서울지역 성인의 식품.영양.건강 태도와 식품영양표시 활용실태 (Food/Nutrition Attitudes, Views and Practices of Adults in Seoul Area)

  • Food/nutrition related views, beliefs, attitudes, and behaviors were investigated for three hundred randomly selected men and women, aged 20-60 years, residing in Seoul metropolitan area. Food/nutrition views, attitudes, and beliefs were found to vary greatly between groups of different age, sex, education and income level. Adults of 20-35 years of age showed significantly less strong views about keeping traditional food habits, while exhibiting a significantly high level of acceptance towards the use of convenience foods as compared to the adults aged 36 years or older. Food safety was found to be a major concern to most of the subjects accounting 69.7% for pesticides residues in fresh produce items, 94.7% for food additives in processed food, and 56.3% for food poisoning in foods eaten outside of the home. Male adults aged 45 years or older showed a strong tendency to rely on a few promotional food products for the maintenance of their health and for them the development and implementation of a sensible feed nutritin/health education program including a way to avoid nutrition quackery might be beneficial. Eighty percent of the subjects were found to read food labels with higher rates shown among young adults and females. Due to the virtual absence of nutrition labeling however, the percentage of subjects who idicated that they are looking for the information on nutrient content was low (<10%) compared to the rates for other informations such as date of manufacture(80.2%), expiration data(55.8%), ingredients(40.9), and additives(40.9%). Ninety one percent of the subjects indicated that they would like to see the sources for nutrition label the nutritional value of the foods. The top five most frequently (68.3%), food packages(50.7%), and radio(43.3%). Health professionals such as physicians, nurses, and nutritionists/dietitians were utilized less frequently as sources of nutrition information than lay sources, with reported rate of only 38%, 22%, and 0.7%, respectively. These results collectively suggest that strategies are to be developed to provide accurate nutrition information to adults.

Psychosocial factors and eating behaviors according to the stages of change in nutrition management among elementary and middle school athletes

  • BACKGROUND/OBJECTIVES: This study examined the differences in psychosocial factors and eating behaviors by the stages of change (SOC) in nutrition management among elementary and middle school athletes. SUBJECTS/METHODS: Subjects were young athletes recruited from the athletic clubs of 10 organizations. Subjects responded to a survey questionnaire, and data on 167 athletes were analyzed. Subjects were grouped into the pre-action or action stage in nutrition management. The χ2 test, t-test, analysis of covariance, and correlation analysis were used in data analysis. RESULTS: Athletes in the action stage (62.3%) compared to the pre-action stage, showed a higher self-efficacy (P < 0.01), and felt more confidence in performing specific eating behaviors (P < 0.05 to P < 0.01). Those in the action stage had more favorable beliefs regarding nutrition (P < 0.001) and agreed less strongly on the specific misconceptions/disadvantages of nutrition (P < 0.01) than those in the pre-action stage. Eating behaviors (P < 0.001) and subscales of the eating behaviors (P < 0.05 to P < 0.01) also differed significantly by the SOC group. Place of eating dinner (P < 0.05) and the person who prepares dinner (P < 0.05) showed significant differences by the SOC group. The relationship of self-efficacy, beliefs regarding nutrition, and eating behaviors to the SOC differed by sports type. Beliefs for football athletes, self-efficacy, and beliefs for baseball athletes were correlated significantly with the SOC, whereas all 3 variables were related to the SOC for handball and other athletes. CONCLUSIONS: This study showed differences in psychosocial factors and eating behaviors between the pre-action and action stages. Nutrition education should include strategies to help young athletes modify their beliefs, mainly misconceptions/disadvantages of nutrition, increase self-efficacy, and adopt specific and desirable eating behaviors. Nutrition education might employ different strategies considering the sports type that student-athletes participate.

유아 대상 '채소와 과일, 유제품의 충분한 섭취'를 위한 영양교육 실시 및 효과 평가 (Implementation and Evaluation of Nutrition Education Programs Focusing on Increasing Vegetables, Fruits and Dairy Foods Consumption for Preschool Children)

  • The purpose of the study was to implement and evaluate a nutrition education program for preschool children. Applying the PRECEDE-PROCEED model, the nutrition education program was developed and focused on changing beliefs, increasing nutrition knowledge and consumption of vegetables & fruits (V/F) and dairy foods. Subjects were children attending a childcare center in Seoulwho were grouped into education (n = 33) and control group (n = 32). Education group received four sessions of nutrition education during 2011 fall. Both groups completed the questionnaire at pretest and posttest, measuring nutrition knowledge, beliefs, and preferences of V/F and eating behaviors. Compared to control group, education group made significant gains in total score of nutrition knowledge after the education (p < 0.05). In addition, the pretest-posttest changes in total score of beliefs regarding V/F consumption and eating behaviors were higher in the education group than in the control group (p < 0.05). Two groups were significantly different in the pretest-posttest changes in specific beliefs regarding the benefits of V/F consumption and some eating behavior. However, there were no changes in the preferences of vegetables or fruits between the two groups after the education. The consumption of V/F and dairy foods was not significantly different after the education. This study revealed that nutrition education for preschoolers was effective in improving nutrition knowledge and perceived benefits regarding V/F consumption and specific eating behavior. This study suggested that more intensive education is needed to induce changes in eating behaviors. This program can be used in nutrition education of children at the childcare centers or kindergartens.

서울 남자 직장인의 건강행위실천별 건강식품 섭취 행동 의도 및 영향 요인 (Health Food Intake and Behavioral Intentions to Take Health Food on Male Workers by Practiced Health Behavior in Seoul)

  • This study was conducted to search the health food intake behavioral intentions of male workers. The health-related behavior of 150 subjects were compared(smoke, alcohol drink, breakfast, BMI, sleep, exercise and health check). On the basis of the Theory of Planned Behavior, the factors health-food intake behavior were evaluated; there were normative beliefs, motivation for compliance, subjective norms, social influence factors, and barriers as perceived behavior control. The results were showed with five points by the Likert scale and Significance by t-test. The most frequently consumed health food was tea(3.40/4points) followed by healthy drinks(2.49/4). As behavioral beliefs, if consumption of 'nutritional supplements'(3.61/5) and 'fatigue recovery'(3.62/5) received the highest scores. As a result, the idea of 'nutritional supplements'(3.94/5) and 'fatigue recovery'(4.06/5) were the important aspects, but others were also positively evaluated. As a sub-factor of subjective norms on normative beliefs, The highest social groups to encourage consumption of health food were parents (3.93/5), and the lowest were doctors (3.02/5). The most influential people were doctors (3.67/5) and spouses (3.65/5). Barriers to consumption health food were side effects (1.09/5) and price (2.08/5). Taking Ginseng products and other processed foods (juice, honey, bamboo, etc.) were correlated with health concern (p<0.05). Taking traditional stamina foods was correlated with dietary habit recognition (p<0.05). Mineral intake was positively correlated with age. Healthy drinks was negative (p<0.05). Minerals and supplement consumption were correlated with the practice of healthy behavior (p<0.01).

Relationships among behavioral beliefs, past behaviors, attitudes and behavioral intentions toward healthy menu selection

  • BACKGROUND/OBJECTIVES: Obesity is a serious concern worldwide, for which the restaurant industry holds partial responsibility. This study was conducted to estimate restaurant consumers' intention to select healthy menu items and to examine the relationships among behavioral beliefs, past behaviors, attitudes and behavioral intentions, which are known to be major determinants of consumer behaviors. SUBJECTS/METHODS: An online, self-administered survey was distributed for data collection. The study sample consisted of customers who reported having visited casual dining restaurants in the last three months at the time of the survey. Structural equation modeling was used to verify the fit of the proposed research model. RESULTS: Structural equation modeling revealed that the proposed model supports the sequential, mediated (indirect) relationships among behavioral beliefs, past behaviors, attitudes and behavioral intentions toward healthy menu selection. CONCLUSION: This study contributes to the available literature regarding obesity by adding past behaviors, one of the most influential variables involved in prediction of future behaviors of consumers, to the TPB model, enabling a better understanding of restaurant consumers' rational decision process regarding healthy menu choices. The results of this study provide practical implications for restaurant practitioners and government agencies regarding ways to promote healthy menus.

대학생의 채소 섭취 행동변화단계에 따른 채소 섭취 관련 인식, 자아효능감 및 식행동 (Beliefs Regarding Vegetable Consumption, Self-Efficacy and Eating Behaviors according to the Stages of Change in Vegetable Consumption among College Students)

  • The purpose of this study was to examine beliefs, self-efficacy and eating behaviors by the stages of change in vegetable consumption among college students (n = 297). A survey was conducted to examine study variables, and subjects were categorized into three groups based on the stages of change: precontemplation/contemplation stage (PC/C), preparation stage (P), action/maintenance stage (A/M). Subjects had 3.7 servings of vegetables a day, and vegetable consumption was significantly different by stages of change (p < 0.001). The A/M group showed higher score on beliefs regarding vegetable consumption (p < 0.001) than the other groups, and perceived benefits of vegetable consumption (e.g. cancer prevention) more strongly (p < 0.05). The PC/C group felt more barriers than the A/M group, such as disliking cooking methods, texture of vegetables (p < 0.001), bad taste and bad experience of eating vegetables (p < 0.05). Self-efficacy score was 27.2, with decreasing self-efficacy from A/M to P, PC/C (p < 0.001). The A/M group showed more confidence in nine behaviors such as "eating vegetables during meals" and "replacing menu at home with more vegetable dishes" (p < 0.001) than the other groups. The A/M group had more desirable eating behaviors (e.g, having a variety of foods, eating regularly, consumption of food groups). This study suggests that target population for education and educational strategies be different based on the stages of change. For those in the PC/C stage, education might focus on reducing barriers and increasing self-efficacy. For those in the A/M stage, it is necessary to use strategies to maintain and reinforce behaviors for enough vegetable consumption.

일부 남자 대학생 흡연자와 비흡연자의 흡연에 대한 인식 및 항산화 비타민 수준 비교 (Comparison of Attitudinal Beliefs regarding Smoking and Antioxidant Vitamins Status in the College Male Smokers and Non-smokers)

  • 본 연구는 건강한 남자 대학생을 중심으로 흡연 여부에 따른 흡연에 대한 인식 및 항산화 영양소 섭취수준과 혈장 농도를 비교하고자 흡연자 30명, 비흡연자 30명을 선정하여 신체계측과 설문조사를 통해 다음과 같은 결과를 얻었다. 대상자의 연령은 흡연자가 24.4세 비흡연자가 22.4세이고, 신장은 각각 173.4cm, 172.6cm, 체중은 69.8kg, 67.9kg으로 나타났으며, BMI, 체지방, 체지방량, 제지방량(LBM), 체수분량(TBW)에서 군간 유의적인 차이가 없었다. 수축기 혈압 및 이완기 혈압은 흡연자에게서 유의적으로 높았으며, 혈당은 유의적이지는 않았지만, 흡연자가 높은 경향을 보였다. 커피와 알코올을 섭취하는 비율은 모두 흡연자에서 유의적으로 높았으며, 일일 섭취하는 알코올의 양도 흡연자에서 유의적으로 높았다. 흡연자들의 흡연 이유로는 '스트레스 해소'가 가장 많았고, 다음으로는 '습관적', '대인관계 향상을 위해서' 순이었다. 흡연여부에 따라 흡연에 대한 인식도를 조사한 결과, 흡연자가 비흡연자에 비해 유의적으로 흡연에 동의하는 경향이 높은 것으로 나타났다. 식품섭취 빈도조사에 의한 항산화 비타민 섭취량은 비타민 A의 경우 흡연자 $505.15{\pm}123.32gR.E.$ 비흡연자 $519.48{\pm}111.25{\mu}gR.E.$로 유의적 차이는 없었다. 비타민 C는 각각 133.13 37.76mg, $124.68{\pm}27.12mg$로 유의적이지는 않았지만 흡연자가 약간 높았으며, 비타민 E 섭취량은 $6.91{\pm}2.39mg$, $7.09{\pm}1.73mg$로 차이를 보이지 않았다. 신체 계측치와 생화학적 성분간 상관관계에서는 이완기 혈압과 연령, 체지방, 체지방량이 양의 상관관계를 보였고, 혈장 비타민 C 농도는 체중(p<0.05), 체수분량(p<0.05)과 음의 상관관계가 있는 것으로 나타났다. 본 연구의 결과 혈압이나 혈당에서 흡연자가 비흡연자에 비해 높은 수준을 보여 흡연이 건강에 부정적인 영향을 미치는 것으로 나타났으며, 흡연에 대한 인식에서는 흡연자가 흡연에 동의하는 경향이 더 높았다. 흡연자와 비흡연자의 항산화 비타민 섭취량은 차이가 없었으나 활동량이 많고, 흡연력이 짧으며, 식이 섭취량이 비교적 많은 남자 대학생을 대상으로 하였음에도 불구하고 혈장의 비타민 C 농도가 유의적으로 낮았던 것은 흡연으로 인해 비타민 C 요구량이 증가된 것이라고 볼 수 있다. 따라서 항산화 영양소의 급원이 될 수 있는 식물의 섭취를 증가시키고 올바른 식습관을 형성하기 위한 교육이 이루어져야 할 것으로 사료된다.

고단백 스낵과 비건 스낵에 대한 선택속성과 구매 행동 연구 (A study on the Selection Attributes and Purchasing Behavior of Protein Fortified Snack and Vegan Snack)

  • The number of vegans has increased rapidly due to religious and ethical beliefs, environmental concerns, health, etc. Also, as interest in healthy and safe food increases, the demand for organic products or nutrition-enhanced products is increasing. Therefore, this study aimed to investigate the selection attributes and purchasing behavior for protein-fortified and vegan snacks. It is anticipated that the results would find use as basic data for developing protein-fortified snacks for vegans that can meet consumer needs and derive marketing strategies. A survey was conducted on 140 consumers. According to the analysis of their purchase behavior, the number of people who had purchased high-protein snacks and vegan snacks was higher than those who did not have prior experience. The reasons for the purchase of protein fortified snacks included 'meal replacement' at 'offline-convenient store/supermarket'. Vegan snacks were purchased for 'ethical beliefs, health, environment' at 'offline-vegan restaurant, bakery'. Both snacks showed above-normal preferences. However, it is necessary to improve taste and flavor when developing these products as these were the factors that negatively impacted the preferences. The attributes were factorized into the 'showing off factor', 'sensory factor', 'credence factor', and 'functional factor' and the 'sensory factor' was considered the most important.

대학생의 건강관련 생활태도와 모유수유의지에 관한 연구 (A Study on Health-related Lifestyles and Intention Toward Breast-Feeding in Korean University Students)

  • This study investigated the effect of a health-related lifestyle on knowledge, attitude, control belief and behavior intention toward breast-feeding of male and female university students in order to develop a breast-feeding education program for students of childbearing age. The subjects were 445 university students (125 male and 325 female) residing in eight provinces in Korea. The overall percentage of subjects intending to breast-feed their baby was 80.7% (73.6% of males and 84.2% of females). Overall, 84.2% of the subjects had high concerns about their health status. Scores reflecting a positive attitude, knowledge, and control beliefs toward breast-feeding were significantly higher (p<0.05~p<0.001) in female students, students majoring in medicine, and higher grades. The students who scored high at attitude, knowledge, and control beliefs also had a significantly higher (p<0.001) intention to breast-feed. When we investigated the sub factors of attitudes toward breast-feeding, significantly more students taking nutrient supplements scored high for physiological factors (p<0.05) and health-related factors (p<0.01). Significantly more non-smoking and non-drinking students scored high for health-related factors (p<0.001) and physiological factors (p<0.001), respectively. The intention to breast-feed was found to be significantly higher (p<0.01) in students who did not smoke, but not with other health-related lifestyles. In summary, these results indicate that the majority of university students intend to breast-feed, with students having a positive attitude, higher knowledge, and stronger control beliefs having a higher intention to breast-feed. Although a student's health-related lifestyle affects their attitudes on the physiological and health-related aspects of breast-feeding, only smoking status had an observable connection on the intention to breast-feed. Thus, when developing breast-feeding education programs for students, we recommend efforts to enhance a favorable attitude, knowledge, and control beliefs toward breast-feeding.

고혈압 환자와 정상 성인의 나트륨 섭취 및 이에 영향을 미치는 사회심리적 요인에 관한 연구 (A Study of Sodium Consumption and Related Psychosocial Factors among Hypertensive and Norma Adults)

  • The purpose of this study was to investigate sodium consumption and related psychosocial factors among hypertensive patients and normal adults through questionnaire development. The Theory of Planned Behavior provided the basis for the study. The mean blood pressure of subjects was 117. 1 mmHg/78.55mgHg in normal adults(N-218), 159.65mmHg/102.05mmHg(systolic/diastolic) in hypertensive group(N=219) and the sodium consumption was 5219.4${\pm}$1821.3mg in normal adults and 4631.4${\pm}$1749.1mg in hypertensive group. The results of Multiple logistic regression analysis showed that the odds of being hypetensive group were increasd as subjects felt that dalty food (OR=1.5) (OR=0.8). The odds of beign hypertensive group increased as subject received more support. With respect to perceived control, the odds of being hypertensive group were increased as subjects felt more confident in contolling salty intake when spouse likes to take salty food(OR=1.4). In contrast, subjects felt less confident in contolling sodium consumption when they took medicine(OR=0.8). Study findings revealed that all three factors, attitudes, subjective norms, and perceived control contributed to the model for explaining intentions, with subjective norms being most important. This findings provided the empirical evidence for the TPB in explaining salt intake. This study suggest that educational interventions for hypertension patients focus on changing sodium consumption through changing attitude toward high sodium consumption, subjective norms, perceived control over reducing sodium consumption of specific situations, specially subjective norms and perceived control. In addition, interventions may include strategies to change attitudes toward sodium consumption by helping hypertensive patients realize negative beliefs and modifying positive beliefs and to elicit and maintain subjective norm from doctors, family and neighbors, and to increase control beliefs for reducing sodium consumption.(Korean J Nutrition 33(8) : 833-839, 2000)
