양육자의 식사지도유형과 아동의 푸드 리터러시의 관련성 (Association between Maternal Feeding Styles and the Food Literacy of Children)

  • This study sought to investigate the association between the food literacy (FL) of children and mothers, and the maternal feeding style. Study subjects were mothers (n=400) with children in the 4th to 6th grades of elementary school and who were the primary caregivers for their children (n=400). The responses to the Caregiver's Feeding Styles Questionnaire (CFSQ) were obtained from mothers. Both mothers and children completed the questionnaire for socio-demographics, dietary habits, health status, and food literacy. The high demanding/high responsive feeding style was associated with increased meal frequency for both mothers and children. The low demanding/low responsive feeding style was significantly associated with a lower mother's FL after accounting for confounding factors. The low demanding feeding styles were associated with the child's lower FL after adjustments for the age, sex, weight status of the child and the age, household income, and education of the mother. However, this association was not seen after making an additional adjustment for the mother's FL. These results suggest that the caregiver's feeding style may affect the dietary habits and FL of both mother and child.

헬스 리터러시 측정을 위한 공공기관 건강정보의 활용 가능성 탐색 (Exploring the Possibility of Using Public Institution's Health Message for Measuring Health Literacy)

  • Objectives: Improving public capability to obtain, understand, and use health information is important for decision-making and communication. This study attempts to measure adults' literacy of the information provided by a public health institution. Factors affecting different health literacy level are also investigated. The relation between public risk perception and health literacy is examined as well. Methods: A total of 800 korean adults were surveyed. To provide the participants health literacy questions, health messages of heavy metals released by KFDA as well as literacy questions developed by NIKL were used. A total of eight questions were developed to measure health literacy. The dimensions of risk perception proposed by Brewer et al.(2008) were modified to measure risk perception. Results: The average percentage of correct answer for all literacy questions was only 65.57%. Individuals at the older age, and with lower education/ income level were more likely to be low literate. In addition, health literacy was strongly associated with risk perception. Conclusions: Public literacy of health information is influenced by socio demographic factors. This study suggested a possibility that low health literacy may affect unrealistically high risk perception. Further studies with sophisticated methodologies to measure health literacy need to be developed.

Who has a high level of food literacy, and who does not?: a qualitative study of college students in South Korea

  • BACKGROUND/OBJECTIVES: Unhealthy food choices among young adults are common globally, and the incidence of chronic diseases, such as obesity, is rising. Food literacy (FL) is important for improving and maintaining individual health in a rapidly changing food environment and can form the basis for following a sustainable diet. Therefore, it is essential to improve FL among young adults, particularly college students, who are in the formative years of their lifelong food habits. This study examined the facilitators and barriers of FL and related dietary behavior among college students in South Korea. SUBJECTS/METHODS: This study recruited 25 college students with different residence types using convenience and snowball sampling. In-person, telephone, and video interviews were conducted from March to November 2021. The interview data were analyzed using framework analysis based on the socio-ecological model. RESULTS: At the individual level, prior good experiences with food were the most frequently mentioned facilitator. In contrast, the major barriers were a lack of knowledge, financial hardship, irregular schedules, and academic stress. At the interpersonal level, the influences of family and peers, such as early exposure to healthy eating habits and opportunities to have easy accessibility to farms and farming, are major facilitators, but the lack of a sense of community was the major barrier. At the environmental level, the major barriers were unfavorable food environments at home and in neighborhoods, such as the absence of kitchens in housing and large packaging of produce at markets. CONCLUSIONS: Many factors affected the students' FL and related healthy eating practices. These findings suggest that a campus-based FL program should be developed by reflecting on these facilitators and barriers.

Level of happiness and its association with food literacy among Seoul citizens: results from Seoul Food Survey 2021

  • BACKGROUND/OBJECTIVES: Happiness is an important factor in life, and food literacy (FL) has been emphasized as a core concept for a happy and healthy life. This study examined the level of happiness of Seoul citizens according to their sociodemographic factors and their association with FL. SUBJECTS/METHODS: This study used the data from the Seoul Food Survey, a cross-sectional study conducted on 4,039 Seoul citizens from September to October 2021. FL was measured using a validated questionnaire consisting of 33 items from 3 sub-domains: 14 items in the nutrition and safety domain, 8 items in the cultural and relational domain, and 11 items in the socio-ecological domain. Statistical analysis involved descriptive statistics and multivariate regression analysis. RESULTS: Various sociodemographic factors, such as household income, subjective health status, and food insecurity, were found to be associated with the level of happiness. The level of FL was also associated with the happiness scores. After adjusting for variables associated with happiness, the participants with the highest quartile FL scores were 7.32 times more likely to respond that they were happy than those with the lowest FL score. Three FL domains and total FL showed linear increases in overall happiness after controlling for subjective health status and sociodemographic factors (P < 0.001). CONCLUSIONS: After adjusting for the related covariates, higher levels of FL were associated with higher scores in happiness. Based on this study, it would be meaningful to evaluate ways to intervene in FL to improve the level of happiness among the general population.

Development of a campus-based intervention program to strengthen food literacy among university students: A qualitative formative study

  • Objectives: This study aimed to develop a campus-based intervention program to enhance food literacy (FL) among university students. Methods: In the initial phase, we conducted a literature review of FL intervention studies and held in-depth interviews with university students to identify facilitators and barriers to improving and practicing FL. Expert counseling sessions were conducted with nutrition education, marketing, and service design professionals. The results of this phase led to the creation of an initial curriculum draft. In the second phase, a follow-up survey was conducted with young adults to assess the acceptability of the developed curriculum. After the follow-up survey, additional meetings were conducted with the aforementioned experts, and the curriculum was further refined based on their input. Results: An 11-week FL intervention program was devised using constructs from the Social Cognitive Theory. The weekly curriculum consisted of 90-min theory-based and 90-min hands-on experience sessions. Three primary aspects of FL were covered: nutrition and food safety, cultural and relational dimensions, and socio-ecological aspects. Program highlights included cooking sessions for crafting traditional Korean desserts, lectures on animal welfare, insights into zero-waste practices, and communal eating experiences. Based on the study team's previous research, the program also addressed mindful eating, helping participants understand the relationship with their eating habits, and providing strategies to manage negative emotions without resorting to food. Yoga sessions and local farm visits were incorporated into the curriculum to promote holistic well-being. Conclusions: This study elucidated the comprehensive process of creating a campus-based curriculum to enhance FL among university students, a group particularly susceptible to problematic eating behaviors and low FL levels. The developed program can serve as a blueprint for adaptation to other campuses seeking to bolster students' FL.

비판적 리터러시를 통한 시민성 함양 가정과 교육과정 개발: 중학교 주생활 영역을 중심으로 (Development of Citizenship Promoting Home Economics Education Curriculum through Critical Literacy: Focusing on Housing Area of Middle School)

  • 본 연구는 시민성 교육의 일환으로서 비판적 리터러시 역량을 향상시킬 수 있는 주생활 교육과정을 개발하는 것을 목적으로 한다. 이를 위해 비판적 리터러시 관점에서 현행 2015 개정 가정과 교육과정 주생활 영역의 내용 체계와 성취기준 및 교과서를 분석하였고, Laster(1986)의 비판과학 관점의 교육과정 개발 과정을 적용, 미국 위스콘신 주의 식생활 교사용 지도서 "A Teacher's guide : Family, Food and Society"(Staaland & Storm, 1996)을 참고하여 주생활 교수·학습지도안을 개발하였다. 본 연구의 결과를 요약하면 다음과 같다. 첫째, 교과 목표 및 주생활 영역 성취기준, 학습요소, 평가방법에서는 비판적 리터러시 내용이 포함될 수 있는 실천적 문제해결 교육과정으로 구성되어 있으나, 교수학습방법에서는 실천적 추론과 비판적 사고 기술이 포함되어 있지 않았다. 또한, 3개의 교과서 주생활 영역의 텍스트를 분석한 결과, 대부분 현재 문화에 적응, 대처하는 내용으로 기술되었고 비판적 해석과 사회행동에까지 이를 수 있는 문제 제기나 사회적 이슈가 거의 없었다. 둘째, 현행 교육과정과 교과서를 분석한 결과를 바탕으로 주생활 교육과정을 개발한 결과, 주생활의 지속적인 관심사, 가치를 둔 목표, 학습내용선정 및 조직, 그리고 총 7개 모듈로 된 13차시 교수·학습지도안과 읽기 자료, 학습지, 영상자료 등 총 학습자료 26개를 개발하였다. 본 연구결과를 토대로, 차기교육과정과 교과서에서 비판적 리터러시를 활용할 수 있는 주생활 관련 사회적 이슈와 다양한 계층의 주생활 모습을 다루어야 하며, 학생들이 실천적 추론과 비판적 사고 등의 모범이 되는 교사를 지원하는 교사공동체 및 연수가 운영되어야 할 것이다.

젊은 성인의 영양정보이해력 평가도구 개발 및 타당성 검증 (Development and validation of a nutrition literacy assessment tool for young adults)

  • 본 연구는 젊은 성인을 대상으로 영양정보이해력을 평가할 수 있는 측정도구를 개발하기 위해 수행되었다. 영양정보이해력 평가를 위한 예비문항으로서 우선 7개 영역 65문항이 개발되었다. 작성된 예비문항을 영양전문가 5인에게 자문을 받아 불필요한 문항을 삭제하여 7개 영역 52문항으로 압축시켰다. 영양전문가 패널 20인을 대상으로 내용타당도 검증을 하였으며, Lawshe가 제안한 CVR값을 구하여 내용타당도 검증에 활용하였다. 평가도구 최종 항목으로서 총 6개 영역, 즉 식생활지침, 영양과 건강, 영양소, 다섯가지 식품군 (식품구성자전거), 영양표시, 질병 예방을 위한 영양관리를 포괄하는 30문항이 완성되었다. 이 평가도구를 이용하여 서울과 경인지역에 거주하는 성인 211명을 대상으로 신뢰도를 검증하기 위해 2주 간격으로 검사-재검사 (test-retest)를 실시하였으며, ICC값 (0.64-0.86)과 Cronbach's α 계수(0.83-0.90)를 산출한 결과 모두 높은 수준으로 나타났다. 따라서 본 연구를 통해 개발된 도구는 영양정보이해력을 평가할 수 있는 적합한 내용을 담고 있으며, 신뢰도 또한 매우 높은 것으로 검증되어, 젊은 성인의 다양한 수준의 영양정보이해력을 판별할 수 있을 것으로 본다. 또한 본 연구를 통해 개발된 평가도구는 지역사회 영양중재 프로그램 계획 시 그리고 만성질환의 예방관리를 위한 영양교육을 위해 대상자의 영양정보이해력을 파악하는 진단도구로 활용될 수 있을 것이다.

서울지역 여성소비자의 1회 제공량 기준 영양표시의 이용실태 (Understanding and Use of Nutrition Labeling based on One Serving Size Among Female Consumers in Seoul Area)

  • This study examined the understanding and use of information on nutrition labels based on one serving size among female consumers above the age of 20 in Seoul area. According to the survey, 69.9% of respondents were aware of the current system of nutrition labeling based on one serving size, and 51.8% of the respondents expressed their dissatisfaction with the system because the nutrition labels were difficult to understand or appeared unreliable. The nutrition label literacy of the consumers varied with respect to different packaging units. The respondents were likely to be less accurate in calculating the expected caloric intake when only portions of a multi-serving package were used. Initially 69.0% of respondents reported that they had read the nutrition label before purchasing a product but 91.9% of respondents said that they would check the label after learning how to read the label properly. It is very important to make consumers aware that the labels are very reliable sources of nutrition information. A public education campaign on the use of nutrition labels should focus on developing the consumers' ability and skills in using the label information when choosing foods.

불량식품 근절정책의 효과성 영향요인 분석 -소비자의 인식을 중심으로- (Determinants of Effectiveness in Food Safety Policy -Focusing on the Perception of Consumers-)

  • 본 연구의 목적은 불량식품 근절정책의 효과성에 영향을 미치는 요인들을 소비자들의 인식을 중심으로 분석하는 것이다. 이를 위해 문화체육관광부와 식품의약품안전처가 공동으로 조사한 '불량식품 근절 추진 공감도 여론조사' 데이터를 활용하여 서열로짓분석을 하였다. 그 분석 결과, 정책인지도는 불량식품 근절정책의 효과성에 양(+)의 효과를 나타내어, 정부가 추진하는 불량식품 근절정책을 잘 알고 있을수록 그 효과성을 높게 인식하였다. 다음으로 신뢰도 불량식품 근절정책의 효과성에 양(+)의 효과를 나타냈는데, 정부기관이 제공하는 정보를 더 신뢰할수록 그 정책의 효과성을 높게 인식하였다. 그리고 민감성은 불량식품 근절정책의 효과성에 음(-)의 효과를 나타내어 불량식품의 범위를 넓게 정의할수록 그 정책의 효과성을 낮게 인식하였다. 본 연구는 불량식품 근절정책의 효과성 인식을 높이기 위해서는 보다 적극적인 홍보와 정부신뢰 향상, 불량식품의 정의에 대한 사회적 합의가 필요함을 시사한다.

해외진출 외식기업의 시장고려 변수 선정 (Selecting Marketing Variables for the Overseas Expansion of a Foodservice Company)

  • The purpose of this study was to select market variables that a foodservice company should consider when expanding overseas and to regional market analysis by variables. Twenty-three different variables were derived from 17 previous studies. These were: population, urbanization rate, women employed, enrollment in tertiary education, gross domestic product, value added by service, total number of mobile cellular telephone subscribers, number of internet users, total Asian highway, inward foreign direct investment, total service imports, inflation rate, international tourist arrivals, energy use by industry, growth rates of the food consumer price index, access to urban sanitation, per capita total expenditure on health, male life expectancy at birth, adult literacy rate, contributing women family workers, passenger car, and country risk assessment. The selected variables were collected as secondary data from the UN, Asian Development Bank, International Bank for Reconstruction and Development, and Michigan State University.
