발아콩분말의 기능적 특성 (Functional Properties of Germinated Whole Soy Flour)

  • 본 연구에서는 발아에 의해 콩의 단백질 용해도, 거품형성능, 유화력 및 유화안정성, 수분 및 유지 흡착력에 미치는 영향을 조사하였다. 발아콩분말은 $20^{\circ}C$에서 12, 24시간 동안 발아시킨 후 $60^{\circ}C$에서 24시간 건조하여 60 mesh로 마쇄하여 제조하였다. pH 2-12에서의 콩단백질의 용해도를 측정한 결과 pH 4에서 용해도가 가장 낮았으며, 그 이하, 이상의 pH에서는 증가하였다. 특히 pH 2와 10에서는 발아콩분말이 비발아콩분말보다 용해도가 낮게 나타났다. 거품형성능에 대한 발아의 영향을 조사한 결과는 pH 2와 12에서의 발아콩분말이 비발아콩분말보다 낮은 거품형성능을 나타낸 반면 30-120분간 정치시켜 측정한 거품안정성은 오히려 높았다. 콩분말의 각 pH 별 유화형성능 및 안정성을 알아본 결과 pH 10-12에서 발아콩분말이 비발아콩분말보다 값이 높았다. 수분흡착력은 발아에 의해 증가하였으나 유지흡착력은 감소하였다.

한외여과에 의한 순물 농축액의 기능적 특성 (Functional Properties of Sunmul (Soybean Curd Whey) Concentrate by Ultrafiltration)

  • 두부 순물을 UF막으로 농축시켜 제조한 UF 분리농축분말의 일반성분 및 이들 분말을 식품에 첨가할 경우 반드시 고려해야 할 용해도, 유화력, 거품형성능에 대해 살펴보았다. 그 결과 일반 성분에 있어서, UF 분리농축분말의 수분함량과 탄수화물 함량은 순물과 큰 차이가 없었으며 단백질 함량은 순물분말보다 2배가량 높았으나 회분함량은 2배 낮았다. 유지흡착력을 비교 시 ISP>UF 농축분말>순물 순으로 높게 나타났으며 UF 분리농축 분말의 용해도가 ISP와 순물에 비해 높기 때문에 수분흡착력은 매우 미약하였다 UF 분리농축분말의 단백질의 용해도는 등전점 부근인 pH 4.0에서 가장 낮았으며 산성 또는 알칼리성으로 갈수록 증가하는 전형적인 단백질 용해도 곡선을 나타내었다. 유화력은 ISP와는 달리 pH에 따른 현화를 보이지 않으며 150-200 정도의 EAI 값을 나타내었고, 유화안전성은 pH 6.0 이하의 산성에서 더 높은 값을 나타내며 대체로 75-92%의 높은 유화안정성을 보였다. UF 분리농축분말의 거품형성능은 증류수 처리구간에서 ISP와는 달리 pH 4.0-6.0에서 가장 우수하였으며 NaCl 농도가 높을수록 약간 감소하는 경향을 나타내었고, 거품안정성을 측정한 결과 ISP에 비해 대두 단백질의 등전점인 pH 4.0 부근에서 5-7배 높은 거품안정성을 나타내었으나 pH 4.0을 제외한 모든 pH 구간에서 20분 안에 거품이 소멸되었다 UF 분리농축분말은 isoflavone 등 여러가지 기능적 성분을 함유하는 것으로 알려져 있을 뿐만 아니라 용해도, 유화력, 유화안정성, 거품형성능 등이 ISP보다 우수하여 식품가공에서 다양하게 활용될 수 있을 것으로 기대된다.

The Effects of Heating on the Physicochemical and Functional Properties of Acid Whey Compared to Sweet Whey

  • In this study, we investigated the effects of heating ($80^{\circ}C$, 30 min) on the physicochemical and functional attributes of acid (cottage) and sweet (Edam and Cheddar) whey powders. The water holding capacity (WHC) of the whey powders was not affected by heating or pH value. The heated Cheddar whey powder had a significantly lower (p<0.05) WHC than that of the other wheys. Heating detrimentally impacted the emulsifying and foaming properties, On the other hand, heating significantly enhanced the heat stabilities (HS) of all powders, This was best demonstrated at the acidic pH values of 3.0 and 4.5, where the HS increased by 57 and 53, 181 and 167, and 31 and 48%, for the cottage, Edam, and Cheddar, respectively. Overall, this data provides useful insights into the manufacture of pasteurization and retort-stable whey powders.

Investigation on the Functional Properties of Chestnut Flours and Their Potential Utilization in Low-fat Cookies

  • Chestnut flours (CFs) were produced from 3 chestnut samples (Aydin, Kutahya, and Bursa) by 2 different methods (boiled and oven-dried: BOD-CF and freeze-dried: FD-CF). Functional properties and effects of CF addition (10, 20, and 30%) on the qualities of regular and low-fat cookie were investigated. The freeze drying significantly increased water solubility of CFs but decreased their water binding capacity. The emulsion capacity and stability of FD-CFs were higher than those of BOD-CFs. At pH 4, 6, 8, and 10 FD-CFs had better gelation properties. Spread ratio (SR) values of BOD-CF supplemented regular or low-fat cookies decreased with increasing CF levels. Hardness values of CF supplemented regular cookies were generally lower compared to control. SR and hardness values of FD-CF supplemented cookies were higher than those of BOD-CF supplemented ones. Surface colors of the cookies were darker with FD-CF addition as compared to BODCF addition. In low-fat cookies, the sample supplemented with 10% Kutahya FD-CF had the highest taste-flavor value. FDCF supplementation generally resulted in higher appearance and taste-flavor scores than BOD-CF supplementation in cookies.

고급 지방산 N-아실 콜라겐 유도체의 합성 및 계면활성 (Synthesis and Surface Active Properties of Long Chain N-Acyl Collagen Derivatives)

  • The Surfactants composed of acylated aterocollagen which is produced by the acylation of the side chain amino radicals of aterocollagen with an aliphatic acid having 12 to 18 carbon atoms will be discussed in this study. This condensation is done at moderate reaction temperature (<$25^{\circ}C$) in aqueous alkaline solution. The products of this reaction were identified by UV/VIS spectroscopy and infrared spectroscopy. For these compounds, surface active properties and physical properties including isoelectric point, Krafft point, surface tension, critical micelle concentration(cmc), foaming power, viscosity behaviour, water holding capacity, skin irritation and emulsifying power were measured respectively. The experimental results received that the products have a good emulsifying power, excellent water holding capacity while having low skin irritation. Thus, these derivatives will be expected to be used as an emulsifying agent for O/W type cosmetic emulsion.

생돈피에서 제조된 미세결정성 콜라겐의 기능적 성질 (Functional Properties of the Microcrystalline Collagen Manufactured from Raw Pigskins)

  • 생돈피를 원료로 하여 제조한 미세결정성 콜라겐의 기능적성질을 측정하였다. 미세결정성 콜라겐겔은 딕소트로픽 유체였으며 pH 3.5에서 최대의 점도를 보였다. 점도는 겔 농도가 증가할수록 비선형으로 증가하였으며 온도가 증가할수록 감소하였고 온동의 영향은 pH 4.5이하에서 더 컸다. 거품형성용량은 젤라틴과 비슷하였으나 난백보다는 좋았다. 그러나 거품안정성은 난백에 비해 떨어졌다. 유화용량은 돈육에 비해 열등하였다. 물리화학적 분석치는 우피의 진피층을 원료로 한 의약용 미세결정성 콜라겐의 것과 약간 달랐다.

Effects of Heating Time and Temperature on Functional Properties of Proteins of Yellow Mealworm Larvae (Tenebrio molitor L.)

  • Although the yellow mealworm (Tenebrio molitor L.) is a promising alternative protein source, the effects of processing conditions on functional properties are unclear. In this study, a protein extract of yellow mealworm larvae (PEYM) was subjected to different heat temperature ($55^{\circ}C$, $75^{\circ}C$, and $95^{\circ}C$) with different time (20, 40, and 60 min) to evaluate the functional properties and protein oxidation. Different heat temperature treatment significantly affected the exposure of surface hydrophobicity of the proteins and protein molecule aggregation, which reached maximum levels at $95^{\circ}C$ for 60 min. Protein oxidation was inversely proportional to the temperature. Both the highest carbonyl value (1.49 nmol/mg protein) and lowest thiol value (22.94 nmol/mg protein) were observed at $95^{\circ}C$ for 60 min. The heating time-temperature interaction affected several functional properties, including solubility, emulsifying potential, and gel strength (GS). Solubility decreased near the isoelectric point (pH 5 to 6). As the temperature and heating time increased, emulsifying properties decreased and GS increased. The oil absorption capacity and foaming properties decreased and the water absorption capacity increased. These results confirmed that PEYM is a suitable source of proteins for processing and applications in the food industry.

Techno-functional and rheological properties of Tenebrio molitor larvae protein by different extraction methods

  • Alkaline- or salt-assisted extractions have been widely used to extract edible insect proteins, however, there is a need for extraction techniques that balance cost-efficient production as well as preserving the protein properties. Mealworm proteins (Tenebrio molitor larvae) were extracted using three different extraction methods-alkali (AMP), salt (SMP), and water (WMP)-and then physicochemical and techno-functional properties were examined. AMP had high yield, protein, and amino acid contents, whereas WMP had high moisture, ash, and fat contents. SDS-PAGE showed a wide range of molecular weights in WMP whereas mostly low molecular weights were observed in AMP and SMP. AMP had poor protein solubilities compared to SMP and WMP across all pHs. AMP had enhanced water-holding capacity and emulsion stability, whereas WMP had improved oil-holding capacity and foaming properties. WMP formed a gel with and without the transglutaminase. The physicochemical and techno-functional properties demonstrated that water-soluble mealworm protein was superior to alkali-and salt-soluble mealworm proteins. Considering the cost efficiency and minimal impact on the environment as well, a cold press juicer could be utilized for mass production of mealworm protein compared to the conventional methods of protein extraction using alkali and salt.

Quality Prediction of Eggs Treated in Combination with Gamma Irradiation and Chitosan Coating Using Response Surface Methodology

  • The aim of this work was to determine the method and predict the optimum conditions for egg quality stored for 7 days when combination treatments of irradiation and chitosan coating were applied using response surface methodology (RSM). A central composite design was chosen for the RSM in this study and the factors were irradiation dose (0~2 kGy) and concentration of chitosan coating material (0~2%). Performance of the irradiation and chitosan coating were evaluated by analyzing the egg quality and functional property factors. The predicted maximum level of Haugh units and foaming ability calculated by a developed model were 74.19 at 0 kGy of irradiation with coating by 0.96% chitosan solution and 50.83 mm at 2.0 kGy with 1.01%, respectively. The predicted minimum value of foam stability and 2-thiobarbituric acid reactive substances (TBARS) value were 2.97 mm at 0.39 kGy with 0.21% and 0.54 mg malonaldehyde/kg egg yolk at 0 kGy with 0.90% of chitosan solution, respectively. Results clearly showed that gamma irradiation negatively affected the Haugh unit and TBARS but positively affected the foaming capacity. The estimated value from the developed model by RSM was verified by no statistical difference with observed value. Therefore, RSM can be a good tool for optimization and prediction of egg quality when 2 or more treatments are combined. However, one should decide the target quality first to achieve a successful implementation of this technology.

인산화와 초산화가 대두단백질의 기능특성과 구조에 미치는 영향 (Effects of Phosphorylation and Acetylation on Functional Properties and Structure of Soy Protein)

  • 대두단백질을 인산화 및 초산화처리에 의하여 변형시키고, 변형대두단백질의 기능특성을 검토하였다. 인산화 대두단백질은 비변형 대두단백질보다 높은, 용해도, 거품특성, 수분보유력을 나타냈다. 한편, 초산화에 의해서도 유화력과 거품특성이 현저하게 증진되었다. 대두단백질은 인산화와 초산화에 의하여 등전점이 산성쪽으로 변화였으며 단백질의 집괴화현상도 관찰되었다. 또한, 화학변형된 대두단백질을 디스크 전기영동에 의해 분석시 단백질밴드의 상대이동도가 현저하게 증대되었다.
