Estimation of Dietary Daily Intake of PCDDs/PCDFs from Korean Retail Food (우리 나라 시판 식품을 통한 다이옥신 섭취량 평가)

  • The main route of exposure of the human population to polychlorinated dibenzop-dioxins(PCDDs) and polychlorinated dibenzofurans(PCDFs) is through the diet. However in Korea, there are few studies on PCDDs/PCDFs levels in environmental samples and foods. The purpose of this study is to analyze concentration of PCDDs/PCDFs in Korean retail foods and to estimate dietary daily intake of them. 9 samples from animal food and 10 samples from plant food were analysed for PCDDs/PCDFs. Concentrations of PCDDs/PCDFs ranged from 0.02(milk) to 5.39(anchovy)pg/g. TEQ levels appeared in order of fish/shellfish, meat, vegetable, cereal, fruit and milk, and these values ranged from 0.0008 to 0.3153pgTEQ/g. The daily intake of PCDDs/PCDFs via food was calculated to be about 37.7pgTEQ/day and these values are equivalent to 0.75 pgTEQ/kg b.w./day, under consideration of 50kg for body weight. The daily intake of PCDDs/PCDFs via food was lower than that in other countries. From these results, it is important to note that fish/shellfish intake is one of the main sources of PCDDs/PCDFs exposure in Korea.

Eutrophication of Shellfish Farms in Deukryang and Gamagyang Bays (득량만과 가막양 패류양식장의 부영양화)

  • Some environmental parameters on the shell-fish farms in Deukryang and Gamagyang Bays during summer in 1981 were determined to find an eutrophication level for the conservation of the farm. Chlorophyll-a content in the seawater in the Deukryang Bay in September was $1.0{\sim}5.0{\mu}g/l$ with an average of $2.5{\mu}g/l$ In the superficial bottom muds, contents of COD were 5-10 mg/g, ignition loss $5-9\%$, phaeophytin pigment $2{\sim}5{\mu}g/g$, and sulfide 0.1-0.3 mg/g dry mud in both bays. High contents of both organic matters and sulfide were found in the innermost area of the Deukryang Bay and in the north western part of the Gamagyang Bay. All quantities including chlorphyll-a in the water are little less than or similar to those of Hansan-Geoje Bay, one of the most productive shellfish farms in the southern coastal waters in Korea . Eutrophication on both water and bottom mud was under way like other shellfish farms but pollution indices on the bottom mud calculated from the data of CODs and phaeophytin pigments shelved 6-11, which is much lower than those of Jinhae Bay and of the Hansan-Geoje Bay. This means that the bottom muds are in an early stage of eutrophication, unlike the Jinhae and Hansan-Geoje Bays though the water, similar to the other bays, shows a middle stage of eutrophication.

Study on the Contents of Trace Elements in Foods (on the Trace Element Contents of Shellfish in Korean coastal Water) (식품중의 미량금속에 관한 연구조사 (연안 견류중의 중금속 함유량에 관하여))

  • In 1987, the level of heavy metals were determined ina total of 200 samples of 9 species of shellfish of Korea. The samples were collected at the fish. markets by 10 Public Institute of Health. The samples were whelk (Buccinum striatiBBimum), oyster (Crassostrea gigas), ark shell(Tegillarca granesa), shartnecked clam (Venerupis semidecussta), hard clam (Meretrix lusoria), top shell (Turbo cornutus), abalone (Haliotis gigantea), ark shell (Scapharea broughtonii), sea-mussel (Mytilus conuscus gould), respectively. The levels of total mercury, lead, cadmium, arsenic, copper, zinc and manganese were determined. The total mercury levels were determined by mercury analyzer using the combustion gold amalgamation method. The arsenic level were determined by spectrophotometry using colorimetric sil ver diethyldithiocarbamate method after dry ash dige8tion of the samples with magnesium oxide and magnesium nitrate. The levels of other metals were determined by inductively coupled pluma spectrophotometry after wet digestion of the samples with nitric acid and su1furic acid. The results were summerized as follows; 1. The overallranges and mean(ppm) were; Hg, ND-O.221 (0.036); Pb, 0.05-1.51 (0.37); Cd, 0.02-1.86 (0.61); As, 0.5-3.97 (1.22); Cu, 0.14-54.16 (4.93); Zn, 7.40-207.17 (30.09); Mn, 0.13-s.72 (3.40). 2. The levels of all 6 metals were found to be below the maximum permissible Iimits set by the Japan lor mercury, the Netherland for lead the Hong Kong for cadmium. The Finland for Arsenic no statutory Iimits for Zn and Mn in shellfish in any countries. 3. The results show that all the 9 species of shellfish studied, none have accumulated levels dangerous enough to pose a health problem.roblem.

Species composition and seasonal variation of aquatic organism caught by fish pots in the coastal waters off Baekryeong-do, Korea (백령도 연안에서 통발에 어획된 수산생물의 종조성 및 군집구조)

  • Species composition and seasonal variation of aquatic organism at Baekryeong-do, Korea were investigated using pots in 2016. A total of 42 species, 90,050 individuals and 2,351,666 g of aquatic organism were collected. Among them, there were 12 species and 3,826 individuals of fish, 15 species and 51,237 individuals of crustaceans, 2 species and 54 individuals of cephalopods, 7 species and 33,981 individuals of gastropods, 2 species and 757 individuals of echinodea, 2 species and 187 individuals of shellfish, and 1 species and 8 individuals of holothuroidea. The dominant species in number of individuals were Pagurus ochotensis, Neptunea cuming, Cancer gibbosulus, and Buccinum yokomaruae, which accounted for 70.0% of the total number individuals collected. The dominant species in biomass were Neptunea cuming, Portunus trituberculatus, Cancer gibbosulus, and Pagurus ochotensis, which accounted for 65.3% of the total biomass collected.

Comparison of the Physiochemical Compositions and Biogenic Amine Contents of Salt-fermented Fishery Products fromy Different Raw Materials (원료에 따른 젓갈류의 이화학적 성분 및 Biogenic Amine류의 함량 비교)

  • This study was conducted to understand the quality characteristics of 89 types of commercial salt-fermented fishery products by measuring their physiochemical compositions and biogenic amine contents. All samples had the following measurements; 41.59-89.20 g/100 g of moisture, 1.71-25.70 g/100 g of salinity, 3.21-7.05 of pH, 0.80-2.93 g/100 g of total nitrogen, 87.02-1,296.78 mg/100 g of amino nitrogen, and 7.30-926.34 mg/100 g of volatile basic nitrogen. The physicochemical components differed extensively between samples from different raw materials, including, fish, shellfish, and others. Histamine (0 to 1,072.2 mg/kg), putrescine (0 to 2,536.4 mg/kg), cadaverine (0 to 545.2 mg/kg of cadaverine), tryptamine (0 to 1,287.9 mg/kg), and tyramine (11.3 to 563.3 mg/kg) were the major biogenic amines detected in the samples. These findings suggest that salt-fermented fishery products meet the domestic criteria but have different ingredient compositions and most had high biogenic amine contents. The results suggest that it is necessary to establish criteria for evaluating the quality characteristics using the ingredient composition and biogenic amine contents of commercial salt-fermented fishery products.

Rapid and exact molecular identification of the PSP (paralytic shellfish poisoning) producing dinoflagellate genus Alexandrium

  • The marine dinoflagellate genus Alexandrium comprise PSP producing A. acatenella, A. angustitabuzatum, A. catenella, A. fundyense, A. minutum, A. ostenfezdii, A. tamiyavanichii and A. tamarense. In monitoring toxic Alexandrium, rapid and exact species identification is one of the significant prerequisite work, however we have suffered confusion of species definition in Alexandrium. To surmount this problem, we chose DNA probing, which has long been used as an alternative for conventional identification methods, primarily relying on morphological approaches using microscope in microbial field. Oligonucleotide DNA probes targeting rRNA or rDNA have been commonly used in diverse studies to detect and enumerate cells concerned as a culture-indetendent powerful tool. Despite of the massive literature on the HAB species containing Alexandrium, application of DNA probing for species identification and detection has been limited to a few documents. DNA probes of toxic A. tamarense, A. catenella and A. tamiyavanichii, and non-toxic A. affine, A. fraterculus, A. insuetum and A. pseudogonyaulax were designed from LSU rDNA D1-D2, and applied to whole cell-FISH. Each DNA probes reacted only the targeted Alexandrium cells with very high species-specificity within Alexandrium. The probes could detect each targeted cells obtained from the natural sea water samples without cross-reactivity. Labeling intensity varied in the growth stage, this showed that the contents of probe-targeted cellular rRNA decreased with reduced growth rate. Double probe TAMID2S1 achieved approximately two times higher fluorescent intensity than that with single probe TAMID2. This double probe did not cross-react with any kinds of microorganisms in the natural sea waters. Therefore we can say that in whole-cell FISH procedure this double DNA probe successfully labeled targeted A. tamiyavanichii without cross-reaction with congeners and diverse natural bio-communities.

There are twenty kinds of Chuk, which is broiled polutry, fish, shellfish and meat like pork and beef together with vegetables and spices. 4. Shin, Oh, Po, are a type of meat preservation method by using Nurook, salt, alchol or broiling it in Bong Chuk way and then preserving it.

  • In this study, we will develop the sea surface interpretation system that can aware the target in the bottom of the sea. we will setup the database whose records would be the signal patterns of formation about mud, sand, rock and sea shell achieved by using supersonic. then we will convert analog signal received in fish detector to digital one using A/D converter So we can process and analyze this signal pattern then compare it to the one in our Database at the real time to identify the target in the bottom of the sea. After enough times of experiments from the background of the results that have been achieved from many studies(including a water tank experiment and a field investigation), we can aware the exact information of the sediment and the sand in the sea. By analyzing the first, second and third signal of the supersonic characters reflected from the body of a fish categorized by its family and from the body of shellfish, muddy sand, sand and rocks, We will develop the sea surface decipherment system which abstracts the first signal that shows the target in the bottom of the sea and makes the second and third signals filtering.

Spawning, Hatching and Larval Growth of Red and Black Clownfish Amphiprion melanopus (Red and Black Clownfish Amphiprion melanopus의 산란, 부화 및 자어성장)

  • We studied spawning, hatching and larval growth of Amphiprion melanopus under laboratory conditions. Each time a fish spawned about 440 to 650 eggs. The eggs were hatched 9 days later. Nest colour of the eggs changed from clear yellow orange to greyish violet with processing of embryogenesis. With regard to spawning according to the substrates, the fish prefered red clay pot and ceramic pot to volcanic scoria and live rock. Hatching rate (%) of the eggs on the former substrates was significantly higher than that on the latter. The number of eggs varied with the food stuff supplied to the fish. The fish fed Tetra bits (commercial diet), meat of short necked clams and mussels, and astaxanthin showed significantly higher fecundity with 638 eggs than that fed only Tetra bits (477 eggs) or Tetra bits with meat of shellfish without astaxanthin ($549{\sim}553\;eggs$). Higher temperature ranging from 24 to $30^{\circ}C$ induced shorter incubation period and smaller total length, but higher hatching rate. The optimum salinity and L:D cycle with $60\;{\mu}mol$ photon $m^{-2}s^{-1}$ for hatching were 33 psu and 16:8, respectively. The newly hatched larvae about 4.6 mm in total length grew to 7.5 mm in one week, 18.8 mm in a month and 37.9 mm in 70 days after hatching.

Trends in Food and Nutrient Intake of High School Students based on the Korea National Health and Nutrition Examination Survey 2007~2015 (우리나라 고등학생의 식품 및 영양소 섭취 변화 추이 - 2007~2015 국민건강영양조사를 이용하여 -)

  • This study assessed yearly trends of food and nutrient intake among high school students aged 16 to 18 years (n=2,377) using the 2007~2015 Korea National Health and Nutrition Examination Survey (KNHANES). Yearly trends of food or nutrient intake were analyzed via logistic regression analysis. The results showed that consumption of sugars & sweets, and beverages & alcohols was increased rapidly during this period (p<0.0001). Intake of meat & meat products, and fish & shellfish also was increased (p=0.0008). Intake of grains and grain products was increased until year 2011 but declined after 2012 (p=0.0025). Consumption of vegetables, and milk & milk products was decreased (p=0.0395). Intake of protein, fat, thiamin, riboflavin, niacin, and iron was increased (p=0.0445). Carbohydrate energy ratio was decreased, whereas fat energy ratio was increased (p=0.0235). Most nutrient intakes satisfied the dietary reference intakes for Koreans except dietary fiber (19.6~26.2%), calcium (46.9~55.2%) and sodium (more than 221.4%) during this period. There was a significant positive correlation between most food group intakes and most nutrient intakes (p=0.0468). Therefore, it is crucial to increase dietary fiber and calcium intake and decrease consumption of sugars, fats and sodium through diverse eating of food groups to ensure balanced nutrition of subjects.
