guideline for indentifying the information needs of older adults in developing effective nutrition intervention program. And we suggest that the survey for target people should be peformed for the web-site to be user-friendly designed and the developed contents be evaluated and revised in the near future.
The objective of tole study was to compare nutritional knowledge, attitudes and food practices of competitive athletes, recreational athletes and non-participants. All students enrolled at the University of Nebraska in an Introductory Nutrition course in which sports nutrition was stressed, were asked to participate in the study. The course was typical of many introductory nutrition courses ; about two thirds of the students were from the Department of Health, Physical Education and Recreation, and most of the students were encouraged to take this course by their advisers. The students were divided into three groups : 20 competitive athletes (mostly runners, swimmers, basketball players and football players for the University), 14 recreational athletes (who were involved in a planned exercise program at least 2 hours per week), and 19 non-participants. At the beginning of the semester, students completed a food frequency questionnaire, and a 24-hour food record based on the Food Guide Pyramid. A nutrition knowledge and attitude questionnaire was formulated specifically for this study, covering normal nutrition and sports nutrition. The results showed that consumption of foods from all Food Guide Pyramid food groups except the fats/oils/sweets group was not significantly different among the three student groups. Regarding the fats/oils/sweets group, competitive athletes consumed significantly more numbers of servings than recreational athletes, while the recreational athletes consumed significantly more than non-participants (p<0.01). The total mean scores from the nutrition attitude and knowledge questionnaire were not significantly different among the three student groups. However, combined athletes (competitive athletes and recreational athletes) obtained significantly higher scores on some of the nutrition attitude questions (p<0.05). The results of the study indicate that athletes, significantly lower scores on some of the nutrition knowledge questions (p<0.05). Many countries such as The Republic of Korea have established their own nutritional standards, collectively termed Nutrient Reference Values (NRVs), and they vary due to the science which was reviewed, the purposes for which they are developed, and issues related to nutrition and food policy in the country. The current effort by the Codex Alimentarius Committee on Nutrition and Foods for Special Dietary Uses (CNFSDU) to update the NRVs that were established following the Helsinki Consultation in 1988 represents an opportunity to develop a set of reference values reflecting current scientific information to be used or adapted by many countries. This paper will focus on possible approaches to selecting or developing reference values which would serve the intended purpose for nutrition labeling to the greatest extent possible. Within the United States, the Food and Drug Administration (U.S. FDA) is currently reviewing regulations on nutrition labeling to better address current health issues, and is expected to enter into a process in the next few months to begin to explore how best to update nutrient Daily Values (DVs), most of which are still based on the Recommended Dietary Allowances (RDAs) of the Food and Nutrition Board, U.S. National Academy of Sciences, last reviewed and revised in 1968. In this presentation, I review the current purposes in the U.S. for nutrition labeling as identified in the 1938 Food, Drug, and Cosmetic Act as amended, the scientific basis for current nutrition labeling regulations in the United States, and the recommendations made by the recent Committee on Use of Dietary Reference Intakes in Nutrition Labeling of the Institute of Medicine (2003) regarding how to use the DRIs in developing new DVs to be used on the label in the United States and Canada. Based on these reviews, I then provide examples of the issues that arise in comparing one approach to another. Much of the discussion focuses on the appropriate role of nutrient labeling within the Nutrition Facts panel, one of the three major public nutrition education tools in the United States (along with MyPyramid and Dietary Guidelines for Americans).

The feasibility of two strategies for transgene pyramiding using Agrobacterium-mediated transformation was investigated to develop a transgenic potato (Solanum tuberosum L. cv. Iwa) with resistance to potato tuber moth (PTM) (Phthorimaea operculella (Zeller)). In the first approach, cry1Ac9 and cry9Aa2 genes were introduced simultaneously using a kanamycin (nptII) selectable marker gene. The second approach involved the sequential introduction (re-transformation) of a cry1Ac9 gene, using a hygromycin resistance (hpt) selectable marker gene, into an existing line transgenic for a cry9Aa2 gene and a kanamycin resistance (nptII) selectable marker gene. Multiplex polymerase chain reaction (PCR) confirmed the presence of the specific selectable marker gene and both cry genes in all regenerated lines. The relative steady-state level of the cry gene transcripts in leaves was quantified in all regenerated lines by real-time PCR analysis. Re-transformation proved to be a flexible approach to effectively pyramid genes for PTM resistance in potato, since it allowed the second gene to be added to a line that was previously identified as having a high level of resistance. Larval growth of PTM was significantly inhibited on excised greenhouse-grown leaves in all transgenic lines, although no lines expressing both cry genes exhibited any greater resistance to PTM larvae over that previously observed for the individual genes. It is anticipated that these lines will permit more durable resistance by delaying the opportunities for PTM adaptation to the individual cry genes.
The objective of this study was to develop nutrition education materials for older adults, 'nutritional management for healthy aging'. A booklet and four leaflets were developed based on lesson plans. Topics of the lesson plans included eating habit assessment. Korean food guide pyramid, meal planning, eating sensibly and weight management. The titles of the leaflets were 'Eating right for healthy aging', 'Eat calcium-rich foods', 'Enjoy fruits & vegetables' and 'Weight management'. Illustrations and icons appropriate to the texts were designed using illustrator 9.0 and Photoshop 6.0. Booklet (letter size, 5 chapters, 44 pages) and leaflets (B4 size, 6 sections) focused on modifying undesirable eating habits, providing practical tips for desirable behaviors, and behavioral modification such as recording in a food diary, goal setting and increasing self-efficacy. The drafts were pilot-tested by interviews with older adults(n=10), and minor changes were made. The characteristics of revised materials are as follows; i) materials focused on providing desirable eating behaviors for healthy aging, ii) messages were simple and specific, iii) large fonts(13 pt) were used and materials included interesting pictures and illustrations, iv) materials provided tips for balanced diets and recipes fur older adults, v) materials included sections for participation of learners including assessment of nutritional risk factors and obesity, meal planning and games. The revised materials are self-explanatory and can be used by older adults and in nutrition education for older adults.
본 연구는 양적, 질적으로 균형있는 식생활을 하기 위한 기본적인 지식이 된다고 여겨지는 영양권장량과 식사구성안에 대하여 중학교 1학년 기술${\cdot}$ 가정 교과서 10종의 내용을 분석하였고 중학교 1학년 학생의 영양권장량과 식사 구성안에 대한 이해도를 살펴보았다. 영양권장량과 식사구성안에 대한 교과서 설명이 대부분 충분하지 못한 것으로 나타났으며, 특히 영양권장량과 영양필요량의 차이에 대하여 오해를 일으킬 만한 표현들이 많았다. 그리고 식사구성안에 대한 정의 규정이 대체로 미흡하였으며, 식품구성탑과 1인 1회 분량에 대하여 표현이 정확하지 못하였거나 또는 실제 식품 예에서 오류가 있었던 교과서도 확인되었다. 학생 가운데 많은 수가 영양권장량이 대다수 국민의 영양 필요량을 충족시키는 여유있는 양임을 이해하지 못하고 있는 것으로 나타났으며, 식사구성안에 있어 식품구성탑은 다른 개념에 비해 비교적 이해도가 높았으나, 1인 1회 분량은 정확히 이해하지 못하는 경향을 보였다. 결과적으로 영양권장량과 식사구성안의 정의와 설명을 포함하는 기술${\cdot}$가정 교과서의 내용 수정 및 보완이 필요하며. 또한 학생의 이해도를 확인할 수 있는 조사도구 개발의 후속 연구가 필요하다고 생각한다.
Food neophobia, unwillingness to try novel foods, is a personality trait that can influence children's food preferences and consequently their food acceptance and consumption. The purpose of this study was to determine whether children with food neophobia have poor dietary and growth outcomes compared to non-neophobic children. Subjects were 332 primary school children from 6 randomly selected schools in the district of Hulu Selangor, Selangor. Parents and children were interviewed to obtain demographic, socio-economic, food neophobia and dietary intake information. The children were also measured for weights and heights. One-way ANOVA and Chi-square procedures were utilized for statistical data analysis. Children with food neophobia had higher intakes of energy and most nutrients than average and neophilic children. However, only the mean intakes of protein (p < 0.05) , fat (p < 0.05), vitamin A (p < 0.01) and iron (p < 0.01) were significantly higher in neophobic than average or neophilic children. Compared to neophilic and average groups, a higher percentage of neophobic children met 2/3 of the RNIs for energy $(85.2\%)$, protein $(98.4\%)$ and vitamin A $(72.1\%)$. Mean percentage of carbohydrate energy was lowest$(54.8\pm6.6\%)$ while fat energy $(31.8\pm6.2\%)$ was highest among neophobic children. Neophobic group had the lowest percentage of children $(49.2\%)$ with carbohydrate energy > $55\%$ but highest percentage $(50.8\%)$ with fat energy > $30\%$. For the three study groups, the mean number of servings for all food groups, except grain and cereal, did not meet the Food Pyramid recommendations. Neophobic children consumed significantly more numbers of servings from the meat group than average and neophilic groups (p < 0.01). All study groups had relatively low mean dietary diversity scores but neophobic children had the lowest score $(0.67\pm0.73)$ compared to the average $(0.97\pm0.72)$ and neophilic $(1.98\pm0.81)$ groups. Significant difference in mean dietary diversity scores were only observed between neophobic and neophilic children (p<0.05). Higher percentages of neo-phobic children had low weight-for-height and were at-risk of overweight(p < 0.05). Nutrition practitioners need to understand children's food preferences in their efforts to promote healthful diets for children. To improve children's eating behaviors, parents may need the guidance and support from nutritionists and dietitians that are specific to their needs and their child's situation.
