Fermented Wheat Grain Products and Kochujang Inhibit the Growth of AGS Human Gastric Adenocarcinoma Cells

  • The growth inhibitory effect of wheat grain, fermented wheat grain products, red pepper powder and kochujang was examined in AGS human gastric adenocarcinoma cells. The kochujang samples were prepared by mixing red pepper powder and each fermented wheat grain products, such as first fermented wheat grain (FFWG), second fermented wheat grain (SFWG) and final fermented wheat grain (FiFWG). The methanol extract of FiFWG showed the highest growth inhibitory effects. In order to investigate the effects of fermented wheat grain products at each stage of fermentation on anticancer activity, the kochujang prepared with red pepper powder and each of FFWG, SFWG and FiFWG were fermented until reaching pH 5.1. The kochujang adjusted to pH 5.1 by fermentation increased the growth inhibitory effect; however, the kochujang prepared with FiFWG showed the highest effect. Increased fermentation time increased the growth inhibitory effect of kochujang when prepared with FiFWG. These results suggested that the anticancer effect of the kochujang on the gastric cancer cells was affected by the fermentation periods of the wheat grains. The well-fermented end products of the wheat grains seem to be one of the major components that showed anticancer activity of kochujang.

흰쥐에서 개량식 고추장과 발효 밀쌀의 항비만 효과 (Anti-Obesity Effect of Commercial Kochujang and Fermented Wheat Grain Products in Sprague-Dawley Rats)

  • The antiobesity effect of commercial kochujang and fermented wheat grains in Sprague-Dawley (SD) rats was studied. The experiment was consisted of 6 groups. Normal, high fat diet (HFD), HFD+raw wheat grains, HFD+first fermented wheat grains (FFWG, with Aspergillus oryzae) HFD+final fermented wheat grains (FiFWG, fermented more for 30~40 days), and HFD+ commercial kochujang. The results showed that final body weight, weight gain, food efficiency ratio, and adipose tissue weight were markedly decreased by the commercial kochujang and the fermented wheat grains, whereas non-fermented raw wheat grains had no such effect. Lipid contents such as total lipid, total triglyceride and total cholesterol decreased in the serum and organs of liver and adipose tissues by the commercial kochujang and the fermented wheat grains as well. These results also indicated that fermented wheat grains exhibited more suppressive effects on high fat induced-obesity than raw wheat grains. Increased fermentation time and adding the red pepper powder resulted in increased the anti-obesity effect. Especially, commercial kochujang showed higher antiobestic effects than fermented wheat grains. These in vivo findings suggested that well-fermented end products of the wheat grains and red pepper powder in kochujang could be useful in the prevention of obesity.

고추장 제조시 발효가 항돌연변이 및 in vitro 항암효과에 미치는 영향 (Fermentation process increased antimutagenic and in vitro anticancer effects during Kochujang manufacturing)

  • 본 연구에서 고추장 제조시 발효가 항돌연변이 효과와 in vitro 항암효과에 미치는 영향을 확인하기 위하여 고추장 제조 재료인 원료 밀, 1차발효밀, 2차발효밀, 최종발효밀, 고춧가루와 최종발효밀로 제조된 고추장의 Sal. Typhimurium TA100을 이용한 Ames test를 실시하여 MNNG에 대한 항돌연변이 효과를 살펴보았으며, HT-29 인체 대장암세포와 AGS 인체 위암세포의 성장 억제효과를 살펴보았다. 실험한 결과 원료 밀보다 1차발효밀, 2차발효밀보다 최종발효밀이 발효진행에 따라 점차 증진된 항돌연변이 효과와 in vitro 항암효과가 나타났으며 최종발효밀과 고춧가루로 제조된 고추장이 가장 높았다. 15, 30일 발효시킨 고추장이 발효되지 않은 고추장보다 더 높은 항암효과가 나타났다. 따라서 발효과정(기간)이 고추장의 항돌연변이 효과와 항암효과에 중요하게 관련되어 있다고 할 수 있으며 고추장의 주재료인 고춧가루의 capsaicin, 비타민C와 ${\beta}$-carotene 등의 작용만이 아닌 밀에서 온 발효 숙성 중에 많이 증식된 미생물 그리고 발효에 의한 생성된 다른 활성물질이 항돌연변이와 항암 효과에 관련되어 있다고 하겠다.

밀가루 첨가 및 발효시간에 따른 증편의 특성 (The effects of partial replacement of rice flour with wheat flour and fermentationi time on the characteristics of Jeung-Pyun)

  • This study was conducted to investigate the effects of fermentation time and the proportion of wheat flour to rice flour on Jeung-Pyun's texture. Textural characteristics were examined through sensory Evaluation and Instron Universal testing machine. The properties examined through sensory evaluation were grain, softness, sourness, chewiness and overall quality. Wigh Instron, hardness, cohesivenessm elasticity, gumminess and chewiness were measured. RESULTS : 1. Sensory evaluation data indicated that Jeung-Pyun containing 25% wheat flour and fermented 2 hrs were obtained higher scores than any other Jeug-Pyuns in the grain, softness and overall quality. 2. pHs of Jeung-pyundough and Jeung-Pyun containing 100% rice flour were lower than pHs of those with wheat flour added. 3. Volume of Jeung-Pyun increased as the proportion of wheat flour to rice flour and the length of fermentation time increased. 4. Instron measurement indicated that the hardness of Jeung-Pyun with 50% wheat flour added and 2hrs fermentation time was higher than of others.

녹색 홀그레인 보리, 밀, 찹쌀, 멥쌀 분말을 첨가한 발효유의 특성 (Characterization of fermented milk added with green whole grains of barley, wheat, glutinous rice and common rice powders)

  • Yogurt was prepared from skim milk added with 2, 4 or 6% of green whole grain of barley, wheat, glutinous rice and common rice, respectively. Changes in pH, titratable acidity, viable cell counts and viscosity during fermentation were monitored and its sensory evaluation was also performed. The optimum level of additives such as green whole grain of barley, wheat, glutinous rice and common rice for yogurt manufacture was selected to 2%. The samples added with green whole grain of barley and wheat powders reached pH 4.5 in 12 hours. After 4 hours of fermentation, pH, the viable cell counts and viscosity in samples added with 2% green whole grain of barley, wheat, glutinous rice and common rice powders were the highest. Especially, in overall sensory evaluation using 5 parameters, the sensory scores of glutinous rice and common rice 2% yogurts were significantly high. From this experiment, the additives optimum level of glutinous rice and common rice powders was selected to be 2%.

곡물배지가 느타리버섯의 균사배양과 생리활성에 미치는 영향 (Effect of solid grain media on the mycelial growth of Pleurotus ostreatus and its biofunctional activity)

  • 버섯을 이용한 기능성 전통 장류발효식품의 개발 및 버섯가공산업 육성을 위한 기초자료를 제공하고자 상식하고있는 7종류의 곡물배지에 느타리버섯 균사체 배양을 행하고 그 배양추출물의 생리활성 등을 검토하였다. 곡물을 냉수에 4시간 수침시킨 후 물 빼기를 한 다음 곡물 중량비에 대하여 수분을 25%(V/W) 전후로 첨가하고 증자시간을 30분 행하는 것이 느타리버섯 균사생육에 효과적이었다. 7종류의 곡물배지에 느타리버섯 균사를 고체 배양한 결과 조와 보리쌀 배지에서 생육이 가장 왕성하였고 그 다음은 대두박과 검정콩 배지로 나타났으며 밀, 옥수수 및 현미배지에서는 생육이 늦은 것으로 나타났다. 느타리버섯 균사추출물들이 폐암세포의 생육에 미치는 영향을 검토한 결과 옥수수, 대두박, 현미, 보리쌀 및 검정콩 배지에서 비교적 높은 항암성을 나타내었고, 조와 밀의 배지에서는 낮은 항암성을 나타내었다. 혈전용해활성은 대두박, 밀, 조, 보리쌀, 현미, 검정콩, 옥수수배지의 순으로 높게 나타났으며, 병원성 세균에 대한 항균활성은 Pseudomonas aeruginosa 및 Staphylococcus aureus에 대하여 높게 나타났다.

수확시기에 따른 맥류 곡실발효사료의 사료가치 및 발효품질 (Effect of Feed Value and Fermentative Quality According to Harvesting Time of Barley and Wheat Grain Silage)

  • 이 연구는 맥류 곡실발효사료 조제를 위한 적정 수확시기 및 수확시기별 곡실 발효사료의 발효품질을 평가하기 위하여 실시하였다. 그 결과, 알곡의 수분함량은 수확시기가 늦어짐에 따라 감소하는 경향을 보였고, 이삭비율과 천립중은 맥종별 모두 출수 후 일수가 경과됨에 따라 높아지는 경향을 보였다. 알곡수량은 맥종 모두 수확시기가 늦어질수록 유의적으로 증가하는 경향을 보였다(p<0.05). 조단백질 함량은 수확시기가 늦어질수록 맥종 모두 높아지는 경향을 보였고, 조섬유함량은 낮아지는 경향을 보였으며, 조지방과 조회분 함량은 비슷하거나 약간 낮아지는 경향을 보였지만 통계적인 유의성은 없었다. 곡실사료의 발효 전후 사료가치를 비교하여 보면, 일반성분들이 발효를 거친 후 약간 증가되는 경향은 있었지만 유의적인 차이는 나타나지 않았다. 발효품질 면에서는 공시한 맥종 모두 수확시기가 늦어질수록 pH는 높아지고, 젖산함량은 유의적으로 낮아지는 경향을 보였다(p<0.05). 초산함량은 맥종 모두 수확시기에 따른 차이를 나타내지 않았고, 낙산은 검출되지 않았다. 따라서 수량과 발효품질을 고려할 때, 맥류 곡실사료 조제를 위해서는 겉보리과 쌀보리는 출수 후 35일, 밀은 출수 후 40~45일에 수확하는 것이 적당한 것으로 판단된다.

주정박을 이용한 고체발효 조건의 최적화 (Optimization of Solid-State Fermentation Condition Using Distiller's Dried Grain)

  • 본 연구는 에탄올 생산 부산물인 주정박의 사료로서의 가치를 향상시키고 효소 활성을 유지하면서 아미노산이 다량 함유된 발효 사료를 개발하기 위한 고체 발효 조건을 최적화하는데 목적을 두었다. 사용된 균주의 pH에 대한 영향을 살펴본 결과, pH 4에서 효소 활성이 우수하였으며 또한 이 조건은 낮은 pH 조건이므로 잡균에 대한 오염도 예방 할 수 있어 본 실험의 최적 액체배양 조건임을 확인할 수 있었다. 고체 배양을 위한 배양 조건 탐색에서는 60%의 수분을 함유한 고체 배양에서 가장 좋은 효소 활성의 결과를 나타내었으며 적정 배지 조성을 위한 혼합 비율 탐색의 경우 밀기울 함량이 높고 DDG 함량이 낮을수록 효소 활성은 좋았으나 아미노산 함량은 낮은 반면, DDG 함량이 높고 밀기울 함량이 낮을수록 효소 활성은 낮았지만 아미노산 함량은 높은 결과를 나타내었다. 따라서 효소활성 ($\geqq$ 1,000 U/g) 및 아미노산 함량 ($\geqq$ 28%)이 적당한 고체 발효 배지 조성의 비율은 DDG와 밀기울이 1 : 4였다. 이렇게 해서 얻어진 결과로 약 1 ton 정도의 발효 사료 시제품을 생산하였으며 시제품의 효소활성과 조단백질 함량은 각각 1,024 U/g과 33.6%였다.

The Nutritive Value of Thin Stillage and Wet Distillers' Grains for Ruminants - Review -

  • Thin stillage and distillers' grains are byproducts remaining after alcohol distillation from a fermented cereal grain mash. Both byproducts are used as energy and protein sources for ruminants. Due to its liquid nature, more than 50% of thin stillage bypasses the rumen. Thin stillage can be fed alone or in combination with distillers' grains. However, a better utilization by beef cattle is anticipated when thin stillage replaces water as a fluid source. Ruminal undegraded protein content of distillers' grains is greatly affected by type of cereal grain and by drying. Corn distillers' grains have a higher ruminal undegraded protein content than wheat distillers' grains while dried distillers' grains have a higher ruminal undegraded protein content than the wet distillers' grains. Wet and dried distillers' grains can replace up to 50% of corn grain in beef cattle diets without affecting animal performance. The estimated NEg of corn distillers' grains for beef cattle ranges from 100 to 169% of that of corn. In general, wet corn distillers' grains have a higher NEg value than dried corn distillers' grains and the addition of thin stillage improves the NEg of distillers' grains. Improved performance of ruminats fed distillers' byproducts can be attributed to high digestible fiber content, improved rumen environment and a shift in organic matter digestion from the rumen to the small intestine.

1400-1800년대 문헌연구를 통한 전통 면식(麵食)의 재료와 조리법 및 특성 고찰 (A Literature Review Regarding a Myeon-related Ingredients, Recipes and Characteristics in Korean Books published from the 1400's to the 1800's)

  • The study aims to perform a literature review regarding Korean traditional myeon (noodles)-related ingredients and recipes. A total of 45 myeon recipe data out of 9 books, documented in Korea from the 1400's to the 1800's was analyzed by ingredients and contents. As a result, it turned out that Korean traditional noodles were made with various ingredients including petals, vegetables and meat in addition to grain flour, and that they existed in various types in addition to long and thin noodles. As for main noodle-making ingredients, glutinous millet, buckwheat, mug beans, elms, beans, wheat and millets were used in diverse ways, and as for noodles soups, fermented soy bean sauces (Korean Jang), broth, omija and seeds (sesame, perilla) were used. In particular, noodles, soups and garnish materials were selectively combined and harmonized to advance noodle foods. In conclusion, traditional Koran noodles were precious foods considered to be healthy foods aimed to pray for longevity, and such diversified food ingredients as noodles, soup and garnish have been harmonized to advance recipes. Healthfulness and characteristics of traditional noodles are expected to contribute to exploring noodle-based Korean food culture contents and developing food industries.
