부산지역 노인시장의 다식 인지도 및 다식 선호도에 관한 연구 (The Study of Perception and Preferences on Dasik of the Old People in Busan)

  • This study has been subjected to improve the accessibility of the public to Dasik and chance of merchandising it by investigating the statistical characteristics, perceptive trend and preferences on Dasik of the old people in Busan. Briefly, the results of positive analysis are as follows. The perceptive trend of Dasik was influenced by the distinction of sex, an occupation educational condition and the average monthly income. And finally, the preferences of Dasik was influenced by the perceptive trend. According to the results, some merchandising strategies of Dasik were suggested.

국내외 영양관련 Web Page 자료 분석 및 영양정보화의 방향 (Contents of Domestic and Overseas Web Pages Related to Nutrition and Guides to Build Web Nutrition Information)

  • Nowadays social environment is rapidly changed toward globalization and information age, and which demands the new paradigm for active utilization of information system in many fields. The increasing availability and ease of accessibility of the internet using world wide web have resulted in an enormous increase in the amount of nutrition information in countries with advanced information technology. However, Domestic web services in nutrition field are neither diverse nor professional currently. Nutrition experts need to take advantage of the resources offered though the web and take an active role in providing reliable and accurate information and preventing the growth of nutrition misinformation though web. Nutrition web sites on a variety of subjects should be developed depending upon the objectivity of nutrition resources and the target clients. Nutrition-related organizations are responsible for monitoring nutrition web information and encouraging open discussion and evaluation of hot issues among experts, and between experts and clients through the internet.

Who has to take legal responsibility for retailer brand foods, manufacturers or retailers?

  • As a marketing vehicle to survive in intensified retailing competition, retailer brand development has been adopted by retailers in Korea. As evidence, the retailer brand share of a major retailer, Tesco Korea, has grown from 20% in 2007 to 22.8% in the first half of 2008. It means that retailers have provided more and more retailer brand foods for customers. With the growing accessibility to retailer brand foods, it would be expected that the number of retailer brand food claims will increase. Customers have increasingly exposed to a variety of marketing activities conducted by retailers. When buying the retailer brand foods, customers tend to be affected by marketing activities of retailers. Despite the fact that customers trust retailers and then, buy their brand foods, in case of food accidents caused by production process, customers have to seek compensation from a retailer brand supplier. Of course, a retailer tends to shift its responsibility to its suppliers. Accordingly, it is not easy for customers to solve food claims. The research, therefore, aims at exploring the relationship between the buying-decision processes of retailer brand customers and which side takes legal responsibility for food claims. To effectively achieve the research aim, the author adopted a quantitative and a qualitative research technique, in order to supplement the disadvantages of each method. Before field research, based on the developed research model, the author pre-tested questionnaire with 10 samples, amended, and handed out to 400 samples. Amongst them, 316 questionnaires are available. For a focus group interview, 9 participants were recruited, who are students, housewives, and full-time workers, aged from 20s to 40s. Through the focus group interview as well as the questionnaire results, it was found that most customers were influenced by a retailer or store image in a customer's mind, retailer reputation and promotional activities. Surprisingly, customers think that the name of a retailer is a more important factor than who produces retailer brand foods, even though many customers check a retailer brand supplier, when making a buying-decision. Rather than retailer brand suppliers, customers trust retailers. That is why they purchase retailer brands. Nevertheless, production-related food claims is not involved with retailers. In fact, it would be difficult for customers to distinguish whether a food claim is related to selling or manufacturing processes. Based on research results, from a customer perspective, the research suggests that the government should require retailers to take the whole responsibility for retailer brand food claims, preventing retailers from passing the buck to retailer brand suppliers. In case of food claims, in order for customers to easily get the compensation, it is necessary to reconsider the current system. If so, retailers have to fully get involved in retailer brand production stage, and further, the customer awareness of retailer brands will be improved than ever before. Retailers cannot help taking care of the whole processes of retailer brand development, because of responsibility. As a result, the process to seek compensation for food claims might become easier, and further, the protection of customer right might be improved.

Synergistic Action Modes of Arabinan Degradation by Exo- and Endo-Arabinosyl Hydrolases

  • Two recombinant arabinosyl hydrolases, α-L-arabinofuranosidase from Geobacillus sp. KCTC 3012 (GAFase) and endo-(1,5)-α-L-arabinanase from Bacillus licheniformis DSM13 (BlABNase), were overexpressed in Escherichia coli, and their synergistic modes of action against sugar beet (branched) arabinan were investigated. Whereas GAFase hydrolyzed 35.9% of L-arabinose residues from sugar beet (branched) arabinan, endo-action of BlABNase released only 0.5% of L-arabinose owing to its extremely low accessibility towards branched arabinan. Interestingly, the simultaneous treatment of GAFase and BlABNase could liberate approximately 91.2% of L-arabinose from arabinan, which was significantly higher than any single exo-enzyme treatment (35.9%) or even stepwise exo- after endo-enzyme treatment (75.5%). Based on their unique modes of action, both exo- and endo-arabinosyl hydrolases can work in concert to catalyze the hydrolysis of arabinan to L-arabinose. At the early stage in arabinan degradation, exo-acting GAFase could remove the terminal arabinose branches to generate debranched arabinan, which could be successively hydrolyzed into arabinooligosaccharides via the endo-action of BlABNase. At the final stage, the simultaneous actions of exo- and endo-hydrolases could synergistically accelerate the L-arabinose production with high conversion yield.

베트남 결혼이주여성이 속한 다문화가정의 식생활 관련 행태, 인식 및 선호음식 양상 분석 (Diet-related Behaviors, Perception and Food Preferences of Multicultural Families with Vietnamese Wives)

  • The Korean society has gone through a dramatic change in its population, with rapidly increasing number of multicultural families through international marriages since 1990s. This study investigated the differences between multicultural families and Korean families in three areas related to dietary behaviors: diet-related behaviors and perception, and food preferences. A cross-sectional analysis was performed in 500 Koreans from Korean families and 104 couples from the multicultural families with Vietnamese wives. More subjects from multicultural families grew up in the countryside, received less education and also had lower income than the subjects from Korean families. Multicultural families ate traditional Korean meals more often at home and dined out less often than Korean families. The multicultural families focused more attention on nutritional aspects of their diets than Korean families. The Vietnamese wives in multicultural families favored Vietnamese foods but they rarely ate those foods in Korea despite an easy accessibility to Vietnamese ingredients. In conclusion, the multicultural families had more traditional Korean dietary patterns than Korean families, which could have been influenced by their socioeconomic factors. Further research with a quantitative analysis is needed in future studies to understand the effect of dietary patterns on nutritional status and quality of life in multicultural and Korean families.

Comparative Genomic Analysis of Lactobacillus plantarum GB-LP1 Isolated from Traditional Korean Fermented Food

  • As probiotics play an important role in maintaining a healthy gut flora environment through antitoxin activity and inhibition of pathogen colonization, they have been of interest to the medical research community for quite some time now. Probiotic bacteria such as Lactobacillus plantarum, which can be found in fermented food, are of particular interest given their easy accessibility. We performed whole-genome sequencing and genomic analysis on a GB-LP1 strain of L. plantarum isolated from Korean traditional fermented food; this strain is well known for its functions in immune response, suppression of pathogen growth, and antitoxin effects. The complete genome sequence of GB-LP1 is a single chromosome of 3,040,388 bp with 2,899 predicted open reading frames. Genomic analysis of GB-LP1 revealed two CRISPR regions and genes showing accelerated evolution, which may have antibiotic and antitoxin functions. The aim of the present study was to predict strain specific-genomic characteristics and assess the potential of this new strain as lactic acid bacteria at the genomic level using in silico analysis. These results provide insight into the L. plantarum species as well as confirm the possibility of its utility as a candidate probiotic.

영양.식생활 교육자료의 인증 심사기준 개발 연구 (Establishment of accreditation criteria for nutrition and dietary education materials)

  • This study provides standardized scientific criteria for education materials on nutrition and diet that could be used in schools, workplaces, and health and medical facilities. The study was conducted from April 2011 to October 2011. Literature reviews, institutional visits, and telephone interviews were conducted for the first draft of the accreditation criteria. Expert meeting and advisory councils were conducted in order to obtain feedback after development of the first draft of accreditation criteria. In order to verify the validity and reliability of the first draft on certification criteria, a survey was sent out to 143 professionals, including professors, researchers, health and medical experts, teachers, nutrition teachers, dietitians, and clinical nutritionists. After several modifications, the final accreditation criteria were established for 1) printed materials (authority, credibility, objectivity, organization, editing, real-life usability, activities and participation, and public interest), 2) web-sites (authority, credibility, objectivity, design, real-life usability, accessibility, currency, and public interest) and 3) materials with activities (credibility, organization, design, convenience of utilizing, safety, and public interest). Out of several criteria, contents (authority, credibility. and objectivity) and publicity (public interest) areas are mandatory requirements. For the accreditation, books for learning and materials with activities are required to meet more than six evaluation components, and the other materials are required to meet more than five evaluation components, including the required area. Accreditation criteria developed in this study could be used as a standard for development or selection of good education materials for nutrition and dietary life.

패스트푸드점 키오스크 품질이 사용자 지속사용 의도에 미치는 영향 (Influence of Fast-Food Kiosk Quality on User Intention of Reuse)

  • 코로나19와 최저임금의 영향으로 비대면 결제 수단인 키오스크의 도입률이 2018년에 급격하게 상승하였다. 키오스크에 어려움을 가진 사용자가 존재함에도 키오스크는 외식산업에서 꾸준한 성장세를 나타내고 있다. 이에 본 연구는 키오스크의 지속사용에 영향을 미치는 만족도의 선행 요인을 품질 차원에서 확인하고자 하였으며, 가장 널리 활용되고 있는 패스트푸드점 키오스크 이용자 전체를 대상으로 조사를 시행했다. 연구 결과 키오스크의 정보 접근성(환경 품질), 주문 과정 편의성(과정 품질), 부가 서비스 혜택 추가(과정 품질)는 사용자 만족도에 영향을 주어 궁극적으로 지속사용 의도에 영향을 미치는 것으로 나타났으며, 결과품질인 주문결제 용이성은 만족도에 영향을 미치지 않는 것으로 나타났다. 점차 비대면 결제가 일반화/필수화되어가는 시점에서 이루어진 본 연구는, 키오스크 이용자에 대한 지식을 확장하였으며, 이용자의 만족도와 지속사용을 제고할 수 있는 키오스크 품질 요인을 규명하여 궁극적으로 매장의 키오스크 선택 기준을 제시하고 매장 경쟁력을 확보하는 데에 시사점을 제공하고 있다.

도시와 농촌의 한식 음식점 식생활 환경에 대한 고객 인식 및 전문가 평가 비교 - 수원, 화성지역 음식점을 중심으로 - (Customer perception and expert assessment in restaurant food environment by region - Focused on restaurants in Suwon, Hwaseong city -)

  • 본 연구는 대도시(경기도 수원시), 도농복합시인 화성시 도시지역과 농촌지역 등 세 지역의 한식 음식점 126개 업소를 선정하여 방문 고객 662명을 대상으로 음식점 식생활 환경에 대한 인식을 조사하였다. 음식점 식생활 환경을 측정하기 위해 위생환경, 표시정보, 맛과 외관, 건강성, 영양정보, 음식점의 접근성, 유용성, 구매력 등의 인식을 조사하였고, 위생환경, 영양정보 두 영역은 같은 문항을 가지고 전문가 평가도 실시하였다. 세 지역의 한식 음식점 식생활 환경에 대한 고객 인식을 비교분석 하였으며, 고객 인식과 전문가 평가 비교를 통해 지역사회의 음식점 식생활 환경 실태를 알아보고, 향후 건강한 식생활 환경 조성을 위한 기초 자료를 제시하고자 하였다. 1) 조사 대상자는 총 662명 중 남자가 58%, 여자가 42%였으며, 30대가 32.2%로 가장 많았고, 직업은 사무종사자가 23%로 가장 많았다. 외식 성향과 관련하여, 외식의 정보출처는 주변사람이 63.3%로 가장 많았고, 외식 빈도는 주 1~3회가 44%로 가장 많았으며 지역에 따라 유의적인 차이를 나타내었다 (p < 0.01). 방문한 한식 음식점을 가는 이유로는 '맛이 좋아서'라고 응답한 사람이 가장 많았으며 (56%), 편리한 접근성, 합리적인 가격, 건강, 음식점의 분위기와 종업원의 서비스 순으로 나타났다. 2) 지역에 따른 한식 음식점 식생활 환경에 대한 주관적 인식 조사 결과는 다음과 같다. 위생환경과 표시정보의 경우 지역 간 유의적인 차이가 나타났으며 (p < 0.05, p < 0.01), 병점, 비봉, 수원 지역 순으로 점수가 높았다. 맛과 외관, 건강성에 관련된 요인은 지역에 따라 유의적인 차이가 나타나지 않았다. 영양정보의 경우 메뉴에 대한 영양정보 여부, 건강메뉴의 제시 및 독려하는 메시지 여부에서 지역에 따라 유의적인 차이가 나타났다 (p < 0.05). 도시지역이 농촌지역보다 영양정보 표시 음식점이 더 많은 것으로 조사되었다. 3) 지역에 따른 음식점의 접근성, 유용성, 구매력에 대한 인식에 있어 지역별로 유의적인 차이가 나타났다 (p < 0.01, p < 0.05, p < 0.01). 대체적으로 도시지역이 농촌지역보다 접근성, 유용성, 구매력이 더 좋은 것으로 인식하였다. 따라서 음식점 접근성이 낮고 가격 부담감이 큰 농촌지역 에는 지자체에서 운영하는 비영리 음식점을 조성하거나 도시락 배달사업, 이동판매와 이동 차량 제공 등의 지원 사업이 필요할 것으로 생각된다. 더불어 유용성을 높일 수 있는 다양한 메뉴와 건강한 메뉴가 제공되어야 할 것이다. 4) 음식점 식생활 환경 중 위생환경, 영양정보 표시에 대한 전문가 평가 결과, '종업원의 용모와 복장은 깨끗하고 단정하다' 문항에서 고객 인식과 전문가 평가 간에 유의적인 차이를 나타내었으며 (p < 0.05), 대체적으로 위생환경의 모든 문항이 소비자 인식보다 전문가 평가 점수가 낮게 나타났다. 건강메뉴의 선택을 독려하는 메시지의 여부에서 유의적인 차이가 나타났는데 (p < 0.05), 소비자 인식보다 전문가 평가가 더 낮은 비율을 나타내었다. 외식률이 증가하고 이와 동시에 비만과 만성질환의 예방과 관리를 위한 올바른 음식점 식생활 환경의 개선이 중요시되는 현시점에서 향후 음식점에서는 소비자의 건강한 식생활을 위해서 종업원의 청결 및 실내의 위생, 건강메뉴 개발 및 표시, 영양정보를 제시할 수 있도록 지원과 교육이 필요할 것으로 생각한다. 또한 음식점의 접근성과 이용가능성, 구매력을 높일 수 있도록 지역사회 차원의 식생활 환경을 개선하는 것도 필요하다. 농촌지역 노인정 급식사업, 도시지역 건강식당사업, '어린이 식생활 안전관리 특별법'에서 학교 주변에서 위생적이고 우수한 식품을 판매하도록 명시하고 있는 것 등의 사례가 있다. 향후 여러 지역사회의 다양한 음식점 업태를 선정하여 음식점 식생활 환경 실태를 조사하고, 식생활 환경이 개인의 식생활 및 건강상태에 미치는 영향에 대한 연구 등 후속 연구가 필요할 것이다.

국내 의약품정보에 대한 소비자의 시각 및 활용도 (Consumer Perspectives and Utilization of Drug Information in Korea)

  • Purpose: This study aims to investigate consumers' demand of and perspective on drug information domestically available and uncover hurdles that they faced while utilizing information. Methods: We conducted a survey of 101 consumers, face-to-face after obtaining informed consent. Chi-squared, or Fisher's exact tests, and multivariate logistic models were used to investigate the association between participants' perceptions and characteristics. Results: As results, participants showed the highest demand for "Adverse effects >90%"; "Drug interactions/Dosage/Drug-food interactions/Indication >80%", and utilized package inserts (52%), doctors (41%) and pharmacists (36%) most often as information sources. Generally, the most common difficulty consumers suffered with was that "it is hard to understand (51%)". With public sources of drug information, sixty one percent of participants were "unaware of the provision of information", resulting in strikingly low usage rates (5~11%). Subgroup analyses indicated that the older (${\geq}50$ years) and the disadvantaged might have been placed in the blind spot of information mostly developed online (p<0.05).Conclusion: In conclusion, public sources of drug information that have been developed online might fail to meet consumers' demand. Greater efforts should be made to balance the development of the information sources between online and offline, and to increase accessibility of the established information sources.
