국민영양조사를 이용한 지방에너지 섭취비율에 따른 식품섭취패턴과 식이관련인자의 비교연구 (Food Consumption Patterns and Other Diet Related Factors Among Three Groups of Households with Different Fat Energy Intakes)

  • With changing socio-economic environments, there have been some changes in the Korean diet. One of major changes is the increasing fat intake. Based on the current trend of increase, it is important to understand factors related to fat intake levels. Objective of this study was to find out the differences in food consumption patterns, demographic characteristics, and other socio-economic factors among three groups of households. The households were devided into three groups by percentage of fat energy intake to total energy intake such as less than 15%(Group 1), from 15% to 25%(Group 2), and more than 25% (Group 3). Among 1, 987 households, the numbers in Group 1, Group 2 and Group 3 were 792(39.6%), 902(45.4%), and 293(15.1%), respectively. The mean size of family was 3.44 person per households for total survey household, 3.42 for Group 1, 3.54 for Group 2, and 3.21 for Group 3. More than 60% of families living in the rural area belonged to Group 1(p<0.05). Group 3 had most educated food preparers and more income than other groups(p<0.05). Group 3 showed higher intake of all nutrient analyzed except carbohydrate (p<0.05). Other than calcium and vitamin A for Group 1, and vitamin A for Group 1, and vitamin A for Group 2, all nutrient intake analyzed for three groups were more than 75% of Korean recommended dietary alowances. Mean fat intakes for Group 1, Group 2, and group 3 had highest amount of intake for all food groups. According to food group analysis, Group 3 had highest amount of intake for all food groups except vegetables. Group 3 consumed more than 10 times of meats compared to Group 1. Group 3 had more dishes prepared by baking, deep-fryng, stir-frying, and pan-frying other two groups. Processed foods were used most frequently in Group 3. Other diet and related factors were analyzed also. These results showed that the amount of fat consumed by Korean households varies widely. Households with high fat energy intake had tendency to reside in the largy city, and to have heigher education level and more income than other groups. They eat less vegetables, use more cooking methods using oils, and use more processed foods. To ensure a proper intake of fat, there should be two separate ways of approach for high fat energy group and low fat energy group, since they are different in many ways.

학교급식이 아동의 우식성 간식품 취급에 미치는 영향에 관한 연구 (A Study on the Influence of School Lunch Program on the Cariogenic Snack Food Intake of School Chilldren)

  • The objective of school lunch program is make a student to understand the basic knowledge on the diet through improved food patterns. Diet is an important factor in the development of dental caries. Generally, snack foods contain much sugar and cause dental caries to children. The diet education in the school lunch program should involve the control of snack food intake. In this study, the anlysis of influence of school lunch program on the cariogenic snack food intake of school children was carried out. The questionarie was given to 1,441 sixth-grade children of 5 school lunch group and 1,443 sixth-grade children of 5 non-school lunch group in Pusan on the intake of snack foods and toothbrushing after meals. Its were as follows : 1. No differences were observed snack food intake per day between school lunch group and non-school lunch group. 2. The snack food intake frequency at home in school lunch group was more frequent than that of non-school lunch group. However, in school, the result was reverse. 3. No difference was observed the frequency between school lunch group on the intake of cariogenic, foods, detergent foods, protective foods, cariogenic foods alone and cariogenic and detergent foods between meals. 4. The frequency of toothbrushing per day and the ratio of toothbrushing after meals in school lunch group was a little higher than that of non-school lunch group. 5. No difference was observed on the ratio of toothbrushing after snack food intake between school lunch group and non-school lunch group. 6. The influence of school lunch program on the cariogenic food intake in school children was little significant for its goodness. 7. The improvement of education on snack food take and toothbrushing after meals to shool children was recommended.

식이섭취조사와 소변분석을 통한 부산지역 학령전 아동의 리보플라빈영양상태에 관한 연구 (Riboflavin Nutritional Status of Preschool Children in Busan Assessed by Dietary Intake and Urinary Excretion)

  • To assess riboflavin status by dietary intake and urinary excretion of preschool children in Busan and to evaluate the relationship of intakes of food and nutrient with urinary riboflavin excretion, riboflavin food frequencies of 40 common foods affecting intakes of riboflavin by food fequency method, nutrient intake by 24hr recall and 24hr urinary riboflavin excretion were measured with 97 preschool children. The mean riboflavin intake was 0.90 mg and above RDA. Dairy group was the primary source of riboflavin intake and provided 44.8% of the total daily riboflavin intake. The mean urinary riboflavin excretion and riboflavin excretion per gram of creatinine were 395.21$\mu\textrm{g}$ and 2110.41$\mu\textrm{g}$ respectively, The mean riboflavin intake (p<0.01, p<0.01), riboflavin density (p <0.001, p<0.001) and urinary riboflavin excretion per gram of creatinine (p<0.05, p<0.05) were significantly low with the two patterns of food group intake where dairy group was omitted (GMVFDS = 111101, consuming no dairy group and GMVFDS=l11001, consuming no fruit and dairy groups). On the basis of urinary riboflavin excretion per gram of creatinine, 14.3% of subjects in the group aged 1 to 3 and 18.2% of subjects in the group aged 4 to 6 were at risk of deficiency respectively. The urinary riboflavin excretion per gram of creatinine showed positive significant correlations with usual intakes of riboflavin from food groups of dairy (p<0.05), meat (p<0.05) and animal (p<0.05). So nutritional education is needed in order to consume dairy food group daily and to increase usual intake of animal food group including meat.(Korean J Nutrition 35(9) : 970~981, 2002)

성인 남자의 혈청지질 유형 별 일반환경 및 식이요인 비교분석 (A Comparative Analysis on the Environmental and Dietary Factors in Korean Adult Males Classified by Serum Lipid Profiles)

  • The purpose of this study was to investigate the distribution patterns of serum triglyceride and cholesterol levels and the influence of environmental and dietary factors in 201 healthy male subjects. The subjects were found to be 53.7% for the normal, 15.4% for the TC, 17.4% for TG and 13.5% for TC.TG group, respectively. Among general characteristics, smoking significantly affected serum lipid levels of subjects (p < 0.05). Among anthropometric factors, body weight, BMI and PIBW significantly influenced the blood lipid patterns. Body weight of TG group was significantly higher than that of normal group (p < 0.05). BMI and PIBW of TG group and TC.TG group were significantly higher than those of normal group (p < 0.05) . In addition, diastolic blood pressure of TG group was significantly higher than that of normal group (p < 0.05). For the food intake, average intake of fruit was significantly higher in normal group than that of TG group (p < 0.05). For nutrient intake, calcium intake was significantly higher in TC group than those of normal and TC.TG group (p <0.05). Intakes of vitamin $B_2$ and C were significantly higher in TC group than those of in TG group (p < 0.05). Serum HDL-cholesterol level was negatively related to meat, poultry, and their products (p <0.05), but serum total cholesterol level positively related to animal lipids (p < 0.05). The results of this study suggest that it is crucial for maintaining adequate serum lipid levels to reduce smoking, blood pressure and to lose body weight. As far as food intake concerned, fruit intake was important in maintaining serum triglyceride level normal, while animal food intake affected serum total cholesterol level adversely. 식품 섭취의 다양성에 따른 중소도시 노인의 영양 및 식행동, 건강상태에 관한 연구 (A Study on Nutrient Intake, Food Behavior and Health Conditions according to Food Intake Diversity in the Elderly in a Local City)

  • This survey was carried out to study the difference of nutrient intake, food behavior and health condition according to food intake diversity in the elderly(age 65 year over and 74 year under) in a local city. A diet survey with one day 24-recall method was used for 216 subjects(65 male & 151 female). Based on a food intake diversity examination, including an evaluation of KDDS(Korean's Dietary Diversity Score ; counts the number of food groups consumed daily from total five food groups(cereal, meat, vegetable, dairy, and oil groups)), Meal Balance(apply the KDDS at breakfast, lunch and dinner), and DVS(Dietary Variety Score ; total number of foods consumed), subjects were clustered according to food intake diversity. Food intake diversity patterns of male and female clusters were classified each into threes(Male-low group(24.6%), middle group(33.8%), and high group(41.5%)/Female low group(41.7%) middle group(37.1%), and high group(21.2%). The averages of KDDS, Meal Balance and DVS were 3.0, 7.5, 14.8 in the male middle group, and 4.5, 10.2, 25.7 in the male high group, 2.7, 6.3, 14.3 in the female low group, 4.0, 8.6, 18.0 in the female middle group, and 4.5, 10.5, 25.7 in the female high group respectively. The average dairy intake of nutrients below the RDA were energy, protein, Ca, Fe, Vitamin A, Vitamin B$_2$and niacin in the male low group, energy, protein, Ca, Fe, Vitamin A, Vitamin B$_2$in the male middle group and energy, Ca, Vitamin B$_2$in the male high group but a little. Also the female low group had intakes of all nutrients except Vitamin C, the middle group had intakes of energy, protein, Ca, Fe, Vitamin A, Vitamin B$_2$, and the female high group had intakes of energy, Ca, Vitamin A below the RDA respectively. Food intake diversity increasing, nutrient intake, food behavior and health condition proved to be good. This study explored the usefulness of cluster analysis in identifying food intake diversity of three groups of the elderly in relation to their nutrient intake, food behavior and health conditions.

A Study on the Relationship between Snack Sugar Intake and Dietary Diversity in Elementary School Students

  • In this study, sixth grade school children in the Guri area were surveyed via questionnaire regarding their sociodemographic characteristics, snacking patterns, and intakes of different food groups and sugared snacks. Students with employed mothers had more frequent snacking events and were more dependent on store-purchased snacks compared to those having an unemployed mother. A high consumption of snack sugar was associated with a higher dietary diversity score. There was a positive relationship between snack sugar intake and the intakes of meat and dairy products and foods in the oil and nut group, respectively. A high snack sugar intake had a negative effect on fruit intake. Specific nutrient intake data will be required before conclusions can be made on whether nutrient imbalances are a concern in elementary school children having sweet snacks. Yet, the current data indicate that an increased snack sugar intake can decrease fruit intake, which could result in certain nutrient deficits. Specific dietary guidance may be necessary to address the snacking habits of elementary school children.

중등도 갱년기 증상을 가진 폐경 후 여성에서 식품군별 섭취패턴에 따른 영양소 섭취상태, 식사의 질 및 삶의 질에 관한 연구 (Nutritional Status, Quality of Diet and Quality of Life in Postmenopausal Women with Mild Climacteric Symptoms Based on Food Group Intake Patterns)

  • This study was conducted to examine the nutritional status, quality of diet and quality of life in postmenopausal women with mild climacteric symptoms based on their food group intake patterns. The data for nutritional status were obtained using 3-day records. Quality of diet was assessed by INQ, NAR, MAR, DDS, DVS, DQI-I. Climacteric symptoms were analyzed by the questionnaire of Kupperman's index and MENoL. The subjects were classified into the five groups, GMVDF, GMVdF, GMVDf, GMVdf, GmVDF according to their food group intake patterns. Analysis of nutrient intakes showed that the GMVDF group took significantly higher levels of kcal, carbohydrate, protein, fat, vitamin A, thiamin, riboflavin, folate, vitamin C, vitamin E, calcium, phosphorous, sodium, iron, zinc and fiber than GMVdf group did (p < 0.05). INQ of Ca and Fe appeared to be higher in GMVDF than in GMVdf groups (p < 0.05). Analysis of NARs showed that missing milk groups took lower riboflavin, Ca and P than other groups did as the same result with MAR (p < 0.05). Analysis of DDS and DQI showed that GMVdf group had the lowest quality of diet (p < 0.05); however, no difference was found on DVS. The GMVdf group showed the worst climacteric symptoms compared with those of the other groups (p < 0.05). However, we couldn't observe any differences in menopause-specific quality of life among the groups. In conclusion, it would be beneficial to meet all five food groups to increase the quality of diet and to reduce the climacteric symptoms in postmenopausal women.

Gender and age group differences in nutrition intake and dietary quality of Korean adults eating alone: based on Korean National Health and Nutrition Examination Survey Data, 2013-2016

  • BACKGROUND/OBJECTIVES: This study investigated gender and age differences in nutrient intake and dietary quality of people eating alone. SUBJECTS/METHODS: From Korean National Health and Nutrition Examination Survey 2013-2016 data, 2,305 adults aged 20 years and older that ate meals alone were included in this study. Their energy and nutrients intakes, as well as their nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ) were analyzed. Food group consumption pattern, dietary variety score (DVS), dietary diversity score (DDS) were also analyzed. All data were compared among gender and age groups. RESULTS: Men consumed more energy and nutrients than women, except for vitamin C, and the NARs showed similar gender differences. The INQs of 4 nutrients (calcium, vitamin A, vitamin C, and riboflavin) were lower than 1.0 in men, whereas only the calcium INQ was lower than 1.0 in women. Men had a lower DDS (3.6) than women (3.9) (P < 0.001) and had more 'undesirable' food group consumption patterns than women (P < 0.001). The intakes of calcium, vitamin A, and vitamin C were relatively low in the young-aged group (INQs less than 1.0). In the old-aged group, the MAR level was relatively low, and the INQs of calcium, riboflavin, and niacin were below 1.0. The old-aged group consumed more menu items, but their DVS was the lowest. CONCLUSIONS: Compared to women, the dietary quality and food diversity among men were poorer. There were poorer quality and diversity patterns in the young-aged group compared to those of the older groups. An overall low intake of nutrients and the low nutrient density of meals were the main dietary problems among the old-aged group who eat alone. Therefore, men, particularly young- and old-aged, need to be prioritized in nutritional policies directed toward those who eat alone.

1998년도 국민건강영양조사자료를 이용한 한국인의 경제수준별 식품섭취현황 (Food Intake Patterns of Koreans by the Economic Status Using 1998 Korean National Health Examination Nutrition Survey)

  • The objective of this study was to investigate the differences in food intake patterns by the economic status. Data from the 1998 Korean National Health and Nutrition Survey were used. Using the poverty line based on the 1998 Korean minimum cost of living, the subjects (n = 10400) were classified into high class (36.1%), middle class (40.7%) and low class (23.1%). Mean intakes for other food groups except grains, potatoes and vegetables became higher as the eco-nomic levels were going up. By the family size, it was found that intakes of grains and fishes were different (p<0.05). By the economic status, intakes of fruits (p<0.05), meats (p<0.05) and fishes (p<0.01) were different. There were no significant differences in consumed types of food by the economic status. Rice was the most prevalent food in all clas-ses and its intakes increased as the economic status was going down. In the dietary patterns of main food group (GMDVF: Grain, Meats, Dairy, Vegetable and Fruit), the pattern except dairy (11011) revealed the highest proportion in high-middle class while the patterns without dairy and fruit food groups (11010) had the highest proportion in low class. The propor-tions of subjects with the low dietary diversity score (DDS) increased as economic status was going down (p<0.01). The food groups that most people do not consume were the dairy and fruit group. Proportions of people who missed one or more group increased as economic status was going down. The high dietary variety score (DVS) also was linked to a high score on the DDS and high class (p<0.01). Thus the intakes of the dairy and fruits product should be increased in all classes. The low class especially had worse quality of food intakes pattern than that of the high or middle class. The nutrition policy and education programs need to be established according to the economic status.
