Microbial Contamination Levels of Strawberries at Domestic Farms of South Korea

  • Foodborne illness due to the consumption of contaminated raw strawberries is a continuing food safety concern. This study investigated and evaluated contamination levels of bacteria on strawberries at farms stage to evaluate potential hazards associated with fresh strawberries. A total of 315 samples, 105 samples from 5 sampling sites (A to E) of 21 farms and 210 samples from 1 sampling site of 6 farms, was collected every month for four months and analyzed to enumerate aerobic bacterial counts, Coliforms/E. coli, Bacillus cereus and Staphylococcus aureus. In addition, the prevalence study of five pathogens (S. aureus, E. coli, E. coli O157:H7, Salmonella spp. and Listeria monocytogenes) was performed on each sample. Aerobic bacterial counts ranged from 0.48 to 6.36 Log CFU/g, with the highest bacterial cell counts recorded for D and E sites. Coliforms were detected in 71 samples (22.5%) with a minimum of 0.48 cfu/g and a maximum of more than 4 Log CFU/g. B. cereus was detected in 98 samples (31.1%) among total samples analyzed. S. aureus was detected in 2 samples with a minimum of 0.48 Log CFU/g and a maximum of 1.38 Log CFU/g. E. coli, E. coli O157:H7, Salmonella spp. and L. monocytogenes were not isolated from any of the samples. The microbial contamination levels of strawberries determined in this study may be used as the fundamental data for microbiological risk assessment.

Effects of the interaction between seaweed consumption and the polygenic risk score on inflammation in Korean adults (한국 성인의 해조류 섭취와 다유전자 위험 점수 간의 상호작용이 염증에 미치는 영향)

  • Introduction: Seaweed is a sustainable and underexplored source of bioactive compounds with potent anti-inflammatory activities. However, studies on the interaction between seaweed and genes on inflammation are limited. Purpose: We aimed to evaluate the relationships between seaweed consumption and the polygenic risk scores (PRS) and their interactions with high-sensitivity C-reactive protein (hs-CRP) levels. Methods: Information on seaweed consumption was collected using a food frequency questionnaire, which included laver, kelp, and sea mustard among the items consumed. A total of 31 hs-CRP-related single nucleotide polymorphisms (SNPs) were selected using genome-wide association studies and clumping analysis, and the individual PRS were calculated by weighting the effect size of each allele in the selected SNPs of 39,369 middle-aged (≥40 years) Koreans using the Korean Genome and Epidemiology Study (KoGES)-Health Examinees (HEXA) cohort data. To investigate the interaction between seaweed intake and the PRS on hs-CRP levels >1 mg/L, hazard ratios (HRs) and 95% confidence intervals (CIs) were assessed using multivariable Cox proportional hazards models. Results: During a mean follow-up period of 4.8 years, we recorded 436 patients with elevated hs-CRP levels. Women in the highest tertile of the PRS with the lowest quartile of seaweed intake had an increased incidence of elevated hs-CRP levels compared with women in the lowest tertile of the PRS with the lowest seaweed intake quartile (HR 2.34, 95% CI 1.23-4.45). No significant association was observed among the men. Conclusion: In conclusion, we identified a new interaction between the PRS, seaweed intake, and inflammation in Korean women, and this study suggests that the interaction between the identification of genetic predisposition and dietary seaweed intake may have an impact on determining the risk of developing hyperinflammation in the future.

Microbial Hazard Analysis of Astragalus membranaceus Bunge for the Good Agricultural Practices (농산물우수관리를 위한 황기(Astragalus membranaceus Bunge)의 미생물학적 위해요소 분석)

  • The objective of this study was to analyze the microbiological hazards of Astragalus membranaceus Bunge on the post-harvest processing. Samples from processing equipments (cleaner, water, cart, table, tray and packaging machine), personal hygiene (hand) and harvested crops (before washing, after washing, after sorting, and after drying) were collected from four farms (A, B, C, and D) located in Chungchengbuk-do, Korea. The samples were analyzed for sanitary indication bacteria and pathogenic bacteria. First, total aerobic bacteria and coliform in processing facilities were detected at the levels of 0.93~4.86 and 0.33~2.28 log CFU/$100cm^2$ and/mL respectively. In particular, microbial contamination in hand (5.43~6.11 and 2.52~4.12 log CFU/Hand) showed higher than processing equipments. Among the pathogenic bacteria, Bacillus cereus was detected at the levels of 0.33~2.41 log CFU/$100cm^2$, 1.48~3.27 log CFU/Hand and 0.67~3.65 log CFU/g in equipments, hands, and plants and Staphylococcus aureus were detected in cleaner, table, hand and harvested crops (before washing and after sorting) by qualitative test. Escherichia coli O157:H7, Listeria monocytogenes, and Salmonella spp. were not detected. These results indicated that personal hygiene and processing equipments should be managed to reduce the microbial contamination of A. membranaceus Bunge. Therefore, management system such as good agricultural practices (GAP) criteria is needed for hygienic agricultural products.

Investigation of Microbiological Safety of on-farm Produce in Korea (국내 생산단계 농산물의 미생물학적 안전성 조사)

  • Foodborne disease outbreaks associated with produces have been increasing in occurrence worldwide. This study investigated microbial contamination levels on thirteen kinds of agricultural products from farms stage to evaluate potential hazards associated with foodborne illness. A total of 1,820 samples were collected in major cultivating area from 2013 through 2015, and analyzed to enumerate aerobic bacterial counts, coliforms/E. coli, Bacillus cereus and Staphylococcus aureus. In addition, the prevalence study for four kinds of microorganisms (Escherichia coli, E. coli O157:H7, Salmonella spp. and Listeria monocytogenes) was performed on each sample. Aerobic bacterial counts ranged from 0.01 to 7.18 log CFU/g, with the highest bacterial cell counts recorded for watermelon. Coliforms were detected in 651 samples (35.8%) with a minimum of 0.01 log CFU/g and a maximum of more than 5 log CFU/g. B. cereus was detected in 169 samples (9.3%) ranging from < 0.01 to 2.48 log CFU/g among total samples analyzed. S. aureus was detected in 14 samples (0.7%) with a minimum of 0.01 log CFU/g and a maximum of 1.69 log CFU/g. E. coli was detected in 101 samples (5.5%) among 1,820 samples. E. coli O157:H7, Salmonella spp. and L. monocytogenes were not detected in any of the samples. The microbial contamination levels of several agricultural products determined in this study may be used as the fundamental data for microbiological risk assessment (MRA).

Hazards of Explosion and Ignition of Foods Dust (식료품 분진의 발화 및 폭발 위험성)

  • Severe dust explosions occurred frequently in food processing industries and explosion damage increase by flame propagation in pipes or plants. However there are few fire explosion data available due to various powder characteristics. We investigated the characteristics of ignition and explosion on sugar, cornstarch and flour dust with high frequency accidents and high social demand. The measurements showed the median diameter of 27.56, 14.76, $138.5{\mu}m$ and ignition temperature has been investigated using by thermo-gravimetric analysis (TGA) and differential scanning calorimeter (DSC). The maximum explosion pressure ($P_m$) and dust explosion index ($K_{st}$) of sugar, cornstarch and flour are 7.6, 7.6, 6.1 bar and 153, 133, 61 [$m{\cdot}bar/s$], respectively. The flame propagation time in duct was calculated in order to evaluate the damage increase due to flame propagation during dust explosion. The explosion hazard increase due to flame propagation was higher in the order of sugar, flour and cornstarch dust.

Development of an Hazard Analysis Critical Control Point Application Model for a Olive Flounder (Paralichthys olivaceus) Aquaculture Farm (넙치 양식장 위해요소중점관리기준(HACCP) 적용모델 개발)

  • We attempted to apply the HACCP system adopted in the food industry to a olive flounder (Paralichthys olivaceus) aquaculture farm to ensure the hygiene safety of farmed fish. In this study, HACCP system procedures, including HACCP team organization, critical point determination, establishment of standard limits etc., were established using Codex 12 procedures. To determine whether hazards were critical elements, we evaluated the likelihood and seriousness of each hazard element. The likelihood of residual medicine exceeding the acceptable limit in shipped fish products was demonstrated to be a critical hazard element. Management of the shipment stage was determined to be a critical control point (CCP). Checking the records for stock and release and maintaining a history of medicine use before shipping the fish were suggested as monitoring methods. The standards for acceptable residual medicine were set based on relevant laws and regulations, and then the limits were adapted and established for the CCP. An HACCP plan applicable to olive flounder farms was established.

Changes of egg Quality according to eggshell treatment and storage condition (계란의 난각 처리와 보관 방법에 따른 품질 변화)

  • Egg has been considered as one of the most important food sources in both nutritionally and economically. However, because the hazards of egg flow chains' complexity from producers to consumers and the insufficiency of cold chain systems in Korea are still remained, preventive measures for egg safety should be established. This experiment was carried out to investigate the changes of egg qualify during storage in order to find out the proper storage condition and eggshell treatment. Eggs were stored at cold condition $(5^{\circ}C,\;relative\;humidity;\;RH:\;65\pm3\%)$ and room Condition $(1st: Sep\; 6\~Nov\; 15,\;2001,\; 10\~30^{\circ}C,\;RH\;41\~86\%,\;2nd;\; Dec\;13,\;2001\~Feb\;21,\;2002,\;4\~23^{\circ}C,\;RH\;36\~89\%)$ after eggshell treatment (unwashed, washed and coated egg) during'10 weeks and examined weight loss and interior quality periodically. Weight loss was in decreasing order room washed > room unwashed > cold washed > cold unwashed > room coated > cold coated egg. And, Haugh unit was decreasing order room washed > room unwashed > room coated > cold washed > cold unwashed > cold coated egg. Our findings show that both coated eggs and refrigeration reduces the rate of decline in Haugh units and egg weight. And, washed eggs had lower average Haugh units and a higher weight loss than any of the eggshell treatment in both storage conditions. Conclusively, for washing eggshell, 150 ppm of sodium hypochlorite, regular exchange and temperature control of water should be consistent and also eggs should be dried immediately after washing. Also, national guidelines for temperature and moisture of storage places, transportation and expiration data should be established to keep quality and weight loss of eggs. Storage temperature that is a critical factor in the quality and safety of eggs should be kept under 12'c and labelling of expiration date should be obligatory.

Distribution of Organochlorines and PCB Congeners in Korean Adipose Tissue, Liver and Whole Blood (한국인 지방, 간장 및 혈액 중 유기염소제류 및 PCB congeners의 분포)

  • Persistent organochlorine pesticides and polychlorinated biphenyls (PCBs) have been used intensively in agriculture or industry for a long time. The occurrence of organochlorine pesticides and PCBs in the environment and subsequently in parts of the food chain, resulting in the intake of these compounds by man and animal. The measure of the levels of organochlorine pesticides and PCBs in tissues or blood of human populations are good markers in determining the extent of exposure and in the evaluating the hazards. So, most countriess have conducted initial monitoring programs to determine organochlorine pesticides and PCBs in human tissues. But a few report has been presented in Korea. In this study, $\alpha$-BHC, $\beta$-BHC, ${\gamma}$-BHC, $\delta$-BHC, p,p'-DDT, p,p'-DDD, p,p'-DDE, endrin, dieldein, aldrin and 7 marker PCBs (28, 52, 101, 118, 138, 153, 180) were determined in human blood, adipose tissue and liver tissues collected at autopsy of 10 men and 10 women, 13-79 year of age. Significant differences in the levels of organochlorine pesticides and PCBs between districts where they had lived were found in the following chemicals: total PCB in the blood : $\beta$-BHC, total BHC, p,p'-DDE and total DDT in the adipose tissue : p,p'-DDE, total DDT and PCB 118 in the liver. No significant difference was found in the levels of organochlorine pesticides and PCBs between sexes and ages. Though the levels of organochlorine pesticides and PCBs were relatively lower than that of other countries, we could know that organochlorine pesticides and PCBs have been widely distributed in Korean human body.

Assessment of Masks Used by Healthcare Workers: Development and Validation of a Mask Qualitative Assessment Tool (MQAT)

  • Background: Respiratory masks can provide healthcare workers with protection from biological hazards when they have good performance. There is a direct relationship between the visual specifications of a mask and its efficacy; thus, the aim of this study was to develop tools for qualitative assessment of the performance of masks used by healthcare workers. Methods: A mixed-methods design was used to develop a qualitative assessment tool for medical face masks (MFM) and particle filtering half masks (PFHM). The development of domains and items was undertaken using observation and interviews, the opinions of an expert panel, and a review of texts and international standards. The second phase evaluated the psychometric properties of tools. Finally, the validated Mask Qualitative Assessment Tools (MQAT) were used to assess six samples from 10 brands of the two types of masks. Results: MQAT-MFM and MQAT-PHFM shared 42 items across seven domains: "cleanliness," "design," "marking, labeling and packaging," "mask layers," "mask strap," "materials and construction," and "nose clip." MQAT-MFM included one additional item. MQAT-PHFM included another nine items associated with an eighth "Practical Performance" domain, and the valve version had another additional "Exhalation Valve" domain and six items. The evaluation indicated 80% compliance for MFM and 71% compliance for PFHM. "Marking, labeling and packaging" and "Layers" were associated with the least compliance in both types of masks and should be checked carefully for defining mask quality. Conclusion: MQAT can be used for immediate screening and initial assessment of MFM and PHFM through appearance, simple tools, and visual inspection.

Evaluating the impacts of extreme agricultural droughts under climate change in Hung-up watershed, South Korea

  • Climate change indicators, mainly frequent drought which has happened since the drought of 1994, 1995, and 2012 causing the devastating effect to the agricultural sector, and could be more disruptive given the context of climate change indicators by increasing the temperature and more variable and extreme precipitation. Changes in frequency, duration, and severity of droughts will have enormous impacts on agriculture production and water management. Since both the possibility of drought manifestation and substantial yield losses, we are propositioning an integrated method for evaluating past and future agriculture drought hazards that depend on models' simulations in the Hung-up watershed. to discuss the question of how climate change might influence the impact of extreme agriculture drought by assessing the potential changes in temporal trends of agriculture drought. we will calculate the temporal trends of future drought through drought indices Standardized Precipitation Evapotranspiration Index, Standardized Precipitation Index, and Palmer drought severity index by using observed data of (1991-2020) from Wonju meteorological station and projected climate change scenarios (2021-2100) of the Representative Concentration Pathways models (RCPs). expected results confirmed the frequency of extreme agricultural drought in the future projected to increase under all studied RCPs. at present 100 years drought is anticipated to happen since the result showing under RCP2.6 will occur every 24 years, RCP4.5 every 17 years, and RCPs8.5 every 7 years, and it would be double in the largest warming scenarios. On another side, the result shows unsupportable water management, could cause devastating consequences in both food production and water supply in extreme events. Because significant increases in the drought magnitude and severity like to be initiate at different time scales for each drought indicator. Based on the expected result that the evaluating the impacts of extreme agricultural droughts and recession could be used for the development of proactive drought risk management, policies for future water balance, prioritize sustainable strengthening and mitigation strategies.
