Variations of Serving Sizes and Composition of Manufactured Milk and Soymilk Products and Implications for Dietary Assessment (시판되는 우유와 두유 제품의 제공량 및 성분의 다양성이 식이섭취조사에 미치는 영향)

  • Accuracy of dietary assessment depends on correct estimation of quantity as well as correct data on composition of the products. Milk and soymilk were considered quite homogeneous in items of package size and composition. One serving size of fluid milk and soymilk is considered 200 mL but there are products with different amounts on the market. This study was conducted to investigate variations of amounts and composition of fluid milk and soymilk products of one portion siz on Korean market. Twenty-nine milk products were purchased and categorized into 8 groups-regular, low-fat, skim, chocolate, strawberry-flavored, banana-flavored, and black soybean-added. Sixteen fluid soymilk products were purchased and categorized into 4 groups-regular, infant, black sesame or black soybean added and others. Actual volume of each product was measured by mass cylinder and compositions of major nutrients on the package were compared to the values in the most widely used nutrient DB in Korea. Amounts of milk specified on the package of purchased products were 182.3-318.5 ml, the largest being banana-flavored milk. Amounts of soy milk were 184.3-240.5 mL, the largest being regular soymilk. Measured amount of each products were close to the amount on the package (<5%). Contents of macronutrients on the package were different from the food composition table in several products. The amounts of calcium varied greatly among the products due to the popularity of adding calcium to milk and soymilk products recently. These variations in the amount and contents of major nutrients in milk and soymilk products can lead to considerable error to the results of dietary assessment unless the amount and the composition of each product are regularly updated in the food composition table whenever the new products are introduced in the market.

  • This study analyzed the nutritional composition (proximate composition, total dietary fiber, calories, minerals, fatty acids, and amino acids) of 10 noodle products (tteok ramyun, jjamppong ramyun, kimchi ramyun, instant udon, cup ramyun, jajangmyun, bibimmyun, cream spaghetti, ssalguksu, and milmyun), which account for 85% of the cumulative intake of one or more key nutrients, using data from the 7th Korea National Health and Nutrition Examination Survey. The moisture contents of bibimmyun, jajangmyun, and cream spaghetti were lower than those of the other noodle products, whereas the crude fat, crude protein, carbohydrate, and calorie contents were the highest. Cream spaghetti had the highest mineral, fatty acid, and amino acid contents, followed by bibimmyun and jajangmyun. Ssalguksu had the lowest contents of most nutrients. These data could be used to populate a food composition database, which can provide consumers with the nutritional information about frequently consumed noodle products.

  • The proximate composition and various specific components of Antarctic krill Euphausia superba, in the catch season between March and August were investigated. Frozen krill were freeze-dried and milled. The proximate composition comprised water, proteins, fats, ash, fatty acids, and amino acids, while the specific components were vitamins, minerals, nucleotides, betaine, and astaxanthin. The moisture content of the krill ranged from 77 to 80%, with the highest value in June, and the ash content was between 12 and 13%. The protein content was lowest in May, and the fat content was 18-19%, with the highest value in March. The amino acid content varied according to the season: taurine and glycine were highest in August; ${\beta}$-alanine was higher in April and May; and arginine, ornithine, and lysine were highest in March. The unsaturated fat content was ~50% and omega-3 fatty acids were highest in June. Oil-soluble vitamins A and E were highest in March, and the water-soluble vitamin content was less than that of oil-soluble vitamins. The mineral content was highest in June, and the most abundant mineral was sodium at 235.60 mg/100 g krill. The content of other minerals was lowest (2.94 mg/100 g) in April, except for lead. The nucleotide content was highest in July, while the betaine content was highest in April and lowest in June. The astaxanthin content was highest in May and ranged from 6 to 10 ppm in other months.

Assessment of Body Condition in Amphibians Using Radiography: Relationship between Bone Mineral Density and Food Resource Availability (방사선 촬영 기법을 이용한 양서류 신체상태 평가: 골밀도와 먹이 자원 가용성 간의 상관 관계)

  • We measured the body composition, including bone mineral density (BMD) and food resource availability using dual energy X-ray absorptiometry and the carbon and nitrogen stable isotope ratios of body condition of 4 anuran species(Hyla japonica, Glandirana rugosa, Pelophylax nigromaculatus, Lithobates catesbeianus) in South Korea. Additionally, the carbon and nitrogen stable isotope ratios were employed to determine the food resource availability of anurans. We figured out the relationship between the body composition, including BMDs and food resource availability. The body composition and BMDs did not differ between male and female while there was difference among the species. Food resource availability and BMDs were the highest in L. catesbeianus, the lowest in H. japonica. BMDs tended to increase with higher food resource availability. Body composition and BMDs, which represent the body condition of an individual, can be used as an ecological indicator to assess the stability of the habitat of anurans.

A Comparison of Health-Related Habits, Food Preference and Body Composition according to Gender and BMI of Community in Incheon Area (인천지역 주민들의 건강관련 생활습관과 식품선호도 및 체성분의 비교 연구)

  • The present study was designed to investigate health-related life habits, food preference, body composition for proper dietary habits, health promotion of communities in Incheon area. The effects of personal characteristics and health-related life habits such as gender, age, having breakfast, smoking, drinking, and exercise were analyzed using a surveying. 961 community subjects (262 males and 699 females) were investigated using a questionnaire and Inbody. Data were analyzed by descriptive statistics, chi squared test, and one-way ANOVA (analysis of variation) with SPSS/WIN 21.0. The result of gender distribution showed there were 262 males and 699 females, and with respect to the effect of gender on health-related life habits, smoking, drinking, and exercise showed significant differences (p < 0.05), whereas having breakfast was not significantly difference (p>0.05). Therefore, the present provide evidence of a relationship between health-related life habits and gender. Regarding the effect of BMI on health-related life habits, exercise showed significant differences (p < 0.05), whereas smoking, drinking, and having breakfast were not significantly difference (p>0.05). Thus, the present study also provides evidence of a relationship between health-related life habits and BMI. Our analysis shows that food preference and body composition were significant different from health-related life habits such as smoking, drinking, exercise, and having breakfast (p < 0.05). Our analysis showed that body composition was significant differences from health related habits such as smoking, drinking, exercise, and breakfast (p < 0.05). In conclusion, the present study suggests that diet guidelines support and improve health promotion designed by communities.

Calorie, Mineral Content and Amino Acid Composition of Korean Rice (우리나라 쌀의 칼로리, 무기질 및 아미노산 함량)

  • Calorie, mineral content and amino acid composition of four japonica, seven $j{\times}indica$ and one waxy milled rice were analyzed. No significant differences in calorie, mineral content and amino acid composition were found between japonica and $j{\times}indica$ rice varieties. Only the variation of methionine among varieties was noticed. The most limiting amine acid of milled rices was lysine.

Web Expert System for Nutrition Counseling and Menu Management

  • This study was conducted to develop a web expert system for nutrition counseling and menu management. This program manipulates a food, dish and menu and search database that has been developed. Clients can select a recommended general and therapeutic menu using this system. The web expert system can analyze nutrients in menus and compare nutrient contents of menus with Korean Recommended Dietary Allowances. It can access the food, dish and menu database. The expert menu database can insert, store and generate the synthetic information of age, sex, and therapeutic purpose of disease. With investigation and analysis of the client's needs, the menu planning program on the internet has been continuously developed. This system consists of the database that reaches to the food composition, the dishes and the menu. Clients can search food composition and conditional food based on nutrient name and amounts. This system is able to draw up the food with its order in dish. The menu planning can be organized and nutrients analysis can be compared with Korea Recommended Allowance. This system is able to read the nutrient composition of the each food, the dish and the menu. The results of analysis is presented quickly and accurately. Therefore it can be used by not only usual people but also dietitians and nutritionists who take charge of making a menu and experts in the field of food and nutrition. It is expected that the web expert system can be useful of nutrition education, nutrition counseling and expert menu management.

A Study on the Current Situation and Needs for the Internet Program of the Nutrition Computing (인터넷 영양전산 프로그램의 현황과 요구도에 대한 조사연구)

  • This study was reviewed databases and outcomes of national/international off-line and on-line(Internet) nutrition softwares to identify the present conditions of nutrition softwares, and investigated user's needs and determine which component should be included in nutrition software. The most frequently used databases for the national programs were the food composition table provided from the National Rural Living Science Institution in Rural Development Administration and the food composition table and the nutrient contents of foods provided from the Korean Nutrition Society. For international programs, the food composition table from the USDA was commonly used. The analysed outcomes included the degree of obesity, nutrient analysis and nutrient intake compared with RDA, food intake from each by food group, food habits and the frequency of food consumption. As to the result of needs assessment for the Internet nutrition softwares, it was suggested that the needs of the Internet nutrition softwares were high because most of the respondents replied that 3-point('it is needed') or 4-point('it is necessary') on 4-points likert scale. As to the databases, the needs of 'food composition analysis' and 'the suggestion of the Korean RDA' were high. For the basic information for foods, the respondents replied that 'the classification of foods', 'foods codes', 'the amount of ingredients' and 'nutrient analysis' should be included. The needs of 'nutrient analysis of meal', 'diet therapy' and 'meal plan by caloric requirements' were high. As for utilizing the Internet meal planning programs, the respondents replied that 'it should be easy to use' most and demand for 'data saving and the saved data should be usable later' and 'meal planning education tools' were high. In conclusion, the Internet nutrition software that satisfies various needs of users should be developed for policy making that promote public health, nutritional care and self-supporting of foods.

Physicochemical and Functional Characterization of Blue-Shelled Eggs in Korea

  • The aim of this study was to compare the quality and physicochemical characteristics of blue-shelled eggs (BE) and conventional eggs (CE). Proximate composition, quality, pH value, shell color, collagen content, fatty acid composition, total cholesterol, ${\alpha}$-glucosidase inhibition activity, and antioxidation activity were determined. The proximate composition, general qualities, and pH values of CE and BE showed no significant differences, except in moisture composition, weight, and shell thickness. Moisture content and weight of BE were significantly lower than those of CE. However, shell thickness and weight of BE were higher than those of CE (p<0.05). Lightness of BE was significantly higher than that of CE (85.20 vs. 58.80), while redness ($a^*$) and yellowness ($b^*$) of BE were lower than those of CE ($a^*$: -4.75 vs. 14.20; $b*$: 10.45 vs. 30.63). The fatty acid [C18:1n7 (cis-vaccenic acid) and C18:3n6 (gamma-linolenic acid)] contents of BE were significantly higher than those of CE. The total cholesterol contents of BE and CE were similar. DPPH radical scavenging activity of BE was significantly higher than that of CE (40.78 vs. 35.35). Interestingly, ${\alpha}$-glucosidase inhibition activity of whole egg and egg yolk in BE (19.27 and 36.06) was significantly higher than that of whole egg and egg yolk in CE (13.95 and 32.46). This result indicated that BE could potentially be used as a functional food material. Further studies are required to evaluate the specific compounds that affect functional activity.

  • In this study, Artemisia capillaris, which has been used in oriental medicine and folks remedy, was investigated to characterize the nutritional composition (protein, lipid, ash, fiber, amino acids, fatty acids, Na, K, P, Mg, Ca and Fe) and effective substance (scopoletin). Artemisia capillaris has often been cited in medical literature for its medicinal effects. The Korean Food and Drug Administration allowed Artemisia capillaris as a food stuff and indicated as In-Jin-Sook. From the view point of the subjects who eat In-Jin-Sook products, most of them ingested it for a certain pharmacological efficacy rather than as a beverage or a food. Therefore, we need to develop functional foods using In-Jin-Sook. Artemisia capillaris was superior in protein, crude fiber, amino acid and fatty acid compositions to wild greens according to Korean Nutritional Composition Table. Also scopoletin, blown for blood vessel relaxation and hypotensive effect, was detected at the level of 326.13 $\mu\textrm{g}$/g. These results demonstrated that Artemisia capillaris has both pharmaceutical effects and balanced nutritional contents. Artemisia capillaris has sufficient values to use as a food stuff for functional foods.
