우리나라 중 ·고등학생들의 수산물에 대한 기호도를 조사하고, 특히 학교에서 제공되는 식단이 이들의 기호도에 얼마나 근접되어 있는지를 조사함으로써 학교급식에서의 수산물 소비를 증진시키기 위하여 전국의 중학생 892명과 고등학생 1010명을 대상으로 조사한 결과를 요약하면 다음과 같다. 1. 수산물에 대한 선호도를 조사한 결과 평균 50% 정도가 수산물을 좋아하는 쪽으로 답하였으며, '싫어하는 편이다' 혹은 '아주 싫어한다'라고. 한 학생은 10% 미만이었다. 2. 수산물을 좋아하는 이유에 대해 중학생이나 고등학생 모두 '맛이 좋아서'라고 응답한 비율이 각각 61.0%와 62.6%로 가장 높게 조사되었으며, 다음으로는 '영양이 풍부하기 때문'이라고 한 응답 비율이 2위를 차지하였다. 한편 수산물을 싫어하는 가장 큰 원인은 '냄새' 때문인 것으로 나타났다. 3. 수산물을 이용한 조리법으로는 중 ·고등학생 모두 회(중학생 28.4%, 고등학생 34.4%)와 튀김(중학생 21.1%, 고등학생 15.4%), 구이(중학생 20.4%, 고등학생 19.0%)를 선호하는 것으로 나타났다. 반면 젓갈, 무침, 국, 전 등의 조리방법은 그 선호도가 10%에도 미치지 못하였다. 4. 수산물에 대한 기호도 조사 결과 중 ·고등학생들은 꽃게, 새우, 참치, 오징어 등을 이용한 음식을 좋아하였으며, 조리법으로는 튀김류와 볶음류를 선호하고 있었다. 5. 수산물을 육류와 비교하였을 때 수산물의 영양적인 우수성을 가장 많이 인정하고 있었으나, 수산물은 비위생적이고 조리가 번거로우며 맛이 떨어진다는 문제점이 지적되기도 하였다. 6. 학교급식시 제공되는 수산물 음식에 대하여 '매우 좋아한다'라고 응답한 비율은 중학생 6.6%, 고등학생 3.7%에 불과하였으며, 특히 중학생들은 매우 낮은 기호도를 보이고 있었다. 그 이유에 대해서는 '맛이 좋지 않다'라는 점이 가장 많이 지적되었다(중학생 14.7%, 고등학생 23.5%). 7. 수산물 음식의 개선방향에 대하여 맛이 향상되기를 가장 많이 희망하고 있었으며(중학생 37.7%, 고등학생 48.5%), 그 다음이 종류의 다양화(중학생 19.8%, 고등학생 24.0%), 조리법의 다양화(중학생 12.6%, 고등학생 22.4%)의 순이었다. 본 연구에서 중·고등학생들이 수산물을 기피하는 이유로는 수산물 자체의 맛 때문이며, 조리방법에 따라서도 좌우되는 것으로 나타났다. 음식에 대한 기호도는 식품의 종류에 따른 기호와 더불어 조리법에 따른 기호가 복합적으로 작용한다. 따라서 선호 경향이 높지 않은 수산물이라도 조리법에 변화를 주어 그 수용도를 증가시킴으로써 다양한 수산물을 섭취할 수 있도록 하는 노력이 요구된다.
아동들의 수산식품에 대한 기호도를 조사하고 수산식품 선호도 및 섭취빈도에 영향을 미치는 요인들의 상관을 알아보기 위하여 부산시 부산진구 K초등학교의 4, 5, 6 학년 학생 및 학부모를 대상으로 설문지법을 이용하여 2000년 2월 8일부터 2월 22일까지 조사를 실시한 결과는 다음과 같다. 영양지식 점수는 남학생과 여학생간의 차이는 보이지 않았고, 영양지식과 식생활태도와의 상관관계는 남학생은 r=.162 여학생은 r=.115로 영양지식이 많을수록 식생활 태도가 유의적으로 좋은 것으로 나타났다. 김-김치-게-오징어-고등어-갈치-새우가 좋아하는 수산식품이었으며, 굴- 미더덕-젓갈류는 싫어하는 식품으로 나타났다. 수산식품의 섭취빈도에는 어린이 식생활태도, 어머니의 학력 및 어머니의 권유정도가 유의적인 영향을 미치는 변수로 나타났고, 자신의 영양 지식 및 식생활 태도, 어머니의 권유정도가 수산식품을 꼭 섭취해야한다는 생각에 유의한 영향을 미치는 것으로 나타났다. 성별이나 가족형태, 월식생활비 및 어머니의 식생활 태도에 따른 수산식품 섭취빈도의 차이는 보이지 않고 어머니의 교육수준에 따라 어린이들의 수산식품 섭취빈도에 유의적인 차이를 보였으며, 어머니의 권유도가 클수록 섭취빈도가 높은 것으로 나타났다. 따라서 성장과 건강유지에 필요한 식품을 골고루 섭취하게 할려면, 식습관 형성시기인 초등학교 학생들에게 식품과 영양에 대한 바른 영양정보를 제공하고 올바른 식생활을 유도할 수 있는 체계적인 영양교육이 활성화되어 수산식품의 섭취 필요성에 대한 인식을 고취시키고 선호도를 높일 수 있어야 할 것으로 사료된다. 동시에 균형있고 다양한 식품선택의 중요성을 인식하고 가정에서도 적절한 영양관리 및 지도가 이루어질 수 있도록 부모 영양교육 프로그램의 개발 및 실시가 병행되어야 할 것으로 생각된다.
소비자의 수용도에 중점을 둔 저염젓갈의 품질 기준을 설정하기 위하여 출하 직전의 시판 젓갈을 반제품과 완제품의 형태로 $30^{\circ}C:$에 저장하여 품질 저하를 시키면서 관능검사와 이에 따른 이화학적 검사를 병행하였다. 명란젓갈의 경우 Brix가 반제품 $47.6\%$ 이상, 완제품 $41.2\%$ 이상이면 합격품으로 판정되었으며 제조회사 별로 절대값의 차이는 있었지만 백색도도 소비자의 수용도가 떨어질 수록 증가하는 경향을 보였다. 반면, 오징어 젓갈은 원료의 특성상 백색도는 기준으로 설정하기 어려웠으나 Brix는 제조회사 별로 기준을 설정하면 소비자 수용도와 상관관계를 설정할 수 있을 것으로 추정되며 pH도 같은 경향을 나타내었다. 결론적으로 저염젓갈의 품질 평가는 관능적 평가와 이론학적 검사를 병행하는 것이 타당하며 이화학적 검사 항목으로 Brix, 백색도, pH 및 hypoxanthine 등을 들 수 있는데 이 중에서 Brix가 가장 좋은 기준이 되며 hypoxanthine은 제품에 따라 차이가 많아 좋은 기준이 될 수 없었으나 오징어젓갈의 경우는 제조 방법이 같을 때 유의할 만한 평가 항목이 될 것으로 판단되었다.

This study determined the level of fermented soybean meal (FSM) that could be substituted for fish meal in the diet for parrot fish Oplegnathus fasciatus. Fish meal (FM) was used the sole protein source in the control diet. FSM was substituted for 20, 40, 60, 80, and 100% of the fish meal in the experimental diets. The FSM resulted in increased crude protein, crude fat, and crude ash, but decreased crude fiber. The methionine and tryptophan contents in the FSM increased, while lysine and threonine decreased. The 18:2n-6 fatty acid content decreased from 55.30% to 28.67%. Fermentation increased 20:5n-3 (EPA) and 22:6n-3 (DHA) by 2.03% and 15.54%, respectively, although the differences were not significant. Based on growth performance, we concluded that FSM could replace up to 60% of FM for the maximum growth of juvenile parrot fish.
Chitinases are glycosyl hydrolases which cleave the ${\beta}$-1,4 linkage of chitin into oligo or monomers of N-acetylglucosamine. These bacterial enzymes have been used for a wide range of applications in the food and pharmaceutical industries. In this study, we isolated two potential chitinolytic strains, BAO-01 and BAO-02, from salt-fermented shrimp, which were shown to belong to the genus Salinivibrio through genetic characterization using 16S rRNA. These isolates were gram-positive, rod-shaped, and non-spore forming. BAO-01 showed greater growth and chitinase activity than BAO-02 after the incubation at $37^{\circ}C$ for 4 days. Both strains grew on a wide range of carbon and nitrogen sources, pH values, temperatures, and salt levels. However, they showed minor biochemical differences. In addition, their antimicrobial activities against foodborne pathogens and antibiotic susceptibilities were evaluated. These Salinivibrio spp. did not show bioamine production, hemolytic activity, and mucin degradation. Therefore, the in vitro screening results suggested that these bacteria could be widely used as new candidates for chitin hydrolyzation and seafood fermentation.
To develop a value-added anchovy Engraulis japonicus sauce, the processing conditions and quality characteristics of a rapidly fermented and high-purity anchovy sauce (RRAS) were examined by adding 5-10% (w/w) radish Raphanus sativus L. RRAS exhibited higher yield, total nitrogen content, and amino nitrogen and calcium contents as well as lower salinity than those of conventional anchovy sauce (control). The salinity, yield, and total amino acid contents of RRAS and control were 17.2-17.7% and 19.6%, 81.2-88.7% and 61.0%, and 13,117.8-14,174.9 mg/100 g and 10,041.1 mg/100 g, respectively. The major amino acids recorded were aspartic acid, glutamic acid, alanine, valine, isoleucine, leucine, phenylalanine, ornithine, lysine, and histidine. The histamine contents of RRAS and control were 8.3-8.6 mg/100 g and 19.2 mg/100 g, respectively, while the protease activity levels were 0.901-0.958 unit/mg and 0.695 unit/mg, respectively. Overall, this study establishes that RRAS can not only significantly shorten the salt fermentation period, but can also serve as an anchovy sauce with superior nutritional quality and higher levels of amino acid and calcium.
We investigated the quality of 10 commercial eorigul-jeot, salt-fermented oysters with seasoning, by measuring their chemical composition and bacterial concentrations. The Eorigul-jeot had 5.07-6.06 pH (mean, 5.63), of 1.92-4.74% salinity (mean, 3.36%), 7.01-14.70 mg/100 g volatile basic nitrogen (mean, 11.91 mg/100 g), 139.22-267.11 mg/100 g amino acid nitrogen (mean, 212.69 mg/100 g), and 1.02-1.65 g/100 g total acidity (mean, 1.24 g/100 g). The total viable and lactic acid bacterial counts were 5.7×104-8.7×105 and 2.7×103-2.0×105 CFU/g, respectively, and fecal coliform was detected in only one Eorigul-jeot sample. Bacillus cereus and Clostridium perfringens were detected in two samples, and all Eorigul-jeot samples were negative for Staphylococcus aureus and Vibrio parahaemolyticus. These results strongly suggest the need to monitor food-poisoning bacteria in commercial Eorigul-jeot to ensure consumer health.
