  • This study was undertaken to compare meal skipping, snacking, and weight perceptions between students on-campus living alone and off-campus living with parents, in an urban college in the United States. The self-report survey was completed by 219 college students (on-campus=100, off-campus=119) between April and May 2012. Two-thirds (67%) of the respondents skipped at least one meal in the past week, and most participants showed strong desires to lose weight despite their normal/under-weight status. Significant differences between the two groups were obtained for the reason to skip a meal and the type of snack consumed. Compared to on-campus students, significantly higher values were obtained for off-campus students for choosing 'no time to prepare' as a meal skipping reason for lunch and dinner, and 'sweets' as a preferred snack. In addition to the group comparison, multiple regression results indicate that the body mass index (BMI) positively correlates with meal skipping and snacking frequencies. Younger students and female students were determined to have a higher frequency of meal skipping and morning snacking. Future research is required to study the dietary factors associated with living arrangements, to help college students develop healthy eating habits.

  • This study investigates antimicrobial effects of food-borne pathogens and the antioxidant activity of Torreya nucifera extract. The growth of food-borne pathogens including Staphylococcus aureus, Pseudomonas aeruginosa, and Candida albicans was inhibited by the extract. The antimicrobial activity of the extract was highest for Staphylococcus aureus among seven gram-positive bacteria and for Pseudomonas aeruginosa among six gram-negative bacteria. The extract exhibited slightly lower DPPH radical-scavenging activity, but its ABTS radical-scavenging activity was higher than that of ${\alpha}$-tocopherol. The results demonstrate the extract's antimicrobial effects on food-borne pathogens as well as potent antioxidant capacity and suggest that Torreya nucifera may be used as a natural antibacterial agent and an effective antioxidant in food.

  • Food frequency, food attitude, eating habits and physical activities of Korean-American children and Korean children were compared. Two hundred and sixty two Korean-American children living in New Jersey and New York in the United States of America(KcUS group) and three hundred and thirty one Korean children living in Seoul, Korea (KcK group) between the ages of 9 and 12 were included. There were significant differences in food frequency between these groups. The KcUS group ate more western food, more food at meal time and more snack than the KcK group. In addition, KcUS group slept longer hours and exercised less than KcK group. In this study, we learned that higher rate of obesity in Korean-American children could be partially explained by the difference in food intake, food attitude, eating habit, and physical activities between the two groups. It is suggested that a different approach will be useful in developing nutrition education programs against childhood obesity for the Korean-American children and Korean children.

The result of thus, group of infection through the mouth on dietary treatment for the high-fat foods and the dropwort more than compared with group of dietary treatment for the high-fat foods tended to be decreased. On fermented secretion group of the dietary treatment total cholesterol number also was decreased, the concentration of HDL cholesterol was shown a slight increased. The result of studying for the sensitivity controlled architectural structural material for the mice, coming under wooden living environment, making appearance with increasing weight as well as taking food and drink for psychological rest was considered. To examine changing weight through the mice in regard to the sensitivity for dietary life and living environment, in connection with promotion of health as well as diseases control the caused by those, would be achieve new balanced growth on basic study. Also that would be anticipated to making good use of thus results.

  • The purpose of this study was to investigate the cognitive differences among the aged who have different living conditions. 91 free-meal receivers and 86 people with stable lives were asked about their living conditions and cognitive function by using K-MMSE. All data were analyzed by SPSS 10.0 package. Free meal receivers had poorer socioeconomic status than the subjects who had stable lives. Cognitive function of free meal receivers was lower than the people with stable lives in the most cognitive factors. Especially age of 50 to 64, pre-aged group, who had been receiving free meals, showed lowest cognitive level than the other age groups. Among 7 cognitive factors, there was the greatest difference in attention and calculation between 2 groups. Percentage of 'conclusive dementia' among the free meal receivers was statistically higher than the people with stable lives and that of 'conclusively normal' was statistically lower in free meal receivers comparing with the people with stable lives. Moreover, socioeconomic factors like income, former job, marital status, housing and education, blood pressure and physical activity were significantly related to the subject's cognitive function.

  • This study was performed to investigate the effect of food and nutrition label education on the perception and utilization of nutrition labels on food packaging, and to suggest the importance and necessity of food and nutrition label education in the school curriculum. 811 junior-high school students participated in this study and completed self-administered questionnaires regarding general characteristics, and the perception and utilization of nutrition labels. Knowledge of nutrition labels was tested by 13 questions on the questionnaire. Data was analyzed (using SAS package program) based on the educational experience with nutrition labels. Significant differences in each variable were tested using the $X^2$-test and t-test. Students who had learned about the food and nutrition labeling system had more knowledge of nutrition labels and were more likely to check the nutrition label before purchasing food. In addition, students who had been educated about food and nutrition labels in the school curriculum had a significantly higher understanding and recognition of the nutrition label system. These results suggest that education concerning the food and nutrition label system increased the students' interest in nutrition labels and helped them choose healthy food. Therefore, it is necessary to include an education program about food and nutrition labels in the school curriculum to help students use label information and make healthy dietary choices.

  • The purpose of this study is to examine the food consumption behavior, the attitudes to food sanitation and the HACCP(?) knowledge of college students. Questionnaires were collected from 130 students in Daejeon University. The subjects mainly purchased their food at big discount stores and thought of expiration date as a most important factor considered. When purchasing the grocery, female students seldom took the convenience cooking into consideration, however, 10.3% of male students concerned it(p<0.05). In subjects' knowledge of food hygiene, the average score was 16.21 and in their performance(p<0.05)of it, the average score was 11.14. Especially in their knowledge of separate food storage, the average point was 5.03 and in their performance of it(p<0.05), the average point was 2.84. 72% of respondents had ever experienced food sanitation education. Of students who answered that food sanitation education was very helpful, the number of students living in university dormitory or boarding houses was as much again as that of students living in their own places. 82.2% of students did not know about HACCP system. They wanted to know 'the meaning(43%)', 'the necessity' (19.6%), 'the advantage(9.3%)' of HACCP and 'the kinds of food products adopting HACCP(28%)'.
