Epigenetic biomarkers: a step forward for understanding periodontitis

  • Periodontitis is a common oral disease that is characterized by infection and inflammation of the tooth supporting tissues. While its incidence is highly associated with outgrowth of the pathogenic microbiome, some patients show signs of predisposition and quickly fall into recurrence after treatment. Recent research using genetic associations of candidates as well as genome-wide analysis highlights that variations in genes related to the inflammatory response are associated with an increased risk of periodontitis. Intriguingly, some of the genes are regulated by epigenetic modifications, supposedly established and reprogrammed in response to environmental stimuli. In addition, the treatment with epigenetic drugs improves treatment of periodontitis in a mouse model. In this review, we highlight some of the recent progress identifying genetic factors associated with periodontitis and point to promising approaches in epigenetic research that may contribute to the understanding of molecular mechanisms involving different responses in individuals and the early detection of predispositions that may guide in future oral treatment and disease prevention.

Genetically Engineered Mouse Models for Drug Development and Preclinical Trials

  • Drug development and preclinical trials are challenging processes and more than 80% to 90% of drug candidates fail to gain approval from the United States Food and Drug Administration. Predictive and efficient tools are required to discover high quality targets and increase the probability of success in the process of new drug development. One such solution to the challenges faced in the development of new drugs and combination therapies is the use of low-cost and experimentally manageable in vivo animal models. Since the 1980's, scientists have been able to genetically modify the mouse genome by removing or replacing a specific gene, which has improved the identification and validation of target genes of interest. Now genetically engineered mouse models (GEMMs) are widely used and have proved to be a powerful tool in drug discovery processes. This review particularly covers recent fascinating technologies for drug discovery and preclinical trials, targeted transgenesis and RNAi mouse, including application and combination of inducible system. Improvements in technologies and the development of new GEMMs are expected to guide future applications of these models to drug discovery and preclinical trials.

Optimal Flow Design of High-Efficiency, Cold-Flow, and Large-size Heat Pump Dryer (히트펌프를 이용한 고효율 냉풍 대형 건조기 유동 최적설계)

  • Drying process, corresponding to a final process in the area of food engineering, requires a lot of heat energy. Thus, the energy efficiency is very important for dryers. Since the energy efficiency of heat pump dryers is much higher compared to that of electric dryers or other types of dryers, most of large-capacity dryers are adopting heat pump. In this study, shapes, positions and number of air-circulating fans, guide vanes, air inlet, outlet and top separator were varied for optimization of the flow of a large-capacity heat pump dryer. In addition, fans were modelled with performance curves and porous media were assumed for foods and heat exchangers. The simulation results were applied to the 12-ton dryer and the velocity distributions were experimentally examined. Finally, uniform drying in time was successfully accomplished through frozen pepper experiment.

  • 일반 소비자들은 유통기한이 경과된 식품을 부패, 변질된 식품으로 인식하여 식용이 가능한 유효기간이 남아 있음에도 불구하고 폐기하고 있는 실정이다. 환경부 조사에 따르면 유통기한 경과로 인해 폐기되고 있는 가공 식품에 관한 연간 폐기 비용은 1조 3천억으로 추산되며 이로 인한 경제적 가치 손실은 25조원이 넘는다. 이러한 현 실태를 개선하기 위한 유효기간 안내 시스템 도입이 시급하다. 본 연구에서는 합리적인 식품소비를 개선할수 있도록 기존 식품 바코드 정보와 식품 유통기한 정보를 결합하여 소비자에게 유효기간의 올바른 인식을 제고하고 식품정보 바코드를 활용하여 식품 유효기간 안내 앱 서비스 디자인을 제안하였다.

  • Successful diagnosis of a disease in food-producing animals depends in many times on proper collection and handling of specimens, as well as careful clinical observation and evaluation of the diseased animals. During the period required to complete the appropriate laboratory tests, an awareness of the potential problems of disease spread to animals at risk and the available palliative treatments is essential. Because most microbial-induced diseases in herds or flocks cannot be effectively treated once the problem is established, management through prevention and control of the disease must be instituted to offer the maximum protection to animals at risk. Thus, the course of disease management for infectious diseases is oftentimes a difficult judgment decision. This paper presents a brief general guide to specimen collection and laboratory methods used for diagnosis of diseases in production animals. (omitted)

  • Government Organization and Public Institution have been developed many kinds of agricultural information systems such as agricultural policy, cultivated technology, marketing, and trade so on since 2000. Farm management conditions are diverse and complex more and more. Therefore, farmer want to service the specific agricultural information. Farmer don't like to access many Web sites to retrieve agricultural informations. They hope to receive one-stop its service. Government Organization began to review its information in order to make them more customized agricultural information service. We came up with an effective plan and Service Standardization Code for integrating agricultural technology informations in 2009. We can guide to carry out an effective portal service of agricultural information because we have a good experience about integrating information and system. This paper suggested the service scheme of integrated agricultural information for improving accessibility its information to farmer.

  • The characteristics of preliminary founders has taken a part in deciding the structural elements of Franchise headquarters in the food service industry. Thus this study tries to show how preliminary founders have an impact on structural elements in franchise headquarters through demonstrative research on intention of contracting by characteristics of preliminary members. The result shows that the experience factor of a preliminary owner has significant relationships with the structural elements of headquarters. It was analyzed that the structural elements of franchise headquarters such as expert consulting, training support and use of sales guide influence contract intention. The characteristics of the preliminary founders have a major impact on investment, financing, expert consulting, educational support, and untilization of business guideline. The structural elements have a major impact on contract intention.

Development of STS Modules Reflecting Korean local Concerns and Their Evaluation Tools (한국의 지역적 특성을 고려한 STS 모듈 및 그 평가 방법의 개발)

  • This study aims to develop STS modules which consider the local concerns of Korean society and their authentic evaluation instruments. Their titles are as follows: 'Health-Aiding Foods, are they necessary?', 'Competition between Alien and Native Species', 'Living Lesson of Lake Shihwa', and 'Problems of food wastes; Would you like to throw them away, if they are money?' All of them deal with issues unique to Korean local situations. Each module consisted of two versions; a student worksheet and a teachers' guide. Students' activities were categorized into six processes such as group activities, investigation, discussion and presentation, experiments, field trip, and multiple intelligence activities. Various assessment tools and abilities for the decision-making in their STS classes were also included. In order to validate these modules, 24 teachers who have been teaching science, biology and environmental science in the secondary schools reviewed these modules and provided feedbacks about their validity and usefulness. We expect that the various rubrics included in each module will provide teachers creative and flexible assessment methods for students' understandings and their decision-making abilities toward the issues.

Development of a Predictive Model Describing the Growth of Staphylococcus aureus in Pyeonyuk marketed (시중 유통판매 중인 편육에서의 Staphylococcus aureus 성장예측모델 개발)

  • This study was performed to develope mathematical models for predicting growth kinetics of Staphylococcus aureus in the processed meat product, pyeonyuk. Growth patterns of S. aureus in pyeonyuk were determined at the storage temperatures of 4, 10, 20, and $37^{\circ}C$ respectively. The number of S. aureus in pyeonyuk increased at all the storage temperatures. The maximum specific growth rate (${\mu}_{max}$) and lag phase duration (LPD) values were calculated by Baranyi model. The ${\mu}_{max}$ values went up, while the LPD values decreased as the storage temperature increased from $4^{\circ}C$ to $37^{\circ}C$. Square root model and polynomial model were used to develop the secondary models for ${\mu}_{max}$ and LPD, respectively. Root Mean Square Error (RMSE) was used to evaluate the developed model and the fitness was determind to be 0.42. Therefore the developed predictive model was useful to predict the growth of S. aureus in pyeonyuk and it will help to prevent food-born disease by expanding for microbial sanitary management guide.

-Comparative Studies on Food Consumption Pattern between Korea and Japan -I. Annual change of nutrient intake- (한국과 일본의 식생활에 관한 연구 -I. 영양소 섭취량의 연차적 추이-)

  • Annual changes of nutrient intakes of Koreans and Japanese were compared on the basis of the data from the National Nutrition Survey which has been carried out annually in Korea (1969-1988) and in Japan (1950-1988) for the guide of the future food and nutrition policy. Intakes of all nutrients except carbohydrate and protein by Koreans were lower than those of Japanese in 1988. The intake of lipid by Koreans was less than one half of the intake by Japanese. The intake of protein has been increased to 79.2g in Korea and 91.6g in Japan, of which 49% and 52.6% were provided by the animal sources in Korea and Japan, respectively, in 1988. In terms of consumption of the energy nutrients, the percentage of carbohydrate has been decreased, while those of protein and lipid have been increased in both countries. In 1988, the ratios of energy intakes by carbohydrate, protein and lipid were 67 : 19 : 14 in Korea and 59 : 15 : 26 in Japan. Considering the desired ratio, 65 : 15 : 20, the intake of carbohydrate seems to be still high and that of lipid still low for Koreans. The food supply has been increased in both countries and the supply of animal food, oil and fat were greater in Japan than in Korea.
