Analysis of Benzo[α]pyrene Content in Edible Oils from Korean Market (시중에 유통되는 식용유지 중 benzo[α]pyrene 함량 분석)

  • Concentrations of benzo[$\alpha$]pyrene in edible oils from Korean market were evaluated by high performance liquid chromatography. Benzo[$\alpha$]pyrene known of the carcinogenic polycyclic aromatic hydrocarbons(PAHs), has been found at variable concentrations in several foods. This is associated with several factors during the process including contaminated raw materials, exposure of environment, and procedure of process or cooking. The levels of benzo[$\alpha$]pyrene were ranged from 0.5 to 1.4 $\mu$g/kg in virgin olive oil. Benzo[$\alpha$]pyrene contents in refined and virgin olive oil, sesame oil, soybean oil, corn oil, sunflower oil, safflower oil, and processed oil were 0.6-1.0 $\mu$g/kg, 0.9-1.3 $\mu$g/kg, 0.6-3.3 $\mu$g/kg, 0.5-1.1 $\mu$g/kg, 1.2-1.7 $\mu$g/kg, 1.0-2.1 $\mu$g/kg, and 1.0-1.4 $\mu$g/kg, respectively.

  • In this paper, we implement a recipe recommendation system using ingredient harmonization analysis based on recipe data. The proposed system receives an image of a food ingredient purchase receipt to recommend ingredients and recipes to the user. Moreover, it performs preprocessing of the receipt images and text extraction using the OCR algorithm. The proposed system can recommend recipes based on the combined data of ingredients. It collects recipe data to calculate the combination for each food ingredient and extracts the food ingredients of the collected recipe as training data. And then, it acquires vector data by learning with a natural language processing algorithm. Moreover, it can recommend recipes based on ingredients with high similarity. Also, the proposed system can recommend recipes using replaceable ingredients to improve the accuracy of the result through preprocessing and postprocessing. For our evaluation, we created a random input dataset to evaluate the proposed recipe recommendation system's performance and calculated the accuracy for each algorithm. As a result of performance evaluation, the accuracy of the Word2Vec algorithm was the highest.

Standardization of Kinds of Ingredient in Chinese Cabbage Kimchi (배추김치의 재료 종류 표준화)

  • Kinds of ingredient of Chinese cabbage kimchi were standardized by the sensory evaluation, chemical properties, and functional properties of antimutagenic effect and inhibitory effect on the growth of AGS human gastric adenocarcinoma cells. The kinds of ingredient in control kimchi from the previous study, but Gueun salt instead of Chunil salt, exhibited better overall acceptability and less moldy smell and moldy flavor than any other kinds of ingredient added chinese cabbage kimchi in the taste. The kimchi showed chemical properties of properly fermented kimchi, pH 4.3 and acidity 0.72% and also contained 1.6 g% reducing sugar and $2.2{\times}10^8\;CFU/mL$ Leuconostoc sp. The juice of standardized kimchi with the above kinds of ingredient showed not only high antimutagenicity (74%) against aflatoxin $B_1$ in Salmonella typhimurium TA100 but also strong inhibitory effect (60%) on the growth of AGS human gastric adenocarcinoma cells in SRB assay. From the taste, chemical and functional properties, the standardized kinds of ingredient were Youngyang taeyangcho red pepper powder, anchovy juice, Gueun salt, Garak sin 1 ho Chinese cabbage.

Development of the Health Foods Containing the Extract from Pinus strobus Leave (솔잎(Pinus strobus) 추출물을 함유한 건강식품의 개발)

  • To evaluate the methanol extract from Pinus strobus leave as a possible ingredient of health food, the sensory analysis and an animal experiment were designed using cookie, candy or chewing gum containing the methanol extract. Cookie, candy and chewing gum which contained 0.4%, 0.25% and 0.3% of the methanol extract, respectively, were prepared by Haitai Confectionary CO.. Sensory analysis of the products was evaluated by hedonic scale. Our results indicated that the addition of the methanol extract to the products provides better sensory perception in hedonic score and higher preference number than control, especially in candy and cookie. In the animal experiment, the chickens fed diet containing 10% of the cookie powder for 2 weeks exhibited a reduction of the serum cholesterol level by 18%, compared with the chickens fed basal diet. This result suggested that the methanol extract from P. strobus leave contained a potential ingredient to reduce the concentration of serum cholesterol. Therefore, extract from Pinus strobus leaves can be used as an ingredient of health food.

  • Objectives : To examine food therapy for dermatological illnesses within their relationship with Pattern Identification and Treatment Discussion in "Sikryochanyo". Methods : Texts concerning dermatological conditions in "Sikryochanyo" were selected, followed by identifying each condition's pattern and treatment through examining each food ingredient's nature, flavor and main effect. Results : Each food ingredient such as eel, white sesame, duck meat, mallow, red beans, oyster, chicken meat, mung beans, female pig hooves, Chinese cabbage, venison, roe deer meat, kelp, seaweed, wheat, lappa fruit used to treat certain dermatological conditions could be categorized according to its properties in regulating Coldness, Heat, Deficiency, and Excessiveness of a given condition. Conclusions : When applying food ingredients to dermatological illnesses, Coldness, Heat, Deficiency, Excessiveness of the condition must be differentiated first for appropriate administration of food to the pattern that is being addressed.

Surimi for snacks: physicochemical and sensory properties of fried fish snacks prepared from surimi of different fish species

  • Surimi has been traditionally used as the main ingredient in gelling foods, such as imitation crab sticks. However, it can also be used to manufacture snacks without gelling properties. To assess the properties of surimi as a snack ingredient, we prepared fried fish snacks with different surimi grades of Alaska pollack (AP) and threadfin bream (TB) and evaluated their quality characteristics. AP had significantly higher protein and gel strength values than TB did. Regarding color, TB showed significantly lower lightness (L) values and higher redness (a) and yellowness (b) values than AP did, consistent with the appearance of a brown color. TB had significantly lower hardness values, higher thickness expansion, and higher oil content than AP did. Hardness was found to be positively correlated with gel strength and negatively correlated with oil content. In the micro-structure images, more blistering was formed in TB, indicating higher expansion and crispiness. In the sensory evaluation, TB showed higher overall sensory acceptance than AP did, which is the result of its high color content, crispiness, taste, and aroma. Principal component analysis of the electronic nose and tongue revealed that the samples were clearly separated. In particular, TB had more aromatic components than AP in the electronic tongue. Our findings indicate that gel strength, which determines the quality properties of surimi, does not need to be considered in snack manufacturing. In fact, surimi with low gel strength is a more suitable ingredient for snack manufacturing.

  • Food allergies are common and accidents occur annually. However, many people lack knowledge of the severity of allergies and food ingredients. Allergy-related applications currently on the market have problems such as providing information by relying only on certain certified products, food ingredients, and barcodes. This design plans a customized service application for food allergy patients. In this application, after extracting the text of the image using OCR technology, the food ingredients were read and displayed in large letters. In addition, if the user selects an ingredient that cannot be consumed through filtering technology, the restricted food is quickly and conveniently shown when searching for food ingredients. Finally, when scanning a barcode or searching for a product, food ingredient information is provided through barcode scanning and search engine technology that provides ingredient information of the product. Therefore, the purpose of this paper is to design an app in which users with food allergies can easily check food ingredients and avoid allergic reactions using databases and various information search methods.

The Content Analysis of the Korean Food Menu Naming Standard (한식 메뉴 명명 기준에 대한 내용분석)

  • This research analyzed the naming standard of Korea menu names divided into two groups, main dish and side dish. The research was conducted by contents analysis of selected literature articles and multiple-response cross tabulation analysis. The result demonstrated that the naming standard of Korea food consisted of the main ingredient name - sub ingredient name - main condiment name and main recipe. On the other hand, the menu name that is in native language or has a historical origin is exempt from this classification. Therefore, this study proposes a new standard, 'Hansik Menu Naming', to assist the food service industry and correct the names of unknown foreign dishes.

  • Among the many foods, it is hard to find perfect food with nutrition and functionality like beans. Korean food culture is the main ingredient of korean culture, kochujang, soybean paste, and soy sauce, and processed soybean tofu is the main ingredient. Soybean meets high quality protein and fat, and it has excellent results in prevention and treatment of all kinds of diseases. Soybean food is becoming a new generation health food. In countries where animal protein intake is low, soybean is used as a protein source instead of animal protein. Tofu, a processed food, is a complete food with high digestibility. In order to publicize the superiority of soybean nutritional value, Tofu processing and powder were investigated by observing the size, shape and characteristics of bean powder using domestic soybeans and imported soybean, and the variation of the amount of coagulant.
