A Study for the Purchase Status of the Imported Agricultural Products and Consumers' Recognition of the Labelling for the Country of Origin in Youngnam Region (수입 농산몰의 구입실태 및 원산지표시제의 인식도에 관한 연구 -영남지역 소비자를 중심으로-)

  • The consumers' purchase experiences of some imported agricultural products (rice, sesame, garlic, onion, jujube, red pepper, oak mushroom, apple, dried persimmon) and their consciousness for the labelling of the country of origin for agricultural products in Youngnam region were examined in this study. The sample consisted of 438 women who lived in Taegu, Pusan and other cities of Kyungpook and Kyungnam, and the self-administered questionnaire for the survey was used. The main reasons to purchase the imported agricultural products were the wide distribution and low price of them. Most of the consumers were concerned about safety of the imported agricultural products but only a few people experienced unsatisfaction of the products. The price, quality, package, container, label, and safety of the examined products were evaluated worse than those of the domestic products. Generally, although they suffered unsatisfaction, the consumers did not complain because they wanted to avoid troublesome work, which means the consumers did not assert their rights. Some people did not know the labelling system for the country of origin and the place to charge the market violating it. Therefore, it will be necessary for the consumers to receive education about the labelling system for the country of origin and the compensation criteria for consumers' grievances and damages. The current labelling method for the country of origin generally met the consumers' preference but the consumers wanted to improve the position and color of the label. Most consumers could not differentiate the imported products from the domestic products. The results obtained from the survey suggest consumer education for the labelling system for the country of origin and the compensation criteria should be activated through various ways such as mass media and consumer organizations.

Major concerns regarding food services based on news media reports during the COVID-19 outbreak using the topic modeling approach

  • BACKGROUND/OBJECTIVES: Coronavirus disease 2019 (COVID-19) cases were first reported in December 2019, in China, and an increasing number of cases have since been detected all over the world. The purpose of this study was to collect significant news media reports on food services during the COVID-19 crisis and identify public communication and significant concerns regarding COVID-19 for suggesting future directions for the food industry and services. SUBJECTS/METHODS: News articles pertaining to food services were extracted from the home pages of major news media websites such as BBC, CNN, and Fox News between March 2020 and February 2021. The retrieved data was sorted and analyzed using Python software. RESULTS: The results of text analytics were presented in the format of the topic label and category for individual topics. The food and health category presented the effects of the COVID-19 pandemic on food and health, such as an increase in delivery services. The policy category was indicative of a change in government policy. The lifestyle change category addressed topics such as an increase in social media usage. CONCLUSIONS: This study is the first to analyze major news media (i.e., BBC, CNN, and Fox News) data related to food services in the context of the COVID-19 pandemic. Text analytics research on the food services domain revealed different categories such as food and health, policy, and lifestyle change. Therefore, this study contributes to the body of knowledge on food services research, through the use of text analytics to elicit findings from media sources.

Awareness, Satisfaction, and Usage Patterns of Elementary School Teachers for Food Labeling in Busan (식품표시제도에 대한 부산지역 초등학교 교사의 인식, 만족도 및 이용실태)

  • This study examined the awareness, satisfaction, and usage patterns of 257 elementary school teachers for food labeling in Busan. The survey was conducted from April 15 to June 20, 2020, by questionnaires. The perception degree of food labeling was higher in female teachers than in male teachers and did not differ significantly among age groups. The score of the understanding degree was highest in their 20s and lowest in their 30s. The degree demand in their 50s was higher than in their 30s and 40s. The reliability degree in their 20s was higher than that of those in their 40s and 50s. The verification degree and satisfaction degree did not differ significantly with age or gender. The primary reason to check food labeling was 'to confirm harmful additives (31.9%)'. Among those in their 20s and 30s, the major reason for reviewing nutrition labeling was 'nutrient', while it was 'health improvement' was most important in those in their 40s and 50s. Of the subjects, 31.1% reported that the reason for the difficulty in understanding the label was 'various forms and the small letters'. The demand for the content was highest in trans fats. Apporximately 32.3% of the teachers were educated for food labeling; 42.4% of them taught food labeling, and 62.7% of them recognized the necessity of food labeling teaching. A correlation was observed between the demand for food labeling and understanding (r=0.586). Therefore, preparing education programs for teachers according to gender and age group and developing food additives-related programs will be necessary for strengthening the teachers' ability to manage their dietary life and educate students.

A Comparative Study on the Awareness of Health Risks and the Risk Reduction Measures Related to Sodium Intake between Female and Male University Students in Busan and Gyeongnam: An Application of Protection Motivation Theory (보호동기이론을 적용한 나트륨 과다섭취에 따른 위험성 및 나트륨 섭취 감소 방안의 효과성에 대한 부산·경남 지역 남녀 대학생들의 인식 비교 연구)

  • The purpose of this study was to investigate whether there was a gender difference in motivating university students to decrease their sodium intake and to identify effective motivating factors. Within the protection motivation theory (PMT) framework, a survey questionnaire was developed to measure participants' perceptions on the severity of and the vulnerability to risk of serious diseases due to the high sodium intake, as well as the effectiveness (response efficacy) and the ability to perform preventive measures (self-efficacy). Behavioral intentions on five specific practices (checking nutrition label, consuming more fruits and vegetables, consuming less soups, avoiding spicy and pungent food, purchasing less instant or restaurant foods) related to decreasing sodium intake were also included. A total of 294 usable response data were collected from university students (92 male, 202 female) in Busan and Gyeongnam in June 2015 and analyzed using IBM SPSS 22. Severity was the highest (4.04) PMT factor followed by response efficacy (3.72), self-efficacy (3.42), and vulnerability (3.26). Compared to male students, female students thought that the threat was more severe (t=6.035, p<0.001) and reducing sodium intake would be effective to prevent serious illnesses (t=4.724, p<0.001), but their vulnerability and self-efficacy perceptions were not different from male students. Among the five items measuring behavioral intention, female students were more likely to increase fruits and vegetables consumption (t=3.811, p<0.001), while male students were more likely to avoid spicy and pungent foods (t=2.336, p=0.020). Based on findings of this study, the recommended strategy to effectively motivate university students to lower their sodium consumption level is the development of campaign focused on increased vulnerability perception, response efficacy, and ease of practicing preventive measures instead of emphasizing the severity of the consequences.

  • Nutrition information about food is written on the label paper, which is very inconvenient for visually impaired people to recognize. In order to solve the inconvenience of visually impaired people with nutritional information recognition, this paper proposes a product nutrition information guide system for visually impaired people. In the proposed system, user's image data input through UI, and object recognition is carried out through YOLO v5. The proposed system is a system that provides voice guidance on the names and nutrition information of recognized products. This paper constructs a new dataset that augments the 319 classes of canned/late-night snack product image data using rotate matrix techniques, pepper noise, and salt noise techniques. The proposed system compared and analyzed the performance of YOLO v5n, YOLO v5m, and YOLO v5l models through hyperparameter tuning and learned the dataset built with YOLO v5n models. This paper compares and analyzes the performance of the proposed system with that of previous studies.

Evaluation of the Recognition and Intake of Trans Fat by Middle School Students in the Ulsan Area (중학생의 트랜스지방 인지도 및 섭취 실태에 대한 연구)

  • This study was conducted to determine how well middle school students in the Ulsan area recognize trans fat and the amount of these compounds that they consume in their daily life. Students who recognized trans fat well could also identify trans fat contents on the nutrition label. However, recognition of trans fat was not associated with its intake. Students who thought it was necessary to learn about trans fat in school showed a tendency to consume less trans fat or to make more efforts to reduce its intake. Additionally, a preference for snacks had a significant influence on recognition and intake of trans fat. The overall, the following conclusions could be drawn from this study: 1) It is necessary for continuous efforts to teach students how to take snacks correctly and help them form good dietary habits both at home and school. 2) Both development of basic educational materials and the systematic education about trans fat at home and school are urgently needed to instill good dietary habits regarding trans fat. 3) It is highly recommended that the school meal service should take students' preferences into consideration and provide them with good nutrition and a balanced diet, and efforts should be made to contribute to the formation of good dietary habits.

Nutrition Knowledge and Need for a Dietary Education Program among Marriage Immigrant Women in Gyeongbuk Region (경북지역 결혼이주여성의 영양지식 및 식생활 교육 프로그램 요구도 조사)

  • The purpose of this study was to provide basic materials and assistance for developing a nutritional education program targeting marriage immigrant women, and it was carried out on 86 female marriage immigrants living in the Gyeongbuk region. An average age of the female marriage immigrants who participated in this survey were 28.6 years, and their home countries were the Philippines (32.6%), Vietnam (29.1%), and so on. Exactly 59.3% of subjects had been married for 1~5 years, and 40.7% of the subjects had an education status of less than middle school graduation. The majority of them (65.1%) had one more children, and 51.2% of subjects were a part of a nuclear-family, with the husband's age between 40~49 years old (58.1%). Concern for nutrition label was significantly different according to number of children (P<0.01), period of marriage (P<0.001), and education level (P<0.05). It was demonstrated that a higher level of education was associated with a higher need to learn about nutritional information. Understanding nutritional facts and knowledge was significantly higher among the women with two children than no child (P<0.05), period of marriage >10 years than <1 year (P<0.01), and education level of college & university graduation than less than middle school (P<0.05). Sixty percent of the women surveyed participated in the education program of 'Korean language' as they were in their country, and the most preferred education program was 'Korean dietary life and culture' (39.5%). Regarding participation and educational method, the majority of subjects responded that they wanted to learn nutritional education in a cooking academy or school (52.9%) and public health center (34.1%).

  • Objectives: This study aimed to compare the factors of dietary and health behavior according to the employment in women in early adulthood and to analyze their relationship. Methods: In this study, adult women aged 20~29 who participated in the Korea National Health and Nutrition Examination Survey (KNHANES) 2016~2019 were classified into two groups depending on their permanent worker status, namely tenured employees (n = 254) and temporary employees (n = 377). Dietary habits (prevalence of skipping meals, food nutrition label use, etc.), nutrient intake, and metabolic syndrome factors were analyzed. Results: The tenured employees' group showed a significantly lower proportion of subjects who skipped breakfast (P = 0.0254) and significantly higher daily energy intake (P = 0.0264) than the temporary employees' group. However, there were no significant differences in the intake of energy nutrients and most of the micronutrients per 1,000 kcal of energy intake between the two groups. The proportion of subjects who consumed energy nutrients under 75% of the estimated energy requirement (EER) was 38.11% in the tenured employees' group, which was significantly lower than the 48.30% in the temporary employees' group (P = 0.0159). In economically active women aged 19~29 years, the odds ratio of low HDL-cholesterolemia prevalence was 1.80 times higher (95% CI, 1.06-3.06) in the temporary employees' group compared to that in the tenured employees' group after adjustment for confounding factors (P = 0.0295). Conclusions: In conclusion, among Korean adult women in their twenties, temporary employees showed inappropriate eating habits such as skipping breakfast, and had abnormal blood lipid levels.

School Dietitians′ Perception on Nutrition Labelling of the Processed and Packaged Foods in Incheon (인천지역 학교급식 영양사의 가공포장식품 영양표시에 대한 인식)

  • The purpose of this study was to investigate school dietitians' perception on nutrition labelling of processed and packaged foods in the Incheon area. This study was carried out through a self-administered questionnaire and the subjects were 203 school dietitians. The results were summarized as follows. Most of the subjects checked nutrition labeling of processed and packaged foods when they purchased these foods for school lunch. However, the main reason for their checking nutrition labeling of processed and packaged foods was not for nutrition but for food safety. There were significant differences in the subjects' understanding and trust on nutrition labeling of processed and packaged foods by employment school. The scores of the subjects' satisfaction, understanding and trust on nutrition labeling of processed and packaged foods were not high. There were significant differences in the subjects' perception and concern about content information on nutrition labeling of domestic processed and packaged foods by employment school. Most of the subjects answered that it is almost necessary or very necessary to implement nutrition labelling of processed and packaged foods. Also their most preferred method of nutrition labelling was to label nutrient content. As the most important nutrient and functional component necessary for nutrition labelling, they answered energy, mineral such as calcium and iron, protein, total fat, cholesterol, vitamin, sodium and dietary fiber in order. As the major prerequisite task for the implementation of nutrition labelling, they answered formulation of nutrition labelling-related rules, and education and motivation for consumer, Therefore, it is necessary to activate the mandatory nutrition labelling of the processed and packaged foods and to prepare its consumer education program for school dietitian.

Consumption and Satisfaction Evaluation of Takju among Consumers Ages 20 to 29 (20대 소비자의 탁주 이용실태 및 만족도 조사)

  • The purpose of this research was to investigate consumption and satisfaction of Takju (Makgeolli) among consumers ages 20 to 29 living in Seoul and Gyeonggi province. It was found that 86.2% of the respondents drank Takju once or twice a month, and the high satisfaction group drank Takju with a frequency of 8 times a month (P<0.01). Respondents selected market (44.4%) and restaurants (34.9%) as the most common place of purchase, whereas pub (42.2%) and Takju bar (32.8%) were the drinking places selected. Regarding the preferred ingredients, respondents liked pear the most followed by Lycium chinense, corn, pine nuts, ginseng, and citrus fruit. The most compatible foods with Takju were identified as Buchimgae (Jeon) (97.4%), Kimchi (45.6%), Bokkeum (36.4%), Namul & Muchim (25.0%), and Jjim (21.5%). Pajeon was mentioned as the most compatible food with Takju, followed by Bulgogi, Gamjatang, Agwijjim, Dubukimchibokkeum, and Ojingeotwigim. Regarding consumers' satisfaction of Takju, taste was the most highly valued, with color, price, alcohol content, function, flavor, diversity of raw materials, and accuracy of label also highly considered. Further, to formulate a plan to encourage consumption of Takju, the high satisfaction group decided that promotion of local festivals and events related to Takju, standardization of quality, creation of brands, expansion of distribution network, and organization of relevant departments are the most important compared to other items (P<0.05).
